I'm Rachel Fletcher Morgan Stanley's, Head of EMEA Sustainability Research.Arushi Agarwal: And I'm Arushi Agarwal European Sustainability Strategist, based in London.Rachel Fletcher: From kombucha to kimchi, probiotic rich fermented foods have long been staples at health-focused grocers. On the show today, a deeper dive into the future of fermentation technology. Does it hold the key to meeting the world's growing nutrition needs as people live longer, healthier lives?It's Wednesday, 26th of March, at 3 pm in London.Many of you listening may remember hearing about longevity. It's one of our four long-term secular themes that we're following closely at Morgan Stanley; and this year we are looking even more closely at a sub-theme – affordable, healthy nutrition. Arushi, in your recent report, you highlight that traditional agriculture is facing many significant challenges. What are they and how urgent is this situation?Arushi Agarwal: There are four key environmental and social issues that we highlight in the note. Now, the first two, which are related to emissions intensity and resource consumption are quite well known. So traditional agriculture is responsible for almost a third of global greenhouse gas emissions, and it also uses more than 50 percent of the world's land and freshwater resources. What we believe are issues that are less focused on – are related to current agricultural practices and climate change that could affect our ability to serve the rising demand for nutrition.We highlight some studies in the note. One of them states that the produce that we have today has on average 40 percent less nutrition than it did over 80 years ago; and this is due to elevated use of chemicals and decline in soil fertility. Another study that we refer to estimates that average yields could decline by 30 to 50 percent before the end of the century, and this is even in the slowest of the warming scenarios.Rachel Fletcher: I think everyone would agree that there are four very serious issues. Are there potential solutions to these challenges?Arushi Agarwal: Yes, so when we've written about the future of food previously, we've identified alternative proteins, precision agriculture, and seeds technology as possible solutions for improving food security and reducing emissions.If I focus on alternative proteins, this category has so far been dominated by plant-based food, which has seen a moderation in growth due to challenges related to taste and price. However, we still see significant need for alternative proteins, and synthetic biology-led fermentation is a new way to tap into this market.In simple terms, this technology involves growing large amounts of microorganisms in tanks, which can then be harvested and used as a source of protein or other nutrients. We believe this technology can support healthy longevity, provide access to reliable and affordable food, and also fill many of the nutritional gaps that are related to plant-based food.Rachel Fletcher: So how big is the fermentation market and why are we focusing on it right now?Arushi Agarwal: So, we estimate a base case of $30 billion by 2030. This represents a 5,000-kiloton market for fermented proteins. We think the market will develop in two phases. Phase one from 2025 to 2027 will be focused on whey protein and animal nutrition. We are already seeing a few players sell products at competitive prices in these markets. Moving on to phase two from 2028 to 2030, we expect the market will expand to the egg, meat and daily replacement industry.There are a few reasons we think investors should start paying attention now. 2024 was a pivotal year in validating the technology's proof of concept. A lot of companies moved from labs to pilot state. They achieved regulatory approvals to sell their products in markets like U.S. and Singapore, and they also conducted extensive market testing. As this technology scales, we believe the next three years will be critical for commercialization.Rachel Fletcher: So, there's potentially significant growth there, but what's the capital investment needed for this scaling effort?Arushi Agarwal: A lot of CapEx will be required. Scaling of this technology will require large initial CapEx, predominantly in setting up bioreactors or fermentation tanks. Achieving our 2030 base case stamp will require 200 million liters in bioreactor capacity. This equals to an initial investment opportunity of a hundred billion dollars. But once these facilities are all set up, ongoing expenses will focus on input costs for carbon, oxygen, water, nitrogen, and electricity. PWC estimates that 40 to 60 percent of the ongoing costs with this process are associated with electricity, which makes it a key consideration for future commercial investments.Rachel Fletcher: Now we've talked a lot about the potential opportunity and the potential total addressable market, but what about consumer preferences? Do you think they'll be easy to shift?Arushi Agarwal: So, we are already seeing evidence of shifting consumer trends, which we think can be supportive of demand for fermented proteins. An analysis of Google Trends, data shows that since 2019, interest in terms like high protein diet and gut health has increased the most. Some of the products we looked at within the fermentation space not only contain fiber as expected, but they also offer a high degree of protein concentration, a lot of times ranging from 60 to 90 percent.Additionally, food manufacturers are focusing on new format foods that provide more than one use case. For example, free from all types of allergens. Fermentation technology utilizes a very diverse range of microbial species and can provide solutions related to non-allergenic foods.Rachel Fletcher: We've covered a lot today, but I do want to ask a final question around policy support. What's the government's role in developing the alternative proteins market, and what's your outlook around policy in Europe, the U.S., and other key regions, for example?Arushi Agarwal: This is an important question. Growth of fermentation technology hinges on adequate policy support; not just to enable the technology, but also to drive demand for its products. So, in the note, we highlight various instances of ongoing policy support from across the globe. For example, regulatory approvals in the U.S., a cellular agriculture package in Netherlands, plant-based food fund in Denmark, Singapore's 30 by 30 strategy.We believe these will all be critical in boosting the supply side of fermented products. We also mentioned Denmark's upcoming legislation on carbon tax related to agriculture emissions. We believe this could provide an indirect catalyst for demand for fermented goods. Now, whilst these initiatives support the direction of travel for this technology, it's important to acknowledge that more policy support will be needed to create a level playing field versus traditional agriculture, which as we know currently benefits from various subsidies.Rachel Fletcher: Arushi, this has been really interesting. When Winter Storm Uri hit Texas in 2021, it led to more than 240 deaths and hobbled the electric grid for days. At the time, Arushi Sharma Frank was working on Tesla's U.S. energy policy team, trying to convince Texas regulators to allow it to connect a 100 megawatt battery to the grid. It was part of a larger effort to encourage distributed energy resources (DERs) as a means of improving grid resiliency. After Uri, regulators greenlit Tesla's pilot projects.Today, Arushi runs her own grid resiliency consultancy and recently helped community groups in New Orleans draft a proposal for a $32M virtual power plant and microgrid project. The  city council quickly approved the proposal after hearing from locals and advocates from other cities that have already seen the benefits of grid resiliency projects.  This week on With Great Power, Arushi tells Brad why she thinks experiencing grid failures has turned stakeholders – from regulators to politicians to consumers – into advocates for grid resiliency. This podcast is produced by GridX in partnership with Latitude Studios. I first learned about Arushi Jain three years ago, when most people who are aware of her work did. Her 2021 album Under The Lilac Sky was extremely beautiful, six tracks of droning, pulsing synth music with her vocals kind of floating in the middle like she was singing from the middle of an isolation tank. It was entirely created with a modular synth rig that she constructed and programmed, but the compositions were based on ragas from the Indian classical tradition, including the fact that the album was meant to be heard at a specific time of day, while the sun was setting. Under The Lilac Sky was described as her first full-length album, but she had also put out a four-song EP, Just A Feeling, in 2018, documenting the earliest stages of developing her sound, and another four-track release, With & Without, in 2019, where each track was inspired by a specific raga, although with that one, she says on the album's Bandcamp page, “I didn't always follow the rules of the ragas, I'm sure those who know this art can hear that, and maybe purists won't approve.”There's also a companion release, With & Without (Golem Version), which features two remixes of tracks from the original album for some kind of virtual reality dance piece, and then a 46-minute soundtrack to the piece.Her music is still evolving. At the end of March, she's putting out a new album, Delight, on which she's not working just with the modular synth. She's also gotten people to play flute, saxophone, classical guitar, cello and marimba and sampled those parts and incorporated them into the tracks, which are also much more conventionally song-like than her previous work. And the vocals and lyrics are much more up front as well. Delight isn't a pop album, but it's absolutely more directly communicative than her previous work.We had a really interesting conversation. We talked about her background singing Indian classical music with her family, how she came to electronic music when she arrived in America to go to college, how modular synths actually work, which I'm still not 100 percent sure I understand, how her live performances have evolved, and even a little bit about her visual presentation and how the music she makes relates to her Indian identity – or doesn't. So on that note, here's my conversation with Arushi Jain.

Arushi Garg, a 38-year-old mother and social media creator from Houston, has secured the title of champion for NBC's new reality show "Hot Wheels: Ultimate Challenge" Season 1. As a reward for her victory, she has won $50,000 and a die-cast toy of her design, which is now exclusively available for purchase on Mattel Creations, Mattel's direct-to-consumer platform. Pre-sale orders can be placed from Aug. 8-Sept. 4.  Ms. Garg was given the iconic 1996 Nissan Skyline to transform into a life-size Hot Wheels showstopper. The car, dubbed “Rally Resilience” by Arushi, is a bright red creation with 24-inch wheels, extended fenders and beaming light bars representing power, bravery, kindness and courage.  Additionally, viewers can watch the full first season of "Hot Wheels: Ultimate Challenge" on Peacock, and it will re-air on USA Network starting Monday, Sept. 4 at 11 p.m. ET/PT. Arushi specializes in uncovering limiting beliefs that are so deeply rooted, they are preventing you from taking the most daring steps to get you to the most satisfying places. She is a star at then taking your newly revolutionized and primed for success mindset and pair it with my metabolic calibration approach to accelerate fat loss and muscle gain. Believe me, this isn't your typical be positive, focus on the end goal, cut calories, move more crap. Arushi knows from experience, that doesn't work. If it did, Arushi wouldn't have fallen into depression and suicidal thoughts. A journey she's been on for over 20 years... At 8 years old, Arushi discovered that I was borderline obese. I was immediately thrown into sports and banned from eating anything “unhealthy,” mainly chips, cookies, crackers, etc. She was the only kid at school with her lunchbox full of carrots and broccoli rather than a peanut butter sandwich and a juice box. She was yelled at to stop watching television and go “be healthy” by running or walking outside, not sitting in the house. Believe me, watching her little brother dig his hand into a bag of Cheetos and stuff his face with them was not easy. The playground was no easier. Arushi's friends told her she was ugly and fat to her face, with these commentaries, behind-my-back chats, and bullying continuing through high school. On the outside, Arushi acted like the most confident person on the planet. A steel exterior, you couldn't breakthrough. You might think, wow, fake till you make it and you made it! Oh no, not even close. Being that way ate Arushi through and through. She felt fake, unheard, unseen, and cursed to have to live this way. her low self-esteem caused Arushi to fall victim to every quick diet scheme, influencer workout, skinny tea, and trainer promising incredible results in just 6 weeks. She would starve herself, workout 3 times a day 5 days a week, and run for hours on the treadmill with no results to show for it. Arushi had no desire to go out, meet my friends, or even talk to anyone. She fell into an abyss of body shaming, body dysmorphia, and a dangerous obsession with perfectionism, which led me to almost ending my life. It wasn't until Arushi read this quote, that my life and perspective would change forever. “If you let others control your life, you will never live one.” Arushi realized the reason she felt this way was because she was too busy trying to live up to everyone else's expectations of her, rather than her own version of herself. Arushi had no idea who she was or what she even wanted. Arushi decided that if she was going to not only thrive but even just survive, she had to take the first step to discover HER. There’s a lot of game development happening at the school, so naturally they have game systems from Intellivision and Atari 2600 to the current generation of XBox One and PS4. Even if game design is not their focus, each of our guests enjoyed the game design class taught by Dr. Kimberly Voll. Gandhar was part of the Out of the Box team during the semester. The client he was working with was founded by former CDM students. When Chris watched the demo of the Magic Box he was reminded of Sega’s Time Traveler Hologame from the 90s. There are past graduates at EA, Microsoft, Google, CapCom, Apple, and many others. 12 companies have come out of the school in 6 years! Project team Eagle Eye included our guest Arushi and they were working on a marketing automation campaign for the ad agency Elevator Strategy. Armin was on a team called The Six. Their goal was to create a brain training game. Without breaking the non-disclosure agreement, he describes the project as “similar to Lumosity.” Finding a common interest is a key to a successful team. For example, get off the phone it’s beer Friday! Gandhar was mostly acting as a project manager for the project, but he does write on his site, gandharwrites.com. While Arushi hopes to find work at an augmented reality agency and Gandhar wants to create his own startup, Armin would like to teach science through his art.
