Guest Bio:I know some of you might be new here and probably trying to put the pieces together with how and why a 6'2”, 240lb ex-NFL athlete with the neck the size of some people's thighs is always smiling and and talking about vulnerability and inner healing. So, let me formally introduce myself.My name is Caleb and I grew up on a farm in Texas where I walked a pig. Yes, a pig. I also played football and I was kind of good. Football landed me at West Point where I would start all four years and make national news when I became the 2nd player in the history of West Point to get drafted in the NFL. (I had to wait 2.5 years before I could play because of a policy reversal, but that's the longer version. See below)But, it was in the NFL, the middle of my child-hood dream and the very thing I've been chasing my entire life, that I began to self-destruct.Despite being the biggest , fastest and strongest I've ever been, all the pain I ignored and masked as ambition was coming to the surface and I could no longer hide behind the facade that I spent years perfecting. Like a bomb, the NFL applied just enough pressure on my heart and it left my life in fragments.Knowing that something needed to change, I somehow found the courage to make a soulful shift that would forever change my life. Through a series of unexpected events, I found myself packing my bags and moving to Canada where I would go on and become a glorified janitor of a church so that I could began to heal the emotional trauma that was keeping me stuck and miserable in life.No seriously. I slept on the basement floor of a boiler room, worked for a church and created the physical and emotional space that was needed for me to begin to expand my life—consciously.Note: (It's important to note that while the church played a major role in my life during this season, I'm not affiliated with any specific church or organized religion. This specific church just happened to be the safe space that I needed to begin to shed the layers of self-protection and step into the vulnerability that was needed to begin to heal.)

Beginning in the late 19th century, many intellectuals began to insist that scientific knowledge conflicts with traditional theistic belief — that science and belief in God are “at war.” Philosopher of science Stephen Meyer challenges this view by examining three scientific discoveries with decidedly theistic implications. Building on the case for the intelligent design of life that he developed in Signature in the Cell and Darwin’s Doubt, Meyer claims that discoveries in cosmology and physics coupled with those in biology help to establish the identity of the designing intelligence behind life and the universe. Previously Meyer refrained from attempting to answer questions about “who” might have designed life. Now he provides an evidence-based answer to perhaps the ultimate mystery of the universe. Shermer responds to each claim and a stimulating and enlightening conversation ensues. Note: It is Dr. Shermer’s intention in his podcast to periodically talk to people with whom skeptics and scientists may disagree. In some episodes Dr. Shermer tries to “steel man” a position held by someone with differing views — that is, he says in his own words what he thinks the other person is arguing — but in this case the other person is in the conversation and can represent his own position clearly, which is what happens. As well, such conversations enable principles of skepticism to be employed in ways constructive to those who hold views not necessarily embraced by skeptics and scientists. Such principles should be embraced by all seekers of truth, and that is why we want to talk to people with whom we may disagree.

Seidu Ajanako is a Ghanese Professional Beach Volleyball Player, Sand Coach and former indoor volleyball sensation. After winning the NAIA's back-to-back at Cal-Baptiste University, he stood out on the regional scene in the US from coast-to-coast with a heightened level of success on the indoor scene, the grass and the beach. His most proud moment was representing his home country of Ghana at FIVB Amsterdam in 2015. He continues to coach volleyball at the capital city and encourages all to "pay it forward." He still remains in the top 5 in the record books at Baptiste, playing predominantly D1 NCAA teams in the region. He is chief Meteorologist for Wgn station in Chicago Illinois. He started his career at the young age of 14 years old without any degrees 50+ years ago (that's what I read). He is very knowledgeable in many areas including climate and a top expert on weather forecasting. He is also an excellent explainer of weather and has an enormous amount of experience when dealing with Chicago weather (he's also a nice person). The Chicago Tribune has an amazing weather section and he is at the very least a very significant part of this. I like him a lot and sometimes jokingly refer to him as "Rabeinu (our teacher) Tom" (an extremely great spiritual leader and awesome commentary on the Talmud) (lehavdil: speration. Note: It is customary for Orthodox Jews to say "lehavdil" when comparing "apples to oranges" especially when the comparisons being made are going from spiritual purity to other things) Interestingly enough the opinion of Rabeinu Tom (the real one, not Mr. Skiling) perhaps should have been mentioned in this podcast in regards to what his opinion is in regards to sunset.This podcast has a couple of slips with my words. I think from the context it can be figured out what I'm saying. At one point I said the word "depends" when it should have been "determined". In addition in regards to the storm system developing in Kansas on Tuesday, I said that it's possible it's the same storm as the one which developed in Idaho on Monday (I just didn't/don't know). This means that the storm would develop in Idaho and then move to Kansas (and strengthen) and then move Northeast through the Midwest. On this podcast I made it sound like the storm would first develop in Kansas and then move to Nebraska. Also, in the very begining I said the word "stuff" after the word "amazing" but I meant to say "things".Also, I mention 3 storm systems which would affect the Midwest in the next 7 days, but I didn't specify which 3 storms they were, but I did speak about a storm system on the east coast, a storm system in Idaho and one in Kansas. These are not the storms that will be affecting the Chicago area. Only the one from Kansas will be affecting Chicago. The 2 additional systems affecting Chicago were not mentioned by place, only by time. This means the 2nd system will affect Chicago Friday night/Saturday and the 3rd early next week. The first system will affect Chicago Wednesday and Wednesday night with an emphasis on Wednesday night.

This topic is from the chapter, Safety 101.In parts 1 to 3 of Kitchen Dangerous, we covered fire prevention, what to do if a fire occurs, preventing burns from frying and other hot items and first aid using ingredients you probably have at home. In this installment of Kitchen Dangerous, we’ll talk about kitchen safety with regard to Knives and Other Sharp things. Read Kitchen Dangerous: part 1,part 2, and part 3.Knives and Other Sharp ThingsAs a pianist, I’m particularly careful with my hands. While I may have an impressive collection of stories about averted fire disasters, knife mishaps are thankfully few. If you know any pianists, I think you’ll find we’ve elevated finger-protection to an art form. There’s a reason I was never great at sports. If you throw a ball my way, I will run away.So I’ve developed knife techniques that may not always be in step with what’s taught at culinary schools. You know how chefs peel their apples with a paring knife, the blade very near the thumb? That’s not me. The idea of a knife slip to my thumb is not something I will risk. I use a vegetable peeler instead. Boring maybe, but safe. So instead of talking about techniques I don’t actually follow, I will share general guidelines on knife safety and some of my methods. What about celebrity chefs who look you in the eye while slicing and dicing at lightning speed explaining complex mathematical equations? Okay, maybe not math equations exactly, but anything that requires cognitive effort, not watching what you’re doing and speed means less attention to keeping fingers intact. The razzle dazzle may be impressive but it comes at a risk. Speed and pizzazz are nice, but safety first.For those of you beginning the journey as a lifestyle cook, you can be confident that repetition guarantees improvement. That includes knife skills. Practice makes perfect. When I handle sharp tools, I give it my undivided attention. And this is why in the twenty plus years I’ve been cooking, I’ve only cut myself once with a knife. Knock on wood! A few years ago, I was slicing parsley with a new Shun Chef’s knife I had gotten Jeff for Christmas. It’s a knife with a beautiful hammered finish. If you remember in my overview on kitchen knives, hammered finishes, like granton edges, are supposed to reduce air drag so food doesn’t stick to the blade sides. I concluded that I hadn’t found this to be true, or more precisely, that any difference the feature makes is not noticeable to me. I wiped away the parsley stuck on the sides of the knife blade, just as I’d always done whenever food sticks to the blades. This time, I gave myself a nice clean cut. Setting aside shock and dismay, I was suitably impressed. My Shun was a very sharp knife. The kind of knife every cook dreams of. But I had underestimated its edge and was careless. If you’re wondering why I’m waxing lyrical about sharpness being a great thing, then it’s time to discuss: Rule number eleven: Follow Knife Safety guidelines. Some of these guidelines might also apply when handling food processor and blender blades, kitchen shears, mandoline slicers, cork screws, ice picks and other sharp kitchen objects. Knife Safety Guidelines1. Keep your knives sharp. It might seem counter-intuitive, but excepting my Shun miscalculation, dull blades are what cause many accidents. It was my fault for underestimating the razor sharp edge of a knife handcrafted in the tradition of Samurai swords. With a sharp knife, the blade does all the work. A dull one forces you to compensate by exerting pressure, increasing the chance of a knife-slip on unwieldy surfaces like onion skin, for instance. Knives dull over time and need to be honed regularly. Sharpening should only be done when needed. What’s the difference? Honing with a honing steel or whet stone realigns the blade’s edge to make it sharp. Sharpening is taking metal off the blade to improve sharpness. The latter should only be done when needed through a knife whetter (professional knife sharpener) or with knife sharpening tools and appliances. Note that some specialty knives like the ones from Shun may require a specialized honing steel or whet stone designed for its blades. 2. Use the correct knife or tool for the job. In the overview on kitchen knives and cutting Tools, I emphasized the importance of using the right tool for the job because: Using the right tool for the job= less effort = safety = a more pleasant experienceLarge knives like a Chef’s knife and Santoku make peeling fruits and vegetables not only awkward, but dangerous because they don’t give you the control necessary for fine movements. A large knife makes it hard to negotiate the curves of an apple or ginger, but a vegetable peeler makes easy work of it. And on a side note, I often prefer a spoon to peeling ginger over a vegetable peeler! On the other hand, trying to slice open something as large as a butternut squash with anything smaller than a Chef’s knife or Santoku is going to be difficult. And anything difficult means you’re likely to exert more effort, which can lead to accidents.3. Handle knives correctly. Get a good grip and hold knife firmly using all fingers. A tentative grip means tentative control-- the knife can easily be knocked out of your hand or move in directions you didn’t plan on. I’ve seen many people hold knives so gingerly they probably would have dropped it if I said “Boo!” Keep your fingers intact. Use your knuckles as a guide to guard against the blade and tuck your fingers so they’re not splayed out ready for the guillotine. That’s a bit of bad news if you have long fingernails because it will be harder to tuck your fingers in with the nails in the way. If you can’t live without really long nails, just be extra careful.Keep fingers and body parts away from the knife’s path. I was demonstrating in class how to pit an avocado safely. I had the avocado cheek with pit on my cutting board and drove my Chef’s knife into the pit, gave it a slight twist, yanked it out and then hit it against the side of the compost bin to dislodge. I was showing the participants how my fingers were nowhere near the knife’s path, unlike the method I’d seen where the avocado was held in one hand when slicing and de-pitting. A participant chimed in to say that was how he did it, then admitted he had slipped once and the knife had ended up in the palm of his hand. Slice or peel away from your body or body part. This is where I might depart from chefs’ paring techniques whether using knives or vegetable peelers. While I understand that the thumb pressed down is meant to provide control, I won’t risk nicks when I can achieve the same results, perhaps not as gracefully, with a vegetable peeler slicing away from me. Be careful when using fingers to wipe off a knife blade. Granton edge or hammered finish notwithstanding, food will stick to the sides of a knife blade. While I should probably say, don’t use your fingers to wipe it away as I did in my knife accident, I’ll be the first to break that rule. So while I sometimes brush off stuck food against the side of a bowl, I often use my fingers, but this time I make sure to wipe at an angle away from and not too close to the blade’s edge. 4. When slicing, establish a stable and flat surface whenever possible. Slicing a moving target such as a rolling onion is not only difficult, but unsafe. To establish a stable surface, slice off the poles first (the top and root ends) to create a flat top and bottom. Set the onion on one of the flat sides and slice down the middle to split. Peel the onion. Now that each half has a flat side, it will be much easier to slice the onion. Conversely, Only slice on non-slip cutting boards and on a flat surface. A cutting board that slides around your countertop is not a stable surface. Use cutting boards that are heavy enough or made from non-slip material to keep them from sliding around. If you have some slippery plastic boards like I do, you’ll need to put a non-slip mat underneath. I use rubber rug pads leftover from our carpets and it does the job. 5. Always pick up knives and other sharp implements by the handle. That may seem obvious, but this also relates to how you arrange them in dishwashers, dish racks, and storage. With anything sharp, keep the blade or sharp area face down. The basic idea is to make it harder to access the sharp parts accidentally. When storing, consider knife blocks, magnetic racks or in-drawer systems designed to safely store knives. Note: It is recommended that kitchen knives are hand-washed, especially if they’re of high quality, to protect them from damage.6. Avoid putting kitchen knives and other sharp objects in the sink where it can be buried by dishes.A knife hidden underneath a pile of dirty dishes or soap suds is an accident waiting to happen. I’m sure you can imagine how this scenario can go. If you can’t wash your kitchen knives right away, place them somewhere highly visible to everyone. I leave mine on the kitchen counter next to the sink on top of dishes or on a cutting board.7. Don’t leave knives or other sharp implements too close to the counter edge. Knives extended over or too close to the counter edge can be reached by children, are easy to bump and for articles of clothing to catch on. Even if your foot dodges impalement, you can damage an expensive knife. Which brings us to:8. Consider wearing closed footwear in the kitchen. Knife slips happen and you don’t want any exposed toes in its trajectory. 9. Don’t be intoxicated when doing tasks that may be dangerous or that require your full attention.Don’t get me wrong. I’m a huge proponent of having fun in the kitchen, and that means libations are totally on the table and practically required especially when doing dishes. But not with anything that requires my undivided attention, such as when handling knives and sharp implements or cooking with high heat like frying. Jeff’s knife story Slicing open hard squashes used to intimidate me. Their surfaces are often slippery and hard to penetrate, even with a sharp knife. Before I learned that microwaving for a couple of minutes softens squash and makes slicing easier, I was quite hesitant and approached a squash very cautiously. So cautiously that one day Jeff, who was watching impatiently as I fudged around an acorn squash, offered to slice it for me. I was happy to relinquish the task. Instead of the chef’s knife in my hand, Jeff grabbed the serrated bread knife and proceeded to attack the squash with zeal and energy, making quick and large strokes. I was already shouting to be careful when the knife caught the side of a finger and blood spurted, accompanied by a stream of expletives. This leads me to the last guideline. 10. Be patient. I started this post talking about knife speed. We’re not in a contest and there’s no reason to rush through slicing or any activity involving knives or other sharp objects. We’re not in a restaurant kitchen where speed may be necessary; we’re home cooks where cooking can and should be leisurely.Jeff’s finger healed, but it’s a story I invoke many times (perhaps too smugly) to remind him of the virtues of patience. Take your time. As to whether or not to use a serrated knife for hard squashes? There may be a serrated knife out there that will do the job, but I’ve not seen it and it’s definitely not a bread knife. My personal preference, after first softening in the microwave oven for 1-2 minutes, is to slice the top of, puncture the middle with the tip of a chef’s knife and then so very gently push the knife in until I can slice through first one side, then the other. Was able to take my baby, Spunkey, to the vet. A vet that was recommended to me by a somewhat new friend, who loves animals, and a vet that didn't cost a leg and an arm. Praise God! Now, the only problem is the whole giving her her liquid medication. CATS DO NOT CARE TO BE GIVEN MEDICATION VIA A SYRINGE. Or really any other way aside from a shot (and I"m willing to bet they don't care for that either). It has been crazy trying to get her medicine without her foaming at the mouth not swallowing it. But I think I found a way. It involves a pillow case and a towel. Note: It does not involve her being harmed. I think I have finally understood the saying my mom would say to us, when she spanked us: "It hurts me than it hurts you." In this instance, it's more like "This is freaking me out more than it is you." Which, I'm willing to bet that she is still more freaked out than me as she's the one being held tightly in a pillowcase wrapped like a burrito while her human sticks a syringe in her mouth that releases gross stuff that makes her act like she was raised in the wild versus being a domestic cat all her almost eight years of existence. But. I. Digress. Now, wanted to talk about culture club...do you really want to hurt me and Karma, karma, karma, karma, karma chameleon You come and go, you come and go --- which until JUSTSECONDSAGO I always thought it was "comma comma comma comma chameleion" which the comma stood for come on. NOTE: It used to be just "One Nation, Indivisible, with..." and they added "Under God" in 1954. It was not "Under All" ever. Sorry!!! Been reading some new comics. Sweet Tooth by Jeff Lemire (one of my fave comic creators) is back. I have waited a cool decade to see this character and read his adventures once more. I simply love this book. Go, now, and read it immediately. I'm also into a relatively new book called That Texas Blood. Very interesting and right up my alley as well. I've yet to crack open Cross Over, but it's gonna happen. Got ABBA - Gold mostly for the wife and daughter, but I will admit it's fun to put on when we're cooking/cleaning in the kitchen. Billy Paul's album has been making some rounds again as well. Check out some recent spins and other images here. Watching American Housewife's new season. They replaced the actor playing AnnaKat. FINAL Dallas Cowboys 53-man roster projection and practice squad guess before the 2020 season and the roster cut deadline! With Dallas Cowboys training camp basically over and roster cuts already underway, it’s time for a look at the Cowboys 53-man roster projection (Note: It’s technically a 53-man roster projection, not a 55-man roster.) Dallas Cowboys Report host Tom Downey breaks down his roster projections, explains the changes from the new NFL CBA and has a practice squad projection as well. The Cowboys 2020 roster has some major battles at key positions when it comes to figuring out who makes the team. The NFL has also changed the practice squad rules, but even with the extra practice squad spots, there might be too many options (a good issue to have). I was reading that the duo are quite a pair. Sounds like the ants are gardening the aphids? How can I prevent both from hanging out on my tomatoes. I already removed the aphids and put down coffee grounds and cayenne pepper (I didn’t have any ground cinnamon). Recently the ants ate the root system from my Bee Balm and now I’m worried they’re doing the same to my Black Cherries because the plant hasn’t been growing much A:top dress with worm castings water around plants for aphids - get rid of aphids the ants go with them Get rid of aphids and other sap-sucking pests. This will prevent ants from hanging around to harvest honeydew. Distribute artificial sweetener near the ants. Reportedly, this is fatal to ants (which might make you reconsider adding the stuff to your coffee). Sprinkle ground cinnamon or cayenne pepper around your plants. This may help repel, but not injure, ants. Place food-grade diatomaceous earth by trails and nests. Made from fossilized hard-shelled algae called diatoms, this fine powder dehydrates ants — as well as slugs and cockroaches. But it’s completely safe for humans. (Note: It may take a few weeks to kill ants, and it must stay dry to be effective.) Set a borax (or boric acid) and sugar poison trap. A quick internet search will return dozens of DIY recipes for borax- and boric acid-based pest poisons. But use these carefully — though borax and boric acid are natural compounds, they are toxic to humans and animals. Pour boiling water on the anthill. This technique works only if you know where the ants’ nest is, of course. And bear in mind, ants build their homes to withstand rain and flooding. So it may take several attempts before you kill the queen (and wipe out the colony). Q: Are pine needles are too acidic to use as browns for composting? I am so glad I came across your site. It has a lot of valuable information. Keep up the good work. Thank you, A: Thank you for the kind words of out the site. Pine needles are acidic on the tree however you can mix them into your compost pile but it is best to not mix more than 10% of the total volume of the pile with pine needles as it can cause problems in breaking down in a reasonable amount of time period Q: is it okay that my swiss chard is so floppy? they grew so tall and then get knocked down by just normal watering. They're all on the dirt instead of growing upwards. Crushed by their own weight and the weight of water. Its been a few days but the leaves still look green so it doesn't look like its dying. I'm hoping they recover and start growing upwards or start looking like leafy plants eventually. I'm worried I might have killed them. A: yes it will still grow even though it is floppy you can harvest off of it all though the season you do not have to wait till it gets large. By harvesting the outer leaves the largest ones will help the other grow. Q: Are the leaves of Sunchokes edible?? Thanks. A: The Leaves are not safe for humans Q:Any tips on slowing the production of flowers on basil? A. Basil that is going to flower can be caused but hot temperatures indoor and out, pick the flowers off as soon as you see them. Basil won't live forever but cutting the flowers off and keeping the plant cool in good soil can make it last a bit longer. Instead of harvesting individual leaves, you can also harvest stems or the entire plant. Basil will grow back and provide a second or even third harvest even after being completely stripped of leaves. Q:What variety of eggplant do you suggest for northern Wisconsin? YS: Greatest rock song of all time, in my opinion. Matt: I can play that as well. YS: On the 1982 tour they opened with ‘Unchained’ and went into ‘Romeo Delight’ and I think that’s all you ever need ever. And then they always had that third song would be a drum solo, as if two songs were really too taxing to be on stage for and the three of them needed a break. Only one Val Verde Winery, founded in 1883, survived. It had a pass to make sacramental wine during prohibition and is still operating today in Del Rio.After Prohibition (1920–1933), it took a long time for the Texas wine industry to get going again. Llano Estacado was founded in 1976. And then finally, the modern Texas wine industry took off.Texas is now the 5th largest wine producing state and has around 400 wineries.There are 8 AVAs, or American viticultural areas, in Texas.The Texas High Plains AVA is where about 80% of the grapes in Texas wines are grown. It’s in the northwest part of the state near the city of Lubbock. The Plains are flat, but they are indeed high. this could be considered high altitude grape growing. The vineyards sit at about 3300–4000 feet on well drained, clay loam and sandy loam soil. There is a big diurnal shift here. That means there’s a big temperature change from day to night. the cool nights help preserve the grape’s acidity. Many of the grape growers in this area are generational farmers of other crops and have diversified into planting grapes. The biggest challenges here are freezing temperatures – usually in the late spring after budbreak, but possible in the fall too – and hail. Irrigation is a must.The Texas Hill Country AVA is located in the center of the state is north of San Antonio and west of Austin. It’s the largest AVA in Texas and the THIRD largest AVA in the country*, covering 9 million acres. The vineyards here are generally smaller in acreage than those in the Texas High Plains. They sit on a variety of soil types including limestone, granite and clay. Pierce’s disease is a bigger problem here than in the High Plains. It’s a bit less likely to see the freezes and hail that the High Plains gets. It’s also at a much lower elevation, and the warmer temperatures put its growing season ahead by a few weeks compared to the High Plains. Within the Hill Country AVA you’ll find two sub-AVAs that are nested inside the larger AVA. These are the Bell Mountain AVA (the oldest in the state) and Fredericksburg AVA.There are about 80 wineries in the Texas Hill Country, and the center of this area is the town of Fredericksburg. It’s the second most visited wine region in the nation after Napa Valley.The Texas Davis Mountains AVA is one to watch. It’s FAR out in the desert of west Texas near Marfa. It’s the highest elevation AVA in the state with vineyards over 5500’ elevation and it’s also the coolest. It’s also got the only volcanic soil in the state.The other AVAs are Escondido Valley. It’s located far west Texas near Fort Stockton.Texoma AVA is along the Texas-Oklahoma border.Finally, the Mesilla Valley AVA is on the far western tip of Texas near El Paso. This AVA is shared with New Mexico.There are also many fine wineries that are outside of these AVAs, and their wines are simply labeled TEXAS. (To clarify, their estate vineyards are not located within an AVA.)Early on, Texas consumers wanted the international varieties that they were drinking from California like Chardonnay, Cabernet Sauvignon, and Merlot so that’s what Texas grape growers planted. Now, many of these early plantings are being changed over to more of the grape varieties that thrive in the warmer climates of the Mediterranean. Texas grows a very wide variety of grapes and has over 5000 acres of bearable grapevines. Its most planted red grapes are Cabernet Sauvignon, Tempranillo and Merlot and the most planted white grapes are Blanc du Bois, Viognier, and Muscat Canelli. Production is about 70% red wine and 30% white wine.Hybrid grape varieties like Blanc du bois and black Spanish are popular in the southeast part of the state where humidity makes Pierce’s disease a persistent problem.Texas Tempranillo has a great reputation, as does Texas Viognier. Mourvedré is coming on strong. Rosé is very popular. Off-dry and sweet wine is popular with some Texas wine drinkers, but the majority of what is produced is dry. Texas also makes some great Port-style wine, and a bit of sparkling wine.In 2013, the Texas High Plains experienced a devastating late spring freeze, so there the volume of Texas wine produced suffered. 2014 was much better, but not ideal. Since 2015, Mother Nature has mostly cooperated. 2015 and 2017 were especially great vintages. The Texas High Plains had a Halloween freeze in 2019, so the 2020 vintage is looking sparse for some growers.Now that Texas growers have focused in on the right grapes for the right vineyards for our Texas climate, Texas wine has gotten much better. There’s increasing level of winemaking talent in the state, some homegrown, and some transplanted from other parts of the world. Some winemakers in Texas utilize the latest cutting-edge technology to maximize extraction. Others adopt a zero-zero non-interventional approach. There’s not just one right way to do things around here.One issue that is sure to come up again in 2021 when the state legislature reconvenes is how Texas wine is labeled. Like 46 other states, Texas wine is only required to have 75% Texas fruit in it. The states with the more developed wine industries have all passed more stringent legislation, and this issue has come before the state legislature before in 2017 and 2019.The largest winery in Texas is St Genevieve winery located in Fort Stockton. They make extremely affordable wine, often in large format bottles. The second largest winery is Llano Estacado located in Lubbock.Most of the wine produced in Texas stays in the state. Although there are some wines that are available in wider distribution, many are not. Most wineries do ship outside the state.Texans drank just over 60 million gallons of wine in 2018 and produced 4.28 million gallons of Texas wine. So we are well short of producing the amount of wine we need to produce to meet the demand of our own state. For now, we will have to keep drinking non-Texas wine.Texas wineries have always been serious about showing guests a great time. But at some wineries, the wine was a bit of an afterthought. In the past 15 years or so, many Texas wineries have also gotten as serious about premium wine as they are about hospitality.Wineries are entering well regarded wine competitions, and Texas wines are winning. Sommeliers are taking an interest in Texas wines, and more wines are entering distribution outside the state. Texas restaurants are coming around, finally adding Texas options to wine lists.Wine is a big business in Texas, responsible for over 100,000 jobs and a $13.1 billion dollar economic impact.Texas is an exciting wine region with a pioneering spirit. The wines just keep getting better. I hope you’re drinking Texas wine along with me.*Note: It is often reported that the Texas Hill Coutry is the second largest AVA, but I said it was the third. I confirmed this with January Weise at the Texas Hill Country Wineries. While 500 years ago, the average human would be lucky to come across sugar, it is estimated that today the average Westerner consumes 3 lb of sugar a week. Overall, our sugar consumption per year has risen from 5 lb per person, per year in 1700, to 152 lb per person in 2000. Recent research has found evidence that sugar, while not only bad for our waistlines, can have deleterious effects on our brain. Sugar has been found to shrink areas responsible for important functions such as memory and mood regulation, wearing on the hippocampus.” We’ve talked about this before but let’s pause and contemplate that math one more time. 500 years ago? Basically NO SUGAR. (Pause, reflect on that. Pretty please. With sugar not on top?) Then, 300 years ago, we were consuming about 5 lbs of sugar. Today? If you’ve ever asked me a question through email or direct message on Facebook or Instagram, you know I always reply with an answer. Hopefully that answer gets you on the right track with any social media challenges you’re working through. I’ve compiled a batch of those questions and I’m going to answer them in this episode. All of these questions relate to Facebook, so here we go! I’m new to Facebook. Should I friend people with my personal account and if I do, would I be friending them to my organization’s page or to my personal account that is bare – I don’t even have a profile picture? OK – so first things first, if you have a Facebook page for your organization, you have to have a personal Facebook page set up first. This lets you interact with people as you, or you can interact with them as your page. How do you know which one you’re interacting as? Check out the little comments box below a post – the little icon that shows your profile picture on the right side of the comment box will reflect which page – your personal, or your organization – you’re interacting as. Now, as far as adding people as friends – you can only add friends as you from your personal page. You can’t add friends as your organization’s page. Get the free step-by-step guide: How to Interact as Your Page You can, however, invite your personal Facebook friends to like your organization’s page. This is how: if you go to your organization’s page, you’ll see there’s a box on the right side that will have all of your friends with an “Invite” button. If you click “Invite,” it will send that person an invitation to like your page. If you want to add more of your real-life friends as Facebook friends, simply search for their name in the search bar at the top of Facebook. It’s there all the time, so you don’t have to worry about locating that search bar. Another way to grow your organization’s Facebook following is this: take the link for your organization’s new page in the address bar (Facebook.com/__your org’s username ) copy the link and paste it in an email to your real-life friends and supporters and ask them to follow your organization on Facebook. If you haven’t yet given your organization’s Facebook page a user name, simply go to your organization’s page, click on “About” in the left side menu, find the Username section, and click edit. This will let you add a username and then going forward, this will be your page’s Facebook address that you can send to all your friends: Facebook.com/__your org’s username__. I’m not getting many post views should I boost it? If you feel like your followers aren’t seeing your posts, you can always encourage them to change their Facebook settings so that they do see your organization’s new posts. I just went over this with my mom last week because she wasn’t seeing any posts from a page she follows, but she wanted to see the page’s new posts whenever they were published. Feel free to copy and paste these instructions and send them to all your friends! “See First” Instructions: Log into Facebook on a computer (not a phone) Go to the page you want to “See First” in your feed Click the “Follow” button Under “In Your News Feed” – select “See First” Now, new posts from your organization’s page will show up at the top of your friends’ Facebook feed. Also, if you’re not getting many post views or likes and your page is brand new, remember – you’re brand new! Give it more time. You can certainly boost a post or promote your page if you want to expedite the process. Listen to Episode 50 for instructions on how to boost a post. How do I put my organization’s page on my page? So if you want to share your organization’s post on your own personal page, go to your organization’s page, find a post you want to share to your personal page, and click the share button, and then “Share Now.” Make sure you are interacting as your personal page like we talked about a few minutes ago. If you’re going to share it to your personal page, your personal profile picture will show up next to the share button. Get the free step-by-step guide: How to Interact as Your Page Do I have to friend people for them to see my organization’s page? You don’t have to be friends with anyone on your personal Facebook profile for them to see your organization’s page, if the page is public. The sure-fire way to test to see if your page is public, is to sign out of Facebook, then go to your internet browser, and type in your Facebook address… Facebook.com/_your organization’s username (just like we talked about earlier!) Something I see a lot on Facebook is people creating what should be a personal page and using that for their organization, instead of setting up a professional Facebook page. This is problematic primarily because only people who are friends of that personal page will be able to see all your posts. Also, you won’t ever be able to run a Facebook ad or boost a post. Get the free step-by-step guide: How to Create a Facebook Page for Your Organization How do I change the size of the photo? Once a photo is on Facebook, you can’t change the size, however sometimes Facebook will stretch a photo to be bigger if you’ve uploaded a small photo. I use Canva.com to resize all of my photos – it’s a free and easy to use website where you can edit photos and change the sizes with just a few clicks. If you want something simpler, you can open your photos with Microsoft Paint on your Windows computer (if you have an Apple computer, you can use your Photos app). If you have a Windows computer, find your photo, right click on it, and select “Open With” and then, “Paint.” Once your photo opens in Paint, you’ll see the option to Resize in the upper left corner. Note: It’s OK to make an extra-large photo a little smaller, but NOT OK to make a little photo bigger. It will look all blurry and bad – a definite no-no on Facebook. On the other hand, if you have an extra-large photo, it’s OK to upload it to Facebook – Facebook will make it the appropriate size for you. If you want to crop a photo – trim the edges – before you upload it to Facebook, you can also use Paint. Just open your photo in Paint, click the Select button in the top left corner, select the area you want to keep, and click Crop – it’s near the Select button. Keep in mind – the recommended size for a Facebook image is 1,200 x 630 pixels. The MINIMUM size is 400 x 150 pixels. In layman’s terms, that means pretty much the bigger the better when it comes to photos on Facebook. If you upload a huge photo, Facebook will shrink it to fit their recommended size. When in doubt, go bigger than you think you need. Remember – you can always test things – create a post, and then click PREVIEW POST (Note: you may have to click “Publishing Tools” at the bottom of your post to see this option). If it looks good, then post it! If it looks blurry, your picture is probably too small. Try again! And if you accidentally post something, you can always delete it by clicking those three little dots at the top right corner of the post and selecting “Delete from Page.” Is there any way to give photo credit to my son? I will be using most of the pictures he took for posts. There’s no formal way to add photo credit to someone on Facebook. The most common way to give credit to someone is to simply write the words, “Photo credit: John Smith” at the end of the post caption. If you feel daring and you want to add photo credit to a picture, you can always use Canva.com or Paint. Using Paint, all you have to do is open that photo up with Paint, and then click on the button that has a big “A” on it. You’ll see it there next to the paint can in the upper left area of the window. If you click on that “A” you’ll be able to draw a box where you can type. I suggest keeping things very professional and put that little box in the bottom corner of your photo, and then type in “Photo credit: John Smith.” Keep it simple – you wouldn’t want anything to distract from that beautiful photo, would you? Is it possible to add bold, color, italics etc. to the text on the post? No. The most you can do is type out an occasional word in ALL CAPITAL LETTERS, but Facebook recommends using proper grammar, spelling, punctuation and not too many all capital letters. In case you didn’t know, many people these days interpret all caps as YELLING, which can be kind of unpleasant to read, right? Try this instead: make your words count. Make what you say short and sweet and keep it from drowning in words you don’t need. This way, you won’t have to make your words visually stand out with bold, italics, and color, because everything you’ve said has meaning. I know, it’s a hard thing to do! But take that into consideration and try it out. I know I’ve mentioned Canva.com about a million times by now… BUT – if you really feel passionately about highlighting a short sentence from your post, you can always get creative and make an image on Canva with a picture and then some words across it. If you follow me on Facebook or Instagram, you’ve seen how sometimes my posts are a big picture with writing on it – I make all of those on Canva – and you can too! Canva has templates you can just paste words into and boom – you’ve got a beautiful image to go along with your post that has some of your text IN the image that really stands out! Click here to learn how to design from scratch using Canva’s step by step guide. Here’s the one thing I want you to keep in mind while you are creating images on Canva… Make sure that you are not going crazy with the words. Make sure the words you type into your Canva image only cover 20% or less of the picture. That’s right, think of a square – the words can only take up 20% of that square. The first day I had quite a few hits on my post and now they are dwindling. Should I be doing something different? Remember – you are just starting out! Give it some time to grow. Be consistent. Share the “See First” instructions with your followers. Share your Facebook link again. Yes, you can boost a post if you want. Facebook loves engagement, so if someone leaves you a comment, “Like” that comment, and reply! Not only is this beneficial to your page, it also creates a positive experience for the person who left you the comment. Listen now to Episode 6: How to Handle Comments Don’t get discouraged! You are doing great! Keep listening to this podcast. Go back and listen to the early episodes again, things will become clearer to you. You’ll keep learning! Keep up the great work! When I finish and click “Preview,” only the first couple of lines show up so I have to publish before I can review it. Am I doing something wrong? You should be able to click the “See More” button and see the rest of your post. If you don’t see that “See More” button, it’s time to adapt and overcome! Type in your text, and make sure it says what you’d like – or type your post into a Microsoft Word document, edit it and then copy and paste it into Facebook. After that, upload your photo to go along with your post, and hit Preview. You’ll see your photo and at least the beginning of your text so you can get an idea of what it’s going to look like. Then publish it! I know, it’s nerve-racking to post something – this might be new to you and you’re not sure. But you know how to delete a post if you mess up – just click those three little dots at the top right of the post and select “Delete from Page.” The more you practice posting, the more confidence you will have with it. Remember when you were a kid learning to ride a bike? Remember how scary it seemed? Remember how fast it seemed like you were going? Through practice and repetition, you learned. And you probably got a little daring at times with your bike, didn’t you? You had confidence in yourself riding that bike! This is no different. In time, this will seem easy – all you have to do is keep going. Keep practicing! How do my posts look to you? What should I do differently? The biggest mistakes I see with many Facebook post images are too many words in the image (remember the 20% rule?) or using images that are too small, so they look blurry. If you’re a nonprofit, the biggest mistake I see is not putting important information like a phone number or website and a call to action. I’ll see a beautiful picture, and then nothing to go along with it – there’s nothing that tells someone how they can get help, or what phone number they should call or where they can make an appointment online. They’re just left wondering. Why would I ever want to advertise on Facebook? You can reach hundreds of people who might be interested in how you can help them, or inspire them or teach them or what you have for them but they don’t know about you yet, but with a small amount of money, as little as $5, you can tell them. Advertising on Facebook is extremely effective, and extremely affordable. The more money you spend on Facebook advertising, the more people you reach. Can you imagine, if you’re able to reach hundreds of people with just $5, how many people you can reach with a Facebook advertising budget of $25? Yes, you are able to get your Facebook ad in front of hundreds or thousands of people in as little as 4 or 5 days, for as little as $5. Pretty incredible, right? Making posts takes me a LONG TIME! Any tips? One thing you might try is drafting several posts in a Word document for future use. Start by typing in the date that you plan on publishing that post, then type in the text for your post. Next, I like to type a brief description of the photo I’m going to use for the post, or if I know the name of the actual file, I’ll just use that. Then, that post is ready when I need it. Then to make a second post, I’ll hit enter a few times to put space between the first post and repeat the process: date for publishing, followed by the post text, and a brief description for the photo. Then, set aside some time to get all your images in one place. Put them all in the same folder. This will save you time when you are ready to post – you won’t be looking all over for that one picture you had in mind but can’t find. Finally, when the time comes for you to publish your post, you can copy and paste from the Word document one of the posts you’ve already written out using a photo from the folder you’ve already compiled. Stay organized, spend a little time setting yourself up for success and it will pay off! I am so proud of you! You’re doing such an amazing job of investigating, experimenting, and figuring out how to make Facebook WORK FOR YOU! You are awesome! Keep going!
