We're back from our Disneyland vacation with just the 4 of us and doing a recap on how the trip was! Instead of doing a day by day breakdown, we have 7 questions we've asked each other as we reflect on this trip. These questions are a great way to reflect on any trip you and your family take. It's great to be able to connect on the great and not so great moments of the trip and dream about what we'd want for the next trip in the future. We never rope dropped but made sure we were in the parks by 8:30am or 9am. Crowds picked up around 11:30am.- Moms - get your lashes done before going, 10/10 loves not dealing with it during the trip- Instacart groceries. We had a full kitchen and loved it for making dinners and packing lunches. Uncrustables were the best.- Best thing about the trip for me was Lamplight Lounge reservations for WOC (7:55 reservation). We just did steak nachos, drinks and donuts and it was great $95 with tip.- Bought Disney gift cards from Target throughout the year. Had $50 per person for spending and $200 for food.- Will NEVER AGAIN bring car seats, we'll book a shuttle that has them next time. Not worth the hassle.- Will not do Great Wolf again either. During a Q&A session at the Morgan Stanley Technology, Media, & Telecom Conference this week, Senior Vice President and Chief Financial Officer of the Walt Disney Company Christine McCarthy said they should be returning “soon.” She pointed to the decline in Covid cases as a good indicator of the safety of the meet and greets. The new area features Pym Test Kitchen, a unique take on different sized meals, Pym Testing Lab, a great place to get a cool beverage, Shwarma Palace, featuring the Avenger's favorite wraps, Terran Treats, with some sweet concoctions, two stores, WEB Suplliers, and Campus Supply Pod, a lot of area meet and greets, and two attractions, the existing Guardians of the Galaxy: Mission Breakout, and the new WEB Slingers: A Spider-Man Attraction. Guests that were able to snag a place in the queue can bypass the line to enter Avengers Campus and head in to board the attraction. Reviews are mixed and described the ride as a different version of Toy Story: Midway Mania. Riders use their hands to “shoot webs” at the different objects in the attraction to get a score and help Spider-Man save the Campus from the Spider-Bots, which have gone out of control. – https://www.micechat.com/292046-how-to-score-a-boarding-group-for-web-slingers-a-spider-man-adventure/ Pym's Test Kitchen has been pretty well reviewed. Mobile ordering is the primary way to get food at this, and all the other dining locations in Avengers Campus, and has been less than ideal. On opening day, guests could order food when not in the land and could sometimes be allowed in to get their food, while other times being denied access. Over the weekend, they changed the notification so guests had to order in the land only, in addition to adding the order windows throughout the day, instead of only in the morning. The food itself is getting good reviews. The Pym-ini sandwich is reported to taste like a meat-lovers pizza in a sandwich. The Not So Little Chicken Sandwich also got good reviews. The Ration tastes like a Dole Whip mixed with a Churro. The daytime options include the New York's Tastiest, which is a chicken shawarma wrap, with garlic spread, and a coconut yogurt-tahini sauce and pickled vegetables, and then there is the Impossible Victory Falafel, which is a plant based falafel and cauliflower wrap, garlic spread, hummus, and coconut yogurt-tahini sauce, with pickled vegetables. Sides include smoked bacon, turkey bacon, potato bites, or a Cuties mandarin. The Cinna-Pym toast was reviewed well, but the other items were hit and miss. News: Today Disneyland announced how ticket sales and reservations will work for the reopening on April 30th. To enter the parks, guests will need a park reservation plus a valid theme park admission ticket. Reservations are currently limited to California residents, and groups of no more than three households. Reservations will launch on April 12th for guests that currently have valid theme park tickets (not annual passes), no earlier than 8am Pacific time. April 15th guests will be able to purchase new theme park tickets. Reservations will be made available on a rolling basis for greatest access to the most guests. Starting April 9th, guests will a valid ticket can check and see what dates they can request reservations for. Disneyland recommends that guests login to their Disneyland account and add the park tickets to the account before attempting to get reservations for the best chance at success. Park Hopping will be allowed, but only after 1pm on the reservation date. Guests with multi-day tickets will have to make separate reservations for each day they wish to attend. Lobster Nachos Recipe - Lamplight Lounge, Disney California Adventure Park**Recipe from D23.comServes 8 to 10LOBSTER STOCKShells from 5 medium lobster tails1 medium carrot, chopped1 small celery rib, chopped1 small onion, chopped2 large garlic cloves, quartered1 teaspoon canola oil1/2 cup dry white wine8 cups cold water1 bay leaf1/4 bunch parsley (stems only)1 pinch red pepper flakesTORTILLA CHIPS3 cups canola oil (for frying)48 (4 dozen) 6” corn tortillasSalt in shakerSEASONED BLACK BEANS1 15-ounce can black beans1 small bunch cilantro chopped1 teaspoon ground cumin1/2 teaspoon kosher salt1/2 teaspoon ground black pepperPICO DE GALLO5 Roma tomatoes, diced1/2 medium red onion, diced1/2 bunch cilantro tops, chopped1 teaspoon salt1 1/2 tablespoons lime juice1 serrano pepper, seeds removed, finely mincedSHREDDED CHEESE1/2 pound cheddar cheese1/2 pound Monterey jack cheeseROASTED GARLIC2 large garlic clovesCanola oil (to cover)CHIPOTLE CREMA1 1/2 tablespoons chipotle in adobo sauce2 roasted garlic cloves8 ounces sour cream3 tablespoons manufacturing cream1 pinch ground cumin1 pinch ground black pepper1/2 teaspoon saltLOBSTER CHEESE SAUCE3 poblano chiles, roughly chopped1 teaspoon canola oil, divided3 large garlic cloves1 shallot, roughly chopped1/4 stick butter2 1/2 tablespoons flour2 cups manufacturing cream1 cup reduced lobster stock4 ounces Oaxaca cheese, grated2 cups grated sharp cheddar cheeseCOOKED LOBSTER4 tablespoons butter5 medium lobster tails (meat only)1/2 teaspoon coarse salt1 pinch black pepper1 lime, juiced and zested (1 tablespoon juice and pinch of zest)FOR LOBSTER STOCK:1. Preheat oven to 350°F.2. Place lobster shells, carrot, celery, onion, and garlic on baking sheet with lip; coat with canola oil.3. Bake for 35 minutes until lightly browned.4. Carefully remove from oven and deglaze baking sheet with white wine.5. Add baking sheet ingredients with liquid to large stockpot.6. Add water, bay leaf, parsley, and red pepper flakes.7. Bring lobster stock to boil over medium-high heat, then lower to medium low heat.8. Let stock cook slowly until stock reduces by half, 60 to 80 minutes.9. Carefully strain stock, reserving 1 cup for lobster cheese sauce.10. Set aside. (May be made 2 days in advance, cover and refrigerate.)FOR TORTILLA CHIPS:1. Preheat frying oil to 350°F.2. While oil is heating, cut tortillas into 6 pie-shaped pieces.3. Once oil is hot, add tortillas in small batches for 2 to 4 minutes (frying times will vary).4. Remove from fryer once chips are lightly browned, lightly season with salt.5. Continue until all tortillas are fried and salted.6. Set aside. (May be made 2 days in advance; store in sealed plastic bag.)FOR SEASONED BLACK BEANS:1. Rinse beans in colander until water runs clear.2. Place beans in medium mixing bowl, mix in remaining ingredients until just combined.3. Set aside. (May be made 2 days in advance; cover and refrigerate.)FOR PICO DE GALLO:1. Mix all ingredients except serrano pepper in medium bowl.2. Add 1/2 serrano pepper, mix and taste; add additional serrano pepper until desired spiciness.3. Set aside. (May be made 2 days in advance; cover and refrigerate.)FOR MIXED CHEESE:1. Grate cheddar and Monterey jack cheeses in medium bowl and toss together. Set aside. (May be made 2 days in advance; cover and refrigerate.)FOR ROASTED GARLIC:1. Remove tips from garlic cloves.2. Add garlic to small pot and cover with canola oil.3. Gently poach garlic on medium-low heat until lightly browned and soft.4. Remove garlic and set aside for use in chipotle crema. (Save garlic oil in refrigerator for everyday cooking.)FOR CHIPOTLE CREMA:1. Purée chipotle and roasted garlic in food processor.2. Add purée and remaining ingredients to mixing bowl and mix thoroughly.3. Pour crema in squeeze bottle or plastic zip bag.4. Refrigerate until ready to use. (May be made 2 days in advance; keep refrigerated.)FOR LOBSTER CHEESE SAUCE:1. Preheat oven to 350°F.2. Lightly coat poblanos with 1/2 teaspoon canola oil, place on baking sheet; roast for 15 minutes.3. Lightly coat shallots and garlic with remaining 1/2 teaspoon canola oil, add to poblanos on baking sheet; roast for an additional 25 minutes until caramelized.4. Purée caramelized garlic, shallots, and poblanos in food processor until smooth.5. Melt butter in large pot over medium heat.6. Add flour to make a roux, stirring constantly until smooth and light golden brown, 4 to 5 minutes.7. Add cream and bring to boil, stirring constantly; continue to stir and cook for 10 minutes.8. Add reserved lobster stock and poblano purée; bring to simmer, stirring occasionally.9. Slowly add Oaxaca and cheddar cheeses.10. Stir constantly until all cheese is melted and sauce is smooth.11. Set aside; hold warm.FOR COOKED LOBSTER:1. Ensure lobster meat is cleaned and veins removed.2. Chop lobster in large bite-size pieces.3. Heat butter in large sauté pan over medium heat.4. Add lobster pieces, salt, pepper, lime juice, and zest to pan.5. Once fully cooked (145F°), remove lobster pieces with a slotted spoon.6. Set aside; hold warm.TO SERVE:1. Preheat broiler to 500°F. Spread chips on one large or 2 medium oven-safe plates. (Use a nice baking sheet if you do not have oven-safe plates.)2. Layer with black beans, lobster cheese sauce, and mixed cheddar/jack cheese, ensuring to cover all chips.3. Broil until cheese is melted, watching carefully, 2 to 4 minutes.4. Carefully remove plate/sheet, add pico de gallo; top with lobster.5. Drizzle chipotle crema and garnish with sliced serrano peppers (optional). Serve immediately.CHEF'S NOTES: To cut down on preparation time, use restaurant-quality chips, pico de gallo and pre-shredded cheeses. But, if you have time, the homemade chips are the best!

Guests visit the island by traveling on a motorized raft which is piloted by a Disneyland Cast Member. The short 3D Jamboree features the famous Mouseketeers and their leader Jimmy Dodd. The presentation includes the animated shorts Melody and Working for Peanuts all in 3D. Storybook Land Canal Boats (originally known as Canal Boats of the World in 1955) features 13 boats (powered by outboard motors) afloat in 465,000 gallons of water.1958:Disneyland's Columbia ship opens on the Rivers of America. It is a full-scale version of the first ship to carry the American flag around the world. It actually was built in large part from the plans for the HMS Bounty (of mutiny fame). Disney's shipbuilders couldn't find plans for the original Columbia, so they relied heavily on those of Captain Bligh's ship, which had similar dimensions. It has cost $300,000 to build. Fowler's Harbor (named after Admiral Joseph Fowler, who helped to build Disneyland) is also officially opened on this day to dock the new ship. A dedication ceremony takes place with Fowler and Walt Disney himself in attendanceThe Disneyland attraction Alice in Wonderland debuts in Fantasyland. Actress, Kathryn Beaumont, voice of Alice in the 1951 animated movie, provides the voice for the dark ride. It follows the path of the movie, as the riders (as Alice) follow the White Rabbit down the Rabbit Hole into Wonderland. Disneyland's first "Alice" attraction - Mad Tea Party (a spinning tea cup ride), has been operating since the park's debut in July 19551959:Three major attractions are christened at Disneyland on this day:The first urban monorail system in the U.S., the Disneyland-Alweg Monorail System, begins operation in California's Disneyland. The two Mark I trains run on a .8 mile track around Tomorrowland. Walt Disney and U.S. Vice president Nixon and their families are on hand for the dedication of the "Highway in the Sky." (In June 1961, the Monorail will become a true transportation link instead of just a sightseeing ride. With an extended 2 1/2 mile track, Disneyland Hotel guests will be able to board the Monorail at the hotel and begin their park visit in Tomorrowland.)Also on this day at Disneyland, the Matterhorn Mountain with its Matterhorn Bobsleds, opens. Modeled after the Matterhorn, a real mountain in the Swiss Alps, it is the first roller coaster to use cylindrical rails and urethane wheels (which will become standard in the roller coaster industry). At 147 feet tall, the Matterhorn contains 500 tons of structural steel. The ride consists of two separate tracks that run somewhat parallel to each other for much of the ride, intertwining and eventually deviating from each other at the loading areas.The Submarine Voyage ride is officially dedicated on this day as well in Tomorrowland (although it has has been open since June 6). The attraction has cost about $2.5 million to create. The Nautilus and 7 sister submarines - the Triton, Sea Wolf, Skate, Skipjack, George Washington, Patrick Henry, and Ethan Allen allow 38 Disneyland guests at a time to take their own voyage to the North Pole. For the dedication of the new Submarine Voyage attraction the opening ceremonies feature eight live mermaids performing a synchronized swimming ballet in the lagoon.Mrs. Mildred Nelson, wife of the chief machinist on the the first nuclear-powered submarine, USS Nautilus,helps Walt Disney christen the sub D-301, appropriately named Nautilus. Also taking place at 1:30 is a special dedication parade specifically designedfor this day's festivities. The parade and all the day's events are filmed for an ABC television special to be titled Kodak Presents Disneyland ’59.1967:The Club 33 restaurant (for members-only) opens at 33 Royal Street, in New Orleans Square at Disneyland. It is comprised of two dining rooms and several adjoining areas, all of which hold a wide array of magnificent antiques and original works of art. A secret feature of the theme park, the entrance of the private club is located next to the Blue Bayou Restaurant at "33 Royal Street" with the entrance recognizable by an ornate address plate with the number 33 engraved on it.1971:The All American College Band performs for the very first time at Disneyland. The All-American College Band, made up of musicians from colleges all across the United States, will perform for 11 weeks throughout the summer (and become a yearly tradition).1972:The Main Street Electric Parade kicks off at Disneyland for the very first time. The floats include the Blue Fairy, Casey Junior Circus Train, Alice In Wonderland, Chinese Dragon, Dumbo’s Circus, Cinderella’s Ball, "it’s a small world", and the American Finale.1974:Disney World’s "Hoop-Dee-Doo Musical Revue" dinner show debuts in Pioneer Hall at Disney’s Fort Wilderness Resort and Campground. Created as a college workshop summer production only, guest response will be so positive that Walt Disney World entertainment will continue the show with a permanent professional cast at the end of the 1974 summer! 1975:Great Moments with Mr. Lincoln returns to Disneyland after being replaced in 1973 with The Walt Disney Story.1983:The Disneyland parade Flights of Fantasy, which celebrates the opening of the New Fantasyland, debuts.1999:Disney's animated feature Tarzan premieres in the U.S. at the El Capitan Theater in HollywoodThe computer controlled sign that welcomes guests to the main entrance of Disneyland's parking lot is removed. Its site will be absorbed into the new California Adventure area. (This is only the second sign to greet guests as they entered Disneyland in the park's 44 year history. The original marquee, erected in 1958, had letters that had to be changed by hand!) Disney's 37th animated feature Tarzan is generally released in the U.S.2010:Toy Story 3 has its worldwide premiere at Taormina Film Fest in Italy. (It will premiere in the U.S. the following day.)2012:An expanded and spruced-up Carnation Café debuts on Main Street, U.S.A., in Disneyland park.A 4.1 earthquake in Yorba Linda that shake parts of Southern California on this evening adds a little extra unexpected excitement to the star-studded red carpet opening of the new Cars Land at the Disneyland Resort.Disneyland Resort caps off its $1 billion renovation of Disney California Adventure with the public opening of Cars Land and the new Buena Vista Street. Based on the Disney-Pixar movie Cars, Cars Land is the largest piece of a five-year expansion at Disney California Adventure Park, adding 12 acres of new attractions to the theme park. It is a recreation of the fictional town of Radiator Springs, featuring Luigi's Flying Tires, which flies riders over what looks like a giant air hockey table; Mater's Junkyard Jamboree, which swings riders in trailers in a "tow-si-do" square dance; and Radiator Springs Racers, which takes riders through a race through a mountain range.2016:Finding Dory, a 3D computer-animated comedy adventure film produced by Pixar Animation Studios and released by Walt Disney Pictures, hits U.S. theaters. News: Disney announced that the theme parks in Walt Disney World in Florida would be reopening to the public in July.
