This looks like a perfect recipe for our colder weather. Black-eyed Pea Chili 1 lb. Jimmy Dean sausage 1 chopped onion 3 ribs chopped celery 4 cans black-eyed peas, undrained 16 oz. can tomatoes 1 can Rotel 2 Tbls. chili powder Brown sausage in a dutch oven. Drain on paper towels. Sauté onion and celery in 1 Tbls. Olive oil. Add black-eyed peas, tomatoes, Rotel, and chili powder. Add sausage. Simmer 30 minutes....Article Link

Tbls minced garlic  Semmer with lid 30 mins 4 tbls Tennessee chili and butt rub 2 tbls garlic jalapeño seasoning  Dogs  Slice beef hotdog down one side  Cover in mustard and Butt Rub Smoke/cook how you want Until they are done how you like. Shouldn't see the mustard anymore  Buns Remove bread from middle of sub roll. Brush with garlic butter and put under broiler.  Add slice of American cheese and return to broiler  Put down dog cover with chili and cheese back to the broiler until brown melty and delicious

It goes much quicker as a pair! ** Equipment: 1 medium soup pot with lid (to cook meatballs) 1 medium soup pot (for sauce) Meatball Ingredients: 1 LB Ground beef ½ LB Ground pork ¾ cup fine dry breadcrumbs 1 TBLS. Minced Parsley 1 ½ tsp. salt 1/8 tsp. pepper 1 TBLS Worcestershire Sauce 1 egg ½ cup milk Gravy Ingredients: ¼ cup flour 1 tsp. paprika ½ tsp salt 1/8 tsp pepper 2 cups boiling water ¾ cups sour cream Meatballs: In a large bowl combine: ground beef, ground pork In a small bowl mix egg, Worcestershire sauce, milk salt, and pepper. Add egg mixture to beef and pork and combine. Add breadcrumbs and parsley. Mix thoroughly until all ingredients are incorporated evenly. Shape into balls the size of a large walnut. Brown meatballs in a ¼ cup of hot oil on medium heat for approximately 10 minutes. Turning periodically to brown evenly. Gravy: Once all meatballs are cooked thoroughly, remove meatballs and stir into fat, flour, paprika, salt, and pepper. Stir in 2 cups of boiling water. Continue stirring on medium heat until the mixture develops into a gravy consistency. Stir in sour cream. Return meat to the gravy. Cook for 15 -20 minutes. Serve alone or over pasta or mashed potatoes. Persimmon-Kumquat Pudding with Coconut Whipped Cream Culinary Inspirations: From Gourmet to Pret-a-Manger. We CAN have nice things! +Cooking Demo Serves 6 For the pudding: 4 very ripe Hachiya persimmons or 5 Fuyu persimmons, allowed to soften ¼ lb. kumquats, whole, about 10 1-2 TBLS Dr. Fuhrman's Blood Orange vinegar, or lemon juice, or to taste Coconut water or orange juice (optional to facilitate blending) For the coconut whipped cream: 1 ½ cup nuts of choice (cashews, macadamias, walnuts, hemp, or a combination) 1 TBLS unsweetened flaked coconut 12 deglet noor dates, pitted Coconut water (as needed to facilitate blending) Optional: 1 teaspoon, Dr. Fuhrman's Coconut Vinegar, or coconut extract Optional garnishes: Unsweetened shredded coconut, raw or lightly toasted 6 kumquats, cut into pinwheels and seeded In a high-speed blender, puree the pudding ingredients until smooth, adding coconut water or orange juice as needed to facilitate blending. Place in 12 individual serving dishes (martini glasses make a nice presentation). Likewise, puree the coconut cream ingredients until smooth, using coconut water to facilitate blending. Spread a layer of the coconut cream over the persimmon pudding and chill for at least 2 hours. Garnish with unsweetened shredded coconut and some kumquat pinwheels. Nutritarian Vinaigrette (Basic Recipe) ½ cup vinegar or citrus juice (any flavored vinegar, balsamic, sherry, lemon juice, lime juice, Yuzu, verjus, etc) 1 cup water 2 teaspoons arrowroot powder, dissolved in an additional ¼ cup cold water Bring the vinegar and the cup of water to a boil in a small saucepan. Once boiling, whisk in the arrowroot-cold water mixture and let boil for 2 minutes, but no longer, whisking occasionally. Remove from the heat and let cool to room temperature. Refrigerate until ready to use. Makes about 1 ½ cups, approx. 6 servings.

Tacos & Cheese Sauce The walnut mix: 1C of walnuts, add 1 carrot, 1 celery stalk, dash of each of these: cumin, turmeric, pepper, salt and cinnamon. Squeeze in 1/2 a lemon. Pulse in your food processor, or blender for 1 minute, then check to make sure it's thick. You want to keep the ingredients chunky. Add more spices as desired, and pulse until ready. Add the mix to almond flour tortillas. The cheesy sauce: Homemade tasty cheesy sauce for walnut veggie lettuce tacos: blend ½ C water, 1 C cashews, 1 Tbls apple cider vinegar, 1/2 a lemon squeezed, 1 garlic clove. Season w/turmeric, pepper, salt, 1/2 C water & dash of onion powder. Blend until creamy. Add the walnut mix inside the tortillas, to make tacos, add sliced avocados, greens, then pour the cheesy sauce on top! Enjoy! Smashed Chickpea Avocado Salad Sandwich Ingredients 15 ounces chickpeas or garbanzo beans, canned 1 large ripe avocado 1/4 cup fresh cilantro 2 tablespoons chopped green onion 1 lime 1 teaspoon Ole bay 1 teaspoon garlic powder 1 teaspoon onion powder Salt and pepper to taste Bread of your choice Fresh spinach leaves or your favorite sandwich topping; lettuce, sprouts, tomato slices Instructions 1. Rinse and drain the chickpeas. 2. In a medium bow, using a fork or potato masher smash the chickpeas and avocado together. Add in cilantro, green onion, and lime juice. Add in ole bay, garlic powder and onion power. Mix well 3. Spread salad on bread and with your favorite sandwich topping. Enjoy!

Opening Bible Verse: Ecclesiastes 9:7 We are all feeling the pinch at the grocery store right now.  So how can we stretch our budgets and our time between grocery store visits? That food you have in your house used to be money!  So let's use it! There is money sitting in your pantry, your fridge, your freezer and in the form of leftovers!  In today's episode I share two meal ideas I threw together this week to avoid going to the grocery store while stretching the budget just a little bit more. Here are the recipes (roughly) that I made: First Night: Broiled chicken thighs with salt and pepper Last bits of frozen veggies 2 Cups of cooked white sticky rice Heat veggies in large skillet add cold rice and fry with olive oil. Add salt and pepper to taste. Serve chicken over fried rice.   Second Night: All the random half filled bags and boxes of pasta 1 15oz can of diced tomatoes 5 cloves of garlic, minced 4 Tbls of butter 2 Tbls of olive oil 1/2 jar of Kalamata olives Leftover meat from chicken thighs, diced Cook all pasta according to package instructions. In large skillet, heat chicken in oil and butter. Add garlic and brown. Add tomatoes and bring to boil.  Add olives at the end. Serve over pasta with a salad! The other recipe I mentioned was the marinade for the salmon. Here's that recipe: 1/4 cup real maple syrup 1/4 Balsamic Vinegar 2 Tsp of dijon mustard Salt and Pepper Whisk all ingredients together and place in a baking dish with salmon. Marinate in fridge for at least half an hour. Save sauce remaining in baking dish to pour over salmon while it cooks.  I cut salmon into serving sizes and place on baking sheet lined with foil and sprayed with cooking spray. Pour extra marinade over salmon and broil for 3 minutes per side or more depending on your preference. About declamation, IB Latin, and the benefits and challenges of having a four-year Latin requirement. Founded in 2006 and modeled after the Boston Latin School, The Brooklyn Latin School (TBLS) is one of nine specialized high schools in the New York City public school system. With an emphasis on public speaking, structured writing, analytical thinking, and Socratic seminars, TBLS requires all of its discipuli – and yes, they're referred to as discipuli, not as students – to complete a full four-year Latin program. The discipuli of TBLS wear uniforms whose purple accents “reflect the color worn by Roman nobility,” and the school's motto is reflective of the high expectations to which its discipuli are held: CUI MULTUM SIT DATUM, MULTUM AB EO POSTULABITUR (“To whom much has been given, much from him will be demanded”). According to data collected and analyzed by U.S. News and World Report, The Brooklyn Latin School is among the top one hundred public high schools in America. Jennifer Snyder serves as Chair of the Department of Classics at TBLS. Brian Laundrie made headlines across news outlets yet managed to never say a word or be seen by anyone other than his family.  A cross country drive, murder, disappearance and an unlikely collection of social media investigators leads us to two bodies and no answers.  Join us as we try to unravel – who is Brian Laundrie?And what will we be serving tonight?  A CHICKEN dinner of course crusted with granola, an apparent favorite of our supposed killer.  Granola Crusted ChickenIngredientsFor the Chicken·       2 eggs beaten·       ½ cup panko crumbs·       1 cup granola·       1/2 cup of flour·       1 ½ pounds chicken cutlets·       canola oil for fryingFor the Sauce·       1 cup chicken stock·       1 Tablespoon butter·       1 Tablespoon oil·       ½ onion, chopped·       1 cup sliced mushrooms·       1-2 Tablespoons flour·       ½ Tablespoon parsley·       salt and pepper Directions·      Beat the 2 eggs and put into a shallow dish.·      Put the granola in a plastic bag and use a rolling pin to crush. ·      Add the panko bread crumbs to the bag and shake to combine. ·      Place the breadcrumb mixture into another shallow dish.·      Place flour into a third shallow dish, season flour with salt and pepper.·      Set heat to medium and add ⅛ inch of oil in a large skillet.·      While the oil heats, dip the cutlets one by one first into the flour (shake off excess) then into eggs and finally into the granola panko mixture.  ·      When the oil is hot, place the chicken cutlet onto the skillet.·      Cook  3 minutes per side, remove to rack For the Sauce·      In a medium fry pan add the butter and Tbls of oil. ·      Add the onions cook until softened. Add the mushrooms and cook until wilted. Salt and pepper.·      Add in the flour and cook through. ·      Add the stock, bring back to boil and then simmer.·      Serve the cutlets and top with the sauce. ·      Garnish with parsley. Serve with mashed potato and roasted broccoli.

Hello, gardeners, and Herb 'N Wisdom™fans. Well, it's another gorgeous day on the farm. It's also that time of the year where the garden is producing all kinds of golden delicious splendor. Speaking of golden, today we are learning how to make and freeze sweet corn. As with canning and freezing most produce, it's not difficult it just takes a little time. Although freezing sweet corn goes pretty quickly the batch size will determine how long it takes. Here is a list of items you will need to make and freeze sweet corn: Corn:)SugarSaltButterWaterTwo bowls or one bowl and a cake panKnife of choiceGarbage can or animals who like scrapsQuart Freezer bagsLadleFunnel (optional)PotLarge Spoon Now that you have what you need the first step is to shuck the corn. After you have shucked all of the corn and have taken the silks off, put the ears of corn in your sink and wash them off. Once they are washed and all remaining silks removed, bring them to your work area to begin cutting the corn off the cob.  Use your large bowl or cake pan for this and your knife of choice.  Start cutting from the top and work your way down. While cutting, place the empty cobs in another bowl to take out to the animals or throw them away in the garbage can. Once all of the corn is off the cob, it is now time to start measuring the loose corn then dump it into your large pot on the stove. Recipe for a single batch of sweet corn: 8 cups of corn2 cups water2 Tbls sugar1 tsp salt1/4 pound or 1 stick of butter Measure your corn first to determine if you will have a single, double or triple batch.  Once that is determined you can now measure the other ingredients accordingly. After all of the items are measured and in your large pot, stir often with your large spoon. Heat the mixture on medium-high heat until you bring the corn mixture to a boil.  Boil it for 5 minutes then remove it from the heat. Your next step is to cool the corn.  This can be done a couple different ways. Fill a large bowl with ice and set the pot in it. Stir frequently to release steam, allowing it to cool faster.Scoop corn into cake pans and place it in the fridge to cool. After your sweet corn has cooled, it is time to scoop the mixture into your freezer bags.  I would suggest using a funnel for this part to keep the stickiness of the corn away from where it seals on the bag.  Fill each bag 3/4 full or less with a ladle or large spoon, seal the bag, and lay it flat on a cookie sheet. You can mark your bags with the proper date before or after your corn is in them. Please put all of your corn in your freezer when bagged and on the cookie sheet or sheets.  After the corn is frozen you can take them off the cookie sheet.  Notice how nicely they stack in the freezer because you froze evenly and flat. Last but not least.  Pull corn out of the freezer and use as desired:). You are now an expert on how to make and freeze sweet corn! For another great tutorial visit How to make Sauerkraut Cheers! Just imagine closing your eyes and rubbing on this aromatic cinnamon and orange body scrub. The coconut oil moisturizes, creating a spa-type experience. The ingredients are few, but the feeling is powerful. Cinnamon and Orange Body Scrub by Alice Krek Ingredients and Items needed: 2 cups granulated sugar1/2 cup + 2 Tbls. coconut oil6 drops orange essential oilZest of 1 orange1/2-2 tsp. ground cinnamon2 small glass jars (9.8 fl. oz. each)White feltRibbonGift labels/White paper Directions: In a small bowl, combine the sugar and coconut oil. Mix with a spatula until well combined, and the mixture resembles a paste.Add essential oil, orange zest, and as much ground cinnamon as you wish (more cinnamon means the scrub will be a darker color).Split into two jars (or use just one big jar if you wish) and cover with lids.Cut two felt circles, each twice as big as the side of the lid. Place them on top of each jar, and then tie a ribbon and a tag around the jar.Keep in a cool, dark place until you are ready to give this as a gift. If you're making this for yourself, you can easily keep the scrub at room temperature in the bathroom. It'll keep for about two months. How to Use: Use lukewarm water; allow it to run for 5-10 minutes to soften the skin.Pause running water and apply the scrub in circular motions; start at your feet and move upwards towards your heart to enhance circulation.Maintain gentle pressure (don't scrub too hard!)Rinse thoroughly. Making Colby Cheese is not hard; it just takes time.  Having a cow that produces an abundance of milk inspired my husband and me to make our own cheese. We have been doing it for a number of years now and still enjoy every delectable step and bite. One of our favorite cheeses to make is colby. Colby Cheese is an American cheese named after the township in southern Wisconsin where it was first made. It has a more open texture than cheddar, contains more moisture, and has a pleasantly mild flavor. Colby takes around 4 hours and 45 minutes from the start until the final press, which then takes a further 12 hours. You can time this, so you are doing the 12-hour final press at night while you sleep. That is what we do. Cheesemaking takes attention to detail as the consistency, and the final product can vary a lot if you heat the milk too hot or not hot enough. I would say paying attention to the temperature of whatever cheese you are making is perhaps the most important step. Until you become familiar with each cheese, I would not suggest multi tasking. With that in mind, let's get you ready to make some colby. Food items needed: 2 gallons skimmed or whole milk (we skim ours so we can make butter. If you are interested in How to make Butter, please follow the link.1 packet direct-set mesophilic starter or 4 ounces prepared mesophilic starter4 drops cheese coloring.1/2 teaspoon liquid rennet.2 Tbls cheese saltCheese wax. Kitchen items needed: One large pot to hold your milkCheese knifeColanderCheeseclothCheese thermometerDouble boiler to hold and heat your cheese wax (We store the wax in the same pot after each use and just let it cool).Cheese press Directions: To Begin, heat the milk to 86 degrees. Add the starter and mix thoroughly. Cover and allow the milk to ripen for 1 hour. (We move the pot to the back of the stove for the 1 hour, and the temperature stays at 86°.)Add the coloring and stir. Make sure the milk's temperature is 86° degrees. Add the rennet and stir gently with an up-and-down motion for 1 minute. If you are using farm-fresh cow's milk, top-stir 3 minutes longer. Cover and let sit for 30 minutes, or until the curd gives a clean break. Cut the curd into 3/8-inch cubes. Stir gently. Let the curds sit for 5 minutes. Next, heat the curds by two degrees every 5 minutes until the temperature reaches 102° degrees.Stir gently to keep the curds from matting. Maintain the temperature of the curds at 102° degrees for 30 minutes, stirring gently. Again, move the pot to the back of the stove for the 30 minutes, and the temperature should stay at 102°. Drain off the whey to the level of the curds. If you want to keep the whey, have an extra pot or container handy to pour it into. While stirring, add 60° water or cold tap water until the temperature of the curds and water reaches 80° degrees. Maintain the curds at 80° degrees for 15 minutes. Stir to prevent matting. (the temperature of the additional water controls the moisture content of the cheese. If a drier cheese is desired, keep the curd-water mixture a few degrees higher than 80°. For a moister cheese, keep the temperature below 80°.) Pour the curds into a colander. Allow the curds to drain for 20 minutes.Break the curds into thumbnail-sized pieces. Add the salt and mix gently but thoroughly.Place the curds into a cheesecloth-lined mold (cheese press.) Press at 20lbs of pressure for 20 minutes. Remove the cheese from the mold, gently peel away the cheesecloth, turn over the cheese, re-dress it, and press at 30lbs of pressure for 20 minutes.  Repeat the process but press at 40lbs of pressure for 1 hour.Again repeat the process but press at 50lbs of pressure for 12 hours.Remove the Colby Cheese from the mold and peel away the cheesecloth. Air-dry at room temperature for several days, or until the cheese is dry to the touch (around three days.) Being sure to rotate it several times a day. ...

Hello, hello. Today I was craving food with a touch of spice, but not enough to blow fire. So, after looking in the cupboards, I decided to make some red rice and beans.  It's filling but also very healthy. Red rice and beans also has a soup feel, so it's a perfect alternative for the winter months when you need a change. This recipe of red rice and beans is something I whipped up on the fly, but it turned out so well I thought I would share it. Let's start. Ingredients: 5 cups of water2 1/2 cups of rice1 can of dark red kidney beans, 15.5 ounces.1 can of black beans, 15.5 ounces.5 garlic cloves, minced2 Tbls olive oil2 Tbls avocado oil1 tsp. chili powder1/2 tsp. Himalayan sea salt1 tsp. onion powderA single bay leaf1/4 tsp. celery seed1 can of diced tomatoes, 14.5 ounce1/4 tsp. of mustard powderSalt and pepper to taste Directions: Bring your 5 cups of water to a boil, and then add your rice.Once you add your rice, turn the burner to simmer or low and place a lid on the pot. Occasionally stir for about 20 minutes until the rice is soft.While the rice is cooking, drain and add your beans to a medium-sized pot with your burner turned to medium-low. Next, add the remaining ingredients and continue to stir. The mustard powder is not shown You want the beans to cook so they become a little thick. Once they have thickened and the flavors have combined, the beans are ready to serve.Taking a bowl or plate, scoop some cooked rice, and then top it off with the beans. Add salt and pepper to taste. For added flavor or extra protein, cook andouille sausage and add it to the bean mixture before topping your rice.You now have a bowl of mild red rice and beans. Leftovers taste even better as the flavors mold into each other. You can also use the bean mixture as a chip dip. This recipe is easy enough that my kids and yours, too, can make it when we can not make it home in time to start dinner.  As an easy way to prep, be sure you have all of your ingredients on hand to make several batches.  That's it, enjoy and stay healthy and free. Pumpkin pie says everything we love about the holidays. For instance, it has a sweet smell, a heavenly taste, brings happiness to the soul, and puts a smile on the face. While closing my eyes, I take that first bite of pumpkin pie around the holidays and melt. It's kind of like those commercials you see where little bubbles pop up describing how you feel. In this case, the feeling is utterly delightful, marvelous, grand, and sublime. In short, pumpkin pie is the BEST! Due to the importance of a good recipe, I'm sharing a family pumpkin pie recipe that comes from a long line of excellent cooks, a one of a kind, you might say. It uses fresh pumpkin from your garden, eggs straight from the chicken, and thick cream you get from the cow.  As the ingredients are very important to the overall product, try to find organic or homegrown if you do not have or grow them yourself. With that, let's start making some pumpkin pie. Ingredients for Pumpkin Pie: This recipe is for 1 pie. Bake at 350° for 1 1/2 hours 2 cups baked pumpkin (for instruction on how to bake a pumpkin in your oven follow ME.)3 farm fresh eggs3/4 cup cream ( fresh or heavy whipping cream)2 Tablespoon flour1 cup white sugar1 cup brown sugar1/4 cloves1/4 tsp ginger1 tsp vanilla1 tsp cinnamon1/2 salt1/4 tsp nutmeg Ingredients for the Crust. This recipe is for a single crust (9-inch) 1 cup all-purpose or unbleached flour1/2 tsp salt1/3 cup plus 1 Tbls shortening2 to 3 Tbls cold water Directions: Turn on your oven to 350° Fahrenheit. Begin by mixing all of your ingredients in a kitchen aid or whatever method of mixing you prefer. I would suggest mixing after each element to ensure there are no clumps. Once you have all the ingredients combined and mixed, set your oven to 350°. Next, start making your crust. Mix the flour and salt in a medium bowl. Cut in shortening, using a pastry blender or crisscrossing two knives, until particles are the size of small peas. Sprinkle with cold water, 1 Tbls at a time, tossing with fork until all the flour is moist and pastry almost leaves the side of the bowl. Add 1 to 2 tsp more of water if needed.Now, gather your pastry into a ball and flatten it a little with your hands. Roll pastry on a lightly floured surface, using a floured rolling pin, into a circle 2 inches larger than the upside-down pie plate, 9 x 1 1/4 inches. Fold pastry in half or fourths and place in a pie plate. Unfold, pressing firmly against bottom and sides, being careful not to stretch pastry, which will cause it to shrink when baked. Pinch with fingers to make some edging and trim off any extra. Be sure to keep flour on your rolling pin, so the dough does not stick or tear.(For Two-Crust Pie, divide pastry in half and shape into two rounds.) If desired, wrap each round in plastic wrap and refrigerate about 30 minutes to firm up the shortening slightly, making the baked pastry flakier and letting the water absorb evenly throughout the dough. However, you will need to let the pastry soften slightly before rolling. Now stir your pumpkin pie mixture and pour it into the pie crust. Place pie in the oven and bake for an hour and a half or until a butter knife comes out pretty clean when placed in the center. Cool on a drying rack and serve or freeze and save for a later date. Be sure to cover the pie or pies with saran wrap before freezing. That's all there is to it, other than eating a huge slice with homemade whip cream ;). Body Butter is a pleasing lotion type product that every person in the house can enjoy. For women, body butter helps them feel sexy and soft. They also feel good knowing their skin is being taken care of and getting the treatment it deserves. As for the men, they will appreciate the silkiness of a women's skin, along with the pleasing scent of peppermint that emanates from her body. The body butter is also a healthy choice for children as it keeps moisture in and dry skin away. I rub it on my little girl right out of the shower, and she loves it; not only the feel but she says it smells like Christmas :). With that happy note, roll up your sleeves, set aside 30 min. and get to work making this amazing body butter. Ingredients: 1 cup shea butter, grated.1/2 cup coconut oil.1/2 cup jojoba, almond, or olive oil.1-2 tsp peppermint oil.2 Tbl pure cocoa powder.2 tsp vitamin E. Items needed: Double boiler or pot with an inch of water on the bottom and another pot sitting on top.Large bowlSmall bowlStirring utensilBeaters or blender of choice.Ice or FridgeSpatula Directions: To begin, take your double broiler and melt the shea butter and coconut oil.  Do not let it boil; stir while melting. When your shea butter and coconut oil have melted remove the pot from heat.  Measure 2 Tbls of cocoa powder into a small bowl, add almond, jojoba, or olive oil (I used almond) to the cocoa powder, and stir. Now add the mixture to the shea butter and coconut oil, stir and chill in a large bowl of ice or put in the fridge until slightly hard. About 10 minutes. Once the mixture has cooled, remove from the fridge and add peppermint and vitamin E. If you are using the ice bath as I did above just leave the mixture in it until the next step. Now remove the mixture from the ice bath and whip on medium/high until stiff peaks form. Here is what the body butter looks like when it is fully whipped. Now you may put the body butter in whatever container you wish using your spatula. I used little jelly jars, so I could give them away as gifts. If you are keeping them for yourself, store the containers in a cool place. I keep one in the bathroom to use after showering. Just make sure it is in a drawer, cupboard, or under the sink. Ending notes: YOU DID IT!  How simple was that? All you need to do now is go enjoy this tremendous body butter and feel good about the softness it will bring to your skin. Oh, I almost forgot to tell you, as an added bonus you will have a little glow from the cocoa powder ;). As I have incredibly white skin but don't like to tan, this is the perfect product to use. Kale-tini For Two Cocktails 2 cups tightly packed kale 1 cup water juice two limes 4 oz vodka or gin 1 Tbls agave syrup   The Process:  Cut enough kale into pieces to fill a 2-cup measure. Cover these pieces with water and place in a food processor or blender. Puree for a minute. Strain the solids out of the pureed kale with a fine sieve, pressing with a spatula to get as much juice from the leaves as possible.   Squeeze the limes and add the lime juice, vodka, and agave syrup. Mix well or shake in a mason jar to combine. Pour into glasses over ice. Garnish with a small kale leaf.

Sunscreen, among other things, is always better when it's home-made.  Why? Because you know precisely what you are putting on your skin. As your skin absorbs everything, you can never be too careful. It's scary when you look at the back of the bottle of sunscreen from the store and realize half the ingredients you can't even pronounce, and the other half are rated 9 out of 10 as being toxic to our bodies. If this is true, then why are the companies allowed to use them? My guess is money. So, how do we counter that? Well, I'm just a normal mom who thinks we should put non-toxic things on our bodies and our children, so that leaves us to DIY. What do the experts say? A doctor, (whose name I cannot disclose) said sunscreen over 15 SPF is more harmful to you than the sun because of the chemicals that are used. This is one reason I decided to make my own sunscreen and share that knowledge with you, so you don't have to worry about chemicals, toxins, or burns either. Let's protect our skin from sunburns without harming it. How to Make Homemade Sunscreen Supplies Needed: MaskKitchen scaleGlass bowlPotWhiskGlass jar45 g. coconut oil32.5 g carrier oil (almond oil/jojoba oil/apricot oil)14.25 g beeswax13.75 g shea butter1/4 Tbls vitamin E20 g. zinc oxide: non-nano, uncoated, not micronized Directions: Measure out all of your ingredients except the zinc oxide, on a gram scale zeroing it out each time and place in a glass bowl.Now place the bowl of ingredients over a pot of 1-inch simmering water creating a double boiler.Melt the ingredients completely while stirring with your whisk.Remove the bowl from the pot and wipe down the outside, removing any condensation.Place the glass bowl back on the scale and zero it out. With a mask on, add the zinc oxide until you have 20 grams.Whisk and then slowly pour the now homemade sunscreen into a glass jar, whisk again and pour some more. Repeat this process until all of the sunscreen is in the jar (or multiple ones depending on batch size). We want to make sure the zinc oxide is mixed in well.Allow sunscreen to cool and then put lid on jar. Store in a cool, dry place.Apply every hour as needed while out in the sun. This homemade sunscreen is at least 20 SPF and will protect from UVA and UVB rays providing peace of mind so that you can enjoy your time in the sun. It honestly takes about fifteen minutes to make, which is less time than it takes you to run to the store. So get online, order your ingredients, and know you and your family are protected both from chemicals and the sun. That's it! Let me know how it turns out. Hey guys, Welcome to 2019. A new year and new episode. Cam is not on this episode as he is skiing the slops of Vancouver (Cam..don't break a leg). We have a few of my regular guests from Earl of Sussex that are filling in for Cam. This episode we talk about Trader Vic's famous cocktail: Scorpion Bowl (His third best seller). Congrats to Shelley Price for winning our December contest!! We talk about this bowl that a group of guests can share and came from the Polynesian traditional tribal bowl (was known as Kava Bowl). It was originally in their culture made from a plant called Kava which like Cannabis which has medical qualities such as boosting your immune system and fight of inflammations, help sleeping and mental awareness. But like every drug, there are some bad side effects such as dry flaky skin; yellowness of skin, finger nails and hair; lung problems; not able to process protein and losing weight. We talk about how tribe's men would consume this drink which would be offered to visiting tribe's men and the custom to enjoy this drink. We go over Trader Vic's, Steve Crane's and Smuggler Cove's recipe as well. Why does Trader Vic's bowl are offered with 20 inch straws to the table? Find out! Mike get the the fire extinguisher!! (recipe will be on our website: www.tikicentralcanada.ca) Trader Vic's recipe: 6 oz light rum, 1 oz brandy, 1.5 oz orgeat syrup, 4 oz lemon juice, 6 oz OJ, 2 cups of crushed ice : BLEND FOR 10 SEC. pour into a ceramic bowl (scorpion bowl) Steve Crane's recipe: 2 oz gold Puerto Rican rum, 2 oz gin, 1 oz brandy or Cognac, 2 oz orange juice, 1 oz fresh lime juice, 1 oz sugar syrup, ¾ oz orgeat syrup, 8 oz (1 cup) ice, Put everything in a blender. Blend at high speed for 5 seconds Smuggler's Cove: 2 oz fresh lime juice, 4 oz fresh orange juice, 1 ½ oz SC Demerara syrup, 2 oz Orgeat, 2 oz brandy, 4 oz London Dry Gin, 4 oz blended lightly aged rum Rum Baked banana recipe: Ingredients: Firm bananas about 4, ½ cup fresh orange juice, 3 TBLS dark spiced rum, 2 TBLS brown sugar, ½ TEASP ground ginger, ½ TEASP ground cinnamon, 2 TBLS organic coconut oil Instructions: Preheat the oven to 350°F., Slice the bananas into 1/2 inch slices, Place them in a baking dish, Spoon the orange juice and rum over the bananas. Sprinkle bananas with the ginger, cinnamon and brown sugar. Sprinkle small pieces of the coconut oil all over the bananas, Cover the baking dish with tinfoil and bake for about 15 – 17 minutes, Remove from heat and allow bananas to sit for about one minute, You can have over ice cream or eat them by themselves

The fall also brings up fond memories of my grand-mother cooking pumpkin and squash this time of year.  Butternut Squash is soooo good for you! Here are some incredible healthy reasons to eat Butternut Squash: #1.   1 Cup of Butternut Squash has about 500mg of Potassium, which helps lower your blood pressure. #2.   1 Cup also contains about 7 gms of Fiber, which will prevent constipation and maintain a healthy digestive tract by supporting the "good bacteria" in your gut. #3.   Butternut squash is loaded with vitamin A—one cup of squash has over 350 percent of the recommended daily allowance , which is important for healthy eyesight.     #4.    Manganese is also in Butternut Squash, which helps your body maintain healthy bones.  #5.   With half of the daily required dose of Vitamin C contained in one cup, you may have fewer wrinkles in your face. A study published in the American Journal of Clinical Nutrition examined links between vitamin C and skin aging in over 4,000 women aged 40-74, and found that higher intakes of vitamin C were linked to a lower likelihood of wrinkles and dryness of the skin. Use Green if you want) 1 ½  Tbls of Minced Garlic Paste (Amore – 3.02 oz tube in most stores) 2   32 oz container of Kitchen Basics low sodium chicken broth 2  package of fresh or frozen diced butternut squash (15-16oz each) 1  Cup of Raw, hulled Pumpkin Seeds 1  Cup of Raw, Organic Peanut Butter……I use “Once Again” Brand. The ingredients in Once Again Creamy Peanut Butter are……. Peanuts & Salt.       Instructions Peel sweet potatoes, cut into small cubes and put into the crock pot. Add the beans, tomatoes, peppers, seasoning, garlic paste & broth into the crock pot. Cook on high for 2 ½ - 3 hours or low for 4 -6 hrs, until the sweet potatoes are tender. Stir in the butternut squash the last 30 minutes of cooking time. Chop up the pumpkin seeds or put in a mini-chopper like I do. Stir into stew. Remove 1 Cup of the liquid from slow cooker when done and put in a bowl. Put the Peanut Butter into the bowl of liquid and stir or whisk until blended. Stir the Peanut Butter mixture back into the stew. Serve 2 Cups into your favorite cup or bowl. Add  ½ teaspoon of Sea Salt EAT and FEEL HAPPY!  It’s hard to say how many calories you’ll be eating, since I don’t know how many beans or other ingredients will be in your cup while you  eat it. Let’s play it safe and make an estimate of about  300-400  calories per 2 cup serving. I’ll tell you one thing……This is a Healthy & Happy Stew…..so don’t waste your time worrying about the calories in this Happy Stew! Freeze leftover stew in One Cup or Two Cup containers….so you’ll be able to defrost and eat this “Feel Good” Soup whenever you need it! Black Eyed Peas Fill You UP Weight Loss Soup This fat-free vegan recipe will leave your mouth watering, with flavor and antioxidants, with protein-rich black-eyed peas (which are loaded with folic acid) add swagger to this easy slow-cooker dish. YOU'LL NEED 1 large onion, chopped 2 medium carrots diced or sliced (However you like them) 3 celery stalks, diced 1 large pepper, cut in diced. I used red, because Green gives me “Agita” but you can use any color you want 1 sweet potato, diced or small chunks 3 cups black eyed peas (if using frozen, like I did, you can just throw them in.                                                                                                                            If using dried, use 1 cup dried peas and soak overnight in water or at least 8 hours, then drain and rinse) 1 cup crushed tomatoes 1 TBLS dried, crumbled sage 2 tsp ground cumin 1 TBLS chili powder 1 tsp of Cayenne Pepper 4 cups  LOW SODIUM vegetable stock (Kitchen Basics Brand is very reasonably priced Salt to taste after it is cooked. HOW TO MAKE IT Place all the ingredients in a crockpot, add the Vegetable Broth and mix well. Cover the crockpot and cook on a high setting for 4 hours or low for 6-8 hours or until all the vegetables and black-eyed peas are tender. Eat the soup just the way it is. The beans should help fill you up. Eat 2 servings if you want. That’s less than 400 calories.   1 SERVING = 1.5 Cups   198 calories, 1 g fat, 0 mg cholesterol, 109 mg sodium, 47 g carbs, 19 g fiber, 7 g sugars, 15 g protein

Hey Weight Loss Nation! Today.........I have a "5 Minute" Snack for all of you that NEED or are CRAVING "Sweet." This is HEALTHY Sweet Snack......It is NOT a "Meal Replacement."  There is LOTS of Sugar in this Snack Nation......but.....it's as healthy as you can get when eating something "sweet." You are going to make "Apple Pie Squares." Nothing Like a Snack that Tastes like Apple Pie! Here are your ingredients 1. 1/2 Cup of Organic Unsweetened Applesauce 2. 1/2 Cup Organic Almond Butter 3. 1/4 Cup Coconut Flour 4.  2-3 Tbls. of Organic RAW Honey 5.  1-2 Tbls. of Apple Pie Spice (cinnamon,            cardamom, nutmeg) Instructions: 1. Pre-Heat oven to 350 degrees 2. Spray Olive Oil or use REAL Butter to "grease" a square baking pan. Use whatever size you want. This recipe is for 4-6 squares, so use a baking pan that will cut 4-6 squares. 3. In a Large mixing bowl, Mix all the ingredients very well until you have a very thick batter. Use a Mixer, your hands whatever..... 4. Put the batter and spread evenly in your baking pan. 5. Bake in the oven for about 30 minutes or until the top is "golden brown." 6. Take out and let cool completely. 7. Eat one now.....or.....put it in the fridge for later! Depending on the brand of coconut flour you are using, you may want to experiment with adding an extra Tablespoon next time to make the batter more firm or less firm. Also, you may want to add or reduce the Honey, depending on how "sweet" you want the snack to be. I have found a recipe on the internet for you......that I'm hoping you'll like....It is called "Blueberry Glazed Salmon" I didn't think it sounded good either when I first read it....but.....it was easy, quick to make and.....it tasted Good!  Give it a try.....I think you'll be pleasantly surprised. INGREDIENTS 1 Cup of Fresh Blueberries 5-6 Fresh Rosemary Leaves 1 TBLS of Raw, Organic Honey 1 TBLS of Balsamic Vinegar 2 tsp of Lemon Juice 1/2 tsp of salt 1/2 tsp of fresh ground black pepper 4 Wild Caught Salmon Fillets   INSTRUCTIONS 1. In a small saucepan....add the blueberries, rosemary, honey, balsamic vinegar, lemon juice and 1/2 tsp of salt. Place over medium heat. After it simmers, raise the heat a tad so it doesn't "rapid boil." Let it cook for 15 minutes. The blueberries will release it's juices and the sauce will thicken. 2. Place an oven rack about 6" from the broiler and put aluminum foil on a baking sheet. 3. Pat the Salmon Fillets dry with a paper towel. Sprinkle Salt & Pepper on both sides of each fillet. 4. Place the Salmon Fillets on the baking sheet (skin side down). 5. Brush a thin layer of the blueberry glaze on top of each fillet. Place the fillets under the broiler fro 3 minutes. 6. Brush an additional layer of blueberry glaze on the Salmon Fillets. Place back under the broiler for about 3-5 minutes.  You'll know the fish is cooked when you place a fork into the fillet and it "Flakes" Optional Side Dishes: 1 Cup of Black Rice Steamed Broccoli with minced garlic & fresh squeezed lemon juice  Steamed Green Beans with fresh squeezed lemon juice   NUTRITIONAL VALUE OF BLUEBERRY GLAZED SALMON Calories - 157 Total Fat - 4.1gm Carbohydrates - 6.8gms Fiber - .6gms Protein - 23 gms Enjoy Nation! Hey Weight Loss Nation! I have Guilt Free Nachos for you today! I Love Nachos! I have been avoiding them like the plague……until now! I have put together a healthy, GUILT-FREE Recipe for Nachos. Now…..I can have them, because I thought about it and I was “mindful” about it. In Episode 016, I gave you awesome tips on alternatives to Potato Chips. You may swap out the Sweet Potato for any of the other options I mentioned in that episode for your Nachos! Here’s the Recipe! Ingredients 1 Small Sweet Potato ½ Cup Minced Garlic ½ Cup Minced Rosemary 1 TBLS Olive Oil 1 Cup dry Lentils 4 Cups Water 1 TBLS Ground Turmeric 1 TBLS Ground Coriander 1 TBLS Chili Powder 1 tsp Black Pepper ½ Cup Chopped Lettuce ½ Cup Diced Tomatoes 2 TBLS of Grated Parmesan Cheese ¼ Cup of Daiya Cheddar Style Shred Tools Needed Mandolin for slicing -  You can pick up a hand-held one on Amazon.com for as little as $14.99, or a more professional version for around $29.00. Pastry Brush for Olive Oil Blender for cooked lentils Parchment Paper Baking Sheet for cooking Sweet Potato Chips Medium Sized Pot for cooking lentils Mini-chopper for garlic & rosemary or sharp knife. Knife to shred Romaine Lettuce & Dice Tomatoes   Recipe: Put 1 Cup of rinsed, dry lentils and 4 cups of water into a pot on stovetop. Add dash of sea salt. Stir occasionally. At boil, turn down to simmer. Cook for 45 – 60 minutes. Save ½ Cup of the water in pot and put on side. Drain Lentils in colander. Place the ½ cup of cooked water into blender. Add cooked lentils. Add Turmeric, Chile Powder and Coriander to blender. Blend on medium until you get an even consistency. Slice Sweet Potato (with skin on) thin on Mandolin. Place parchment paper on a baking sheet. Place 14 slices of the sweet potato, spread out on a baking sheet (Don’t let edges touch). Brush olive oil on each slice. Add minced garlic & rosemary to each chip. Bake in pre-heated oven (400 degrees) for 12 minutes. At 12 minutes, flip each chip and then turn the entire pan around 360 Degrees and place back into oven for even cooking. Bake for another 8 – 13 minutes. Check at 8 min. and every minute until chips are crispy! Remove from oven and set to side to cool. When cool, move the chips together, towards the center of the pan. Take a ½ Cup of the Lentil mixture from blender. Spoon lentils evenly on chips. Sprinkle grated Parmesan Cheese over Lentil Mixture. Place a layer of the shredded romaine over the lentil mixture. Place a layer of the diced tomatoes over the shredded romaine. Sprinkle Daiya Cheddar Style Shred over entire portion. Place baking sheet back into oven until the cheese is melted. Remove from oven and let it sit for 5 minutes. Eat half of the Nachos now and save half for tomorrow!
