Welcome to Mise en Place - The Podcast, where we sit down with the change makers of the restaurant industry to uncover their stories, passions, and the moments that shape their culinary worlds. This week, we're delighted to reconnect with Chef Ron McKinley for a second time, catching him at a pivotal moment in his illustrious career. Recently departing from his role as Executive Chef at Canoe Restaurant in Toronto—a celebrated cornerstone of Canadian cuisine—Chef Ron is now strategically plotting his next chapter while savoring a well-earned pause. Fresh off a dream guest chef appearance in Charlie Trotter's iconic Chicago kitchen and a dynamic collaboration with Chef Vish Mayekar and the team at Elem in Vancouver, Ron is riding a wave of inspiration. Born and raised in Vancouver, Chef Ron's culinary spark was ignited by his mom's heartfelt Sunday roasts, propelling him on a global quest for culinary excellence. With over a decade of experience in elite kitchens across the UK, Australia, and the Middle East, he trained under Michelin-starred Chef Tom Kitchin in Edinburgh and refined his craft alongside Scott Pickett in Melbourne. Known for his disciplined approach and deep reverence for local ingredients, Ron's tenure at Canoe showcased his mastery in elevating Canada's diverse bounty—think Saskatoon chanterelles, Nova Scotian sea lettuce, and Ontario squab—through a seamless blend of classic French techniques and modern innovation. In this episode of Resilience Unravelled, Dr Russell Thackeray meets Dara McKinlay who is an expert on teaching the path to forgiveness. They discuss the concept of forgiveness, its relationship with spirituality and healing and its practical application in personal relationships. Dara was initially sceptical about the concept of forgiveness, viewing it as impractical, until experiencing a relationship problem that prompted her to explore it further. She found forgiveness surprisingly effective and realised it differed from the ability to pardon others as she had previously understood. In this podcast Dara explores the idea of forgiveness as a spiritual process involving unconditional love, the importance of balancing the left and right hemispheres of the brain for emotional intelligence and creativity and shares her personal journey of forgiveness.Main topicsThe concept of forgiveness and how it can be a practical path for those who identify as spiritual but not religious Forgiveness as a healing modality that involves spiritual connectionDifferent types of forgiveness, including forgiving oneself, forgiving others and how it can lead to moving on and starting anewWhy forgiveness is often associated with pardoning and why this definition may be limitingThe importance of self-accountability and forgiveness in relationshipsHow blame can be draining and prevent people from moving forward The concept of unconditional love and its role in healing emotional woundsThe concept of forgiveness and its practical applicationYou can find out more about Dara at resilienceunravelled.com/episode/dara-mckinlay and at http://daramckinley.com Dara offers a 6-week forgiveness course three times per year through howtoforgive.com You can find out more about our podcasts and send us messages at https://resilienceunravelled.com#resilience, #burnout, #intuition

Tim Pratt loves driving and trucks in particular. He can be found loading cattle and getting them to their destination at any time, night or day. In a full circle moment, Tim and his wife Groove, later went on to have the Normanton mail run contract themselves. We had our podcast interview with Keith Ballard safely “in the can” before he reported for duty at Saturday's Julia Creek Cup fixture at Mount Isa. It's now history that the legendary jockey went out a winner on the final ride of his 55 year career. Keith was winless in the first four races, but turned it around in the last when he went straight to the lead on Metal Bar and romped home by more than five lengths in the Julia Creek Cup. The fairy tale was enhanced by the fact that Keith's wife Denise trains the winner. Two days earlier we caught up with the 71 year old to reminisce a little about his remarkable career. He began by revealing that Denise had been trying to get him to retire for quite some time. He talks about a recent Cloncurry win on Capiteel for his trainer wife and acknowledges the support of trainer Tanya Parry. Keith talks about Denise's former riding career in an era when female jockeys were battling for recognition. He says Denise isn't too tough on him when his judgement is astray. The veteran says he was humbled in the extreme when the Ballards of Mount Isa were inducted into the Racing Queensland Hall Of Fame in 2021. Keith talks about the likelihood of withdrawal symptoms in the months ahead. The evergreen horseman says his nerve has remained intact. He gives a few reasons for his longevity as a professional jockey. The Longreach born horseman says he was initially inspired by the riding success of his uncle Jim Ballard. Keith pays tribute to his stoic and hard working mother, and speaks of his six brothers. He recalls his very first race ride, and an unforgettable first win on the very same horse. Keith says he's been relatively lucky when it comes to race falls, but he looks back on one bad buster at age 62- the worst fall in his long career. That fall occurred at remote McKinlay best known as the venue for many scenes in the famous Crocodile Dundee movies. Keith remembers some of the best horses he's ridden over more than half a century. His number one vote goes to Mr Ziesel, big by stature and big on ability. He pays tribute to the consistent Kerr Street. He won nine races on the horse in one season including the 1983 Darwin Cup. Keith remembers King Wells. He won 17 races on the former Victorian. The veteran says his career wouldn't have been complete without a Birdsville Cup win. He ticked that one off the bucket list in 2009. Keith talks about Sahara Canadian. He won 11 races on the grey, including one at faraway Ballina. He talks about another prolific winner in Be Somebody. He once drove 1000km to ride the horse at Darwin even though he knew the gelding couldn't win. Keith pays tribute to a handful of jockeys for whom he had special admiration. He makes special mention of a talented bush trainer. Keith pays a heartfelt tribute to son Dan, a very talented jockey whose career has been terminated by weight problems. Ballard says his failure to ride a metropolitan winner doesn't faze him too much. He talks about a handful of other jockeys who rode into advanced years. It was a great pleasure to talk to a genuine Queensland racing icon.

John Charles in conversation with Jenn McKinlay, Karen Schaler and Jacqueline Snowe
This week, I was delighted to be joined by two New York Times best-selling novelists who happen to live right here in Arizona & both of whom I met through Barbara Peters' wonderful world-famous independent Poisoned Pen Bookshop in Scottsdale. Jenn McKinlay is the award-winning bestselling author of several mystery & romance series & her work has been translated into multiple languages & in countries all over the world. Hard at work on her next books, Jenn's latest releases include LOVE AT FIRST BOOK, FONDANT FUMBLE, & her upcoming holiday-themed mystery A MERRY LITTLE MURDER PLOT is available on October 8. Paige Shelton had a nomadic childhood, as her father's job as a football coach took the family to seven different towns before she was twelve years old. After college at Drake University in Des Moines, Iowa, Paige moved to Salt Lake City, where she thought she'd only stay a few years, but she fell in love with the mountains & a great guy who became her husband. In 2015, her family moved to Arizona. In addition to the SCOTTISH BOOKSHOP MYSTERIES, she also writes the ALASKA WILD book series which began with THIN ICE. Her other series include the FARMERS' MARKET, COOKING SCHOOL, & DANGEROUS TYPE mysteries. PERFECT STORM, the sixth ALASKA WILD series title will be out on December 3, 2024, & WRITTEN IN STONE, the 10th SCOTTISH BOOKSHOP mystery is coming to stores on April 1, 2025.Given that not only do Jenn & Paige adore libraries & indie bookstores like Poisoned Pen but they also write mysteries set in bookshops, the idea of doing an episode centered on our love of books, movies, & bookshop movies seemed like a perfect fit! Warm, breezy, funny, & fast-paced, in addition to discussing the films DESK SET, 84 CHARING CROSS ROAD, & YOU'VE GOT MAIL, this wide-ranging episode touches on everything from their love of literature to the writing process itself. I had the best time with the prolific & insightful Jenn & Paige & you're sure to love our conversation as well.Originally Posted on Patreon (10/2/24) here: https://www.patreon.com/posts/113178419Theme Music: Solo Acoustic Guitar by Jason Shaw, Free Music Archive Shop Watch With Jen logo Merchandise in Logo Designer Kate Gabrielle's Threadless ShopDonate to the Pod via Ko-fi

Emma Morton grew up on Pandie Pandie Station, 30kms from Birdsville. The Birdsville races have been a big part of her, and her family's life. Growing up with horses and races Emma always wanted to follow in her grandfather and father's footsteps and become a trainer. Life got in the way for a little while, but Emma has come full circle and took out her trainer's licence 12 months ago. She now continues her family legacy. This weekend is a big one for Emma and her family, with them all heading 'home' to Birdsville for the Birdsville races - which is basically Birdsville Christmas. Emma isn't lining any horses up this year, but there's plenty of time for that in years to come. For now, it's about catching up with those she grew up with. Robbie Katter came on the mail run, meet consitituents at mailboxes, chatted for this podcast episode and opened the gates. Good day all round. And as much as we talked about being a politician (don't panic, there's no policy conversations!) it was great to chat about where we live. A teenage Julie Eggerling drove her grandfather to the races one day and that was it, she was hooked. Julie has owned many horses , bred a lot of her own and bought others in as ready to race horses. She gets joy from all of them. Working in the stables and being hands on every day sets Julie apart from most owners, and she loves that she still gets to nurture the connection with horses she's always had. Julie is the owners rep on the Central West committee and played an instrumental role in resurrecting the now very successful Alpha Jockey Club. Julie also makes a mean corn meat sandwich. Holding a dual jockey and trainer's licence is not for the faint hearted. Tash Chambers is one of a handful of females doing just that. Tash struggled with weight through her apprenticeship, wasting to make rides every week. A two year break followed, before making a come back in the North West. Tash put in the hard yards when she moved west, including a pretty scary fall at Julia Creek. Despite more downs than ups, Tash's love of winning has always kept her coming back. Faced with a lack of opportunities, Tash didn't let that stop her jockey career, taking out a trainer's licence to create her own chances. And it has been full steam ahead since. Tash has had runners in high profile provisional races, won the Pallarenda Stakes and had metro starters. More Than Mail is proudly brought to you by Brodie Agencies, McKinlay. Mackay based John Mazelmann knows how to train a winner in both thoroughbred and harness racing, having racked up well over 1000 wins in each code. Traditionally a harness man, John swapped to the gallopers simply because the harness track numbers disappeared. John now has over 50 thoroughbreds in work, with runners at mutiple tracks every weekend. Lachie Manzlemann followed in his dad's footsteps, taking out a group one as a harness driver as well as training both pacers and trotters. Lachie has also now turned his hand to training thoroughbreds and has made the move to Mackay to give the country circuit a good hitout. Ray Hermann is an unassuming country racehorse trainer. But in another life, he won seven Australian bronc riding titles, and two world titles. He is a legend of rodeo. Ray, or Cowboy as he is known, started with race horses, took a 30 year detour to the rodeo lifestyle, and is now back training horses. Cowboy's passion for the sport of rodeo is obvious when you get him talking about it. Sam McKinlay experienced something a lot of people can relate to in work and in life: she spent almost 25 years married… in her case, to a career that was exciting, fulfilling and rewarding. But over time she and the career she once loved grew apart from one another. They fell out of love and split up. Sam faced plenty of adversity over the years: a series of poorly timed recessions in her native England; an initial move to America that landed her in Florida (which wasn't a match for her); and later the clean break from a well-established career and a leap into the unknown. After dipping her toe in the real estate waters, Sam found her calling. She was able to apply a surprising amount of her PR and marketing experience to launch a new career as a concierge real estate agent. And it worked! In her first year she earned a prestigious “Rookie of the Year” award from her broker. In this engaging episode, Sam walks through the challenges she faced trying to find a meaningful career path early on; her journey through working for other people, then working for herself, then selling her firm and working for other people again; and the eventual abrupt end of her time working in PR. You can learn more about Sam McKinlay by visiting her website at www.sammckinlay.com. Second Act Stories theme music: "Between 1 and 3 am" by Echoes

Welcome back to another captivating episode of the WGI Unleashed Podcast! In our 82nd episode, we sit down with Melissa McKinlay, VP of Government Relations, from our West Palm Beach corporate office. From early childhood roots in the Northeast to becoming a key player in Palm Beach County's political landscape, it's safe to say that Melissa's journey is nothing short of riveting. From New York Beginnings to Florida Roots Melissa's story began in Sarasota, Florida, where she relocated from the Northeast with her family when she was just six years old – But it didn't take very long for the Sunshine State to win her over and become home. For the past 20 years, Melissa has called Palm Beach County her home, deeply embedding herself in the community and working to make a difference along the way. Academic and Early Political Aspirations Melissa's passion for politics took root during her high school years when she ran for class president, with her ambition leading her to Florida State University (FSU), where she pursued a degree in Political Science. Drawn to Tallahassee for its proximity to the state capital, she relished the experience of attending a renowned “football school” while simultaneously cultivating her political acumen. A pivotal recommendation from a professor landed her a legislative internship, setting the stage for her career in public service. Making a Difference in Palm Beach County Melissa's commitment to making a tangible difference in the community around her is evident through her impressive contributions. Notably, she has played a crucial role in establishing the Butterfly House, a sexual assault treatment center in Palm Beach County. Her collaboration with Senator Marco Rubio to improve housing conditions for farm workers in Belle Glade further underscores her dedication to advocacy and community welfare. Political Career and Personal Resilience In 2014, Melissa was elected as a Palm Beach County Commissioner, a role she approached with vigor and determination. Balancing the demands of political life and being a mother of three was no small feat, and Melissa candidly shares the challenges and triumphs of this journey in our latest episode of the WGI Unleashed Podcast. A New Chapter at WGI Melissa joined WGI to leverage her extensive experience and connections in government relations, with her role involving influencing public officials and securing vital contracts that shape how communities are envisioned, designed, and experienced. Her dedication to public service seamlessly aligns with WGI's value of ‘being the change you seek,' making her an invaluable asset to the team. Beyond the Office When she's not shaping policy or advocating for her community, Melissa enjoys exploring the great outdoors. An avid hiker, she also embodies a particular fondness for national parks, with Glacier National Park holding a special place in her heart. Join us in thanking Melissa McKinlay for sharing her remarkable journey, her insights on balancing career and family, and her unwavering commitment to making a positive impact. Duncan Fysh was passionate about many things, with keeping a record of history high on his list. Duncan spent years contributing local history stories to The Prickly Post. Spending his early years at Toolebuc, Duncan's family moved to Answer Downs after WWII. Both in the McKinlay district. From there it was to Proa for 50 odd years. Julia Creek became home and his passion grew to take in the Town and Country Club. Duncan was always on the hunt for his next big fossil and enjoyed flying. Duncan also had the Nelia mail run for seven years in the 90s. Most of all, Duncan loved a chat. Duncan passed away on October 16, 2023 aged 84. It was a privilege to reminisce with Duncan about his life. More Than Mail is proudly brought to you by Brodie Agencies, McKinlay. Contact Jim Brodie on 0427468713 or Lachy Smith on 0401168915. Isaac Carmona grew up in Barcelona, population 1.6 million. For the last two tourists seasons, Isaac has worked at the Walkabout Creek Hotel in McKinlay, population 10. Despite the obvious differences, Isaac has loved working in such a small town. The tourists have filled his book with suggestions of places to visit in Australia, and he has fine tuned his English. Which has mostly meant learning a whole lot of slang. Isaac's excitement for local events rubs off. His enjoyment of places and events that locals take for granted make you step back and realise just how fortunate we are to be living amongst such wide open spaces. We're in the midst of a testosterone crisis. Alarmingly, the average levels of this crucial male hormone have been plummeting, with one seminal study reporting a staggering 1% annual decline in average testosterone levels since the late 20th century.Travison, T. G., Araujo, A. B., O'Donnell, A. B., Kupelian, V., & McKinlay, J. B. (2007). A population-level decline in serum testosterone levels in American men. The Journal of Clinical Endocrinology & Metabolism, 92(1), 196-202. This decline isn't just a number; it's a reality affecting men's health, well-being, and quality of life. Lower testosterone levels have been linked to an increased risk of cardiovascular disease, decreased muscle mass, diminished cognitive function, and even a reduced lifespan.Araujo, A. B., Esche, G. R., Kupelian, V., O'Donnell, A. B., Travison, T. G., Williams, R. E., ... & McKinlay, J. B. (2007). Prevalence of symptomatic androgen deficiency in men. The Journal of Clinical Endocrinology & Metabolism, 92(11), 4241-4247. So, to call it a "crisis" is no exaggeration at all. You're in the right place if you're concerned about low testosterone or suspect you may be part of this growing trend. This article breaks down the 17 leading causes of low testosterone—all supported by scientific evidence. It's actionable, understandable information that you can use to take charge of your health. 1. Aging By the time you hit 30, your testosterone levels could start to decline by around 1% each year.Harman, S. M., Metter, E. J., Tobin, J. D., Pearson, J., & Blackman, M. R. (2001). Longitudinal effects of aging on serum total and free testosterone levels in healthy men. The Journal of Clinical Endocrinology & Metabolism, 86(2), 724-731. Why does this happen? Simply put, it's due to a slowdown in testicular function coupled with a decrease in the responsiveness to luteinizing hormone (LH). LH acts like a messenger, telling your testes to produce testosterone. As you age, this messaging system gets a bit sluggish, causing the testes to produce less testosterone.Wu, F. C., Tajar, A., Pye, S. R., Silman, A. J., Finn, J. D., O'Neill, T. W., ... & Lean, M. E. (2008). Hypothalamic-pituitary-testicular axis disruptions in older men are differentially linked to age and modifiable risk factors: the European Male Aging Study. The Journal of Clinical Endocrinology & Metabolism, 93(7), 2737-2745. A 1% drop might not sound like much initially, but consider this: by the time you're 50, you could be looking at a decline of 20% or more. That's significant. Lower testosterone levels can lead to diminished energy, less muscle mass, a decreased sex drive, and even mood swings. Over time, this could affect your quality of life. You can't stop the clock, but you can buffer its effects. Supplements, nutrition, and exercise can all slow the loss significantly, but an intense resistance training program is one of the most effective.Vingren, J. L., Kraemer, W. J., Ratamess, N. A., Anderson, J. M., Volek, J. S., & Maresh, C. M. (2010). Testosterone physiology in resistance exercise and training. Sports Medicine, 40(12), 1037-1053. 2. Excess Body Fat When it comes to testosterone, carrying excess weight is like a double-edged sword. On one end, body fat—especially abdominal fat—contains an enzyme called aromatase that converts testosterone into estrogen, the primary female sex hormone.Cooke, P. S., Nanjappa, M. K., Ko, C., Prins, G. S., & Hess, R. A. (2017). Estrogens in Male Physiology. Physiological reviews, 97(3), 995–1043. So the more fat you have, the more of your limited testosterone is converted into estrogen. This inevitably leads to even lower levels of free testosterone in the body. On the other end, low testosterone can lead to an increase in body fat, setting off a self-perpetuating cycle. Lower testosterone levels slow your metabolism and decrease muscle mass, making it easier to gain body fat.Saad, F., Aversa, A., Isidori, A. M., & Gooren, L. J. (2011).

Today I'm talking with Neil McKinlay, a meditation teacher and mentor who seeks to share his lifelong interest and reflection in the practice of meditation. Through his online communities, he offers a range of resources to encourage and empower meditation practitioners to access their inner wisdom and bring it into the world. Healing the Relationship with SelfNeil has been meditating since he was a teenager and has practiced in 2 separate Buddhist communities. However, the community was being driven by the spiritual leader's self-centered impulses, rather than healing and meditation. The manipulation and disrespect that Neil suffered from his teacher caused him to make the difficult decision to leave the community he had been a part of for twenty years.Neil left the community with a distorted relationship with himself and his intuition. He no longer works with a spiritual leader but is still reflecting on those twenty years and sifting through for the golden nuggets and silver linings of things he's learned and taken with him. Finding Places to GatherIn Neil's path to recovery and healing, he continued to turn towards his familiar practices of Buddhism and meditation. He has also gained a deeper appreciation for the importance of community, especially in light of COVID-19. Seeing how others were engaging in their lives with brilliance and creativity was a reminder to Neil of the same resilience and wisdom that lived inside himself. Meditation can offer something to heal trauma, Neil believes, but he also agrees that sitting in silence can be overwhelming for trauma survivors. His advice is to respect that experience of overwhelm as a message that meditation isn't the right tool at that moment. While meditation works for some people, other practices may feel safer and more effective, depending on the time. Neil says that this was part of his own experience, even with his deep connection to meditation. Inspiring Others With MeditationFor someone who's never meditated before, Neil suggests perusing the local library, YouTube, or podcasts for resources until something resonates with you, “like grocery shopping: just check things out based on what speaks to you.” There are many different languages and traditions of meditation, so he encourages listeners to explore what works for them.Neil offers resources of his own through his online communities. The Living Meditation Network is a free community that offers many of the meditation resources he mentions, such as writings, guided meditations, questions, and discussion boards. This and his subscription-based community are meant to be opportunities for people to gather, learn, and give and receive encouragement and inspiration weekly. Listen in to learn more about what happens when we meditate, online meditation communities, and Neil's future book and online curriculum.
