Rachel Voet (MS, RD, LD, LMNT) joined Nebraska Athletics in July of 2023 working with performance nutrition as the in-house dietitian for the Lewis Training Table. Voet oversees and ensures functionality of Notemeal, meal planning and educational tool that consists of a database with Training Table recipes and nutrition information. Voet also assists with counseling, education and accommodation for student-athletes who have food allergies. Voet previously served as the Director of Sport Nutrition for Football at Iowa State University from January 2020 until July 2023. At Iowa State, Voet was responsible for all performance-nutrition related services and one-on-one consultations for the Cyclone football team related to body composition, hydration, supplementation and individualized fueling. She oversaw the opening of the first student-athlete training table and fueling station in the Stark Performance Center and oversaw a budget of $2.5 million. During spring of 2022, Voet served as the only Performance Dietitian in the Athletic Department, providing medical nutrition therapy and support to both football and Olympic Sport Teams. Throughout this time at Iowa State, the football team competed in the 2020 Big 12 Championship game, 2020 Fiesta Bowl and 2021 Cheeze-it Bowl. Prior to her time at Iowa State, Voet worked in Nebraska's Performance Nutrition Department as a Sport Nutrition Fellow primarily supporting football, overseeing undergraduate student workers at fueling stations and Lewis Training Table and managing inventory for the Performance Nutrition Department. Voet received her Bachelor's and Master's degrees in dietetics and kinesiology at Iowa State University. She completed her dietetic internship at University of Nebraska, Lincoln. Not making the team for the Torino Games, combined with the lack of options for women's ice hockey post college, she found herself inspired by the novel physical demands of swimming, biking and running after attending a local sprint triathlon with her parents. Jackson fell in love with testing her individual limits after 20 years of team sport, and found success in triathlon, racing professionally for almost 15 years, winning some of the most prestigious events in the sport along the way. She is a 6x Ironman Champion, 16x Half Ironman Champion, and Escape from Alcatraz Champion. Jennifer Gibson is an internationally recognized sport dietitian with 16 years of experience in elite sport. When elite triathlete Justus Nieschlag suffered a partial rupture of his Achilles tendon, it couldn't have come at a worse time. The Tokyo Olympics in 2021, delayed by a year because of the Coronavirus pandemic, were just around the corner and the then 29-year-old was in pain. "Knowing I couldn't perform as I would like and I couldn't train and race 100 per cent meant it was a really tough time for me," he tells Stefan Gates in this episode of the Food Matters Live Podcast, made in partnership with GELITA. "You prepare for four years then it's like this. It was super hard and it was not a good time for me." Justus did compete at the Games, representing Germany in the Triathlon. Despite carrying the Achilles injury, he helped the team to an impressive sixth-placed finish in the team relay. For context, he would usually have a two-week break at the end of the season, before returning to the track. The prospect of a complete break from running for at least 12 weeks was not a welcome one. Up until he suffered the partial rupture of his Achilles tendon, Justus admits that nutrition was "never a big part" of his thinking. Megan Kuikman, registered dietitian and sports nutrition researcher is currently completing her PhD at the Australian Catholic University. Megan researches the area of relative energy deficiency in sport and in todays episode we discuss disordered eating in sport. Disordered eating in simple terms is an eating behaviour that is not optimised, it may range from what is commonly perceived as normal dieting to reflect in some of the same behaviour as those with eating disorders.  An individual with disordered eating may regularly engage in behaviours such as skipping meals, compulsive eating, compulsive exercise, and or restrictive eating, but without meeting all required criteria for a diagnosed eating disorder. There can be health and performance consequences that accompany disordered eating. It's been estimated that the prevalence of disordered eating and or eating disorders in athletes ranges from 0 to 19% in males, and 6% to 45% in females. David Nieman is a professor at Appalachian State University, and director of the Human Performance Lab at the North Carolina Research Campus in Kannapolis, NC. He is a pioneer in the research area of exercise and nutrition immunology. Dr. Nieman has received more than $10.9 million in research grants and published more than 370 peer-reviewed publications in journals and books. He is the Editor-in-Chief of the sports nutrition section of the journals Nutrients and Frontiers in Nutrition, and sits on 10 journal editorial boards including Medicine and Science in Sports and Exercise, and the International Journal of Sport Nutrition and Exercise Metabolism. His publications have been cited more than 41,000 times. He is the author of nine books on health, exercise science, and nutrition. Dr. Nieman served as vice-president of the American College of Sports Medicine (ACSM), and two terms as president of the International Society of Exercise and Immunology. He has also run 58 marathons with a PR of 2:37. In this episode, Dr. Nieman answers a question I've been asking everyone - what is the best way for marathoners to approach the problem of limited glycogen stores and the challenge of adapting to higher fat utilization?
