As industry, technology, and communication evolve exponentially, countless Victorians are searching for comfort and explanations; many believe they find answers through mesmerism, seances, hallucinations, and mediums.In this episode, we will learn why so many Victorians were looking beyond the earthly realm for answers, and the impact of that exploration on Victorian London society as a whole. In today's episode, Amanda drinks some cocktails (Corpse Reviver #2 to be exact!) with the owner of Ernie's Icebox Julia Haist to discuss starting her business Ernie's Icebox, figuring out how to delegate as a boss, and her experience as a female director. In addition to being the founder of Ernie's Icebox, a premium ice cream sandwich shop here in Toronto, I met Julia through her career in the performing arts. She graduated from Humber College's theatre performance program as well as Second City's Conservatory program, and went on to produce, write, and perform in many live theatre productions and comedy performances, including her critically-acclaimed solo show “This is Not She”, where she was nominated for Best Solo Performance by My Entertainment World Critic's Pick Awards. When the pandemic hit, Julia (like many others) felt she had to pivot career-wise, and so Ernie's Icebox was born – her very own artisanal ice cream business. Since opening, Ernie's has been featured by BlogTO, Breakfast Television, in Toronto Life's annual Holiday Gift Guide, and has made numerous “best of” lists. Wet the rim of a cocktail glass and dip it in coarse salt. Fill a cocktail shaker with ice, then add the vodka, St. Germain and grapefruit juice and shake until chilled. Strain into the salt-rimmed glass and garnish with a grapefruit slice and rosemary sprig. “The Hot Mess Express” cocktail aka The Jen Yozwiak >> Procure the largest bottle of Prosecco available, open that bad boy up and dump it into any glass you can find. Add a few raspberries (mulled or muddled, preferably) and throw a rosemary sprig in for good measure. Corpse Reviver #2 cocktail >> Absinthe, to rinse; 3/4 ounce London dry gin; 3/4 ounce Lillet blanc; 3/4 ounce orange liqueur (such as Cointreau or Triple Sec); 3/4 ounce lemon juice, freshly squeezed. Rinse the inside of a chilled coupe or cocktail glass with absinthe, discard the excess and set the glass aside. Add the gin, Lillet blanc, orange liqueur and lemon juice into a shaker with ice and shake until well-chilled. boaksi, from Project Indigo, is providing us the lifesving measures we urgently need on this grey monday: a real deep Corpse Reviver! boaksi is a producer and DJ from Zurich, Switzerland. Playing the trumpet, guitar and the piano since his childhood, he got influenced by jazz and classic music early on. More recently, Zurich's nightlife refined his signature sound. Further, since studying in the UK close to electronic music hotspot Bristol, there's that "UK touch" to boaksi's music: boaksi's sound consists of smooth and melancholic deep house, which is beginning to progress into a more minimal and darker direction. This is reflected by his mix, which also includes unreleased material that will feature on Project Indigo’s next various artists compilation album. So far, boaksi has had releases on Novaj, EELF and the label he co-founded, Project Indigo. The label seeks to support the conservation of rainforests by working together with the Stand for Trees foundation. All of their profits from releases and events are donated to this cause and so far they have offset over 80 tonnes of CO2. Furthermore, they look to minimise the pollution of their releases by working with innovative vinyl pressing plants who are as environmentally friendly as possible. Great music for a great cause! This episode I am joined by lapsed lawyer, recovering academic, semi-reformed punk rocker, and now writer and stay-at-home dad, Bram Presser. Bram's writing has appeared in Best Australian Stories, Award Winning Australian Writing, The Sleepers Almanac and Higher Arc. His 2017 debut novel, The Book of Dirt, won the 2018 Goldberg Prize for Debut Fiction in the US National Jewish Book Awards, the 2018 Voss Literary Prize and three awards in the 2018 NSW Premier's Literary Awards: the Christina Stead Prize for Fiction, the UTS Glenda Adams Award for New Writing and The People's Choice Award. We talk about our love of browsing bookstores, Bram's journey to writing a novel, writing a personal history as fiction and of course, we pair some delicious things to some fabulous books! The pairings: The Door by Magda Szabo A busy young writer struggling to cope with domestic chores, hires a housekeeper recommended by a friend. The housekeeper's reputation is one built on dependable efficiency, though she is something of an oddity. Stubborn, foul-mouthed and with a flagrant disregard for her employer's opinions she may even be crazy. She allows no-one to set foot inside her house; she masks herself with a veil and is equally guarded about her personal life. And yet Emerence is revered as much as she is feared. As the story progresses her energy and passion to help becomes clear, extinguishing any doubts arising out of her bizarre behaviour. A stylishly told tale which recounts a strange relationship built up over 20 years between a writer and her housekeeper. After an unpromising and caustic start benign feelings develop and ultimately the writer benefits from what becomes an inseparable relationship. Simultaneously we learn Emerence's tragic past which is revealed in snapshots throughout the book. Bram called this the most beautiful book he has ever read, a modern classic, and a beautiful meditation on dignity and how we imagine people to be. To pair with the interesting and complex character of Emerence he suggests a classic Borscht with sour cream and a traditional Pilsner Urquell. The Curfew by Jesse Ball William and Molly lead a life of small pleasures, riddles at the kitchen table, and games of string and orange peels. All around them a city rages with war. When the uprising began, William's wife was taken, leaving him alone with their young daughter. They keep their heads down and try to remain unnoticed as police patrol the streets, enforcing a curfew and arresting citizens. But when an old friend seeks William out, claiming to know what happened to his wife, William must risk everything. He ventures out after dark, and young Molly is left to play, reconstructing his dangerous voyage, his past, and their future. Bram called Jesse Ball the most exciting writer out of America right now and highly recommends this totalitarian dystopia with its surrealist and strangely beautiful experimental writing. Artist Melissa Belanger's desire to be contrary is rooted in her childhood. Her mother was supportive but didn't like candy, Halloween, and dolls, which Melissa adores. Melissa created all of her costumes. One of her most memorable was cardboard butterfly wings paired with a snowsuit. Halloweens were often cold in her Wisconsin hometown. Melissa loved her time as a middle school art teacher. She pushed her students to explore as many mediums as possible and to focus on process over outcome. She was amazed by the skill of her students and how open their minds were. Before going full-time in art, she also worked in a bookstore and an art gallery. Melissa is passionate about travel. She enjoys checking out places she's seen in movies or heard about in songs. In Ostend, Belgium, she checked out the resort from the 1971 European vampire classic, Daughters of Darkness. Watching tourists on the boardwalk reminded her of Edward Gorey's paintings. She's a fan of artist James Ensor (1860-1949), who painted carnivals, puppets, and masks. While in Belgium, she visited his apartment and his mother's curiosity shop. It was there she spotted her first Fiji mermaid. Her parents bestowed upon her a love of history and literature. Both find their way into her paintings. The twisted stories of Elizabeth Bathory, Fox Sisters, witch hunts, and the Donner Party inspire her to create. Melissa admits it is tricky to describe her paintings. They are so cute she almost wants to dislike them. Her paintings have playful colors and textures. Melissa enjoys playing around with different themes and eras and mashing them all together. Her characters often hint that they are about to do something naughty. An outfit, movie, or song will help her focus on a theme for an art show. Melissa loves cocktails and to entertain. She intentionally sets up her art show booths as lounges to encourage people to hang out. One of her favorite drinks is a Corpse Reviver. Her husband, Joe, is a great booth assistant. He'll even wear short lederhosen to get into character. Better Homes and Gardens Holiday Crafts magazine has included Melissa's work in multiple issues. For Travis Howard and Tim Wiggins, hospitality is top of mind at their restaurants Yellowbelly and Retreat. The two concepts are wildly different, one a tiki-inspired seafood restaurant with an emphasis on rum cocktails, the other a modern American gastropub with a rustic vibe. But they both bring equal focus on cocktails and good food, with service that brings guests coming back. Now the two are taking the next step, opening an event space called the Hideout, where they plan to host everything from birthday parties to pop-up events. The nice thing about shrubs is that they provide two taste components found in many cocktails: sweetness and sourness (or acidity). But if you back up and think about what a shrub is, you realize that it’s just sweet and tangy, and those are two taste elements you’re going to be adding to most cocktails anyway. So don’t be afraid of Shrubs, and don’t be afraid to experiment.

The stiff cocktail comes from 1930 as one in a family of "hair of the dog cocktails". It's good for whatever might be ailing you. Enjoy it in moderation. Note on the Lillet Blanc vs. Cocchi Americano, the former is sweeter and the latter is more bitter. So choose the one that appeals to your taste. Both are generally available. 1 oz. gin 1 oz. Cocchi American or Lillet Blanc, as preferred 1 oz. Cointreau 1 oz. fresh lemon juice 1 dash absinthe Place all components in a shaker with ice and shake vigorously. Pour into a cocktail glass. Garnish with an orange peel or cherry. What makes a good craft cocktail? What makes a bad one? I've been looking forward to *THIS* conversation for a while. I love cocktails, and many moons ago worked as a bartender. Lately though there are only mixologists and the bar resembles an apothecary with spices, oils, bitters, and tinctures prominently displayed. But do we really need artisanal ice? I'm talking with Christian Johnston of The Cicchetti Bar at Tavola to find out. The Cicchetti Bar was created as a waiting room of sorts for Tavola restaurant. A place to sit and unwind while you wait for a table. It's becoming so popular folks are using Cicchetti to wait for tables at nearby restaurants like Lampo. Or making it their primary destination. Born in Jersey, raised in Charlottesville, Christian started out as a server but quickly discovered his place was in the kitchen. First at Mellow Mushroom then Boylan Heights where Chef Kelly Trip (of Restoration and Blue Light Grill) showed him how to care about ingredients, even if you're creating a simple burger. This led Christian to work with Chef Justin Hershey at Zinc where he developed the palate needed to make himself a fantastic bartender. Circumstances let him to The Whiskey Jar then Blue Light where he met Micah Lemon the mixologist now creating ethereal nectars at The Alley Light. Micah mentored him and Christian started developing his own cocktails. I wrote about bartending recently. How bars can become second homes if the bartender treats you right. If they look down their nose you might end up going somewhere else. We discuss this in depth. How it is the HOSPITALITY industry after all. Then we go into the flavor profiles of vodka, of which there are many believe it or not, and talk about his process for creating his peach-tea-infused Manhattan and his pink peppercorn gimlet which graced the cover of a recent C-VILLE Weekly. The Safe Word1.5 oz Reposado Tequila.75 oz Aperol.75 oz Cocchi Americano.75 oz Sorel liqueur2 dr Peychaud's Bitters1 twst Grapefruit peel (as garnish) Stir, strain, rocks, twist. Corpse Reviver #11.5 oz Cognac.75 oz apple brandy or calvados.75 oz sweet vermouth Stir with ice and strain into a chilled cocktail glass. Garnish with an orange twist. Upside Down Martini2 1/2oz of french dry vermouth1 oz ginlemon peel for garnish Assemble gin and vermouth in a mixing glass filled with Ice and stir. Strain into a chilled martini glass and garnish with the lemon peel. Fade To Black (via)1 oz mezcal, preferably Del Maguey Vida1 oz Ramazzotti amaro.25 oz navy strength Jamaican rum, preferably Smith & Cross.5 oz agave syrup1 eggPinch of salt2 dashes Bittermens mole bitters2 ozs Negra Modelo beer In a cocktail shaker, combine all ingredients except the beer, and dry shake about 30 seconds. Fill three-quarters full with ice and shake for another 30 seconds. Strain into an 8-ounce highball glass with no ice. Top with the beer. Stir briefly with a bar spoon to combine ingredients. Test Pilot.5 oz fresh lime juice.5 oz falernum.5 oz Cointreau1.5 oz dark Jamaican rum.75 oz light Puerto Rican rum1 dash Angostura bitters6 drops Pernod1 cup crushed iceProcedures Put all ingredients in a blender and blend at high speed for 5 seconds. Pour unstrained into a double old-fashioned glass, adding more crushed ice to fill. Garnish with an orange wheel.

Putting the word “corpse” in anything you are going to consume is probably a mistake, but Corpse Revivers seem to have weathered any associations with dead stuff. When you look at the name closely you pick up right away that this cocktail is intended to clear out the cobwebs and get you right up out of your grave, er, bed I mean. This one is an old one showing up in newspapers in the mid-19th century as a pick-me-up with a notably unusual name. As we learned with the Old-Fashioned episode, people seemed to think cocktails were a good morning activity to get you going. Ah, the 19th century, where booze was the equivalent of coffee. Known more as a class of drink, rather than a cocktail itself, there are still two very different recipes that survived. We end up with a Corpse Reviver #1 and a Corpse Reviver #2, showing that it didn’t really matter all that much what was in it as long as it was liquor and you could drink it in the morning. Join us as we discuss why something with brandy in it might make you alert, rather than warm and sleepy. We also delve into the faux pas of burying the living who were thought to be dead, an invention to make sure the living could let you know they weren’t dead, and the man behind the innovation.
