Tumblr Post MentionedHenry's Letterboxd I shouted out a chocolate chip cookie recipe in this episode that I now realize is behind a paywall (boo) so I am pasting it below:IngredientsYield: 10 cookies2cups/256 grams all-purpose flour½teaspoon baking soda¾teaspoon salt½pound/227 grams unsalted butter (2 sticks), room temperature1½cups/302 grams granulated sugar¼cup/55 grams packed light or dark brown sugar1egg1½teaspoons pure vanilla extract6ounces/170 grams bittersweet chocolate (about 60 percent cacao solids), chopped into coarse pieces, bits and shardsPreparationStep 1Adjust an oven rack to the middle position. Line 2 baking sheets with aluminum foil, parchment paper or nonstick baking mats.Step 2In a small bowl, whisk the flour, baking soda and salt.Step 3In the bowl of a stand mixer fitted with a paddle, beat the butter on medium until creamy. Add the granulated and brown sugars and beat on medium until light and fluffy, 2 to 3 minutes. Add the egg, vanilla and 2 tablespoons water, and mix on low to combine. Add the flour mixture, and mix on low until combined. Add the chocolate and mix on low into the batter. (At this point, the dough can be refrigerated for several hours or overnight.)Step 4Heat the oven to 350 degrees. Form the dough into 3½-ounce (100-gram) balls (a heaping ⅓ cup each). Place 4 balls an equal distance apart on a prepared pan, and transfer to the freezer for 15 minutes before baking. After you put the first baking sheet in the oven, put the second one in the freezer.Step 5Place the chilled baking sheet in the oven and bake 10 minutes, until the cookies are puffed slightly in the center. Lift the baking sheet and let it drop down against the oven rack, so the edges of the cookies set and the inside falls back down. (This will feel wrong, but trust me.) Bang it down, if necessary, to make the center fall.Step 6After the cookies puff up again, 2 to 3 minutes later, repeat lifting and dropping the pan, every 3 minutes, to create ridges around the edge of the cookie. It's the 50th Anniversary of Jaws which was finally released after multiple delays in June 1975. Becoming the first movie to ever be delayed at Universal Pictures 100 extra days in production and cost $5 million extra dollars. Spielberg believed his career was over when he was through filming. Jaws was the first major motion picture actually filmed in the ocean rather than a freshwater lake or a studio tank. And, with a massive merchandising push from Universal and advertising push, it became the first Summer Blockbuster starting a tradition that still happens today!!

Writer of “Jaws" & "The Jerk" Carl Gottlieb talks about working with Spielberg, Steve Martin, Carl Reiner, David Crosby, Joan Baez, improv group The Committee, performing comedy in the army, how the Smothers Brothers Show was the hippest most popular show at the time and somehow also cancelled. Bio: Carl Gottlieb is a screenwriter (Jaws, The Jerk), director (Caveman), & actor (Mash). His book, THE JAWS LOG, remains the most popular book about the making of a motion picture ever written. He also wrote WHICH WAY IS UP with Richard Pryor. He was a member of the classic San Francisco Improv group, The Committee. And a writer on the controversial Smothers Brothers show. He served on the Board of Directors of the Writers Guild of America, and was on the faculty of the Film Division of the School of the Arts at Columbia University, the American Film Institute, the University of Miami's School of Communications and the University of Southern California's School of Cinema & Television.
