Food security is a growing threat. In Israel we are experiencing it even now, particularly during the war with difficulties in supplying fruits, vegetables and milk, many of which originate from the south. To this acute global problem, quite a few foodtech companies are trying to provide a solution. The Israeli Imagendieri startup actually came to solve the milk issue. The company has developed a technology for the production of cultured milk proteins that enables the commercial production of milk of non-animal origin, and making it a daily reality. This milk brings all the nutritional values of normal milk, under laboratory conditions, without the need for a cow and at a price similar to normal milk. Show notes at Keith Snow.com The United States of America used to be dotted with dairies farms, but the industry has seen a steady decline in the total number of dairy farms while the average size of herds has increased, super dairies are becoming the norm, not the exception. My uncle, John Snow (one of my dad's older brothers) had two beautiful dairies, one in Goshen NY, the other on a 174-acre farm in Carlisle, PA (car-lyle). Uncle John milked Holsteins and grew corn and other crops, the farms were so beautiful. Both farms had classic red barns with hay lofts and tractors, I was in love! I can vividly remember sitting in the farmhouse kitchen drinking milk fresh from the bulk tank that was so creamy and thick and raw! My Aunt Judy reminded me I had to finish all my beans and corn before leaving the table. No problem I thought! I also remember being with my cousin Greg in his third-story bedroom listening to a tiny transistor radio with an extra-large antenna pointed out the window that was broadcasting AM radio, circa 1974! To say that I have a fondness for people who raise and milk cows is an understatement. My kids were raised on raw Jersey cow milk and we had a few Jersey heifers in 2010 but we sold them before they calved, their names were Cinnamon & Ginger. So all of this dairy doom makes me sad! Between 1970 and 2006, the number of farms with dairy cows has fallen steadily, from 648,000 operations in 1970 to 75,000 or so in 2006, probably lower in 2022. Technology such as printing food, yeah I said printing food, will become common, and fake meat and dairy substitutes will be ubiquitous. I find these statements hard to believe and grandiose, but time will tell. “We are on the cusp of the deepest, fastest, most consequential disruption in food and agricultural production since the first domestication of plants and animals ten thousand years ago. This is primarily a protein disruption driven by economics. The cost of proteins will be five times cheaper by 2030 and 10 times cheaper by 2035 than existing animal proteins, before ultimately approaching the cost of sugar. They will also be superior in every key attribute – more nutritious, healthier, better tasting, and more convenient, with almost unimaginable variety. This means that, by 2030, modern food products will be higher quality and cost less than half as much to produce as the animal-derived products they replace.” — rethinkX.com Over 60% of dairy farms are less than 25 cows. The current price per hundred lbs is averaging $21.64 for every hundredweight (100 pounds) of fluid milk so the dairy farmer is netting about $1,400-$1,700 per week, depending on the cow breed they milk and the gallons produced, this is for a 25 cow herd. So dairy farmer gets roughly $21.64 for 11.62 gallons yet the supermarket gets $42. If farmers sold direct and could attract customers to a small farm store, and had some value-added products like butter, cream, half & half, creme fraiche, yogurt, etc. they could potentially meet or top what is made selling to the dairy coop. However, this usually requires the younger generations to stay on the farm and help as the job of tending to cows and crops leaves little time for research, planning, and large changes to the farm's business model. One amazing benefit of such an arrangement would be interacting with the people who consume the products, instead of just a driver who pumps milk into a tanker to take it to the coop/processor. Reading from an article….. The emergence of large dairy farms, and the continued shift of production toward such farms, is the principal focus of our analysis. We also touch on geographic shifts in production, a closely intertwined component of structural change. Between 1970 and 2006, the number of farms with dairy cows fell steadily and sharply, from 648,000 operations in 1970 to 75,000 in 2006, or 88 percent (fig. 1). Total dairy cows fell from 12 million in 1970 to 9.1 million in 2006, so the average herd size rose from just 19 cows per farm in 1970 to 120 cows in 2006. Moreover, milk production per cow doubled between 1970 and 2006 (from 9,751 to 19,951 pounds per year), total milk production rose, and average milk production per farm increased twelvefold. These changes reflect a trend toward greater specialization as well as greater size. However, like much of agriculture, dairy farms come in a wide range of sizes. The largest U.S. dairy farms have over 15,000 cows, though farms with 1,000–5,000 cows are more common. Large dairy farms account for most inventory and production in the Western States, and a growing share of production elsewhere The smallest class of dairy farms (fewer than 30 cows) still accounted for nearly 30 percent of all operations with milk cows in 2006, but had only 2 percent of all cows and provided just over 1 percent of total dairy production. Such farms, which frequently combine a very small dairy enterprise with other commodity enterprises or with off-farm work, are disappearing rapidly. Non Dairy Milk (soy, almond, oat, macadamia, hemp, hazelnut) is cutting into the share of milk sales rapidly. Average consumption is off 40% as of 2019 compared to 1975. There is an ongoing label war between the dairy lobby and the non-dairy “milk” producers. They call their products milk, which the dairy industry sees as competition. In my mind, people who drink milk are not mistakenly buying oat or soy or almond milk, rather sales of non-dairy milk are fueled by highly educated consumers who either have dairy allergies or are plant-based or vegan or environmentally aware. So what does this mean to today's dairy farmers? Well, we all know the average age of the American farmer is 57.5 years of age. Farmers are much older in other countries like Japan! This portends problems in the future as today's youth, even if they were raised on farms and taught work ethic, are routinely leaving the farm for “easier” ways of making a living. We are talking only about dairy farms here but the same scenario plays out on our cattle, hog, grain, and vegetable operations. Who knows what this means for the future of ag. With so much pressure to “get big or get out” small dairies either choose to invest in larger operations or sell their land to developers or, invest in on-farm processing to be able to sell to local customers and DSD(direct store delivery) and cutting out the coop and keeping the vast majority of the profit themselves. I know of several dairymen who sell both to a growing number of customers who want farm-fresh products and want to know who grows their food. They have made on-farm investments in processing equipment and been awarded permits to process their own products and they know their customers. A good example of this model in action is SC Milky Way Farm in Starr SC LD Peeler has been milking his Jersey cows for decades. We used to buy raw milk direct, which had been legal in SC for years. His A2-A2 Jersey cows are raised on grass and produce milk that is nothing short of amazing, at least 3-4 inches of cream on top of each gallon. We were paying $4-6 per gallon back in 2009 and it was worth every penny! LD has increased the number of products he produces on the farm to include some vat pasteurized milk, chocolate milk, cream, etc. He even has a really nice, clean refrigerated milk truck to make deliveries with. I can remember him using a metal hook he built to grab milk crates instead of bending down each time. He wore the typical wrangler jeans, a ball cap, and flannel shirts. Another dairy that is doing great work is Alexander Dairy in California. I regularly buy their certified organic, A2-A2 milk which is also certified Regenerative and tastes amazing. They have many products that are sold to retail stores and distributors, they leave the butterfat on top (non-homogenized) and only pasteurize at 165 degrees for 30 minutes, unlike most dairy that is UHT, Ultra High Temperature pasteurized at over 200 degrees. This is a large dairy with over 4,300 acres and about 4,000 cows. They have built soil organic matter from 2% to as much as 15% in some pastures using regenerative principles I outlined in episode 454. They are sequestering a great deal of carbon in the soil, using ruminant animals, the way nature intended. Even a hard-core Al Gore tree hugger cannot argue the fact that they are not helping the environment, even with all the cow farts! Finding Raw Milk… The laws in this country regarding the sale of raw milk are pretty frustrating, but progress has been made in most states. People should have access to this life-giving product, without bureaucrats restricting it. I have not looked in a while to see how things are progressing with the law but the website Real Milk lists hundreds of dairies across the country that sell raw milk. Mrs. Fallon’s lifelong interest in the subject of nutrition began in the early 1970’s when she read Nutrition and Physical Degeneration by Weston A. Price. Called the “Charles Darwin of Nutrition,” Price traveled the world over studying healthy indigenous populations and their diets. The unforgettable photographs contained in his book document the beautiful facial structure and superb physiques of isolated groups consuming only whole, natural foods. Price noted that all of these diets contained a source of good quality animal fat, which provided numerous factors necessary for the full expression of our genetic potential and optimum health. The consumption of dairy products has been a mainstay for as long as mankind has been able to capture and milk animals of all kinds. Sheep, goats, cows, bison, water buffalo, donkeys and horses. All are still milked to this day. There may be others. These are the ones of which I am aware. I want to talk about this tradition that has helped our species thrive and develop over the centuries and millennia. But first, I want to take that blessed moment to say welcome to all the new listeners and welcome back to you veteran homestead-loving regulars who stop by the homestead every week. I appreciate you all so much. I’m so excited to share with you what’s going on in our neck of the woods this week. Today’s Show Homestead Life Updates Why We Drink Raw Milk Traditional Kefir Recipe Homestead Life Updates Oh my gosh, is it hot where you are? Whew!! We’ve been experiencing a real heat wave here. Temperatures that are normal for late July and August. Thank goodness that we will be back to normal for next week. Highs in the high 70’s and low 80’s. Today is great. The 90-degree days drained the energy right out of me. I expect that in the middle of summer. But come on, it’s still 3 weeks until the summer solstice. Garden and Orchard Speaking of draining energy. The garden is burning up. Well is would be if we weren’t diligently watering every day. The orchard too. And the weeds are still progressively taking over. This time of year I’m really pressed for time. Milking twice a day. Making cheese. Going to the Farmer’s Market and on and on. As I’ve said before, the garden gets pushed down the list of priorities. This too shall change in the future. It takes a lot to get a business off the ground. Once we are more established, we can let up a little bit, I think. Creamery A little progress has been made on the creamery. It is still creeping along compared to the plan that Scott originally made, but it is what it is and we persevere. It’s the journey that is important. It’s the system that we are setting in place that is important. Goals come and go, but the system remains. Animals We still have a couple of baby bulls for sale. Let’s get on to the topic at hand. Why We Drink Raw Milk I’m going to talk about why we consume dairy products; the benefits. Our dairy products come straight from our grass-fed cows with no alteration from their live state. It’s all about the nutrition. Traditional foods raised using traditional methods produces that traditional robust health of days gone by. I’ll get to the specific health benefits in a moment. If you’ve been told that drinking raw milk is dangerous, you’ll be surprised to know that you’ve been misled. The truth about raw milk? An extensive look into research and claims made by the FDA and CDC related to raw milk being dangerous have been found to be completely unwarranted. It actually benefits your body in many ways, and although it might have earned a reputation among some for being dangerous, you shouldn’t miss out on all this amazing superfood has to offer because raw milk benefits are truly impressive. What is “raw milk” exactly? It’s milk that comes from grass-fed cows, is unpasteurized and unhomogenized. This means raw milk contains all of its natural enzymes, fatty acids, vitamins and minerals — making it what many refer to as a “complete food.” Eggs fall into the “complete food” category also. Everything needed for growth and health is contained in the package. No need for sterilization or added sugar. But can’t raw milk cause problems due to the risk of consuming bacteria? The risk of this happening is very, very low. In fact, according to medical researcher Dr. Ted Beals, M.D., you are 35,000 times more likely to get sick from other foods than you are from raw milk. Reference in the show notes. You can get sick from consuming any food. Your risk of illness from raw milk is quite small. The CDC reports that there are an estimated 48 million foodborne illnesses diagnosed each year. Yes, your heard that right. 48 million. Of these 48 million illnesses, only about 42 (about 0.0005 percent!) each year are due to consumption of fresh, unprocessed (raw) milk. Dr. Chris Kesser did a thorough investigation to get the true impact of raw milk illness and death (as the CDC makes it sound inevitable). He found that your chances of becoming hospitalized from a bacterial illness caused by raw milk is three times less than your chance of dying in a plane crash. The statistics indicate that most accusations and concerns over raw milk have been overstated, and because of that its health benefits remain underrated. Raw milk benefits are numerous and can help address a large number of nutritional deficiencies that millions of people, especially those eating the standard American diet, are currently experiencing. For instance, raw milk benefits allergies and skin, all while containing beneficial nutrients available in a living product. Five Benefits of Raw Milk 1. Reduces Allergies Studies now suggest that children who drink raw milk are 50 percent less likely to develop allergies and 41 percent less likely to develop asthma compared to children who don’t. A study published in the Journal of Allergy and Clinical Immunology involved 8,000 children with various diets, and one of the conclusions that researchers made was that by drinking raw milk, children experienced “naturally immunizing” effects. As documented on the Real Milk.com website, many other studies carried out over the past century have shown that raw milk benefits and supports children’s growth and development in other ways too. Examples are: increased immunity against infections, dental health boosted and support for skeletal growth. Again, reference in the show notes. You might be wondering: How can raw milk reduce allergies, and isn’t dairy tied to high rates of intolerance or sensitivities? Nutrients like probiotics, vitamin D and immunoglobulins (antibodies) found in raw milk naturally boost the immune system and reduce the risk of allergies in both children and adults. Enzymes found in raw milk help with digestion but are often reduced or destroyed during pasteurization. Without those enzymes, lactose intolerance is much more likely. 2. Helps Improve Skin Health Dairy might have a bad reputation when it comes to causing or worsening acne and skin inflammation, but this is far from the case with raw milk. As I’ve said, the benefits of raw milk are numerous, but surprisingly one of the most common reasons that people consume it is to benefit their skin. The success stories of people consuming raw milk to improve conditions such as psoriasis, eczema and acne are very widely reported. Raw milk benefits the skin for the following reasons: It contains healthy fats: Because raw milk contains large amounts of healthy saturated fats and omega-3 fats, it supports skin hydration. It supplies probiotics: Probiotics in raw milk can kill off or balance bad bacteria in your gut, which can dramatically affect the health of your skin. Research shows that inflammation and unbalanced gut flora contribute to skin issues such as acne and eczema. 3. Helps Prevent Nutrient Deficiencies According to the USDA, nearly 300 calories a day in the average American’s diet (out of a total 2,076 calories) can be attributed to added sugars or sweeteners. In comparison, nutrient-rich foods like raw dairy, fruits and vegetables only contribute about 424 calories. One serving of raw milk contains about 400 milligrams of calcium, 50 milligrams of magnesium and 500 milligrams of potassium. These minerals are vitally important for cellular function, hydration, building bone density, blood circulation, detoxification, muscle health and metabolism. 4. Can Be Used to Make Probiotic Foods Probiotics are microorganisms that line your gut and support nutrient absorption. They also help protect you from foreign invaders like E. coli and parasites. Homogenization is a high-pressure process that breaks down fat into tiny particles — however, fat subjected to high heat and pressure becomes oxidized and rancid. Many low-fat dairy products also have thickening agents added to make up for lost texture. Raw milk needs no added thickeners or shelf-stabilizers and also doesn’t contain added sugar or flavors. Most foods have some levels of natural sugar, including raw dairy, which has the type called lactose. The natural sugar in dairy is balanced with other nutrients and therefore not a concern (even healthy for you in moderation). We are slowly getting back to wholesome, unadulterated food that has served us for millennia. Over 10 million Americans now drink raw milk on a regular basis. They do so because of the benefits which include: Healthier skin, hair and nails Nutrient absorption Stronger immune system Reduced allergies Increased bone density Neurological support Weight loss Help building lean muscle mass Better digestion What exactly makes raw milk such an incredible superfood? Let’s take a look at its unique nutritional profile, and it will become clear. Raw Milk Benefits: Nutritional Profile of Raw Milk Fat-Soluble Vitamins A, D and K2 Because raw milk comes from cows or goats grazing on grass, research studies have shown that it contains a higher level of heart-healthy, fat-soluble vitamins than milk that comes from factory-farm cows. Raw Milk Benefits vs. Conventional Milk Let’s compare. Dairy products have gotten a bad rap over the years, but this is actually mostly due to the pasteurization process. When milk is pasteurized, it destroys many of the nutrients that make raw milk beneficial. Why is pasteurization even performed in the first place then? Because it exposes milk to very high temperatures, it can also kill harmful bacteria that are possibly able to make their way into the milk. However, as I mentioned before, it’s very rare for these types of bacteria to be found in milk to begin with. There are other options to ensure the bad bacteria doesn’t get into the milk in the first place. Key nutrients and enzymes are greatly reduced during the pasteurization process. If you consider the fact that many of these nutrients are not only reduced, but altered from their original states, you can understand that some of these nutrients are completely unavailable for your body to use and can be very difficult to digest for many people. Allergies and lactose intolerance are higher with pasteurization as well. Another major negative of pasteurization is that it destroys the digestive enzymes needed to break down and absorb certain nutrients. In the previously mentioned study, researchers found lactase (the enzyme in dairy) levels are greatly reduced with pasteurization, which is one explanation as to why so many people are lactose-intolerant. A survey conducted by the Weston A. Price Foundation found that of 700 families interviewed, amazingly about 80 percent of those diagnosed with lactose intolerance stopped having symptoms when they switched to raw milk. Raw Milk Nutrients To put things into perspective, according to medical studies, the following nutrients in raw milk are 100% fully active and during pasteurization they are altered or destroyed: Vitamin A, 35% reduction; Vitamin C, 25-77% reduction; Vitamin E, 14% reduction; Iron 66% reduction; Zinc, 70% reduction; B-Complex Vitamins, 38% reduction; Calcium, 21% reduction; Enzymes, 100% destroyed; Immunoglobulins, damaged; Whey Protein, denatured. Again, all of these nutrients are 100% active in raw, unpasteurized milk. Pasteurized milk is a lesser product. As I mentioned earlier, they end up adding stuff to a product that was perfect before pasteurization – unless contaminated by careless practices. The drink originated in the Caucasus, Eastern Europe and Russia, where it is prepared by inoculating cow, goat, or sheep milk with kefir grains. These instructions will be for cow’s milk kefir. Milk kefir is not only easy to make, it is a delicious, probiotic-rich, versatile beverage your whole family can enjoy. This recipe uses the direct starter culture. You will not have to maintain kefir grains. Perhaps you can learn that a little later.   Like most of us growing up in America, we've see the Tv Ads "Milk does a body good" but after some time of drinking that stuff I came to find out that it wasn't doing me any good because what we grew up drinking wasn't the Real Milk but it was the pasteurized, homogenized, processed fake Junk food. I started doing some research because I had read about the Miracle of Milk in the Quran "There is instruction for you in cattle. From the contents of their bellies, from between the dung and blood, We give you pure milk to drink, easy for drinkers to swallow." (Qur'an, 16:66) Furthermore it is written in the books of seerah (life biography of the Prophet Muhammad) that on the occasion of m'iraaj (ascension to the heavens) the Prophet peace be upon him was offered wine, or milk as a drink by Jibreel (the angel). The Prophet Muhammad PBUH chose to drink milk upon which Jibreel alaihi salaam commented: you are rightly guided and your Ummah(community) will be as well. (Seerat ibne Hishaam p: 158) I asked myself how could milk be negatively affecting so many people being the #1 cause of allergic reactions in people according to the FDA, and that answer became very clear after doing my research, it was because we haven't been drinking real milk, we've been drinking pasteurized, homogenized, processed fake Junk food that our bodies are rejecting. We are an Ummah of Milk but we have been kept away for so long from the beautiful blessings of Real pure Raw Milk, especially if you live in the States where Real Raw Milk is illegal in many states but ironically coca cola and other soft drinks which have absolutely no nutritional value in them and are actually slowly killing people being a root cause of diabetes, obesity, heart diseases, they are legal. Additional notes from this episode: -Bone broth should be in every athletes diet -Animal fat is full of vitamins A, D, and K which are important in preventing heart disease and bone loss -Butter is full of these vitamins -Grass Fed Butter is best, but regular butter contains these vitamins as well. -Cheese also is a great source of vitamin K -Butter, cod liver oil, livers are great sources of Vitamin A. -Pig lard is the best source of Vitamin D, even better than sunlight! Other good sources include egg yolks, butter, kidneys, blood. -Raw milk contains nutrients that build the immune system, gut wall and contains enzymes that help you absorb the minerals in it. -In contrast, pasteurized milk creates allergies and is associated, eczema, diabetes, digestive disorders, behavior problems. While some people have intolerances to grains, many people can eat grains, but they need to be prepared in the proper way! As the sale of raw milk is prohibited throughout Canada, this exposure reintroduces the controversy surrounding the standard pasteurization of milk products. Dairy products are a staple of the Canadian diet, but how much information are Canadians missing out on? As one of the most aggressive marketers within the agriculture/food industry, dairy receives a pretty positive image. But behind the production of milk are issues surrounding animal welfare, environmental impacts and consumer health. As this topic is so unexplored by the media, this will mark the first of a 2-part series on Dairy production in Canada.
