Timestamps & Summary  Chris Gwyn (03:02)What is important for producers and nutritionists to consider when optimizing stock and density in their dairies?Dr. Rick Grant (03:10)Well, that's the big question, isn't it?And there are at least two or three main factors that we can get into today. One would be just, I had an aha moment a few years ago when a grad student and I realized that we need to think about overcrowding as a subclinical stressor. That allows us to think about how the same level of stocking density of stalls or feed bunk doesn't affect every herd the same way because the point at which a subclinical stressor affects a cow within a herd really is a function of the quality of the management on that dairy as well as the quality of the facilities. […]The other thing, I would say is, we know this, but we don't think about it enough. When we say stocking density, we count stalls, we count cows, or we count headlocks, we count cows. But we need to always step back and think within a pen, what is the experienced stocking density from an individual cow's perspective? […] I think that's something we need to think more about in terms of managing a given stocking density on a specific farm, the cow's perspective. […]We did a study where we found that cows tend to prefer the stalls nearest the pen exit, particularly lame cows. And doesn't that make sense? If you're a lame cow and walking is a bit challenging for you, you may have 50 stalls to choose from, but you choose the ones that are closest to the exit or the entrance. That tells me right there that a simple mathematical calculation of stocking density would fail those moderately lame cows because they don't have 50 stalls available to them. They might only have 10 or 12 if you allow them to express their natural desired resting behavior. That's something we need to wrestle with in the industry. Chris Gwyn (07:13)What are some of the key metrics or cow observations that we should follow in order to ensure that what we use on the farm, as far as stocking density, helps us to maximize that component yield or profitability?Dr. Rick Grant (07:30)Well, certainly, the things that we normally measure, like milk yield, intake, repro health, all of those things can give us clues in terms of how well the cows in that pen are dealing with the day-over-day chronic subclinical stress of the overcrowding. […] But at some point, every herd will have a problem with additional stressors. And how many stressors are there on a typical farm? The list is long. You might say time outside the pen is too long. Are all the stalls comfortable? Is feed available 24/7? All these things are critical factors that can snowball or add to the negative consequences of some subclinical degree of overcrowding. […] Chris Gwyn (10:05)What are the essential factors in managing these cow pens if we're managing to a higher level of stocking density?Dr. Rick Grant (10:12)We did some work a number of years ago. We looked at almost 80 farms in New York and Vermont, and it was all breeds. Jersey and Holstein breeds, tie stalls, free stalls, and some robotic herds. The things that rose to the top in terms of essential factors […] is that they don't go as high in bunk stocking density. They just don't push the system as hard. That's simple to say, but that was the biggest factor. In fact, we looked at all the variations in terms of milk fat and protein across these 69 herds; 65 % of the variation in component output was due just to bunk stocking density, not necessarily nutrition. […] Chris Gwyn (12:58)What are the key takeaways that you would share with the audience: nutritionists, veterinarians, and primary producers? If they're going to manage through stocking density, what do they need to really pay attention to?Dr. Rick Grant (13:12)I think the best answer for that hit me a few years ago. I was reading this paper on robotic milking systems and automated milking systems. It was over 120 farms. […] What struck me is the factors on the farm that contributed to the best milk yield, and the best lameness outcomes were the exact same list of factors that we've seen with free stall barns and probably even tie stall barns to a certain extent. But it's feed push ups and deep-bedded sand in these 120 farms. Those two factors, feed availability, comfortable stalls, and deep-bedded sand, resulted in 4 to 5 pounds, at least more milk production on average. The other thing about lameness […] is the same as the free stall herds: greater bunk space, feeding frequency, and deep-bedded stalls. You sound like a broken record, but those factors rise to the top in every study that I'm aware of. […]At the end of the day, if you can get that done, you're going to have a good balance in your herd between eating time, and eating behavior, and you're going to have that recumbent rumination, that lying down rumination that we think is so critical to cow health and performance.

Food texture encompasses characteristics such as hardness and structure. It categorizes food into liquids, semi-solids, and solids, each with a wide range of textures—from dry and crispy to elastic and more substantial. This classification deeply affects how we consume food. The time it takes to chew and swallow a food item can vary greatly based on its texture. Different textures can also influence the speed at which satiety signals are triggered. Eating rate is a highly individual trait, stable over time, and consistent across different contexts. Some people are naturally slower eaters, while others consume food quickly. This variance can have significant implications for energy intake and body weight. We talk about how the industry has changed since 2019, lessons we learned in the past 5 years, our super bowl experience, and so much more! Check out their bios and listen to their full episodes listed below! Episode 3: Kelly Rossi has been the Director of Performance Nutrition at the University of Delaware since 2019. Kelly received her BS in Nutritional Sciences from the Pennsylvania State University, with a minor in Movement Sciences. She completed her Dietetic Internship at Virginia Tech, and received her MS in Exercise, Nutrition and Eating Behavior from the George Washington University (GWU). Kelly was the first Registered Dietitian Graduate Assistant in the GWU's Fitness Facility, and she also worked as a personal trainer. Upon completing her MS work, Kelly worked with the Office of Naval Research (ONR) as a contractor for six years, supporting research in Human Performance, Training & Education related to Marines. While working with ONR, Kelly also was a sub-contractor with a local hospice and fitness center. Prior to her role at the University of Delaware, Kelly worked at the University of Virginia for 8+ years as their first Assistant and Associate Director of Sports Nutrition.  Rossi served on the national organization for Performance Dietitians, CPSDA (Collegiate & Professional Sports Dietitians Association) Board of Directors for four years. She served as the Research & Education Chair as well as the Secretary & Membership Chair. Prior to serving on the Board, Kelly served on the Conference Committee for four years. Rossi resides in Newark, Delaware with her husband, Reed, and sons, Kayden (6.5) and Carter (3). Episode 11: Rob Masterson, RD, CSSD, joined Michigan State University in 2016 and serves as the athletic department's Director of Performance Nutrition overseeing the nutrition operations for all varsity teams. In this role, Masterson serves the nutritional needs of Spartan student-athletes by providing science-based nutrition intervention, education, counseling, information and guidance, with the goal of optimizing overall health and athletic performance. He is a 2009 graduate of Michigan State's dietetic program. Prior to returning to his alma mater in East Lansing, he served as a clinical dietitian in the greater-Detroit area as well as a sports nutrition fellow at the University of South Carolina. Episode 35: Jackie Barcal joined IMG Academy's Athletic and Personal Development team as the Head of Nutrition in December 2015. In this capacity, she oversees all aspects of fueling IMG Academy student-athletes, campers, and seasonal visitors in addition to managing the fueling of the professional athletes on campus. Barcal comes to IMG Academy from the University of Wyoming where she worked within the Athletic Department while pursuing a master's degree in Human Nutrition & Food. Prior to Wyoming, Jackie was a member of the inaugural Gatorade/CPSDA Sports Nutrition Immersion Program (SNIP) at the University of Alabama in 2013. Barcal's sports nutrition career began at Arden Hills Resort, Club, & Spa in Sacramento, Calif., where she worked with JMG Tennis Academy athletes, the club's swim team, and resort members and their families. A native of California, her passion for sports nutrition emerged during her time competing in Division II softball at California State University, Stanislaus where she earned a bachelor's in Business Administration Finance. These sensory cues can be both inherent, such as the natural sweetness of fruit, and learned, as in the association between a particular aroma and a favorite dish. One crucial aspect of this research is delving into how sensory properties of food, like texture and taste, contribute to our choices and consumption patterns. Food texture, for example, plays a key role in determining how quickly we consume a meal, with softer textures often being associated with faster eating rates. Sensory intensity and palatability are also central themes in this research. Moreover, research into dietary fat reveals intriguing phenomena like “fat blindness,” where the ability to discriminate different levels of fat diminishes as taste intensity increases. Understanding these relationships can help shed light on factors contributing to overeating and potential avenues for behavior modification. Abstract: Binge eating (BE) is a persistent behavior associated with a chronic course of illness and poor treatment outcomes. While clinical research is unable to capture the full course of BE, pre-clinical approaches offer the opportunity to examine binge-like eating from onset through chronic durations, allowing identification of factors contributing to BE persistence. The current study quantified the trajectories of binge-like eating onset and modeled cycles of abstinence/relapse to develop a translational model for BE persistence. Adult male and female C57Bl6/J mice were randomized to a binge-like palatable food (PF) access schedule (daily 2-hour, 3x/week) or continuous, non-binge like PF access for 12 days (Experiment 1). Persistence of PF consumption in both binge-like PF access groups was then examined across three cycles of forced abstinence and re-exposure to PF (incubation) to model the persistence of BE in clinical populations. Mice with daily 2 hour PF access escalated their intake more than mice in the 3x/week or continuous groups (Experiment 1). This pattern was more pronounced in females. In addition, this pattern of PF intake re-emerged across multiple cycles of behavioral incubation (Experiment 2). These findings provide a model of binge-like eating in mice that can be used in future studies examining both environmental factors and neural mechanisms contributing to BE persistence. Abstract: The dorsolateral prefrontal cortex (dlPFC) and dorsomedial prefrontal cortex (dmPFC) are important nodes for self-control and decision-making, but through separable processes (cognitive control versus evaluative processing). This study aimed to examine the effects of excitatory brain stimulation (intermittent theta-burst stimulation; iTBS) targeting the dlPFC and dmPFC on food choice. iTBS was hypothesized to decrease consumption of appetitive snack foods, via enhanced interference control for dlPFC stimulation and reduced delay discounting for dmPFC stimulation. Using a single-blinded, between-subjects design, participants (N = 43) were randomly assigned to of the three conditions: 1) iTBS targeting the left dlPFC, 2) iTBS targeting bilateral dmPFC, or 3) sham. Participants then completed two cognitive tasks (delay discounting (DD) and Flanker), followed by a taste test. fNIRS imaging revealed increases in medial PFC activity were evident in the dmPFC stimulation group during the DD task; likewise, a neural efficiency effect was observed in the dlPFC stimulation group during the Flanker. Gender significantly moderated consumption during the taste test, with females in the dmPFC showing paradoxical increases in food consumption compared to sham. Findings are consistent with possible amplification of positive evaluative processing in the presence of dietary restraint, vis-a-vis excitation of the mPFC. Copy rights belong to original authors. More at www.preliminaryhealthcare.com The most common advice we hear for weight-loss is to “eat less and exercise more” (ELEM). By inference, eating more and exercising less makes you fatter. Further still, this mentality assumes and implies that being fat is a choice—a choice made by lazy weak-willed gluttons. You’ll be able to find why this is all wrong in other posts or in the full Fat-Loss eBook (coming Dec 1st, 2014), but here I want to explain how/why this paradigm is exactly backwards. In other words, we wrongly assume that fatter people are fatter because they eat more; in reality, though, fatter people may eat more because they are larger! Make no mistake, people get larger BEFORE they eat more. I understand if that sounds completely crazy at this point, but let’s apply this notion to a different scenario. Imagine we’re talking about a husband and a wife: the husband is 6 feet tall and 190 pounds; the wife is 5’ 4” 140 pounds. Who do you think will eat more? Of course, the man because he is larger—he probably has more total muscle, fat, bone, organ-mass, etc. that must be fed. Without going into the details of Eating-Behavior here, you can understand that his body’s larger demand for fuel manifests as eating more than his smaller wife. Notice that I didn’t label either person as fat, lean, muscular, etc. The point is that it wouldn’t matter the composition of their bodies—every type of cell requires fuel, and so a larger body needs more fuel, period. Now consider how the day-to-day experience of a fatter person compares/contrasts to that of a thin person. Applying the same ideas above, you can see how a fatter person will likely eat more than a thinner person based on the difference in body-size. The ability of body-fat (as opposed to other types of tissue, like muscle) to affect increased food-consumption, though, is actually more devious. To understand why, you have to know about a hormone called “insulin.” Insulin is a hormone released by your pancreas, mostly in response to eating carbohydrate (fruit, starches, sweets, etc.). Insulin has several jobs, but perhaps its most important to is to shuttle fuel (from food, for example) from your blood into the different cells of your body—which can later use that fuel for energy. The here’s the thing—those cells have a difficult time using that fuel as long as insulin is high, and so it tends to build-up instead. Here’s the really devious part: especially for fatter people, fat-cells are more sensitive the effects of insulin than other parts of their body. Consequently, especially from eating insulin-releasing carbohydrate, more nutrients can be absorbed by fat-cells than non-fat cells in people with more fat. The most obvious problem here is fat-cell growth is favored and reduction hindered, but a little less obvious is that this simulates starvation because 1) fat-cells absorb an unfair amount of nutrients at the expense of other cells, and 2) all fuel is prevented from being burned by the storage-effects of insulin. Of course, the response of many is to again suggest fatter people should eat-less and exercise more. The next article I post will discuss how eating less causes disordered eating-behaviors, such as bingeing. You can see the problem for those struggling with obesity, then: they are truly hungrier than thin people because they are larger, but the long-term starvation of eating less is unsustainable; either way, they are literally starving! Throughout this site, you’ll find truly effective and sustainable fat-loss strategies that do not require ELEM. Here, though, I only want to point out how important it is to appreciate the fact that we all experience unique and un-shareable versions of life-events; we must remove our own conceptions of the world when trying to infer the experiences of others. To impose unrealistic (and ineffective) expectations of sustained starvation is misled at best, draconian and bigoted at worst. Please, practice the humility and sympathy necessary to accept others’ experiences are unknowable to you, before acting in a hurtful manner that suggests otherwise. Thank you for reading
