Tiago Rodrigues: “É imperativo sonhar” e questionar o mundo a partir de Avignon

A 80ª edição do Festival de Avignon decorre de 4 a 25 de Julho e tem, no cartaz, um enorme ponto de interrogação para destacar a importância de questionar o mundo através da arte. O tema acabou por surgir "de uma forma bastante livre", conta Tiago Rodrigues, o director do festival, que apresentou, esta quinta-feira, a programação no Théâtre du Rond-Point, em Paris. Foi aí que conversámos com o encenador e dramaturgo português sobre os nomes que preenchem uma edição em que, mais do que nunca, “é imperativo sonhar num mundo onde parecemos cercados por uma tremenda e terrível má notícia a cada dia”. Tiago Rodrigues é o artista português que dirige um dos mais prestigiados festivais de teatro do mundo e que este ano cumpre a 80ª edição. Desta vez, a linha de força de Avignon está estampada no cartaz do evento: de um fundo amarelo solar sobressai um enorme ponto de interrogação. A força das dúvidas e dos questionamentos talvez seja a chave para entrar no espírito de Avignon, a cidade-teatro que abre portas para o mundo durante os dias do festival. Tiago Rodrigues assume que “o questionamento” acabou por se impor como um tema natural desta edição porque todos os espectáculos e eventos programados deixam no ar perguntas que são antídotos contra as “respostas simplistas” que “criam a violência” dos tempos que correm. O encenador e dramaturgo sublinha que juntar pessoas no mesmo espaço para fazerem perguntas através da arte “é uma coisa absolutamente essencial e cheia de futuro”. Talvez por isso, o teatro é hoje ainda mais urgente e “claro que não está em vias de extinção”, avisa. Aos comandos do festival desde 2023 e reconduzido para um segundo mandato até 2030, Tiago Rodrigues alerta que “é imperativo sonhar num mundo onde parecemos cercados por uma tremenda e terrível má notícia a cada dia”, exemplificando com o medo que o assola quando vê artistas como o libanês Ali Chahrour a viver sob bombardeamentos em Beirute. Mas vamos à programação do festival, que divulgámos esta quarta-feira depois da apresentação no espaço La FabricA, em Avignon. Um dia depois, Tiago Rodrigues foi ao Théâtre du Rond-Point, em Paris, para a conferência de imprensa do lançamento desta edição e a RFI teve a oportunidade de falar com ele. Começámos por abordar os nomes lusófonos e o director do festival apontou, desde logo, a artista brasileira Carolina Bianchi como “a grande revelação nos últimos anos no teatro mundial”, lembrando que ela foi a grande aposta de Avignon em 2023 (o primeiro ano programado por Tiago Rodrigues). A encenadora, actriz e escritora vai estrear em Avignon o terceiro capítulo da trilogia "Cadela Força", três anos depois de ali ter apresentado o primeiro capítulo, “A Noiva e o Boa Noite Cinderela”, que ganhou o Leão de Prata da Bienal de Veneza. Por outro lado, haverá dois dias de maratona teatral de 10 horas em que as três peças poderão ser vistas de seguida: “A Noiva e o Boa Noite Cinderela”, “The Brotherhood” e “Uma Luz Cordial”. Sobre os também brasileiros Christiane Jatahy e Wagner Moura, que vão apresentar “Um Julgamento – Depois do Inimigo do Povo”, Tiago Rodrigues lembra que “Christiane Jatahy é uma artista muito amada pelo público do festival” e que, pela primeira vez, trabalha com Wagner Moura, “neste momento, o actor brasileiro mais conhecido no mundo” e que regressa ao teatro 16 anos depois “com essa vontade de quem regressa à essência do trabalho de actor”. Nesta edição, acabam por ser poucos os artistas lusófonos, mas fica a promessa que, depois de portugueses, cabo-verdianos e brasileiros terem estado em edições anteriores, “os artistas moçambicanos, angolanos e guineenses” também merecem ter o seu palco em Avignon. Continuando o seu projecto de convidar línguas para o festival, depois do inglês, espanhol e árabe, Tiago Rodrigues justifica a escolha, este ano, da língua coreana como “uma vontade de viajar até longe”. Daí que um quarto da programação seja constituída por artistas da Coreia do Sul e uma das convidadas de honra, que inspira dois espectáculos, é a Nobel da Literatura Han Kang. De resto, mais de metade dos projectos são dominados por artistas mulheres com “propostas absolutamente extraordinárias”. Na entrevista, o director do Festival de Avignon mostrou-se, ainda, muito “preocupado com o que está a acontecer em Portugal, nomeadamente em Lisboa”, algo que descreveu como “uma espécie de cerco à liberdade de criação” e “um grande abandono da verdadeira democratização” do acesso às artes e à criação. RFI: Na apresentação da programação, o Tiago Rodrigues falou na vontade de que o festival seja uma “festa de questionamentos” e o cartaz apresenta um grande ponto de interrogação. Quais são as linhas de força que cosem as entrelinhas desta edição e até que ponto o questionamento é uma delas? Tiago Rodrigues: “O questionamento foi uma forma bastante livre de darmos um tema a este festival, de relembrarmos ao público que este festival - que faz muito trabalho sobre a sua história, sobre o seu arquivo - ao chegar à 80ª edição, queria estar muito concentrado também no presente e no futuro, perguntar o que é que vamos fazer nos próximos 80 anos de festival. Hoje, quando defendemos a importância das artes, do teatro, da dança na vida das pessoas, muitas vezes dão-nos a entender que estamos a defender qualquer coisa que está em vias de extinção ou qualquer coisa que é antiga e que estamos a tentar ainda fazer sobreviver não se sabe bem porquê, quando o que nós defendemos é uma coisa absolutamente essencial e cheia de futuro que é a possibilidade de nos reunirmos em sociedade, pessoas juntas fisicamente no mesmo espaço para fazer perguntas juntos, mas fazer perguntas através da arte. E é isso que o festival faz há 80 edições e queríamos relembrar-nos a nós, os artistas, mas também ao público, que é isso que nós fazemos aqui. Num mundo onde estamos cheios de más respostas - poucas respostas mas más na maioria dos casos - respostas violentas, respostas simplistas, respostas pouco informadas, nós queremos colocar as boas perguntas. Perguntas às vezes complexas, perguntas também com prazer, perguntas com dúvida, perguntas que permitam o debate em vez de respostas que criam a violência. Eu acho que as artes podem ter esta função e certamente um festival onde vêm pessoas do mundo inteiro e se reúnem numa cidade que duplica a sua população no momento do festival para acolher o mundo inteiro que a visita, esse é o momento em que podemos fazer perguntas juntos.” Há três artistas brasileiros em destaque nesta edição: Carolina Bianchi, Christiane Jatahy e Wagner Moura. Comecemos por Carolina Bianchi, que foi revelada no primeiro ano de Tiago Rodrigues à frente do Festival de Avignon, em 2023. O que nos traz Carolina Bianchi? “Carolina Bianchi foi uma aposta do festival em 2023, na primeira edição que eu programei, porque acreditava que seria um grande acontecimento para o teatro europeu e mundial descobrir o trabalho de Carolina Bianchi que era um trabalho que estava muito discretamente escondido na cidade de São Paulo, que não rodava muito, que não era muito conhecido mesmo no Brasil. Tivemos a oportunidade de a desafiar a começar um projecto, uma trilogia. Ela sonhava fazer uma trilogia com três espectáculos consagrados à questão da violência e, sobretudo, a violência sobre as mulheres. O primeiro episódio é consagrado a essa violência na história da arte e na performance. O segundo no teatro e o terceiro na literatura mas como também a escrita pode ser uma forma de libertação, de emancipação. Ao ouvir essa ideia, dissemos imediatamente: ‘Vem fazer o primeiro espectáculo no Festival de Avignon'. O que aconteceu a seguir é do conhecimento geral. Carolina Bianchi, depois desse espectáculo, ganha o Leão de Prata da Bienal de Veneza, torna-se uma artista que faz todas as cenas europeias e mundiais, é revelada por esse festival. Criou o segundo capítulo entretanto, “Brotherhood”, e nós tínhamos combinado há muito que ela encerraria esta trilogia de novo em Avignon. A grande sorte que temos é que encerra com um espectáculo que será absolutamente fenomenal, “Uma Luz Cordial”, mas também conseguimos preparar, pela primeira vez, a hipótese de ver a trilogia seguida. São dez horas de teatro, uma grande aventura que tem ocupado esta artista durante quase cinco ou seis anos da sua vida e vamos poder ver não só a estreia mundial do último capítulo da trilogia, mas também, pela primeira vez, toda a trilogia seguida no Festival de Avignon, com cerca de 20 intérpretes brasileiros liderados por esta grande artista. É uma grande revelação dos últimos anos no teatro mundial.” E em relação a Christiane Jatahy, que já esteve em Avignon, e Wagner Moura, o que é que eles trazem ao festival? “Christiane Jatahy é já uma artista muito amada pelo público do festival, muito conhecida em França, uma encenadora que também é muito conhecida do público lusófono, seja no Brasil, seja em Portugal, que tem marcado as cenas europeias nos últimos anos, com as suas adaptações de repertório e desta vez, pela primeira vez, trabalha com Wagner Moura, que decide voltar ao teatro 16 anos depois. Ele tem vivido a sua aventura cinematográfica, televisiva, neste momento é, sobretudo, talvez o actor brasileiro mais conhecido no mundo com a nomeação ao Oscar, com o Globo de Ouro que ganhou e com a Palma de Ouro em Cannes que ganhou pelo filme “O Agente Secreto”. E é muito comovente ver Wagner Moura regressar ao teatro com essa vontade de quem regressa à essência do trabalho de actor. Aqui, Christiane Jatahy e Wagner Moura escreveram juntos, inspiraram-se no “Inimigo do Povo”, de Henrik Ibsen, autor norueguês, e pegando na história do “Inimigo do Povo”, onde o protagonista acabou de anunciar que as águas de uma vila termal estão contaminadas e, portanto, ao salvar a saúde das pessoas, condenou economicamente essa cidade, ele é acusado de ser inimigo do povo. O que vemos nesta peça é que imediatamente a seguir a esta história há um julgamento e nesse julgamento há vários testemunhos, nomeadamente o do Dr. Stockmann, interpretado por Wagner Moura e escrito por Wagner Moura com Christiane Jatahy, que defende que não é inimigo do povo, pelo contrário, enquanto outros defendem que ele é inimigo do povo. Será o público a decidir o resultado deste julgamento e o espectáculo tem dois finais em função da decisão do público.” Em termos de lusofonia, não há muitos mais nomes lusófonos. Porquê? “Porque o Festival de Avignon é uma página em branco onde nós tentamos responder às mesmas questões com respostas diferentes todos os anos. Evidentemente, a língua portuguesa, nem que seja pela minha presença na direcção do festival, tem estado mais presente do que no passado na história do Festival de Avignon, com artistas portugueses, cabo-verdianos e brasileiros também. Este ano, a presença da língua portuguesa está defendida por duas grandes artistas brasileiras e no futuro voltará a estar defendida por, não sei, artistas angolanos, moçambicanos, guineenses, porque não? Portanto, a língua portuguesa tem essa riqueza de poder ter artistas, nomeadamente no teatro e na dança, que merecem ser descobertos e mostrados no Festival de Avignon. Certamente que a cena lusófona - e não só lusófona, também a cena especificamente portuguesa - continuará a ter presença no Festival de Avignon. Este ano não tem, porque nem todos os países podem estar todos os anos no festival. Há países, por exemplo, como a Coreia do Sul, que, através do convite à língua coreana como língua convidada, este ano regressa ao Festival de Avignon depois de 25 anos de ausência. Há 25 anos que não havia um artista coreano no festival. O mundo é grande, o festival também é muito grande, mas não é tão grande como o mundo. E, portanto, embora gostássemos de fazer um festival que tivesse artistas de todos os países do mundo todos os verões, esse sonho terá que ficar para mais tarde. Por agora, queremos ter todos os artistas do mundo, mas um festival de cada vez.” Até porque o Tiago Rodrigues foi reconduzido até 2030 na direcção do festival, não é? “Tenho a grande sorte de ter sido reconduzido para um segundo mandato que começará após este festival. Este é o meu último festival do primeiro mandato, mas estou já a preparar os próximos quatro festivais até 2030. Sem dúvida que até 2030 não faltarão artistas de língua portuguesa.” O que é que o incitou a convidar a língua coreana? “A vontade de viajar até longe esteve na origem deste convite à língua coreana. É a quarta língua que convidamos para o Festival de Avignon. Começámos com o inglês, depois com o espanhol, duas línguas globais, mas de origem europeia. A terceira língua foi o árabe, uma língua de origem não europeia, mas muito presente na Europa e muito presente em França, onde é a segunda língua mais falada. Portanto, estas três línguas, por serem globais e também, por uma certa proximidade, por serem línguas que nos dizem coisas quando somos público do Festival de Avignon, que é um público maioritariamente francês, e o internacional que é maioritariamente europeu, merecia ser provocado pela distância. Então, começámos a procurar as línguas asiáticas que poderia ser interessante propor e percebemos que a língua coreana, sendo uma língua que só é falada numa península, é também uma espécie de 'soft power' através do K-pop, da música popular, através do 'K-drama', as séries televisivas coreanas que são muito populares no mundo inteiro...” Da Prémio Nobel da Literatura... “Da Prémio Nobel da Literatura. Mas por trás dessa presença global, há um grande desconhecimento, por exemplo, do teatro e da dança da Coreia, portanto, fomos pesquisar. Fomos muitas vezes à Coreia do Sul, a várias cidades, descobrimos muitos artistas e compusemos aquilo que corresponde a um quarto da programação do festival, com artistas coreanos. Há muito teatro, muito teatro documentário, muita dança, muitas formas tradicionais como o pansori ou outras formas populares de circo, de música, de teatro, de dança, mas actualizadas com uma leitura contemporânea. E também a literatura porque Han Kang [Prémio Nobel da Literatura] estará no Festival de Avignon, será uma das figuras centrais do festival. Haverá uma grande leitura de partes do seu romance, dirigida por Julie Deliquet, pela actriz Isabelle Huppert e pela actriz coreana Hyeyoung Lee, que juntas lerão, em francês e em coreano, partes do romance de Han Kang em presença da própria Han Kang. Haverá espectáculos que adaptam outros romances de Han Kang. E haverá também encontros e entrevistas públicas com a Prémio Nobel e ela será uma das grandes presenças da língua convidada.” Há uma artista lusodescendente, percussionista da cena electro-pop francesa Lucie Antunes, que faz um espectáculo com Mathilde Monnier, uma presença conhecida em Avignon. São duas mulheres fortes, "guerreiras", como o nome de um dos álbuns de Lucie Antunes. Também está programada Rébecca Chaillon, que faz igualmente espectáculos muito fortes. Nesta edição, há mais mulheres a dirigirem projectos do que homens. Qual é a mensagem subjacente? “É a mensagem natural de que não é difícil fazer uma programação que eu considero de grande, grande, grande qualidade, tendo uma grande maioria de mulheres à frente dos projectos. Não queremos passar outra mensagem que aquela de dizer que deveria ser perfeitamente normal haver muitas programações em muitos festivais do mundo onde há uma maioria de mulheres, porque há enormemente artistas mulheres que fazem projectos absolutamente extraordinários. A mensagem termina aí e depois as conclusões são tiradas pelas pessoas. Foi sem esforço que chegámos a uma programação maioritariamente feminina e por pura paixão pelo trabalho proposto por estas artistas. Quando fomos fazer as contas no final, porque gostamos sempre de poder perceber até que ponto é que estamos a respeitar a nossa vontade de paridade, percebemos que estávamos muito para lá da paridade. E ainda bem que sim, porque artistas como por exemplo Lucie Antunes e Mathilde Monnier, que vão colaborar nesse espectáculo “Silence”, são grandes artistas. Uma vem pela primeira vez ao Festival de Avignon, a Lucie, e a Mathilde Monnier é a artista - depois do fundador do festival Jean Vilar - que mais vezes se apresentou no Festival de Avignon. Mas temos também toda uma geração de grandes encenadoras francesas, como Rébecca Chaillon, Jeanne Candel, Marion Siéfert, Tiphaine Raffier, que vêm marcar presença no festival e mostrar como uma boa parte da pujança, da qualidade e da diversidade do teatro francês passa pelas encenadoras.” No seu primeiro ano na direcção do Festival de Avignon, em 2023, disse-nos que quando se vem a Avignon pela primeira vez, sai-se transformado. Que utopias ainda faltam cumprir em Avignon? No mundo tão complicado em que vivemos hoje, ainda é possível sonhar? “Não só é possível, como é imperativo sonhar num mundo onde parecemos cercados por uma tremenda e terrível má notícia a cada dia. Eu hoje, nesta apresentação, pude mencionar o choque com que vi as mensagens expressas por Ali Chahrour, um artista libanês que esteve no ano passado no festival e que está neste momento em Beirute sob bombardeamentos, e pude exprimir a minha perplexidade, o meu medo, o meu choque e, ao mesmo tempo, perante isto, é absolutamente imperativo sonhar, concretizar os sonhos e propor sonhar a outros. É por isso que nós falamos desta ideia de questões no festival. Questões podiam ser aqui um sinónimo de sonho. No Festival de Avignon eu diria que há ainda muitas coisas que eu gostaria de conseguir fazer até 2030. A batalha essencial, que é aquela que dá sentido ao facto de acompanharmos a criação artística, de defendermos a liberdade artística, de procurarmos meios para os artistas poderem trabalhar, é de conseguir completar, aperfeiçoar, prolongar a aventura do acesso democrático às artes. A democratização do acesso à criação continua a ser a enorme aventura não só em Avignon, mas no mundo inteiro e - porque estou a falar em português - preocupa-me muito o que está a acontecer em Portugal, em muitas cidades, nomeadamente em Lisboa, onde é completamente inesperado o que é uma espécie de cerco à liberdade de criação, ingerências políticas, mas também um grande abandono da verdadeira democratização. O acesso democrático às artes não é um exercício populista, uma flor que se põe na lapela nos dias de festa. É um trabalho quotidiano que deve permitir o acesso fácil à criação exigente, criação de grande qualidade feita em liberdade e à qual todas e todos devem ter acesso. Se fosse fácil, não era um serviço público. A cultura é um serviço público porque não é fácil de fazer. É preciso tempo, é preciso investimento e é preciso sonhar.”

This week on Sinica, I speak with Daniela Stockmann and Ting Luo, co-authors of Governing Digital China, a new book that examines how an authoritarian state governs a digital ecosystem it doesn't fully own, can never fully control, and yet fundamentally depends on. Danie — a professor of digital governance at the Hertie School in Berlin and a returning Sinica guest, having joined us way back in 2014 to discuss her earlier book on media commercialization and authoritarian rule — and Ting, associate professor in government and artificial intelligence at the University of Birmingham, together offer a richly empirical account of the triangular relationship between the Chinese state, major platform companies, and ordinary internet users. In Ibsen's “An Enemy of the People,” two conceptions of communal health do battle. Dr. Stockmann's is progressive, focused as it is on the vitality of the young, their new ideas, and the possibility of growth into a better future, even if that means encroaching on the powers that be. His brother's is conservative, focused on the use of authority and ascetic self-restraint to preserve existing achievements and ideas. But once in conflict, these conceptions seem to reveal themselves to be competing forms of elitism, and expressions of contempt respectively for both past and future. In Ibsen's “An Enemy of the People,” two conceptions of communal health do battle. Dr. Stockmann's is progressive, focused as it is on the vitality of the young, their new ideas, and the possibility of growth into a better future, even if that means encroaching on the powers that be. His brother's is conservative, focused on the use of authority and ascetic self-restraint to preserve existing achievements and ideas. But once in conflict, these conceptions seem to reveal themselves to be competing forms of elitism, and expressions of contempt respectively for both past and future. Det är många case där ute som lockar, så det är svårt att hålla köpfingret i styr. Först lite löst snack och sedan blir det case. Först ut blir Paxman (00:06:58). Bolaget har lagt bud på Dignitana och gör emission. Mycket spännande framåt, men är det dags att köpa nu?Sedan blir det Lammhults Design Group (00:25:12). Det kanske låter tråkigt, men det ser inte tråkigt ut framåt. Om bolaget med alla sina åtgärder bara hittar tillbaka till gammal form så handlas bolaget otroligt lågt. Åtgärderna är många och Q4'24-rapporten skvallrar om vad som kan vara på gång. Nästa case blir Pierce Group (00:41:18) som kränger MC-grejer för miljarder. Lönsamheten har haltat, men nu händer det grejer i bolaget. En lite ljusare marknad, uppstyr av verksamheten och starka underliggande kassaflöden lockar. Vidare till Lindex Group (00:51:57). Lindex är stabila och levererar fint, men andra benet Stockmann not so much. Planen är att sälja av Stockmann och bara sitta kvar med juvelen. Ett renodlat Lindex på den här värderingen är alldeles för billigt. Asymmetrisk risk när det är som bäst? Eller blir man inte av med sorgebarnet Stockmann?Vi skiftar helt fokus och över till OssDsign (01:00:19). Är bolaget bättre än stavningen i bolagsnamnet? Skyhög tillväxt, renodlad verksamhet och massa marknad att penetrera. Gedda kikar till caset och drömmer om en Bonesupport-resa i repris. Det blir P/S-multiplar och annan hausse och när att det touchas på EV/TAM. Från bendefekter till badrum. Svedbergs (01:11:51) handlas till P/E 12 på 2025e och man har imponerat i tuffa tider. Bolaget har gjort riktigt bra förvärv och hanterat byggkrisen väl. Möjligen har vi lagt det värsta bakom oss och ett höjt ROT-avdrag som grädde på moset kanske gör detta högintressant? Känns som det finns en ganska fin uppsida på 2025e här till begränsad risk. Vi ogillar ju inte matkassar och avslutar därför med Hellofresh (01:18:00). Matkassegiganten som har en aktie som är volatil likt ett bolag på smålistorna. Bolaget ska göra en Cheffelo här framåt, men marknaden verkar inte tro på detta alls. Blankarna flockas och insiders köper. Vem får rätt? Vi tror ändå på Hellofresh och lyckas bolaget kan det bli bra ös. Vad landar vi i då? Den som lyssnar får veta. Vi avslutar med en veckans volley i sedvanligt manér. Gedda vet inte vad han ska göra med alla sina pengar. Blir det att ha de på börsen, köpa fastigheter, onoterat eller möbelbets? Also check out the video version on my WeitzChiro YouTube page.]    Podcast Highlights 9:27   The Neurotransmitter Theory of Depression and Anxiety.  This theory is that specific neurotransmitters are responsible for mood disorders. For example, this theory includes the idea that depression is caused by a deficiency of serotonin.  In 2008 the New England Journal of Medicine published a paper suggesting that maybe this whole serotonin theory wasn't true, and a lot more people who took SSRIs actually didn't have as positive effect. [Belmaker RH, Agam G. Major Depressive Disorder. N Engl J Med 2008; 358:55-68.]  Then Fournier in JAMA published a paper showing that SSRIs had no better effect than placebo for mild to moderate depression, though they are beneficial for severe depression. In 2020 a paper discussed that the evidence is that "The main areas of serotonin research provide no consistent evidence of there being an association between serotonin and depression, and no support for the hypothesis that depression is caused by lowered serotonin activity or concentrations." [Moncrieff, J., Cooper, R.E., Stockmann, T. et al. The serotonin theory of depression: a systematic umbrella review of the evidence. Mol Psychiatry (2022).]  Some studies show that a medication, Stablon, which lowers serotonin, is equally effective as SSRI drugs that raise serotonin levels.  This is not to say that serotonin has no effect but only 27 to 35% of patients who take an antidepressant have a positive response.  Even if serotonin is a factor, there may be other factors that affect whether that antidepressant can be effective, such as do they have enough amino acids in their diet to make neurotransmitters?  It could also be because estrogen or other hormones are low or their adrenals or thyroid are off. Even if depression or anxiety are related to a neurotransmitter issue, we should be trying to figure out what caused this dysregulation of neurotransmitters.  Those reasons can include physiology, nutrients, hormones, inflammation, digestion, lack of sleep, not enough exercise, too much exercise, mitochondrial dysfunction, toxicity, mold. 16:02  SSRIs.  Drugs that potentially modulate serotonin and the other neurotransmitters, like the Selective Serotonin Reuptake Inhibitors (SSRI) even when they do work, tend to stop working after a period of time. And there are many problems with these drugs, including that they are very difficult to get off of these drugs when you want to stop taking them and they have significant side effects, including a significant increase in all-cause mortality.  Dr. John Neustadt spoke at the Connecticut Naturopathic Conference about how SSRIs increase the risk of osteoporosis by changing osteoblastic and osteoclastic activity.  Also when you place someone on these SSRI medications, it does change the function of the HPA axis and does change the ability and the balance of how the body regulates things like circadian rhythm, how it regulates the production of neurotransmitters, how it regulates the production of receptors. 20:32  Dietary Factors.  Two of the most important factors are the patient sleeping and pooping?  It is critical that the patient is having a good bowel movement daily.  We need to facilitate that whether it is adding fiber, water, magnesium, etc. If the patient has a lot of anxiety, that tends to put them into sympathetic mode, which shuts down the bowels. So we need to calm their anxiety, whether that is through supplements or acupuncture. Then the next step is to look at their diet and see what we can change to get them eating better.

MIT BLUMENKOHL, ROMANESCO & KAPERNSCHAUM Rezept für 2 Personen ZUTATEN ZUBEREITUNG Für den Kapernschaum: 1 Limette
1 EL Butter
1 EL Kapern, nonpareille 1 Schalotte
1 Knoblauchzehe
100 ml Weißwein
50 ml Noilly Prat Kapernwasser
150 ml Geflügelbrühe
80 ml Sahne Für das Püree: 250 g Blumenkohl
120 ml Milch
120 ml Schlagsahne 20 g gebräunte Butter Für den Skrei: 2 Stücke Skreifilet mit Haut (je ca. 200 g)
1 Knoblauchzehe
1 Zweig Thymian Olivenöl zum braten Für das Kohlgemüse: 1/2 kleinen Blumenkohl 1/2 kleinen Romanesco 4 Zweige Petersilie
1 EL Butter Feines Meersalz Pfeffer aus der Mühle Zur Fertigstellung: Salt Flakes Einige frittierte Kapernbeeren Die Limette filetieren. Die Schalotten und den Knoblauch in feine Streifen schneiden.
Die Butter in einem Topf erhitzen und die Schalotten, den Knoblauch, die Kapern und die Limettenfilets darin anschwitzen. Mit dem Noilly Prat und dem Weißwein ablöschen und einkochen lassen. Die Brühe und die Sahne angießen, aufkochen und auf 2/3 einkochen lassen. Die Sauce mit dem Stabmixer mixen und durch ein feines Sieb passieren. Mit Salz und Kapernsaft abschmecken. Den Blumenkohl mit der Milch und der Sahne in einen großen Topf geben und etwa 25 Minuten köcheln lassen, bis der Blumenkohl gar ist. Den Blumenkohl mit etwas Kochflüssigkeit im Standmixer fein pürieren, nach Bedarf noch etwas mehr von der Flüssigkeit zugeben und mit der braunen Butter und Salz abschmecken. Die Skreifilets kalt abbrausen und trocken tupfen.
Das Olivenöl in einer Pfanne erhitzen und die Skreifilets darin zuerst auf der Fleischseite anbraten. Wenden, die Thymianzweige dazu geben und im vorgeheizten Ofen bei 120 °C ca. 5 Minuten fertig garen. Die Blumenkohl- und Romanescoröschen getrennt in reichlich gesalzenem, kochendem Wasser bissfest blanchieren. In gesalzenem Eiswasser abschrecken. Die Petersilie waschen, trockenschütteln und die Blättchen fein schneiden. Die Kohlröschen trocken tupfen und in schäumender Butter goldbraun braten und mit Salz, Pfeffer und Petersilie abschmecken. Das Blumenkohlpüree, und das gebratene Kohlgemüse auf 2 vorgewärmten Tellern anrichten. Den Fisch mit Salt Flakes würzen und dazu anrichten. Den Kapernschaum aufschäumen und dazu anrichten.
