Our guest, Chef René Frank, takes us back to the heart of his childhood kitchen, where aromas, flavors and memories first ignited his passion for food. Amid the clatter of pots and the warmth of home-cooked meals, his journey is one that would take courage, vision, and relentless curiosity to transform him into one of the world's most groundbreaking pastry chefs. Named Pastry Chef of the Year four times by Gault & Millau and Rolling Pin, René shares the moments that shaped him and his kitchen at CODA, his two Michelin-starred restaurant in Berlin, a cutting-edge food laboratory where indulgence is redefined, and dessert takes center stage. CODA is not just a place to cook and eat, but a place to nourish, where the World's Best Pastry Chef of 2022 creates dishes that defy convention. In a city known for its freedom, creativity, and rule-breaking spirit, René is rewriting the language of desserts, eliminating refined sugar, butter, and flour to create something entirely new. This episode is about more than food-it's about having the courage to challenge convention, believing in wild ideas, and following through even when the world might call those ideas crazy! https://www.rene-frank.de Instagram: @rene.frank.coda Facebook: René Frank CODA Restaurant: https://coda-berlin.com Instagram: @codaberlin Facebook: CODA Dessert Dining The Chocolate Masterclass of René Frank *This episode is cohosted by European interior designer Petra van Veelen She is owner and CEO at Demucho a Dutch Interior Design Firm. Se Yoon Park, 2023. Image courtesy of Carvalho Park, New York. Se Yoon Park 박세윤 (b. 1979, South Korea) is a sculptor living and working in New York. Park's foundation in architecture is reverberated through the deft construction of his geometries and manipulation of gravity in his sculptural installations. Integral to his perspective is the deconstructivist approach of Dutch architect Rem Koolhaas, founder of Office for Metropolitan Architecture (OMA), Netherlands, where Park began his career as an architect. Koolhaas' concept of the diagram, sourcing all possibilities on approach to a structure, is a defining principle of Park's practice as a sculptor. Park conducted his undergraduate studies in architecture at the department of Architectural Engineering at Yonsei University in Seoul and holds a Master of Architecture from Columbia University in New York. In addition to his time at OMA, his work in the realm of architecture includes positions with Bjarke Ingels Group (BIG), Fernando Romero Enterprise (FREE), and with Joshua Ramus (REX). Park began his exploration of light and shadow in his own work as a sculptor in 2014. His work has since been shown by the European Culture Centre in Venice, in tandem with the 57th Venice Biennale, at the United Nations in the 13th UNCCD exhibition, and in solo and two-person exhibitions in New York and Seoul, at Carvalho Park (New York), Gallery Mark (Seoul), and Huue Contemporary (Seoul, Singapore), and as public art commissions in South Korea. His work has been featured in the Brooklyn Rail, Wallpaper* magazine, Artnet News, Dovetail magazine, Surface, Naver Design Press, Artsy Editorial, the Seoulive, Segye Daily, Seoul Economy Daily, among others. At MTC, we look into the college and our teaching and we look outward into the community to align our classes with who our students are and what they need. Janie Kronk, who teaches Architectural Engineering, lives in this doubleness, often moving back and forth across the college's threshold. Janie is an architect who only recently joined our teaching community. That freshness of perspective is an important part of our community. In my conversation with her, I see her very much at the threshold between the teaching community and the external community. She looks inward at the skills she's teaching her students and then outward at the community projects she connects students with. This flow with our larger community is something that's happening in many ways all over the college. It canbe more subtle in some departments, but I see Janie constantly stitching teaching with non-teaching praxis. In our conversation, here is yet another unique and important perspective on our flow with the larger community. Come spend some time with Architectural Engineering.

Let's say you're presented with a chance to change an ending. You can choose any ending. Now, where would you start in order to change the end? Here's a secret: Sometimes what you see is not an ending, but the start of redirection. Today, we are here to discuss an interesting story about second chances. Steve Heinz founded energy management software company EnergyCAP, which he later sold. In fact, he walked the path of successfully building and selling the company twice. Steve is a graduate of the United States Air Force Academy, where he was the top student in engineering. He earned his master's degree from Penn State in Architectural Engineering. Today, he's the chairman of the board for International Students Inc. and an advisor for the Life Calling Institute. Steve takes time to talk about second chances and searching for a Life Calling. He reveals the lesson to be learned of human nature and the consequences of human failings in his experience of selling his first company to Enron. Enron was an energy, commodities, and services company that fell under in 2001. Greed led to the company being shattered, and Steve explains why greed showed up in many different forms. He freely shares his thoughts on what fueled the greed, the possible dangers of being a bandwagoner, and his views of internal corruption. Listen as Steve describes the process of starting his business again, alongside his sons, and selling the company for a second time. His story shows why it's not always important to start from scratch. Tremendous change can be found in moving forward from where you are at the moment; especially when you have a support system on the same page as you. Steve shares his reflections of running a family business, how Life Calling transforms based on the season of life you are in, and what helps him filter his efforts to be in alignment with the purpose and value he contributes to the world. Time stamps: [00:18] - Steve Heinz says entrepreneurship is in his DNA. [03:17] - How did Steve get into energy management? [05:16] - Steve recalls investigating a water leak while in the army. [10:47] - Why did Steve make a deal with Enron? [13:28] - Enron filed for bankruptcy in 2001. How did Steve respond? [15:36] - Greed can be expressed in various ways. Steve defines the common thread that is the overarching lesson. [17:29] - Steve shares his insights into the background complications of the Enron situation. [19:41] - At one point, energy traders were manipulating electricity supply for financial gain. [21:47] - Steve talks about why he decided to start a new company in energy management. [24:38] - Steve says the family business worked out since everyone was on the same page. [27:03] - When tackling the family business, duties were split with a strength-based approach. [28:41] - Steve shares his lessons of recently selling the second company. [30:51] - What is next for Steve? Did he think about how he wants to move forward? [32:54] - Life Calling can show up in different ways in each season of life. [35:16] - What are Steve's thoughts about the calling of being a grandparent? [37:20] - Steve says his faith is like a filter to being in alignment with the purpose and value he contributes to the world. He explains why that isn't a limiting approach. [40:08] - What does Steve want people to say about him as part of his legacy? [42:18] - Chris acknowledges the example Steve lives as in Chris' life and others. Links: Chris Heinz Chris Heinz Co. Key Takeaways: “If you're listening to this and you're like, “Well, I'm not sure confidence is really the root of my problems”, ask yourself this question. Would you show up at work differently if you were 100% confident in yourself? Think back to the last day. Would you have shown up differently in any of those interactions you had with people? If the answer is yes, it's very likely that professional role confidence has something to do with your current challenges.” – Stephanie Slocum “As a technical person, I spend a lot of time in my day solving problems, but often what I find is we're solving for something that puts a bandaid on the problem as opposed to actually solving the root cause.” – Stephanie Slocum “We are thinking that we have a productivity or time management problem, when what we actually have is a priority or boundary problem. What are we solving for? That is always the core question.” – Stephanie Slocum “If you are already in that space where you are struggling with overwhelm and burnout, you have to create a little bit of space for yourself. Getting more done is not going to solve the problem. There is always going to be more work than you can do, but even if it's just walking out 15 minutes a day, it makes a huge difference.” – Stephanie Slocum “We are often fed from social media in our work cultures that if we just work harder, we can outwork any problem. Your career is not meant to be a solo activity.” – Stephanie Slocum Ways to Connect with Stephanie Slocum: · Website: www.engineersrising.com · Facebook: https://www.facebook.com/engineersrising/ · LinkedIn: https://www.linkedin.com/in/stephanieslocumpe/ · Instagram: https://www.instagram.com/stephtheengineer/ · Twitter: https://twitter.com/stephslocum Ways to Connect with Sarah E.
