Southwest Black bean and Sweet Potato Bowl Ingredients:2 medium sweet potatoes, peeled and diced1 can (15 oz) black beans, drained and rinsed1 cup cooked quinoa1 cup fresh corn kernels (or frozen, thawed)1 red bell pepper, diced1 avocado, diced1 cup cherry tomatoes, halved½ cup red onion, finely chopped¼ cup fresh cilantro, chopped1 tsp olive oil for roastingSalt and pepper to tasteDressing Ingredients3 tbsp olive oil2 tbsp lime juice1 tsp ground cumin1 tsp smoked paprika½ tsp garlic powder½ tsp chili powder1 tsp maple syrup (optional for sweetness)Salt and pepper to tasteInstructions: Preheat oven to 400 degrees.
