Dr. Layman served as Associate Editor of The Journal of Nutrition and the Journal of Nutrition Education and Behavior and on the editorial boards of Nutrition & Metabolism and Nutrition Research and Practice. Dr. Layman has an extensive consulting background including work with NASA, the Shriners Children's Hospital, the US Air Force plus numerous food companies and organizations including Kraft Foods, Nestlé, Danone, Agropur, the American Egg Board, and the National Dairy Council. Today we have one of the world's foremost authorities on dietary protein and amino acids, Dr. Donald Layman. He is known for his extensive research on muscle development as well as his studies of metabolic regulation for obesity, diabetes, and cardiovascular disease. Don is a professor emeritus in the Department of Food Science and Human Nutrition at the University of Illinois Urbana-Champaign. He spent 31 years on the faculty before stepping away in 2012. Much of Don's research over the years investigated the impact of diet and exercise on adult health problems related to obesity, type 2 diabetes and metabolic syndrome. His lab at Illinois particularly focused on understanding metabolism. He conducted clinical trials for nearly two decades that helped create a new understanding about how to optimize people's macronutrient balance and metabolism. In addition to his work on metabolism, Don has also conducted extensive research into ways to enhance body composition, increase energy levels and monitor blood sugar. Today Don works as Director of Research for the American Egg Board and is a nutrition consultant for the National Dairy Council and The National Cattlemen's Beef Association. He also is the Chief Science Officer for Qivana, a natural products marketing company that promotes the weight-loss program that Don developed in his lab at the University of Illinois. [00:05:16] Don explains how he first became interested in science. [00:05:39] Don talks about how he realized in college that he wasn't as good at math as he thought he was. He shares how this shifted his focus away from chemical engineering. [00:06:27] Marcas asks if Don's natural intuition and interest for biochemistry stemmed from growing up on a farm. [00:07:10] Ken mentions that as Don was studying biochemistry, he started looking into protein synthesis with a professor by the name of Arlen Richardson, who was known for his aging research. Ken asks Don to talk about this period and how his interest in protein and muscle evolved. [00:08:27] Marcas asks Don to explain for listeners the importance of protein as it relates to metabolism and what he means when he talks about protein turnover. [00:09:36] Marcas mentions that we hear a lot about the need to maintain muscle as we grow older, but that back in the ‘70s and ‘80s when Don was starting his career, there wasn't much of a focus on muscle, except in terms of athletic performance. Marcas goes on to explain that largely because of Don's research, we now know that protein is critical in terms of helping people stay healthier as they age. Marcas asks Don to give a sense of just how important protein is for our health span and aging. Digestive or “gut” health is a hot topic today and understandably so. The National Institutes of Health estimates that approximately 60-70 million people are affected by digestive diseases. Culture and Serving: Interview with A.D. Ed KullA native of Queens, Kull earned his BA from SUNY Stony Brook, and his MBA from St. John's University. Kull served as Senior Vice President at GENYOUth Foundation, responsible for business development for its NFL Fuel Up to Play 60, NFL Flag Football, and AdCap programs. This NFL and National Dairy Council partnership impacts over 73,000 schools (K–12) and reaches over 38 million students nationwide.After his stint with the NFL Ed became the VP of Athletics at St. John's where he worked to create new revenue growth for the Athletic Department. Kull spearheaded the negotiation of the athletic apparel deal with Under Armour and the venue contract with Madison Square Garden. Dr. Pescatello is Distinguished Professor of Kinesiology at the University of Connecticut (UConn). She holds joint appointments in the Departments of Allied Health Sciences, Nutritional Sciences, and Physiology and Neurobiology at UConn, and the Department of Community Medicine and Health Care at the UConn School of Medicine. Her research focuses on exercise prescription to optimize health benefits — particularly among adults with hypertension and overweight and obesity — and on genetic and clinical determinants of the response of health-related phenotypes to exercise, particularly blood pressure and muscle strength. All parents want what is best for their child and that includes growing up strong, healthy, and enjoying a wide variety of foods. However, children may go through a period of “picky eating” which can start at any age, but it is most common in toddlers. The introduction of new tastes, textures, smells and temperatures can be frightening to a child. It's important to provide parents with strategies and reassurance that picky eating is part of normal development. Dr. Christopher Cifelli Ph.D. is Vice President of Nutrition Research at National Dairy Council where he oversees the Dairy and Public Health research platform, the goal of which is to provide scientific evidence that can be used to protect and promote dairy in public policy. Dr. Cifelli is responsible for the strategic planning, development, and management of dairy-centric research on chronic disease risk, childhood nutrition, CDC's National Health and Nutrition Examination Survey related research, and nutrition and sustainability. Dr. Cifelli obtained both his B.S. degree in Biology and his Ph.D. degree in Nutritional Sciences from Penn State University, where his graduate work focused on understanding how vitamin A status and inflammation affected retinoic acid metabolism, including mathematical modeling to study the effects of retinoic acid supplementation on whole-body vitamin A kinetics. During his post-doctorate work at Penn State, he examined vitamin A kinetics, storage and disposal rates in adults from different ethnic backgrounds. In his current role at the Dairy Research Institute, Dr. Cifelli is involved in the development, design, initiation, management and communication of research projects on the health benefits associated with adequate dairy consumption, including those studies examining the effects of vitamins and minerals found in dairy on bone density, weight maintenance, and metabolic health. Dr. Cifelli is active in several professional organizations. He currently serves as the chair of the Science and Translation Committee for the International Scientific Association for Probiotics and Prebiotics and is on the Board of Directors for the Yogurt in Nutrition Initiative. In addition he has authored or co-authored more than 20 peer-reviewed research manuscripts, reviews and abstracts.

She has fourteen years of experience and has worked with Ben Hogan Sports Medicine, the Dallas Cowboys, the Texas Rangers and their minor league affiliates, Texas Christian University Athletics, FC Dallas Soccer, the NBA G League, Jim McLean Golf School and many PGA Tour players as well as with many middle school, high school and endurance athletes. She also works with the everyday exercising population to improve health and wellness. Amy is a media spokesperson with over 750 media placements in a variety of media outlets locally and nationally. She serves as a media dietitian for RDTV where she does food and nutrition TV segments nation-wide. Amy is also an ambassador/speaker for the American Heart Association and the National Dairy Council, a speaker for Gatorade Sports Science Institute has served on the Dairy Max Health and Wellness Advisory Council and consults for Catalyst Training Lab where she provides international education and training for dietitians in five Middle Eastern countries. She speaks at a variety of nutrition, athletic training and coaching conferences in addition to providing health and nutrition presentations to various businesses and companies. Amy is the author of The Sports Nutrition Playbook, a play-by-play on sports nutrition for athletes, parents, coaches and trainers. According to the American Academy of Pediatrics, the most active period of neurologic development occurs in the first 1,000 days of life. For the first time, the 2020 Dietary Guidelines for Americans will consider neurocognitive health and development through all life stages as well as comprehensive dietary guidance for women during pregnancy and infants and toddlers under 2 years of age. As the body of science grows, the critical nature of key nutrients during the first 1,000 days will become an area of increasing importance for health professionals to address. However, despite this exciting momentum, research reveals a concerning knowledge gap amongst key practitioners, obstetricians, and pediatricians as well as mothers when it comes to key nutrients such as choline and lutein. Lawyers and doctors ruled that the behavior was a result of undiagnosed depression and he should not serve jail time.-Brazilian Tattoo Artist Arrested For Tattooing Thief's ForeheadA tattoo artist in Sao Paolo, Brazil caught a 17 year old trying to steal his bike. As punishment, he tattooed his forehead with, "sou ladrão e vacilão," which translates to, "I am a thief and a loser." The tattooer and a friend, who assisted in the incident, were arrested for torturing the boy.-Study Finds Gamers Have Lower Rate of Premature EjaculationA recent Italian study on gaming and sexual health found that gamers appear less likely to experience premature ejaculation during sex. On the other hand, they also found that male gamers overall had a lower sex drive in general, so that may be the true reason for the low rate of PE. -Man Bitten by Snake, Bites Wife So They Can Die TogetherA man in Indian woke up to find he had been bitten by a poisonous snake. After telling his wife that he loved her and wanted them to die together, she allowed him to bite her on the wrist as well. He later died, but she was treated at a local hospital and survived. -JACKASS OF THE WEEK- WAY Too Many Adults Think Chocolate Milk Comes From Brown CowsA survey by the National Dairy Council found that 7% of adults polled think that brown cows produce chocolate milk. As punishment, he tattooed his forehead with, "sou ladrão e vacilão," which translates to, "I am a thief and a loser." The tattooer and a friend, who assisted in the incident, were arrested for torturing the boy.-Study Finds Gamers Have Lower Rate of Premature EjaculationA recent Italian study on gaming and sexual health found that gamers appear less likely to experience premature ejaculation during sex. On the other hand, they also found that male gamers overall had a lower sex drive in general, so that may be the true reason for the low rate of PE. -Man Bitten by Snake, Bites Wife So They Can Die TogetherA man in Indian woke up to find he had been bitten by a poisonous snake. As the the two main companies in the FBD group hold EGMs on 22 October to decide on the sale of the company's hotels and property portfolio, Justin McCarthy and Eoin Lowry discuss the changes planned at the insurer founded by Irish farmers.On Tuesday, the National Dairy Council and Kerrygold held their annual Quality Milk Awards ceremony. Dairy editor Jack Kennedy was on the judging panel and he takes us back to the awards ceremony with online journalist Amy Fitzgibbon.
