We love “the new.” Especially when it comes to the restaurant scene, we get excited about the spot that just opened its doors or discovering a place the rest of the community hasn't caught on to yet.While the rookies get everyone worked up, it's the veterans who create the foundation of a city's food identity. And we've got two of them leading the lineup for this episode of the podcast.First up is Bacchus, the venerable Bartolotta-owned restaurant that announced a couple different developments around its 20th anniversary. For starters, executive chef Nick Wirth and chef de cuisine Brent Davis have come up with a new a la carte dinner menu, which will debut along with a new bar menu Feb. 20. Among the items you'll find are charred Spanish octopus, smoked wagyu pastrami, Seremoni black cod with burnt honey celeriac and couscous pilaf, and Wagyu skirt steak with miso-glazed ube and grilled kimchi bok choy.The restaurant will also take a night to properly celebrate the 20th anniversary as it hosts a champagne dinner March 6. The aforementioned chef duo have put together a five-course menu for the occasion, which will also include pairings of bubbly from the likes of Dom Pérignon and Laurent Perrier.Another longstanding Milwaukee eatery got the Ann Christenson treatment recently, as our favorite food writer took a peek inside Pizza Man's comeback. Once the king of our city's pie scene (arguably), Pizza Man experienced some slippage as it suffered through fire, a couple location changes and attempted expansion.It's now back at the Downer location and trying to recapture its former glory under new owners Thomas Schafer and Krys Zielinski. Benedictine monk, Dom Pérignon, may have seen stars when he tasted his first bottle of bubbly before it officially became Champagne. But four women became Champagne's leading ladies in the late 19th and early 20th centuries. Each built successful champagne houses after their husbands died unexpectedly. The name Laurent-Perrier conjures up thoughts of freshness and elegance and classically structured champagnes. The Maison is steeped in impressive history that has served not only their own champagnes, but also champagne collectively, with a family at the helm as wonderful ambassadors. Today the Maisons' prestige cuvée, Grand Siècle, is represented by fourth-generation, Lucie Pereyre de Nonancourt. In person, Lucie is one of the nicest and most approachable people that you will ever meet. She is not dissimilar to her mother, Alexandra, with light in her eyes and a deep passion for the House. Today, Lucie plays an important role continuing the family's wonderful dynasty as an independent and family managed House. It was my pleasure to speak with Lucie recently, during harvest 2024 in Champagne.
J'ai profité du début des vendanges pour me rendre à Léognan au Château Malartic-Lagravière, rencontrer Séverine Bonnie, Directrice Marketing et Communication du domaine.Ce château en appellation Pessac-Léognan, Grand Cru classé de Graves depuis 1953, qui a été fondé par le Comte Malartic, un amiral de Louis XV, est resté dans les mains d'une seule famille pendant 140 ans avant d'être racheté par Le groupe Laurent Perrier puis par la famille Bonnie en 1997.Séverine Bonnie m'a reçu dans le dégustoir, pièce stratégique située entre le cuvier et le chai, alors que le domaine venait de démarrer les vendanges de sauvignons
Les vendanges se sont terminées il y a quelques jours en Champagne. Petite en quantité, la cueillette de cette année a été scrutée de près. En 2023, plusieurs récoltants sont morts. Depuis, la filière s'est mobilisée. Un plan d'actions a été mis en place pour contrôler l'emploi des saisonniers. Igor Dautelle s'arrête à la sortie de la gare d'Épernay. Son regard se pose sur un groupe d'hommes assis au milieu du square voisin. « Cette gare a été de tout temps un point d'arrivée de travailleurs qui arrivent d'un peu partout en France, notamment du nord. Mais surtout de la région parisienne. Ce sont des hommes jeunes, souvent d'origine africaine. Ils peuvent être 20, 30, jusqu'à 50 ici à attendre que l'on leur propose un emploi. Vous voyez, il y en a aussi qui dorment dans le parc. Des mesures ont été mises en place. France Travail organise des points d'accueil, des associations patrouillent pour leur venir en aide. Certains ont des papiers, d'autres non. C'est la main d'œuvre vulnérable qui est laissée là ». L'homme est inquiet. Ces saisonniers n'ont pas de contrat de travail et ne peuvent compter que sur un salaire de misère : à peine 14 euros une journée de travail.Des cas similaires, Igor Dautelle en connait. Directeur adjoint du Travail, responsable de l'Unité régionale d'appui et de contrôle chargée de la lutte contre le travail illégal (Uracti) pour la région du Grand Est, l'homme revient en Champagne depuis plusieurs années. Durant une dizaine de jours, il sillonne les vignes à bord d'une citadine blanche. Dans son équipe, une vingtaine d'inspecteurs et d'inspectrices contrôlent 24 heures sur 24 les conditions de travail des vendangeurs. Ces agents peuvent compter sur l'aide de 84 gendarmes mobilisés en permanence pour cette campagne.En 2023, cinq vendangeurs ont trouvé la mort en Champagne, notamment à cause des températures extrêmes. En parallèle, trois hébergements insalubres ont été fermés et deux enquêtes ont été ouvertes pour traite d'êtres humains. Les vignerons et les maisons de champagne ont décidé d'agir. Un plan « Ensemble pour les vendanges en Champagne » a été mis en place dès le mois de juin 2024 autour des conditions de santé, de sécurité et d'emploi des travailleurs saisonniers. Les droits des travailleursÀ 14 kilomètres de là, sur la commune d'Oger, c'est un prestataire de services viticoles qui a embauché les travailleurs bulgares pour la maison de champagne Laurent Perrier. L'inspectrice du travail examine les contrats et les listes de présence. On l'informe qu'un audit interne a été confié par la marque à une entreprise indépendante. C'est un petit plus que les maisons de champagne s'offrent pour s'assurer de la probité de leurs sous-traitants.Deux équipes de cueilleurs, sécateurs en main, avancent rapidement le long de rangs des vignes. Malgré un travail harassant, les hommes fanfaronnent et les femmes rient. « Sylvia, Zornitsa, Tatiana, Seyhan, Yorgo… ! » : les présentations sont faites. Originaires de Doulovo, dans le nord-est de la Bulgarie, ils n'ont pas trouvé de travail dans leur ville. Ces récoltants bulgares ne savent ni lire ni écrire. La cheffe d'équipe assure les traductions.La rémunération est à la tâche : 22 centimes le kilo. « Comme la récolte est maigre cette année, leurs payes devront être compensées jusqu'au niveau du smic, à savoir 11,65 euros par heure », assure Igor Dautelle. Les flyers en bulgare sont distribués. « Les saisonniers sont méfiants et pensent que nous venons pour les embêter. Or, nous sommes là pour nous assurer que leurs droits de travailleurs soient respectés ». Nom, prénom, date de naissance, l'adresse du récoltant… Tout est noté, y compris les cotisations de l'employeur pour faire valoir le droit des saisonniers à la retraite. « Même si ce ne sont pas des sommes importantes, c'est toujours un petit plus dans leur retraite », martèle l'agent. Faudrait-il encore que ces salariés sachent vers quel organisme se tourner… Mais ici, tout est en règle. Les inspecteurs reviendront pour vérifier les logements des récoltants.Dix pour cent d'infractionsL'hébergement collectif est le maillon faible du système. Sur une centaine de contrôles effectués cette année, une dizaine d'infractions ont été relevées. « On a monté une opération avec un renfort de la gendarmerie. Sur place, on a constaté une présence de salariés de différentes nationalités. Des Géorgiens, des Slovènes ou encore des Bulgares logés dans des conditions indignes, ne sachant pas pour qui ils travaillaient. Au bout de deux heures de tractations, on a réussi à obtenir un contrat de location de ces lieux signé entre une entreprise française et une société roumaine. Il s'avère que cette dernière n'existe pas », affirme Igor Dautelle.Entre 100 000 et 120 000 vendangeurs viennent chaque année en Champagne, précise David Chatillon, président de l'Union des maisons de Champagne (UMC) et coprésident du Comité Champagne (CIVC). D'après les données de la Sécurité sociale agricole, la moitié de cette main d'œuvre saisonnière vient de l'étranger, essentiellement d'Europe de l'Est.À lire aussiFrance: un sentiment de déclassement professionnel règne chez les immigrés africains, selon l'InseeCes Polonais, Bulgares ou autres Roumains sont embauchés par les prestataires de services locaux ou étrangers. L'écrasante majorité des sous-traitants travaillent bien, assure le coprésident. Mais il y a aussi des brebis galeuses. « C'est pour éliminer ces dérives que nous avons demandé à l'État de renforcer les contrôles. Mais nous avons voulu aller plus loin. Une plateforme de mise en relation entre les domaines et ceux qui recrutent les saisonniers a été créée. Baptisée VitiArgos, elle permet de contractualiser les engagements des prestataires, et en cas de manquement, de sanctionner », estime David Chatillon, qui précise que des livrets d'accueil des vendangeurs sont disponibles en huit langues sur l'accès personnel des domaines à la plateforme.Les prestataires de servicesTous les vignerons interrogés assurent qu'ils rencontrent des difficultés à recruter. Face à ce problème, ils se tournent vers les sous-traitants. Pour Maxime Toubart, président du syndicat des vignerons (SGV) et coprésident du Comité Champagne (CIVC) ce sont des normes trop strictes qui ont découragé les vignerons. « En 1995, un décret d'État a renforcé les conditions d'hébergement des saisonniers. Beaucoup de vignerons ont baissé les bras et préfèrent une récolte clé en main assurée par un prestataire. En conséquence, ils ne savent pas qui travaille pour eux, ni comment sont logés leurs salariés ».En Champagne, la récolte du raisin se fait entièrement à la main. Près de la moitié des 34 000 hectares de vignes est vendangée par les sous-traitants, selon la filière qui a vendu 300 millions de bouteilles de champagne en 2023. Ces entreprises sont aujourd'hui indispensables au bon fonctionnement du vignoble. « On n'a pas inventé de machine capable de remplacer le cueilleur. Si la peau du raisin éclate, elle colore le jus. Ce n'est pas ce que nous recherchons », assure Maxime Toubart.Trouver des solutions à plus long termeSi la Champagne a besoin de son armée de saisonniers, une question revient chaque année : comment les héberger ? « On a des solutions un peu sparadrap avec des gîtes, des hôtels, etc. Il faudrait réfléchir à des hébergements collectifs plus importants. Cela implique des moyens, des endroits stratégiques. Notre plan d'actions s'inscrit dans le court terme parce qu'il fallait trouver des remèdes à ces scandales innommables qui ont entaché la réputation de ceux qui travaillent bien, mais aussi l'image de la Champagne. Mais on travaille aussi pour trouver des solutions à plus long terme ». En septembre 2024, une ancienne base aérienne militaire 112 près de Reims a été réaménagée pour accueillir 360 vendangeurs. Un projet porté par une société de prestation viticole installée dans la Marne. Une expérimentation à renouveler ?Dans le village de Trois-Puits, Pierre Trichet, propriétaire du domaine homonyme, s'inquiète : « La main d'œuvre se fait rare. Dès la fin des vendanges, les vignerons anticipent avec angoisse leur prochaine récolte ». À lire aussiFrance: la difficile transition écologique des agriculteurs

Champagne Salon has earned a cult-like status amongst those who appreciate the Maison's ability to make some of the finest and most exclusive blanc de blancs in all of Champagne. Limited to just 50,000 bottles per year for the entire world, Salon commands some of the highest prices for a single bottle each release and often tops-out the secondary market for champagnes from much older vintages. It leaves many champagne lovers waiting patiently just to get a sip. Since 1997, Didier Depond has been President but also managing the day-to-day operations of Champagne Salon and Champagne Delamotte, which fall underneath the stewardship of Laurent-Perrier. Under his leadership Salon has seen elevated and phenomenal demand for its champagnes by maintaining quality but also through restrained accessibility. James Suckling sits down with Lucie Pereyre de Nonancourt and Edouard Cossy of the renowned French Champagne House Laurent-Perrier to taste the Grand Siècle No. 25, which consists of the 2008 (65 percent), 2007 (25 percent) and 2006 (10 percent) vintages. "I think it's interesting because right away when you smell it, you can get the sense of 2008 in it – that real intense aroma," James says. "In the nose you can even smell the skins of the grapes still. Amazing."Compared with the No. 24, the No. 25 "has a lot of freshness and a lot of acidity with still young aromas," Lucie says. James agrees, saying "It just smells so youthful," adding that "it has a lot of structure but it's also elegant at the same time."
James recently tasted the Laurent-Perrier Champagne Grand Siècle Grand Cuvée N.23 NV Magnum, which impressed him so much he said to Lucie Pereyre de Nonacourt, who represents the fourth generation at Champagne Laurent-Perrier, and Edouard Cossy, the company's global director: "The aromas were amazing. Honestly, I can't think of a more beautiful Champagne with the aromas... that sort of brioche and tarte au limon." Lucie tells the story of how her grandfather founded the Laurent-Perrier Champagne Grand Siècle Grand Cuvée. When he became director of the house, he realized he had to have a prestige cuvée. He based the creation of his cuvée on a unique blend, which would take the champagne further in terms of quality and thus achieve his goal of recreating the perfect year – "one that nature cannot provide." Champagne House Laurent-Perrier, founded in 1812, can be credited with many of the cutting edge ideas that have defined champagne production. They are responsible for pioneering rose, as well as a style of champagne called Brut Nature that has zero dosage (any additional sugar). Laurent-Perrier is also the largest family and female run Champagne House in the world. Francofile, New Jersey Native, and President of Laurent-Perrier, Michelle DeFeo has been at the helm since 2014, but her experience in the champagne business goes back to the very beginnings of her career. We discussed her journey to the champagne business, the feminist history of the Laurent-Perrier, and what kind of responsibility comes with leading the largest female run Champagne House in the world. The Laurent-Perrier-branded bar will be open to the public year-round, and the development is expected to incorporate communal areas and high-tech features such as apps residents can use to do things such as hire a car or book a restaurant. Carolyn George has been a management consultant for over 20 years.
