For her, peanuts are inseparable from cultural authenticity and student expectation.“Peanut has always been an essential part of our menu design. Students come from India, Southeast Asia, China, and peanut has always been part of their cuisine.”Behind the scenes, Pham's team focuses heavily on training and daily communication to ensure accuracy and safety. “We tackle cross-contact and mislabeling through intensive allergy trainings. We constantly supervise and remind our staff of safe and sanitary practice in the kitchen.”From pad Thai to chicken satay, Pham says removing peanuts isn't an option; students simply wouldn't stand for it.UMass's best-in-class allergen strategy comes to life in the approach led by Sabrina Hafner, associate director of nutrition. Her team engages students with food allergies long before they arrive on campus—through orientation questionnaires, proactive communication and personalized consultations.And when it comes to peanuts, Hafner is clear: “We don't ban peanuts. Providing an environment where students feel empowered helps set them up for adult life, because peanuts are really not going anywhere.”Across the country, campuses are rethinking old assumptions about allergen safety. Valeri Lea, founder of Sherman Moritz LLC and consultant to the National Peanut Board, sees a major evolution. “The trend used to be avoidance, but we're seeing a real shift. Full exclusion doesn't create a safer or more inclusive environment.”Lea shares how universities are implementing proven systems and how strong processes build campus-wide confidence. “You can serve peanuts safely with strong operational systems in place. It really starts with confidence built on the back of a good process.”Rounding out the episode is Macy Moates, a student at Clemson University and an NPB Health Nut Club Ambassador. Asian Heritage Chefs in White House History: Cooking to the President's Taste with Adrian Miller and Deborah Chang Come join us to hear about the virtually unknown history of the many Asian heritage chefs who have prepared meals for U.S. presidents extending back more than a century and continuing to the present day. Yet many of their names are largely unknown. Our speakers, Adrian Miller, a two-time James Beard Award-winning author, and culinary authority Deborah Chang, will present stories from their just-published book, Asian Heritage Chefs in White House History: Cooking to the President's Taste. Their book uncovers the stories of these chefs who hailed from China, Japan, the Philippines, South Korea, and Thailand; they were instrumental in preparing meals at state dinners, on presidential yachts, and at Camp David. During the presentation, Adrian and Deborah will spotlight five chefs they featured in their book, Their discussion will begin with the early immigrants who served on presidential yachts, and then delve into the life of Lee Ping Quan, the chef who served Presidents Harding and Coolidge. Their story will continue with the experiences of chefs at presidential retreats, rounding out with profiles of current and former White House chefs. Deborah, who adapted sixty recipes for today's home kitchen, will also share insights on how these chefs have influenced fusion cuisine and American classics. Adrian Miller is a food writer and attorney. A two-time James Beard Award winner, his books include Soul Food: The Surprising Story of an American Cuisine, One Plate at a Time, The President's Kitchen Cabinet: The Story of the African Americans Who Have Fed Our First Families, From the Washingtons to the Obamas, and Black Smoke: African Americans and the United States of Barbecue. He received his A.B. in International Relations from Stanford University in 1991, and a J.D. from the Georgetown University Law Center in 1995. In 2022, he was awarded an honorary doctorate from the Denver Institute for Urban Studies and Adult College. From 1999 to 2001, Adrian served as a special assistant to President Bill Clinton with his Initiative for One America and went on to serve as a senior policy analyst for Colorado Governor Bill Ritter Jr. Since 2013, Adrian has been the executive director of the Colorado Council of Churches. A certified barbecue judge, Adrian lives in Denver, Colorado. Deborah Chang, a former attorney, graduated from the Napa Valley Culinary School, cooked at numerous Bay Area restaurants, created award winning recipes for Diamond Crystal Kosher Salt and the National Peanut Board. She was born and raised in a suburb of Detroit, Michigan, where she wondered why almond chicken was the most popular dish at her parent's restaurant, Dragon Inn. When her son was diagnosed with severe food allergies in 2004, Eleanor was launched into a whirlwind of support and advocacy for the food allergy community, eventually leading her to found and lead the Food Allergy and Anaphylaxis Connection Team (FAACT). Alongside the FAACT leadership team, she provides the education, advocacy, awareness, and grassroots outreach needed for the food allergy community through programming available to all. She was inspired to start this work after her son, Thomas, was diagnosed with life-threatening food allergies to tree nuts, peanuts, wheat, and sesame; eosinophilic esophagitis (EoE) triggered by milk and wheat; asthma; and environmental allergies. In December 2015, Thomas had a food challenge with wheat and was no longer IgE-allergic to wheat. After a 3-month trial with wheat and another 3-month trial with milk (post wheat) in his diet and upper endoscopies, he has also outgrown the wheat and milk triggers for EoE and is in remission from EoE as of July 2016. Thomas outgrew his peanut allergy in 2016 at age thirteen. In October 2019, at age sixteen, Thomas outgrew almond, sesame, and brazil nut and continues to avoid walnut, cashew, pecan, hazelnut, and pistachio.As CEO of the Food Allergy & Anaphylaxis Connection Team (FAACT), Eleanor provides leadership, development, and implementation for all of FAACT's initiatives and programs, including Camp TAG (The Allergy Gang) – a summer camp for children with food allergies and their siblings that Eleanor founded in 2009. Eleanor has a Bachelor of Healthcare Administration degree from Lewis University in Romeoville, IL, and worked in hospital management for 15 years in Chicago and suburban Chicago prior to working in the nonprofit sector.After Thomas was diagnosed in 2004, Eleanor established a food allergy support group in a southwest Chicago suburb, Parents of Children Having Allergies (POCHA) of Will County, focusing on education and advocacy; chaired the FAAN Walk for Food Allergy in Chicago in 2007 and 2008; was awarded the FAAN Muriel C. Furlong Award for Community Service in 2008; and advocated in the Illinois state legislature on food allergy and Eosinophilic Disorders (EGID, EoE) issues. Thanks to the efforts of Eleanor and other patient advocates, legislation to ensure insurance coverage for elemental formulas was signed into law in 2007 and legislation establishing food allergy management guidelines for Illinois schools was signed into law in 2009.Eleanor joined the Food Allergy & Anaphylaxis Network™ (FAAN) in 2009 as Vice President of Education and Outreach, where she oversaw educational initiatives, all food allergy conferences, the Teen Summit, Camp TAG (The Allergy Gang) now under FAACT's umbrella, a Teen Advisory Group, support group development, and more. She advocated for the Food Allergy & Anaphylaxis Management Act (FAAMA) in Washington, DC, with her son Thomas as part of FAAN's Kids Congress on Capitol Hill and also advocated on Capitol Hill for the School Access to Emergency Epinephrine Act. Eleanor served on the expert panel for the CDC's Voluntary Guidelines for Managing Food Allergies in Schools and Early Care and Education Programs and was a reviewer for the National Association of Education (NEA) Food Allergy Book: What School Employees Need to Know. Eleanor conducted numerous radio, television, and print interviews on food allergy issues and wrote articles for Allergic Living and Living Without magazines. She presented at national and regional conferences about food allergy management in school and restaurant settings and educated personnel in schools and school districts across the country on food allergy management in schools and continues to do so with FAACT.In 2013, Eleanor joined the Cincinnati Center for Eosinophilic Disorders (CCED) as Senior Specialist of Program Management at Cincinnati Children's Hospital and Medical Center. There she led day-to-day clinical operations, clinical research projects, program development, marketing, and development.Eleanor has and continues to educate employees from numerous food industry companies and entertainment venues about food allergies, such as McDonald's Corporation, The Hain Celestial Group, Mars Wrigley, all SeaWorld Parks, and more.Leading the charge at FAACT, Eleanor and the FAACT Leadership Team provides the education, advocacy, awareness, and grassroots outreach needed for the food allergy community. Eleanor serves on the National Peanut Board's Allergy Education Advisory Council, Global Allergy & Airways Patient Platform Board (GAAPP), St. Louis Children's Food Allergy Management & Education (FAME) National Advisory Board, and Association of Food and Drug Officials (AFDO) Food Allergen Control Committee. In August 2015, Eleanor was inducted into The National Association of Professional Women's (NAPW) VIP Professional of the Year Circle for her commitment to healthcare and nonprofit industries. Abram Martens, a peanut farmer with a strong focus on soil health and conservation, emphasized the importance of taking care of the land.  Abram highlighted the ways peanut farmers are using new technologies and conservation techniques to improve efficiency while reducing their environmental impact.  This episode is a powerful reminder that agriculture is more than just an industry, it's a deeply personal, passionate, and evolving field. Parker grew up on a peanut farm, worked for Golden Peanut Company and had close to 40 years of experience. While some may have initially been hesitant that a former sheller could have the best interests of farmers at heart, Bob's integrity and strong relationships across sectors showed that he absolutely did. As we approach the end of Bob's 11 year-tenure at NPB, we highlight his key accomplishments and future thoughts, talk to colleagues who have become true friends and share insights into choosing a successor. Scientists work every day to unlock more value in the staples we've relied upon for literally hundreds of years. We get better, more nutritious food and innovative new uses that meet real market needs, and we get smarter consumers to boot. Our food system does more than ever before to provide a steady stream of information so we can all make better, smarter food decisions.  None of that happens by chance. It takes money and lots of it. It takes work by thousands of researchers all pointed toward finding answers to some of the toughest issues we still wrestle with in our food system. It takes a concerted effort to get the word out to people. But who's in charge of this endeavor? Not the government, not fancy think tanks, not big business or big universities. All those folks play a role in important roles, but we often overlook what hardworking, financially-challenged farmers who drive research and better consumer understanding of our food.  In this episode of Digging In, we're turning to the peanut industry to provide a stellar example of these organizations that work on behalf of its farmers. The National Peanut Board, a research, marketing and promotion organization for peanut farmers in the U.S., is headed up by Bob Parker, current CEO; and Ryan Lepicier, current Chief Marketing Officer and next CEO. Together, Bob & Ryan have worked for more than a dozen years to turn the commitment of peanut producers across the United States into something really, really important to the interests of consumers everywhere. Here's who we're speaking with in this episode: Bob Parker joined the National Peanut Board, a farmer-funded research, marketing and promotion organization based in Atlanta, Georgia, as its president and CEO in 2012. At the National Peanut Board, he has focused on the mission of improving the economic condition of America's peanut farmers and their families. Those efforts have centered around promoting the increased consumption of U.S.-grown peanuts domestically and internationally, addressing barriers to consumption such as peanut allergy and supporting production research to make peanut farmers more productive, efficient and sustainable.  The 2023 peanut crop is the 47th of Parker's professional career, although he has been around peanuts his entire life. He has a broad range of experience in peanuts and agriculture, both domestically and internationally, from growing, processing, public policy and marketing. Parker is a graduate of the University of Georgia with a degree in agricultural economics. Ryan Lepicier serves as senior vice president and chief marketing officer at the National Peanut Board with a passion for fueling peanut demand and consumption. He will begin his role as NPB president and CEO on January 1, 2024. He and his team are working to make peanuts the most relevant nut among millennial consumers by ensuring people are thinking about peanuts differently, talking about peanuts positively, engaging with peanuts more often, and buying more peanuts.   Lepicier has a bachelor's degree in journalism and communication from the University of Oregon and an MBA from Auburn University. He likes his peanut butter straight from the jar on a spoon. Crunchy, please.

Or that the peanut plant is a legume that is rotated with other crops to help with soil health?  Case Cox Kerr is the sixth generation of her family to farm on the Flint River in south Georgia. Her family farm, Longleaf Ridge, produces sweet corn, peanuts, field corn, soybeans, and timber. She was recently appointed by U.S. Secretary of Agriculture to serve as Georgia's Board Member on the National Peanut Board, and is the first woman from Georgia to serve on NPB! Casey points to several misconceptions and wishes people knew how much peanut farmers nationwide have invested into peanut allergy research, education, and awareness. Peanut allergies & early intro guidelines for dietitians to know Myths about peanuts – i.e., that they are inflammatory or nutritionally inferior to other nuts. Misconceptions about general nutrition benefits – natural peanut butter, organic peanut butter, added sugars, fats – many consumers seem to think there are big differences in the nutrient profiles, but they are largely similar.
