In this episode we are joined by Dr. Meaghan Kavanagh to chat about diet-disease relationships and translating nutrition knowledge into action for cardiovascular health.Meaghan is a Postdoctoral Fellow in the Department of Nutritional Sciences at the University of Toronto and the Clinical Nutrition and Risk Factor Modification Centre at St. Michael's Hospital, mentored by Dr. John Sievenpiper. Her research explores diet-chronic disease relationships through clinical trials, systematic reviews, meta-analyses, and epidemiology. Recipient of the CIHR-MSFSS award, she visited the CDC in Atlanta as a Guest Researcher to investigate the Portfolio Diet's cardiovascular benefits in the NHANES program.Meaghan is dedicated to translating her research into practical tools, including the PortfolioDiet.app, developed for cardiovascular disease prevention.Before her Ph.D., Meaghan was a project manager at the University of Toronto (2016-2020), researching dietary patterns and disease prevention with Dr. David Jenkins, and Clinical Coordinator for the STOP Sugars NOW Trial at St. Michael's Hospital (2019-2020) with Dr. John Sievenpiper. This week's guest Oxford nutrition scientist and globally recognized type 2 diabetes expert Dr. Nicola Guess helps sort through all things elevated glucose and helps separate what we need to worry about with what we don't. Nicola Guess, RD, MPH, PhD, is a dietitian based in London specializing in the prevention and management of type 2 diabetes. She is currently an associate professor at the University of Westminster, Research Fellow at King's College London, and Head of Nutrition Research at the Dasman Diabetes Institute in Kuwait. She also runs her own private clinical practice. Her primary research interests are in the prevention and management of type 2 diabetes, including the effects of nutrients on the underlying pathophysiology of type 2 diabetes. This approach aims to manage obesity and type 2 diabetes by providing necessary nutrients through sources like egg whites and lean beef, while significantly reducing blood sugar and insulin levels. A study from 1976 examined the effects of this diet on seven adults with long-standing type 2 diabetes and obesity, showing remarkable results in weight loss and reduced medication dependency.The study emphasized a strict intake of protein, water, and vitamin supplements without any carbohydrates or fats. Patients experienced control over carbohydrate metabolism, reduced hunger, and were able to get off insulin and other medications in an average of just 6.5 days. Dr. Layman served on the faculty at the University of Illinois from 1977 – 2012. Dr. Layman has been a leader in research about protein, nutrition for athletic performance, obesity, diabetes and cardiovascular health. Dr. Layman has over 120 peer-reviewed publications. He has received numerous awards for his research from the American Society for Nutrition (ASN) including election as an ASN Fellow. Dr. Layman served as Associate Editor of The Journal of Nutrition and the Journal of Nutrition Education and Behavior and on the editorial boards of Nutrition & Metabolism and Nutrition Research and Practice. Dr. Layman has an extensive consulting background including work with NASA, the Shriners Children's Hospital, the US Air Force plus numerous food companies and organizations including Kraft Foods, Nestlé, Danone, Agropur, the American Egg Board, and the National Dairy Council. He is the Director of the Food, Nutrition and Mental Health Research Group recognized by the Government of Catalonia; Principal Investigator of the CIBER Network Physiopathology of Obesity and Nutrition (CIBERobn) of the Carlos III Health Institute; Director of the Catalan Nutrition Centre of the Institute of Catalan Studies; Chairman of the Professorship Tree Nut World Forum for Nutrition Research and Dissemination; member of the Group of Experts of the Public Health Agency of Catalonia. Prof Salas-Salvadó is an expert in clinical trials evaluating the effect of diets and dietary compounds on cardiometabolic health. He was a lead researcher of the PREDIMED study, a landmark trial evaluating the effect of the Mediterranean Diet on the primary prevention of cardiovascular diseases. He is currently the Director and Chair of the Steering Committee of the PREDIMED-Plus trial. Dr. Alexis “Lekki” Wood is Associate Professor at USDA/ARS Children's Nutrition Research Center in the Division of Pediatrics-Nutrition at Baylor College of Medicine. Research in Lekki's lab aims to better understand how food influences our health. She examines the full chain of changes that occur from the moment food is put into our mouths, trough digestion and absorption of particular molecules, to where those molecules go and how they affect our organs. Outside of work, you can find Lekki working out at the gym and spending quality time with her two children and their German shepherd. She is also a Lego builder and a competitive Pokemon card player along with her son. She received her BSc with honors in Psychology and from the University of Warwick. Afterwards, she completed her Postgraduate Certificate in Education at the University of Cambridge. Lekki enrolled in graduate school at King's College London where she earned her MSc in social, genetic, and developmental psychiatry and her PhD in statistical genetics. Next, she conducted postdoctoral research at the University of Alabama focusing on statistical genetics and epidemiology. Lekki served on the faculty at The University of Texas, Health Sciences Center for about two years before joining the faculty at Baylor College of Medicine where she is today. Lekki has received a variety of awards and honors for her work, including the Young Investigator Award from the International Congress on ADHD and the Young Investigator Award from the Department of Pediatrics at Baylor College of Medicine. In addition, she has received the Scott Grundy Award for Excellence in Metabolism Research and the Mark Bieber Award for Excellence in Nutrition Research, both from the American Heart Association. She was also named a Fellow of the American Heart Association in 2015. In our interview, she shares more about her life and science.

Dr. Layman served on the faculty at the University of Illinois from 1977 – 2012. Dr. Layman has been a leader in research about protein, nutrition for athletic performance, obesity, diabetes and cardiovascular health. Dr. Layman has over 100 peer-reviewed publications. He has received numerous awards for his research from the American Society for Nutrition and the National Institutes for Health and for his nutrition teaching. Dr. Layman served as Associate Editor of The Journal of Nutrition and the Journal of Nutrition Education and Behavior and on the editorial boards of Nutrition & Metabolism and Nutrition Research and Practice.
