Whispering Gallery Podcast WGP: Clue of the Crumbling Cake Paintings A still life is a category of artwork that dates back to the 1600's. A collection of things brought together (inanimate) gathered often on a table for the artist to work from and reference. The artist can work with this grouping of items, coming back over one or more sessions to complete the drawing or painting. Nothing in the grouping changes from session to session. The place for the artist's chair can even be marked with masking tape to make sure they end up in the correct spot to work from. “Still life's” for 16th and 17th century Dutch may be made up of food like fruit; grapes, flowers (like on the secret of the missing tulip episode), cheese, bread, yas—cake, wine goblets, reflective surfaces of serving dishes. One example, artist, Clara Peters, took things to a level that might surprise you Daily Art Magazine shares, quote: “…probably she is most famous for enriching her still lifes with her hidden self-portrait reflected in the objects on the table. In the image above, Still Life with Flowers, a Silver-gilt Goblet, Dried Fruit, Sweetmeats, Breadsticks, Wine and a Pewter Pitcher, the artist painted her portrait three times in the goblet and four times on the pewter jug… Aside from having a role as a signature, painting reflections were a challenge to artists to show off their mastery… She also had a particular way of signing her work, often hidden. Six out of her 39 known paintings include the same ornate silver knife that is inscribed with her name, Clara Peeters.” Unquote dailyartmagazine.com/dutch-still-life-6-famous-painters/ Looking for strange and unexpected “Easter eggs” like these may seem a little too tedious, -or- maybe they make you a bit curious—you'd be right on both accounts. (Pause) I mean why -do- people end up standing there in museums, studying paintings, drawings, and sculpture? This could be one reason. Is a goblet half full or half empty… what were they going for? Life used up or life to be enjoyed? Or something else? Like maybe the artist got thirsty and just drank some of it. Besides looking at all of the details, from the mastery of a painting— of beautiful, intricate lace on the cuff of a sleeve, the ombré fading and veins in flower petals, or impressionist brushstrokes up close. There may be mystery built into the composition—maybe not as difficult to unravel as an Agatha Christie novel, but, then again? Maybe there are “icons” representing meaning, visual bookmarks that are part of the story. Like a skull or a blown out candle— representing death. To the art world this last bit acts as the reminders “memento mori” directly translated from Latin: remember death. Thanks for listening! See all the Healthcasts at https://www.biobalancehealth.com/healthcast-blog There are almost as many different human metabolic variations as there are people in the world. Our genetics make us all unique in ways that vary the way we can lose weight or even gain weight. On the other hand, we all had to descend from humans who survived famine, lack of water and lack of nutrition sources, so in one way we are all the same…we have genes that helped us survive times that required of us the ability to maintain our weight even without eating! The people who genetically were unable to gain fat and keep it to hold them over during famine just didn't make it to an age they could procreate. The rest of us whose ancestors survived, have given the majority of us the genes to maintain body fat. Unfortunately, we have been blindly unaware of what man's evolution and progress has led us to physically, and most of us are over-fat, and have trouble losing it! The very genes that allowed us to survive the beginning of man's existence, are the same ones that make it hard to become slender. In addition, in our current societies in the western world, food is plentiful and inexpensive. Our genes have not changed, but our environment has, and we are becoming sick because of our obesity…how do we survive this “new world”? You may hear a lot about insulin resistance, and I talk about it a lot on my Healthcasts, but it is insulin resistance that has allowed us to survive and has also led us to obesity today. The humans who were insulin resistant who also held on to their fat in times of starvation are also the humans who have become obese in the face of plenty. We can't change our genes, but we can turn some of the obesity genes off through lifestyle and sometimes with the help of medication. Despite our basic sameness, we are also each individual, and genetically programed so that some of us lose weight if we restrict calories, others lose weight only if they exercise; Some of us don't lose weight with exercise; some people don't lose weight with carbohydrate restriction or fat restriction, and some do. This is the ugly truth that lies behind the millions of books on diet, none of which work for more than a small number of us, and because it is a diet we can't maintain it...what we need is to determine is the best weight loss program for each of us, by using trial and error, or by using genetic testing that tells us what our best pathway to a normal weight looks like. To begin we must take baby steps and learn about food and what the words mean that we use when referring to food. Because there are many people who may have several hurdles to jump before they can live at their healthy weight, we need to all speak the same language of weight loss. So let's start with a bit of education about food. WHAT IS A SIMPLE SUGAR? A simple sugar is a nutrient meant to give you energy for physical activity. Eating a small amount of a simple or a complex sugar before exercise is a good idea. However, if you sit most of your day, working with your brain instead of your body, simple sugars can increase your fat storage because you aren't physically working. This is true whether restricting sugar is your genetic method of weight loss or not. Too many simple sugars make you hungry and cause everyone to overeat.….causing weight gain and fat gain. So what are simple sugars? Examples of simple sugars: · Sugar, white, cane and brown · Molasses · Regular Soda · Agave · Honey · Syrup-maple or any · Rice, white and brown · Cereals-all · Oatmeal · Donuts · White potatoes · Bread · Pancakes/waffles · Noodles · All Grains: wheat, oats, rice, corn and anything made from them including flour · Sweet tea · All Cakes, brownies, candy, chips, and many energy bars · All bagged snacks like pretzels, chips, cookies, and fruit with sugar added · Pies and most desserts, except fresh or frozen fruit. · Dried Fruit (has sugar added eat frozen fruit instead.) · All non-milk-based salad dressings except plain Olive oil and vinegar. Note: All diet sodas have chemicals that stimulate insulin like sugar. There are a few brands that use Stevia (an herb that is sweet, and not a chemical) and they are the exception so you can drink those without stimulating fat production. Other options are unsweetened bubble water or plain water. Eventually eating a diet filled with simple sugars leads to obesity, and diabetes no matter who you are, therefore if you are in not working physically with your body all day, every day ( machinists, farmers -in the summer, factory workers, outdoor laborers) you should not eat these foods except in small amounts with a protein to lengthen the time until you feel hungry again. The rest of us should rarely eat these foods. They should be considered foods for “special events”. If you exercise aerobically and/or with weights for more than an hour at a time, then you may eat a small amount of simple sugars but eating small amount of complex sugars is healthier to help you maintain your muscle mass and your exercise stamina while losing fat. COMPLEX CARBOHYDRATES: EAT INSTEAD OF SIMPLE SUGARS SWEET POTATOES Sweet potatoes taste sweet and have complex Carbohydrates so it takes longer for them to be digested which means they do not stimulate the secretion of insulin as fast or as high as white potatoes. They are a complex sugar. Sweet Potatoes also have several health benefits including antioxidant healing role and anti-inflammatory properties. CHICKPEAS (GARBANZO BEANS, BLACK BEANS AND LENTILS) Legumes like chickpeas, black beans, and lentils are not only complex carbohydrates buy are a great source of dietary fiber, making them wise choices for a filling you up and satisfying the pre-workout carbohydrate requirement. QUINOA Quinoa is a good source of plant protein. It can be a substitute for bread or pasta. WHOLE GRAIN BREADS LIKE DAVE'S LOW CARB & HIGH PROTEIN BREAD Whole grain bread like Dave's Bread has enough fiber and nut protein to prevent excessive stimulation of your insulin. Too much insulin leads to insulin resistance and causes fat gain instead of giving your cells energy. One piece of bread per meal is all you should eat if you are overweight and or have Type II diabetes in your family. Make sure you are not eating more than 25 grams of carb in any meal. WILD RICE- is a seed and not a “rice” You should eat wild rice instead of any other type of rice and only in small amounts. All complex carbs should be eaten in small portions because in large portions they act just like simple carbs and increase weight gain. NUTS: Cashews, Almonds, Walnuts, Chestnuts, Nuts of all kinds can be a substitute for carbs in any form. A handful of nuts should be enough to decrease your hunger and increase your protein as well as decrease insulin response to eating. The Combination of foods that you eat is also important. If you are going to eat any carbohydrate it should be paired with a protein and or a fat. For example: If you are going to eat a piece of bread, then you can eat it with butter and or peanut butter or cheese or eggs. This slows the absorption of the carbohydrate from the bread and prevents your blood sugar from surging and plummeting after you eat, leaving you fatigued and sleepy. In The Dr. Maupin's Diet in my book the Secret Female Hormone, I recommend eating multiple times a day and controlling simple carbs and carbs from sugar and grains. Scientifically it is a fact that if you eat 25 grams or less of carbohydrate foods from sugar or grains per meal then you can prevent Insulin resistance and the additional fat that follows insulin resistance. It is also a good way to lose fat. In my diet a person can eat as much fruit and veggies as they desire, except white potatoes and bananas. WHAT YOU EAT, IS AS IMPORTANT AS HOW MUCH YOU EAT! Other Strategies for weight loss include eating a protein with each carb which decreases the total volume of food you eat and increases satiety. · Saving your carbs to be eaten before exercise. · Portion Control of all food. · Limit alcohol. 0- 4 drinks a week · Daily exercise for over an hour/day. · Drink a glass of water before you eat. · Skip dessert · Eat a salad daily · Eat more than half your weight in grams of protein (Meat, cheese, eggs, milk products, whey protein and more) The basic information was from my over 45 years of practice and Information provided by Inbody. If you know by experience or you have had your genetics tested to reveal that limiting carbohydrates is needed for you to lose fat, then I hope this blog helped you understand what I mean when I tell you to limit your carbohydrate intake to less than 25 grams per meal.

Embark on a sensory expedition that merges the rich heritage of Wisconsin cheese with the bold world of bourbon. My best friend Stephen Puetzer, a connoisseur of fine cheeses, sent me an array for the holidays to navigate some exquisite bourbon pairings. Together, we unlock the magic that happens when you sip a Kevin Kissner barrel pick from Chicken Cock alongside a bite of smoked cheddar, or the way Baker's 13 finds a creamy counterpart in smoked Gouda. Expect to be whisked away on a delectable journey that promises to tantalize your taste buds and elevate your whiskey experience to new heights. The episode unfolds like a lively dinner party, complete with spontaneous moments and hearty laughter. One such unexpected delight comes when my parents phone in, adding a layer of warmth to our musings on whiskey and cheese pairings. We don't just stop at cheese, though; the inclusion of garlic salami and pepperoni takes the flavor exploration further, showcasing how even simple foods can dramatically alter the character of a bourbon. Through these pairings, I showcase the educational journey of matching these flavors, proving it's about more than just the taste—it's about the stories we share and the memories we create. As we draw our tasting voyage to a close, I leave you with some expert recommendations to try at home. I reveal how salty cheeses can beautifully contrast with lower proof, wheated bourbons, or how the right chocolate can make a robust spirit sing. It's not only a lesson in whiskey and cheese but also a testament to the joy of discovery and the art of good company. So, grab your favorite bourbon, slice up some artisanal cheese, and let's revel in the joy of pairing whiskey and cheese together. If You Have GohstsSupport the showhttps://www.scotchybourbonboys.com

Welcome back to our weekend Cabral HouseCall shows! This is where we answer our community's wellness, weight loss, and anti-aging questions to help people get back on track! Check out today's questions: Summer: Hi doc! Thank you so much for the time and effort that you put in to serving your fellow man. I've learned so much from you and share your podcast every chance I get! Long story short, I learned about natural health a little too late in life. After years of imbalance, infertility, dis-ease, and irreversible surgery, my husband and I are hoping to adopt an infant and I've recently learned that it is not our decision whether or not the child is fully vaccinated according to the standard vac schedule. It is the state's decision until the child is 6 months old when the paperwork has all gone through. So basically I will be forced to take the baby to every ‘well child' appointment and hand them over to a well meaning, but ignorant hospital employee for all of the neurotoxins mandated by the gov. After learning this I initially decided that I can't be a party to that. I've wrestled with this for months and decided that any poor child in the system would at least be better off with us where we can try to mitigate the damage immediately and give them a healthy full life to the best of our ability. So I'm wondering what is the best way to physically prepare the baby for each visit and how to detox from these unnecessary tox injections? Thanks again! Summer Summer: Hi Doc! In the case of adoption, since the majority of infants in the system are born addicted to drugs and alcohol, and within hours are bombarded with vacs and antibiotics, what is the best approach to help their poor little bodies find balance and healing for the first time in their young life? Also, if the birth mother has some kind of infection like an STI, would you recommend allowing the use of antibiotics especially in the eyes or can some kind of a modified natural anti-v protocol be used if all parties are in agreement? Thanks! Summer Even: Is H pylori bad for you if left untreated? I don't have any symptoms but tested for it on stool test so I don't want to spend all this money to treat if it doesn't matter. Thank you! Kenzie: Hi dr Cabral! I have Gilbert's syndrome and typically have no symptoms from it. I am a wine sales rep and do love wine so sometimes my job requires to drink a little. I try to limit it but when I do drink I am pretty hungover. How do I support my liver when I do? I've heard milk thistle is bad for Gilbert's Amy: Thank you for all of work & sharing this information Dr Cabral! My son is 7.5 years old and has suffered from allergy induced asthma for the last 6 years. We thought he was doing much better, then last October he was hospitalized for 3 days due to an asthma attack. Less than 3 months later he ended up with pneumonia and not to mention all the viruses he's had between. Of course the allergist wants him on Flovent 2 times a day, Albuterol, allergy shots & daily Zyrtec but this just doesn't feel right. We've done a food sensitivity and removed those items including dairy & gluten. We met with a holistic nutritionists that did a stool test & learned he has gut dysbosis & a presence of H . Ployri. He is currently on a supplement regimen to help those issues but still doesn't seem to be improving. We have an air doctor, water filter, only use natural cleaning products & hygiene products. We eat organic & only local grass fed meat. We have removed all the toxic burdens that we know of and are at a loss of how to help him heal. I appreciate any feedback for next steps. Thank you! Greg: Hi Dr. Cabral, I love fruit and sometimes I enjoy the crunchiness and convenience of freeze dried fruit. No additives, fruit is the only ingredient. What are your thoughts? How does it compare it to frozen or fresh Anonymous: I want to first off thank you for all that you do! Providing valuable information for free is very altruistic and appreciated by all of your listeners. I have a few quick questions: -Do you have any recommendations for seasonal allergy support for dogs? My dog gets hot spots for a cluster of weeks 1-3 times a year and I want to be able to help support his gut health/suspected histamine response during those times. -What are your thoughts on the ayurvedic herb, Neem? I am a kapha-pitta (pretty even split) and it was recommended to me by a practitioner and has helped me greatly especially when pitta is aggravated. I was just curious as to your thoughts on it. -What are your thoughts on vegan meat alternatives (for example, Sweet Earth Benevolent Bacon)? Are there any good brands you know of that you would recommend for eating occasionally instead of having the actual processed meat? Sorry if that was too many questions for one submittal, and thank you for your guidance! I usually make a huge smoothie with everything you can think of (frozen berries, leafy greens, protein powder and then lots of herbs and spices, mushroom powders, ginger & turmeric root, etc. It comes out pretty big so I started freezing half of it for the days I don't have the time to make it.. does freezing & then defrosting destroy all the good benefits of all these ingredients which are blended together? My second question about it is, even though I eat quite a big bowl of it, I still feel quite hungry and shaky after it.. like I don't have energy in my muscles to do any real movement or exercise.. that feeling sometimes stays with me for most of the day or until I eat something solid (which usually makes me feel bloated or uncomfortable in the stomach).. is this weird, considering I do use healthy fats and proteins and carbs in the smoothie (and it's a really big amount of it)? Thank you so much for your answers and everything you do.. much love to you, your family and everyone in this community.. Lara: Hi, dr. Cabral :) One more smoothie related question: I usually eat an apple after my smoothie.. is that ok or should I eat an apple before the smoothie? And how much time before or after? I usually also have some DRIED berries every day (blueberries, cranberries, goji berries, etc.) I remember you've said dried fruit isn't the best, but I'm not sure why.. is it the same for dried berries? Thank you so much.. again :) Anonymous: Hi, dr. Cabral! I've been a listener for a year and a half now and enjoy all the different types of shows you do. Since you are really into Ayurveda and spirituality of sorts, I was wondering if you have heard of Human Design yet? It is a holistic self-knowledge system combining astrology, the I Ching, Kabbalah and Vedic philosophy. It would be really interesting if you would do an episode about it or maybe even an interview with an expert on it.. I've only heard about it last Christmas but since then met lots of people that found great help in knowing themselves better through it, alleviating conditioning by society and overall starting to accept themselves better because of understanding oneself. Including me. Hope you find it interesting. Thank you for sharing your knowledge with us. Darren: Good day Dr. Cabral. I got excited when I saw CNN with the news headline "Eating fat can lower stroke risk, study says, as long as it's the right kind" https://edition.cnn.com/2021/11/09/health/fat-stroke-risk-wellness/index.html but got disappointed as the article went on. The American Heart Association director & senior scientist went on to promote liquid vegetable oils corn oil, safflower oil, sunflower oil, soybean oil, which are high in polyunsaturated fatty acids, and monosaturated like canola oil. How does one tell their family, coworkers, clients and friends to stay away from those plant based oils when the AHA, of all people, are promoting them? Darren: Hey Dr. Cabral. I've been wondering, do you still maintain your weekly fast since you've embarked on the muscle gaining journey or do you put it on hold to attain that current goal? Also have you noticed any drastic pros or drawbacks since you began? Keep up great work. Anonymous: What's the reason for accelerated heart rate after meals? No change in diet. All the same. I've started experiencing heart palpitations and accelerated heart rate and sometimes even twitches after my meals. Even with smoothies. It happens the moment I put something in my stomach. Really weird. We reminisce about our trip to Puerto Rico, the street art of Vieques, and Mara falling into a pothole (with hilarious results, says Baker). We obsess over the evolution of Rembrandt’s nose through 30 years off self-portraits, we spend a little time discussing what was so “golden” about the Dutch Golden Age. We celebrate the [criminally overlooked] genius of some Dutch female painters of the era with a special shout out to Clara Peeters! “It's got one ingredient. What more could you ask for?”Case Samuel (10:10-10:14) Sunrise Fresh is the #1 seller on Amazon in the dried fruit category and has been for the past four years. This fourth generation, family owned company is dedicated to producing the freshest dried fruit with no added ingredients. Have you ever wondered why most dried fruit or products containing dried fruit are so high in sugar (or other ingredients)? It's just fruit that's dried, isn't it? Quite the contrary for most dried fruit producers, who add tons of sugar back into their product to make up for the loss in weight after drying and attempting to make a cheaper product. Not only does Sunrise Fresh not add anything else to their dried fruit, their fruit is grown specifically for their product, rather than Montmorency tarts. To increase profit, reduce waste, and provide the freshest fruit possible, they include culls to their product line, which are perfectly good fruit that are thrown out. “Culls are perfectly edible fruit, they just don't look too pretty.” - Case Samuel (5:29-5:32) Culls are products that don't meet retail specs and don't go into a fresh box. Although they're just as good as any other fruit, they won't sell because of bruising, a slight crack, or a stem that's missing. They also don't use Montmorency tarts, which most of their competitors use. These are cherries grown specifically for production and manufacturing purposes and often need sugar added into them. Sure, their product isn't always the “sugary sweet” we're trained to expect year round, but that's what makes Sunrise Fresh's dried cherries exceptional over many others on the market. Mother Nature doesn't make anything the same and we have seasons for a reason. You'll receive the gift of tasting the variety of flavor profiles cherries can have as they won't taste the same year round. Most of the cherries Sunrise Fresh focuses on growing are from Washington and California to extend their season and provide for customers year round. This gives the growers a better return on their fruit by using cherries that normally get dumped. To expedite the drying process, Sunrise Fresh places their cherries on a drying tray in a 40-foot long tunnel for “forced air tunnel drying”, which allows for the harvesting, cooling, packing and shipping process to occur in a matter of 24-48 hours. Unlike microwave or flash drying where produce loses quality and nutrients, this process slowly dries the fruit down so they maintain all of their natural goodness. “The quicker you get that cherry to market, the more ability you will have for a customer to come in, buy that fresh cherry and want to come back and buy that cherry again.” - Jake Samuel (20:38-20:48) Speed is important for Sunrise Fresh considering they're the #1 dried fruit seller on Amazon for the past four years. Because of COVID-19, their sales increased by 2000% in three months and they're now selling in Walmart. To put into perspective how much they've grown, just three years ago they were selling 10-15 units a day and now sell 200-300 a day thanks to Amazon's marketplace. Case and Jake share some phenomenal advice for other small, family-owned CPG businesses that helped them skyrocket their growth and increase the availability of their fresh, real, quality products. You can now find dried apples, peaches, blueberries and pears to the sunrise Fresh repertoire! All including just one ingredient: fruit. What's little and squishy and sweet and REALLY easy to eat a lot of? Dried fruit. Do yourself and your family a favor and learn about how dried fruit is made and what is added for preservative and flavor. Lots of learnings in this episode. Follow the Healthy Habits challenge and Fit n Busy on Instagram. Here are the questions you'll ask yourself daily, earning a point with each one: 1. Did you take a class at the studio? You don't get extra points for taking two. Save your body and the time. 2. Did you eat vegetables 3 times today? (3 Servings or 3 cups. Try one cup at every meal. Don't cheat. One stick of celery is not a serving!) 3. Did you get at least 7 hours of sleep? Not 6. Not naps, 7 full hours a night. 4. Did you avoid alcohol today? Self explanatory. 5. Did you give yourself 10 minutes of stretching today? It doesn't have to be all at once. If you do 5 minutes in the morning 5 minutes after your class, you're killing it.

This one is a class from our book THE ULTIMATE COOKBOOK. Inspired by the rich fruity sweetness of mincemeat but without the suet (beef fat) - this version uses a ton of healthy dried fruit, a smattering of winter spices, and the flakiest crust you've ever tasted. It's a lot easier than it sounds and this recipe will become your family's favorite for years to come.

We are always harping that we need to avoid processed carbohydrates, but its worth mentioning that other seemingly healthy snacks can contain too much sugar and pack on the pounds as well. For example, dried fruit can lose its nutritional value and leave you with too much sugar. Did you know that the drying process takes 30-80% of the vitamins and nutrients away from the fruit? Because it's dried, we tend to eat more of it. So be sure to check the sugar content and serving size. Also, look to be sure the packaging company hasn't added more sugar. Finding pure fruit and eating it in moderation is the key. We want to empower you with as much health information as possible. Cheese Torta with Apricot ChutneyThe simpler the recipe the more important the quality of the ingredients is. This cheese torta is a perfect example. Simple, easy to prepare, and so tasty. Mari Rossi invited me to try this recipe in her kitchen at B & R Farms. Jim and Mari Rossi and their son Scott run this apricot ranch in Hollister, where they grow the Queen of Apricots, the Blenheim. Using recipes from Jim's mother Elsie and recipes developed by Mari, their products all use dried apricots from their farm. To make the cheese torta, we combined 8 ounces of Fromage Blanc and 2 cups of grated Goat Milk Cheddar. Cowgirl Creamery makes a number of fresh cheeses, including Fromage Blanc, Crème Fraiche and Clabbered Cottage Cheese, all of them award-winners from the American Cheese Society. (We use the Crème Fraiche in the recipe for Dried Fruit in Vanilla Wine Syrup.) Fromage Blanc is sort of a French version of cream cheese, only richer and yummier. The goats at Redwood Hill Farms are happy goats, and the cheese is wonderful as a result, a fact that is attested to by the numerous awards the farm has won. All the cheeses are made on the farm with milk from their own herd of goats. There is a cheese for every occasion (and every wine pairing): fresh chevre, the Camembert-style Camellia, earthy and robust California Crottin, raw milk Gravenstein Gold cider washed and aged, feta, cheddar and smoked cheddar. As Mari added the grated goat milk cheddar from Redwood Hill Farms to the Cowgirl Creamery Fromage Blanc, she was watching the consistency of the torta. She chose to add not quite the full 2 cups of cheddar. It's a matter of personal preference, and it helps to keep in mind that a little bit of liquid is still to be added. The ingredients to add to the torta mixture were a dash of hot pepper sauce, two tablespoons of dry sherry, three to four minced green onions, a quarter teaspoon of salt and 1 teaspoon of curry powder. That's it! The torta was shaped on a plate, any shape will do. And it was topped with the B & R Farms Dried Apricot Chutney. Mari made sure that it was well covered, so that every single bite would have both cheese and chutney! To serve the torta, we used heart-shaped Lahvosh crackers. It makes a pretty presentation and a tasty backdrop to the cheese torta. Valley Lahvosh also makes round crackers and star-shaped crackers (nice at the holidays). Since we had opened a bottle of very good dry sherry to make the recipe, we had a little glass of that with the finished torta. Marvelous! It would also be nice with a dry Riesling or Gewürztraminer. A Sauvignon Blanc or off-dry rosé would pair well too.
Dried Fruit in Vanilla Wine SyrupIt's a good sign when a recipe starts out with a full bottle of wine! And this recipe is an outstanding dessert. Looks beautiful, smells wonderful and tastes fantastic. For this recipe you need a bottle of Riesling. Put the whole bottle into a saucepan, and add 2/3 cup of Vanilla Agave Syrup and one cinnamon stick. Simmer the syrup for 20 minutes, so that the cinnamon can infuse the syrup. Add about 1 packed cup dried apricots and about a dozen Valley Fig Growers' Calimyrna Figs, with the stems removed. Simmer the fruit in the syrup another 25 minutes until the fruit gets nice and plump. Of course, the apricots and figs are great on their own, so be sure to buy extra just to eat by themselves. B & R Farms' California Blenheim Apricots are in a class by themselves. Nothing at all like "ordinary" dried apricots. And if you haven't ever tasted a Calimyrna fig, it's a totally different color, taste and texture from the more common mission fig. They are bigger, a nutty brown, and even have a nutty flavor, not as sweet as mission figs, You can shop online for both B & R Farms apricots and Valley Fig Growers figs. Also, you can visit the B & R Farms store at their ranch in Hollister, east of Monterey. After the fruit has plumped up, remove it from the syrup, discard the cinnamon stick, and simmer the syrup another 25 minutes to reduce it to about 2 cups. You want to keep an eye on this. It may not look like anything is happening for a while, and then suddenly, the syrup will start to thicken. It becomes a gorgeous golden brown, and as Mari Rossi says, "Wow! The color and the aroma are absolutely divine!" Pour the syrup over the fruit and add the topping of your choice. Mari decided to top hers with 231 Not Found Organic Vanilla Yogurt (we also had the Wallaby Organic Plain Yogurt), and I chose the Cowgirl Creamery Crème Fraiche. Wallaby Organic Yogurt is so smooth and incredibly creamy. They make unusual flavors in both low fat and non-fat, and you won't miss the fat for one bite. Their Down Under flavors have lots of fruit topped with lowfat yogurt. To make the Cowgirl Creamery Crème Fraiche, organic cream is cooked at a very low temperature for hours. It thickens and develops a rich, sweet, slightly almond flavor. The American Cheese Society gave it a blue ribbon, and it's no wonder. We topped these fabulous creations with 273 Not Found Sliced Almond Delights. The very finely sliced almonds gave a delicious crunch to each bite. There really is a Maisie Jane, and she grows organic almonds in California's Sacramento Valley. If you're in Chico stop at her charming store for Maisie's own products as well as other local goodies. Try a Moscato or Sauterne wine with this dessert.
