Ce samedi à La table des bons vivants, Laurent Mariotte, Luana Belmondo et Olivier Poels vous emmènent chez le caviste. La caviste Marie-Dominique Bradford vient d'écrire Mes conseils de caviste, aux éditions Dunod, et nous accompagne pour nous décrire le monde du caviste. Sa passion est d'essayer de rapprocher les consommateurs des viticulteurs et de déconstruire les fausses croyances. Question prix, il n'est pas nécessaire de dépenser des mille et des cent pour déguster une bouteille de bon vin. 10 euros suffit largement. Les accords mets-vin sont aussi une question que l'on pose souvent aux cavistes. Que mange-t-on, par exemple, avec le poulet du dimanche ? La recommandation de Marie-Dominique Bradford est de choisir un vin blanc élevé en fût de chêne. Il est possible de sortir un vin rouge pour accompagner le poulet bien grillé, s'il n'a pas trop de tanin. Peut-on acheter du vin au supermarché ? C'est la question que pose Laurent Mariotte ce samedi. Olivier Poels explique que cela dépend des grandes surfaces. Généralement, il y a peu de gens pour vous conseiller… Faut-il se fier aux médailles quand on n'y connaît rien ? Olivier Poels n'est pas convaincu.Ensuite, Laurent Mariotte, Luana Belmondo et Olivier Poels s'intéressent aux gibiers. C'est la pleine saison ! Et l'un des plats emblématiques de la cuisine française, dans la catégorie gibiers, c'est le lièvre à la royale. Pour en parler, ils reçoivent Gérard Allemandou, qui a écrit Le lièvre à la royale aux éditions Menu Fretin avec Philippe Berthet-Bondet. De nombreux chefs s'amusent autour de ce plat, où il existe deux versions. La première est attribuée au sénateur Couteaux : c'est un lièvre cuit longuement, avec beaucoup d'ail, d'échalote, et il termine en effiloché, avec une sauce au sang du lièvre. La deuxième version, en ballotine, était attribuée à Antonin Carême… mais elle serait issue d'une cuisine traditionnelle du Périgord aux alentours de 1830, avant d'être cuisinée au restaurant. C'est Marc Soustelle au Lucas Carton qui l'aurait mis au goût des chefs ! Une version depuis améliorée avec du foie gras et de la truffe. Il existe même le “Championnat du Monde du Lièvre à la Royale”. Il a été créé par Thomas Boullault, chef du restaurant L'Arôme (1 étoile), pour rendre hommage à sa Sologne natale. Le concours s'est déroulé la semaine dernière et c'est Maxime Rizo, second du Relais De La Poste à Magescq (Landes), qui l'a remporté ! Comme dans chaque épisode, l'équipe de la table des bons vivants continue de jouer avec vous. Laurent Mariotte vous fait écouter un son en rapport avec la cuisine… à vous de le découvrir. Elle a préparé une poêlée de champignons, avec une crème champignons - châtaignes - fève tonka, accompagné d'une surprenante sauce à la levure boulangère. Un plat végétal, presque viandard ! Da Roma Antica fino ad oggi i ponti sono sempre stati acceleratori per l'economia e lo sviluppo dei paesi, progettati per rispondere a un'esigenza all'apparenza semplice: unire due lembi di terra mettendo in collegamento le persone, intensificando i commerci, accorciando le distanze tra comunità altrimenti lontane. La loro evoluzione racconta molto dell'epopea dell'ingegneria e delle conquiste della scienza delle costruzioni che dai primi ponti ad arco fino ai ponti sospesi ha compiuto un viaggio attraverso la storia dell'uomo. Il Gruppo Webuild ha dato il suo contributo agli ultimi cento anni di questa storia, arrivando oggi ad un record di 1.020 chilometri di ponti e viadotti realizzati: l'equivalente di un unico grande ponte che unisce Parigi con Berlino, attraversando tutta l'Europa. Fresh off a return from a two-night ski adventure at the Frog Lake Huts, right before PowBot's departure for Japan, the boys do a catch up, recapping the of the most dangerous periods of avalanche conditions ever in the Sierra Nevada. The boys discuss the unfortunate inbounds fatality on KT-22 opening day at Palisades Tahoe and PowBot recounts the only time he's ever been fully buried in an avalanche – inbounds at Sugar Bowl – and a second recovery he was involved in immediately after being unburied by a partner. The boys also chat about the inherent dangers of skiing inbounds on a storm day, terrain management, proper recovery gear, the dangers of group think and the expert halo, the risks of traveling in the backcountry and methods employed to stay safe even on considerable and high avalanche danger days, and why PowBot thinks avalanche education and safety is better in Canada and Europe than the U.S. The last third of the show recaps the boys' trip to the Frog Lake Huts (where Mind the Track was born a year ago) and successfully negotiating avalanche terrain in dangerous conditions en route. It has adjustable venting, a dial fit system, Fidlock magnetic buckle, Recco reflector.   Head Rachel and Head Radar – £200 (12:45) A light, visor helmet with great functionality to fit with prescription glasses or lens can be removed. Uses Head's Sphere Fit BOA system to adjust fit, adjustable venting, and excellent lens. Note that if you wear with goggles and no visor, there's not goggle retainer. The Rev and Rita models are sold without the visor.    Salomon MTN Lab – £155 (14:00) A multi-purpose light (400g) helmet certified for climbing and skiing, so a superb choice for ski tourers. Passive venting, dial-fit system, removeable washable Merino liner, separate summer liner, head-torch clips and an elasticated goggle retainer at the rear. It uses Salomon's EPS 4D liner, so the EPS core of the helmet provides crumple-zone like features, making it 30% safety than the European standard.    Oakley MOD 1 – £85 (16:00) A super-clean skater-inspired design. Light, BOA fit, washable liner and ear pads and available in a massive range of colours. If you want this style but with a brim or peak, the dual cert (ski and bike) hard shell Smith Holt at £80 is an excellent choice, at around 150g heavier. Comes with an extra Lumens Light Rose lens with 66% VLT. Oakley Line Miner – £138 (27:15) A medium fit product, also available in a Line Miner Large version. Available in a large range of frame and lens colour options, but the Prizm Saphire Iridium lens (Cat S3 13% VLT) is a stand-out. Silicon lined strap, triple layer face foam, microfibre bag and notches in the frame allow them to work over the legs of prescription glasses.   Bloc Boa – £45 (29:15) The standard black has a Cat S2 spherical lens (19% VLT) and a silver mirror finish. For the price, with a UV400 lens, anti-fog coating, triple layer face foam and silicon lined strap, microfibre bag this is excellent value. It has PrimaLoft Gold insulation, include a Recco reflector, removable helmet compatible hood and removable powder skirt and a good selection of pockets and stowage. The North Face Summit Verbier GORE-TEX Jacket (men and women), £629 (19:15) A technical 3-layer shell for freeride type skiing. The face fabric is 100% recycled polyester and your your foul-weather protection is provided by the Gore-Tex membrane.  Schöffel Misurina Women's jacket, £500 (21:00) A flattering cut with removeable hood and powder skirt, which uses a stretchy Venturi waterproof/breathable membrane and has Responsible Down Standard down insulation paired with recycled PrimaLoft Gold Eco insulation with a 45% recycled material content.  Patagonia Women's Snowdrifter Jacket, £400 (23:00) This 3-layer jacket uses Patagonia's H2NO membrane and is completely PFC free, made using 100% recycled polyester fabric in a mono-material. You get a Recco reflector, fixed powder skirt, large helmet compatible hood and a range of pockets. If you want a technical shell but want to focus on being environmentally friendly it's hard to beat. Picture Men's Stone Printed Jacket, £350 (26:00) This uses Picture's DryPlay membrane, a PFC-free DWR treatment, and recycled materials. The over/under for tonight's Patriots/Steelers game is 30.5, the lowest in the NFL in 30 years. A caller said Tommy DeVito took his shot with Dua Lipa and Gio is all for it. A caller said DeVito isn't man enough for Dua Lipa since he lives at home. C-Lo returns for an update and talks about potential Yankees lineups with Juan Soto in the mix. A caller wonders if Soto will be able to grab his crotch while on the Yankees. Shaun Morash had some suggestions for John Sterling's HR call for Soto. C-Lo has audio from Shannon Sharpe and Ochocinco's podcast. Ocho thinks hotels charge for using the heat. A Jaguars employee in the finance department ripped them off for $22 million. Jerry Recco slipped during the Rutgers game and said ‘dick' instead of ‘deck'. In the final segment of the hour, there's a french coffee shop near the station that is always packed. Bars are now reserving seats at the bar. That's not right.

We talked about Craig Carton's monologue yesterday at the start of Carton & Roberts. What should the new afternoon show be called? Boomer loves the name ‘Tiki & Turtle', no matter who it is. Gio imagines what the promos might sound like if the new show is ‘Recco & Roberts'. Jerry returns for an update and asks Jerry about the possibility of ‘Recco & Roberts'. Jerry started with Shohei Ohtani as he got the win and hit his 22nd HR. Jerry has audio from Nuggets Head Coach Michael Malone after a few drinks at the championship parade. Gio said he's seen enough of Aaron Rodgers enjoying the nightlife in NYC.

Hour 1: We open the show talking about Craig Carton announcing that he's leaving WFAN. Gio has all the scuttlebutt about what's happening but he's not allowed to say. Gio said he saw Craig but he thinks he faked a phone call so he wouldn't have to talk to him. Gary Myers seems to think Tiki Barber is replacing Craig. Jerry is here for his first update and starts with audio from the Denver Nuggets championship parade. Rob Manfred talked about the A's moving to Vegas and the reverse boycott. Day one of the U.S. Open started yesterday and Jerry had your updated leaderboard. Antonio Brown's Arena League team was kicked out of the league. Stephen A. Smith backs Evan Roberts' take, calling Scherzer and Verlander ‘mercenary pieces of crap'. Stephen A. Smith also likes breasts, and sex too. Adam Schein was on the Awful Announcing podcast and said that Mike Francesa wanted him to take over afternoons when he retired. Gio wonders what that conversation would have sounded like. In the final segment of the hour, video has emerged from the Conor McGregor incident inside the Miami Heat's arena. He led a woman by the arm into a bathroom and his security guards are seemingly guarding the door. She is claiming sexual assault.  Hour 2: A man drove his car into the bay in Patchogue. None of the articles or news reports are saying how he wound up in the bay. He is 33 years old. A caller wants to know if Gio is watching Temptation Island. Gio has not started watching the new season but he loved season 2. Gio's daughter vomited all over the bed and his dog went to eat it. This all happened while his wife was at a reality show podcast taping. Jerry returns for an update and starts with Nuggets Head Coach Michael Malone at the championship parade. Gio said he looked like an obnoxious Yankees fan. Day one of the U.S. Open was yesterday and we heard from Rickie Fowler. Jerry has audio from the upcoming documentary series, ‘Quarterback'. The Chiefs got their rings yesterday. Stephen A. Smith comments on Rose Montoya, the trans activist that showed her boobs on the White House lawn. Adam Schein talked about his childhood dream of being on WFAN but dreams change. In the final segment of the hour, Baltimore Ravens Hall of Famer Ray Lewis' son, Ray Lewis III, passed away at 28 years old, but there are no details yet on how he died.  Hour 3: The Mets open up a series tonight against the Cardinals at Citi Field. Columnist Mike Vaccaro said Buck Showalter could be tarnishing his legacy right now with this Mets team. This is a team that should be competing for a World Series but they keep losing series to bad teams. The Mets are spending too much money for that and not living up to expectations. Jerry returns for an update but first Gio said he is not canceling any plans because someone might be getting sick. Jerry starts with Shohei Ohtani getting the win on the mound and hitting a monster HR. Rob Manfred talked about the A's fans as they move the team to Las Vegas. Jerry ran through the leaderboard after day 1 of the U.S. Open. Rickie Fowler is happy to be playing well. The Chiefs received their rings yesterday and Andy Reid said it's now on to 2023. The Nuggets had their championship parade and Head Coach Michael Malone had a few drinks and addressed the crowd. In the final segment of the hour, Gio doesn't think the Carton & Roberts combo was together long enough to look back like they were together forever. We talked about trying to get Boomer to 20 years as morning host at WFAN. We think it's 4 ½ more years. He can definitely do that. Do moms in their 30's have more life experience? Do young moms just survive because they don't "know any better" (that was a quote from my MIL who had children in her early 20's).
