Death by Food Pyramid: How Shoddy Science, Sketchy Politics and Shady Special Interests Have Ruined Our Health By Denis Minger Denise Minger shares her personal story about how she got convinced to go all-out raw vegan at a pretty young age. She initially saw tremendous health improvements, but after a while she started losing a lot of weight. She decided to stop eating vegan after her dentist told her that he/she had never seen such bad teeth in someone her age. These bacteria occupy space and latch at specific locations. She also shares how important cleanliness is, the best position to defecate, vomiting and washing of fruits and vegetables. Her book serve as a good source and a user-friendly type which can be useful to anyone. Burn Herman Ponser Burn, written by Herman Pontzer, anthropologist at Duke University. This book is an eye-opener who loves to exercise and lose weight, be physically fit. Pontzer shows how metabolism works and manage our desired weight. He implies that exercising doesn't burn your calories, diet does. He said “Use diet to watch your weight, and exercise for everything else”. Pontzer believes that we're not in control of our metabolism but you have control on your diet. His observation states that the more you exercise, more your body manage energy. Exercise will lead you a healthy well-being but doesn't give you're body huge changes. He also offers explanations about the role of foods is essential in maintaining your desired body status and won't lead you on overconsume. Her book needs an extensive reading in order to absorb the content because it contains a lot of data that will surely serve as your primary source in terms of your human nutrition. It is divided into three major parts — Shady Politics, Slippery Science, and New Geometry. Minger exposed the politics that led the USDA Food Pyramid of Nutrition that is responsible in promoting agriculture problems. She describes how low-fat diet is important in improving one's nutrition. She even debunked the early research due to poor methodology. Being aware about nutrition will become very useful instead of being dependent on doctors. She gave tips on how to evaluate who to trust and who to recognize as an authority. In today’s podcast, Ken and Dawn answer questions that range from blood-flow restriction to swimming induced pulmonary edema to intermittent fasting to methylene blue to low-carb diets, and much, much more. [00:09:13] A listener asks if and how Dawn sees crossover between the research on humans in extreme environments that she did at IHMC, and the clinically oriented work she is doing now. [00:10:37] A listener mentions that they have recently started using blood-flow restriction training in their workouts thanks to STEM-Talk and have enjoyed the experience. The listener goes on to mention, however, that they are noticing they feel light headed when going for a run after a blood-flow restriction resistance workout. The listener asks Ken if he has any knowledge of this phenomenon, or other side effects of blood flow restriction exercise. [00:12:56] A listener mentions that they have just finished reading Denise Minger’s “Death by Food Pyramid” which explains that no nutrition-oriented classes are required for a Harvard medical degree, which is also true of about 70% of medical schools in the nation. The listener goes on to mention, from their own experience, that people are often told to consult their doctor when thinking about the potential benefits of new diets. Doctors and even nutritionists, however, generally prescribe the Mediterranean diet and do not seem to know much about low-carb diets. The listener asks Ken who one should consult when wanting to start a ketogenic diet. In his response, Ken mentions several resources, including the websites Virta Health and Diet Doctor; and the books “The Art and Science of Low Carbohydrate Living” as well as “The Art and Science of Low Carbohydrate Performance.” [00:15:22] A listener, who is a triathlete, asks Dawn for advice about performance in extreme environments, particularly in regards to swimming induced pulmonary edema. They also go on to ask about Dawn’s thoughts on Sildenafil, also known as Viagra. In her response, Dawn mentions a paper by Dr. Richard Moon of Duke University, “Swimming-Induced Pulmonary Edema: Pathophysiology and Risk Reduction with Sildenafil.” [00:20:08] A listener asks Ken a question about an article they read about a study out of the University of Glasgow that was published in Nature Scientific Reports. The listener highlights a quote from the press release announcing the publication of the article: “There is no magic diet, or magic food, for weight control. Instead, people have to find the best way to eat fewer calories. Low-carb diets have had a lot of hype from media and celebrities, but they are no better than high-carb diets. Their evidence is generally poor, and our earlier research found low-carb diets are associated with some vitamin deficiencies, with more diabetes, not less. We can't stop people cutting carbohydrate, and it may suit some people at least in the short-term, but there should be a health warning.

Welcome back to the Whole View, episode 415. (0:27) Stacy is jazzed that they are revisiting a topic that has been laid with controversy for years. She loves to revisit topics and update science on past episode subjects. First, Stacy wants to share a story on fish oil. Stacy recently had an appointment with one of her children who has ADHD/ADD. The pediatrician knows that they work to manage his symptoms through lifestyle and are trying to avoid medication. Stacy shared with the pediatrician some of the challenges she has been facing at home and asked if there was an alternative to using a stimulant. (9:55) I listen every week, and I love everything, from the science to the soapboxes. My question has to do with fish oil. Specifically, I've heard mixed research on whether or not it is healthy for people to take as a supplement. It seems there is a lot of people that say that adding a fish oil supplement is really beneficial, but I recently attended a lecture where they were talking about how it can be damaging to the cells due to how it is extracted, and that we actually don't need it as much as we thought. As with anything diet and nutrition-related, there always seem to be many camps that people fall into, and I would love to hear your balanced approach on the science!"   DHA & EPA Let's start by talking about what it is in fish oil that is the reason it is so recommended. (11:25) It really has to do with these two different fatty acids, they are the long-chain omega-3 fatty acids, that you have seen as EPA and DHA. These fatty acids are really important in the body. They are different from the other main omega-3 that is what we get from chia seeds and flaxseeds, which are abbreviated as ALA. There are few processes in our body that use ALA, but most of what our body needs are DHA and EPA. If we are getting our omega-3 from plant sources, our body has to convert the ALA into these longer-chain omega-3's in order for them to do their function. This conversion is very inefficient. When we are counting our omega-3 intake, we should only count the long-chain omega-3's. The main food source that we are getting those from is fish and shellfish. It is really important for our bodies because they are used for forming fat-based hormone-like molecules in our bodies. Sarah explained these signals in greater detail.   Messenger Molecules There are three main classes of these molecules that are formed from EPA and DHA. (14:25) Prostaglandins, thromboxanes, and leukotrienes are classes of messenger molecules produced by many cells throughout the body that are important mediators of a variety of functions, including inflammation. We want to have the balance between the omega-6's and omega-3's in the cell membrane so that the cells can self regulate what type of signal they are producing. Sarah explained the way that inflammation serves as the starting point for most chronic illnesses. What we want is to have a balance in our cells so that our immune system can be regulated. Prostaglandins have essential roles in a variety of systems in the human body, including regulators of blood clotting, pain signaling, cell growth, kidney function, stomach acid secretion, and inflammation. Thromboxanes are produced by platelets and serve an essential function in blood clotting by simultaneously causing platelet aggregation and vasoconstriction. Leukotrienes are primarily synthesized by inflammatory cells and are essential mediators of inflammatory and immune reactions.   The Microbiome Impact Omega-3's are also really important for the microbiome. (20:05) There is this whole separate mechanism of how omega-3's are impacting our health. What is really interesting about the gut microbiome is that it is much more complicated than just how much fiber we are consuming. Our gut bacteria also have essential fats, and need those fats to make their cell membranes. They have signaling that can change their metabolism. In addition, they are sensitive to the types of proteins we are consuming. It is far more complex than, just eat fiber. One of the things that is really important for supporting a healthy community of gut bacteria is omega-3 fats. Omega-3's are the most gut-friendly fat that we could eat. They are particularly sensitive to DHA and EPA. There are a variety of studies that have shown that with supplementation of fish oil that it does things like improve gut-barrier health, reduces gut inflammation, reduces the production of endotoxin, and helps to drive the growth of important probiotic bacteria. What is amazing, is that there have been studies in humans where is all they have done is add a fish oil supplementation. These studies showed that this can correct gut dysbiosis in a very short period of time. The time markers in these studies range from two to six weeks. They show a healthier gut microbiome composition, including high diversity, which is one of the most important hallmarks of a gut microbial community. These are very compelling studies.   Chronic Disease Link Sarah would never (in eating for gut health) simplify it that we need to simply take a fish oil supplement. (23:04) There is obviously a lot more to it. We want to be eating the quality protein, a high diversity of vegetables and fruits, we want to be thinking of mushrooms as their own food group, etc. This is probably a secondary layer of mechanisms on tops of why omega-3's (EPA and DHA) are so important for our overall health. It also explains why not having enough EPA and DHA is linked to chronic disease risk. Sarah noted that when you look at the layer of benefits, it is a really good way of emphasizing the importance of this nutrient. On a related note, Sarah took a moment to share her feelings on the essential and non-essential nutrient labels.   The Science We have this huge collection of studies that are linking higher dietary omega-3s or the amount in our blood cell membrane. (29:07) Studies that have looked at human health in relation to omega-3's have shown over and over again that the higher the omega-3's the lower the risk of chronic illness. The strongest signals are diabetes and cardiovascular disease. Supplementation with encapsulated fish oil or fortified foods improves a wide range of cardiovascular risk factors including lipid profile, blood pressure, heart rate and variability, platelet aggregation, endothelial function, and atherosclerotic plaque stability.  We have this huge collection of studies showing that high omega-3's has all of these outcomes. So where does the controversy come from?   How common is a deficiency? Sarah highly recommends reading Death by Food Pyramid by Denise Minger. (34:33) It is a fascinating story of how the dietary recommendations became lobbyist driven as opposed to science-driven. This is what has basically colored US dietary guidelines. Less than 10% of people choose their food based on those guidelines. Stacy referred listeners back to this podcast episode. Even though the American Heart Association has targets for omega-3's, it is not something that most people are even paying attention to. The adequate intake is considered a bare minimum. For adult women, the recommendation is 1.1 grams daily. And for adult men, it is 1.6 grams of omega-3's daily. Studies have shown that on average American adults are consuming .4 grams per day from foods and .7 grams from supplements. Even though people are getting more omega-3's than they use to, which is predominantly driven by the fish oil supplement industry, most American adults are not meeting the recommendations. It is still more telling to look at the omega-3 index and look at how much omega-3's are actually in our cell membranes. The ideal intake of omega-3's is relative to the intake of omega-6's. So it is really relative to the whole diet, which will vary based on your sources of omega-6's as well as total fat. What we want is more omega-3 in our cell membranes. Studies that have looked at the omega-3 index of culture globally and compare different areas of the world in terms of how we are doing - show that in America our omega-3 index is 4. This means that the amount of DHA and EPA in our cell membranes is 4% of total fatty acids. In areas of the world where they are consuming a lot more fish that range is typically between 8 and 15%, and somewhere in that range is healthier. Even with fish oil supplementation being really common, we are looking at about 70% of people not getting enough EPA and DHA.   Racial Disparities There are some racial disparities in terms of the likelihood of lower omega-3 index (40:34) In America, people of Asian descent tend to have the highest omega-3 index. Whereas people of Hispanic cultural descent, tend to have the lowest, with their average at 3.6%. This is an area where Black-Americans do a little bit better than white-Americans. Black-Americans are at about 4.5%, whereas white-Americans are at 3.8%. Studies have shown that ethnicity does not change how the omega-3's relate to markers of inflammation. So how much inflammation there is, is directly related to how many omega-3's there are. There are no additional layering of complexity with ethnicity. Stacy asked a question about how/if stress plays into needing more omega-3's. Sarah responded with a yes and explained a bit about this two-way stress.   Quality Matters Back in 2012, there was this growing number of studies that were showing conflicting information in terms of long-term fish oil supplementation. (44:24) So what studies were starting to show that over the short-term you could see if you gave somebody fish oil supplementation, that their cardiovascular disease risk factors decreased. Once you hit the six to eight weeks (some studies showed 12), you would start to see this increase in lipid peroxidation. This is the oxidative degradation of fat molecules in the body, which is associated with a whole pile of disease processes. Over time, even though triglycerides would stay low, you would start to see this increase in markers of lipid peroxidation. There were animal studies where they would give fish oil-enriched diets over a year or two years to mice, showing that fish oil mice lived a shorter amount of time. At the time, Chris Kresser brought up the issue of oxidation. In the last few years, this is exactly where scientists have landed on the simplest explanation for this effect. Sarah explained why these fats are prone to oxidation. When oxygen does react with a fat, it creates all of these oxidized fat molecules that are problematic and inflammatory. There is a huge amount of scientific literature, at least in animal studies, showing that consuming oxidized fats or having a process in the body where fats are being oxidized, is bad.   How common are oxidized supplements? What we found is that studies over the last few years have started looking at how much of these fish oils that are on store shelves are oxidized. (48:07) There are levels that are considered acceptable. Studies have shown that it is very problematic. Over the counter fish oil supplements, depending on the study, show that anywhere between 11 and 80% of the products are oxidized. There was a study done in American fish oil products that showed that 27% had more than double the level of damage oxidized fats than what was considered an acceptable limit. Stacy asked if these companies know their products are oxidized? This is exactly why Stacy and Sarah are very particular about vetting brands. It is very important that we research this information and advocate for ourselves. Sarah thinks this problem is more about a lack of awareness in this industry that this is an issue. Since the chemical structure of these fats are easily oxidized, they need to be extracted under ideal conditions. And on top of that, they need to be bottled and stored properly. The things that drive oxidation of fish oil are higher temperatures, exposure to oxygen, light, the presence of water, and the presence of heavy metals. Oxidation is a snowball effect. It is really important that the fish oil you are consuming is extracted under conditions that will not damage that fat.  Stored under conditions that will not damage that fat. It is important to understand that some of the damage can happen after it leaves the factory.   Closing Thoughts If you are taking a fish oil that does not fall into where you would like it to be, please understand that we are not here to shame you or make you feel bad. (57:15) There is nothing that 'shoulds' will do for you.  We are here to help you feel more informed so that you can make decisions based on easily accessible science. The good news is that switching to a higher quality fish oil can have profound effects going forward.  This is one of those things that you can change and see improvement in going forward.  There is no reason to feel badly about what you may or may not have been doing in the past.  If you decide that you want to start taking higher quality fish oil, feel good about that decision and leave everything else in the past behind. One of the things that was really eye-opening to Sarah when doing research for this show, was that her diet (which does incorporate seafood at least daily) still requires a bit of supplementation.  Sarah was looking at it from the omega-6's vs. omega-3's intake lens. Stacy shared a bit on their seafood intake and the way that it tends to ebb and flow with seasons.  Her favorite way to consume seafood right now is by putting anchovies on Ceasar salad. That’s why we have numerous studies explaining why it is vital to maintaining healthy blood sugar levels. To educate us more about blood sugar and how to eat smart, Dr. Marlene Merritt explains all that and more in this episode. Early Exposure Dr. Marlene Merritt shares her mother is German. And because she was suspicious about going to doctors more often, it was normal that from a young age, Dr. Marlene Merritt was given things like chamomile tea to drink for certain discomforts like gastritis. Over time, Dr. Marlene Merritt learned more things such as steamed water with eucalyptus could treat asthma and bronchitis. That’s why she never had too many antibiotics when she was a kid. College Years In college, Dr. Marlene Merritt got into racing bikes in New York.  One day, she got sick, and her friend gave her antibiotics. An infection lodged in her heart and damaged one of her heart valves. Upon consultation with a doctor, Dr. Marlene Merritt was diagnosed with mitral valve prolapse, a heart condition at the age of 20. She tried prescribed drugs, but it didn’t help much.  Eventually, she gave up racing when her health couldn’t keep up. Discovering Whole Food Nutrition After getting her graduate degree in Oriental Medicine, Dr. Marlene Merritt happened to see a chiropractor/ naturopath who diagnosed her to be Vitamin E deficient. Taking away the Vitamin E capsules she was making that time; he replaced it with a whole food supplement of vitamin E. Thinking she had nothing to lose, Dr. Marlene Merritt followed the doctor’s instructions and started feeling a whole lot better. Dr. Marlene Merritt got strong enough to go cycling again and eventually biked across the United States in 26 days. Her quality of life started getting better and better after that. She still has the valve that doesn’t work, but it doesn’t bother her like it used to. “I started getting healthier with supplements and whole foods. And I have Chinese Medicine’s ability to work with the body as a whole. It put all the pieces together. That trained me well for functional medicine,” said Dr. Marlene Merritt. After her health improved, Dr. Marlene Merritt changed the core of her practice to nutrition. She went further by pursuing a Masters’ Degree in Nutrition which took her three years to complete.  Importance Of Supplementation Ultimately, supplementation was a big help to Dr. Marlene Merritt’s health. To illustrate this, she cites Dr. Bruce Ames’ triage theory. “Most people now are sub-clinically malnourished. So, what happens is, we never get full of nutrition. We’re never replete,” said Dr. Marlene Merritt. The triage theory shows that our body developed a rationing response to shortages of micronutrients which are vitamins and minerals during our evolution. When our cells run out of a vitamin or mineral, that scarce micronutrient is given to proteins which are essential for short-term survival. On the other hand, proteins that are needed for long-term health and protection of DNA, lose out. They become disabled and lead to diseases of aging. The triage theory also explains how RDAs are chosen. The Truth About Fructose Like what most experts say, Dr. Marlene Merritt says eating sugar causes deficiency. In particular, she says the sugar component fructose does not metabolize the same as glucose does. And to understand all about blood sugar levels, we must first understand how our body processes sugar. “Fructose gets metabolized in the same pathways as alcohol. The other place that you get sugar is in the actual white sugar or brown. The sugar molecule sucrose is half glucose, half fructose. Sugar substitute agave is 90% fructose,” Dr. Marlene Merritt said. She adds, “Fructose turns into fat faster than any other sugar. And a lot of people are for whole grains. That works if you’re not having blood sugar issues. But when somebody has blood sugar issues that involve insulin and overreaction of insulin, then ultimately leads to diabetes, whole grains won’t work for them any longer. So, I often have to work with people about eating lesser carbs even the good ones.” Diet Sodas I’m sure most of us have heard or read that consuming too many diet sodas are bad for us or affects our blood sugar levels.  But surprisingly, Dr. Marlene Merritt says diet coke does not give us diabetes. It’s not causing us blood sugar issues at the moment, but it makes us addicted. Diet sodas and any processed food are engineered to be addictive. To read more about how foods can be addictive, Dr. Marlene Merritt recommends the book, Salt Sugar Fat by Michael Moss. “I can’t just say something is good or bad. Mostly there has to be some context to it. So, if I can keep an open mind and look at the research, most people don’t know how to find the research or read the research.”  Carbs Intake Dr. Marlene Merritt says fruits, beans, and oatmeal are best eaten in moderation. Because when somebody has blood sugar issues, it does not matter what kind of carb it is, it’s still problematic. And the reason fruit is included in the list is that although fruits don’t cause insulin reaction, the high fructose will damage the liver which speeds up your chances of getting diabetes. “Manage your carb intake. Carbs all break down to sugar.  Some will break down faster,” said Dr. Marlene Merritt. “The whole grains break down slower, but it still doesn’t make them not a carb. the main problem is that it causes an insulin reaction. She adds, “And as you go farther into the spectrum of diabetes, it causes more of an insulin reaction. If you have insulin resistance, you cannot burn fat. Insulin is also the most inflammatory biomolecule there is. Plus, insulin also causes food retention. Plant-Based Diet As for plant-based diets, Dr. Marlene Merritt says the term doesn’t mean plants exclusively. Because she says, no culture is entirely vegan. Otherwise, we would have died without supplementation because being vegan is not a natural state. She further explains that one of the things that nutrition research is always kind of a challenge is because of a lot it observational. And observational doesn’t mean it’s wrong.  Instead, what they are looking at is an observation of whether there are other factors involved. “So, when somebody is eating a mostly plant-based diet and that culture, in particular, they have a very high community interaction. That’s social isolation. It affects health like smoking and obesity,” said Dr. Marlene Merritt. Dr. Marlene Merritt also says that with a vegan lifestyle you restrict yourself that much, and you would have died of B12 deficiency. For those who are unaware, the most significant deficiencies are a B12 deficiency, zinc deficiency, iron, vitamin A and many others. Among these, B12 is the most well-known. “I’m not saying don’t eat plants. But rather, I’m saying vegan doesn’t work. That’s why they say plant proteins are not complete proteins,” shares Dr. Marlene Merritt. High Protein Diets But when it comes to high-protein diets, Dr. Marlene Merritt is not a proponent of high-protein diets either. This is because she thinks that we don’t manage meat well in a lot of ways. She also says animal protein doesn’t cause cancer. However, the situation may be different if you are eating conventional meat that is not well-treated, it’s been fed differently, or butchered differently. Dr. Marlene Merritt also shares that the muscle meat has the least amount of nutrition to it. So, she advises choosing the organ meats where the nutrition level is much higher. Cooking Methods Surprisingly, Dr. Marlene Merritt also busts myths about fried foods. She says in fried food like fried chicken; it’s the actual oil that the food is fried in that’s the problem. For frying, Dr. Marlene Merritt says it’s best to use avocado oil or refined coconut oil. As for other cooking methods, there are options like wet cooking which is either steaming, braising, or putting in stews and dry cooking which involves grilling or baking. Between the two, Dr. Marlene Merritt says dry cooking is not the best thing for proteins. When it comes to proper cooking protein like meat, Dr. Marlene Merritt shares that some ways of protecting the beef are adding vinegar or doing a marinade. Furthermore, cooking at a lower temperature is good. Recommended Foods Leafy greens at breakfast is an excellent way to start the day, says Dr. Marlene Merritt. Soups are also one of the most healing things for the gut. And Dr. Marlene Merritt even uses a teaspoon of bone broth for babies or small children who have colic or constipation.  An ideal diet is something that is vegetable heavy with some form of protein. And contrary to chicken breasts, Dr. Marlene Merritt prefers chicken with bones and skin, as well as some meats. For dessert, Dr. Marlene Merritt loves making a mashup of coconut milk, avocado, banana, a tablespoon of chocolate powder, and vanilla-flavored stevia mashed in a food processor. Denise is a joyful ball of energy and talent. She speaks at conferences, writes books, and is an all around great person. I love her view on things and her balanced approach, but she does lean towards the high carb diet side. But here’s the thing - she advocates eating a lot of nutrient dense animal products, no sugar, grains, or vegetable oils - so a lot to agree with there. I want everyone to hear this to see an opposite approach and see if it might work for you. The Unifying Theory of Nutrition says things can work on both sides - so here’s the other one. I still think it’s insane to expect people to live like a tribesman in the bolivian wilderness. You’re asking all of America to eat an ultra-clean Vegan diet plus organ meats. To maybe 99% of the population that sounds awful. Like the worst ever. I didn’t agree on everything but I went along with it. In retrospect I could have challenged her more and I also want to see some studies that actually show this dietary approach works in a scientific setting. I could have brought up more of the points supporting low carb diet showing much better results in clinical trials and on lowering risk factors for heart disease, etc. but I didn’t want to argue and we already yammered on for almost 90 min. Humans can actually do well on a true low fat, whole foods diet How does this other metabolic state work? You’re asking people to eat a Vegan diet plus organ meats What would you actually be eating on this sort of diet? If you’re vegan or vegetarian this doesn’t work Do vegetables have anti-nutrients or other toxins we should be worried about? Is fiber necessary? Nutrient density and satiety Problem with people eating all the time Killer combo of fat and sugar… it’s irresistible So how do we figure this all out? Ivor Cummins is a Biochemical Engineer who in 2012 was disturbed by a set of his own abnormal blood test results. Consultation with multiple doctors yielded little insight into the cause of his elevated cholesterol, ferritin and GGT so he turned to his analytical roots to study the problem. In the process, he evaluated hundreds of scientific papers, ultimately concluding that that flawed hypotheses and a breach of the scientific method have resulted in the current “diabesity” epidemic. It's WAY TOO MANY! How did you write such a long book? No one knows. Maybe we'll do a workout video with it. Meanwhile, Stacy's kids are going to three different schools and one of them took the bus to middle school at 6:30! It's been exhausting! More AMA questions! Fun questions we love and haven't been asked before! Are either of you superstitious? (8:21) Stacy believes that people can find themselves in advantageous or disadvantageous situations, but there's not some force in the world that notices when you follow superstitions Sarah does do some superstitions out of habit, but doesn't think she actually believes that they have power. Sarah does say she believes in karma and also believes that people are meant to do things, but also believes in the chaos and randomness in the universe. There is some cognitive dissonance there. Stacy doesn't know why she does some superstitions, and catches herself doing them despite not really believing in them. They're fun for kids too. Which character from The Walking Dead do you most identify with? (12:36) Stacy definitely identifies with Maggie because she's kind and a leader who is into family. Sarah doesn't watch the show. Stacy modifies it to which character from Game of Thrones do you identify with? (13:03) Stacy identifies with Sansa and Dany Sarah took an online test that said she was a Robb Stark because of her leadership and strong moral compass. But Sarah also really loves Dany for similar reasons. Sarah also identifies with Samwell Tarly because she too would be in the back as a craven. Stacy and Matt love Tormund Giantsbane and Samwell Tarly as well. If you had to live in a house with other bloggers for a reality TV show, who would you choose? Is it going to satisfy you so you won't crave it anymore or will it just trigger more cravings? Stacy and Sarah both tend to be "fall off the wagon" types. In that case, maybe best to avoid it. What is your most hated activity in Strongman or Crossfit? Stacy: Running. It's why I started Strongman. Sarah: Weighted lunges or running with a weight. Stacy loved the feeling of being too sore to do normal activities. She always said "Bring it on!" What is the most often cooked meal in your house? (26:06) Stacy: Meatloaf and Chicken thighs. Sarah: roast chicken or liver burgers. Is there anyone in the paleo world you still get nervous talking to? (26:30) Stacy: No, not in the paleo world Sarah got giggly when talking to Mark (Definitely go back and listen to that one!) Sarah gets excited when people know who she is. Like Art Devany and Dr. David Perlmutter Stacy has learned that people are just people and are just like everyone else. Stacy says only a few people would intimidate her or make her squee. One of them is a baby sloth. Kristen Bell's sloth spatula is on backorder, but it is here. How tall are you? (33:23) Stacy: 5'7". People always think she's taller though. Sarah is 5'5 3/4", but she always says she's 5'6". Can you do a foreign accent? (36:33) Stacy: It would be terrible. However, Stacy and her stepsister would go to the beach and pretend to be French with the names "Ginger Bread" and "Carry-on Bag". Sarah: I do bad American versions of foreign accents and uses them to play with her kids. Which is your favorite of your books (38:54) That's like asking which is your favorite kid! They're all our favorites But if pressed, Stacy likes Real Life Paleo because it's how we really eat, but Matt likes Beyond Bacon because its a more sophisticated foodie book. The Problem: The government has lied to us about food for nearly forever. From unnecessary fears about saturated fats to a ridiculous idea that we need 8 servings of grains a day. Face it, we’ve been duped. Their food pyramid is a scam, but does that really surprise us? Kevin’s Solution: Build a podcast and online fitness and wellness platform based on his own, personal experience from being unhappy with his own health and how he transformed (aka rebooted) his own body. Complete Show Notes: Kevin went through a personal health transformation in 2009. He went for a physical and the doctor told him that he had high blood pressure and was close to becoming a diabetic. He likes to say that he “dieted” up to a weight of 225 lbs. The combination of calorie restriction and excessive exercise worked for a while, but then he’d crash and binge and lose all gains. He decided that something more permanent was needed. Kevin decided that he had a poor relationship with food and became very curious about his OWN body and how it works and wants rather than what some government or doctor tells him what will build a successful food relationship. At the time, Kevin was the co-owner and instructor of a martial arts school at the time and wanted professional change too. During his own body transformation, some of his students started to take notice and asked him if he could help them. This demand slowly turned into a business opportunity. Remember, if there’s demand there’s a potential business opportunity. So he emailed his list from the karate business and created a couples health and wellness program. It was successful! He had 7 couples that wanted to join and the Rebooted brand was started! You don’t want to miss the part where we discuss sugar and how it’s actually a drug; hooking into your body and making you physiologically dependant. Yes, there’s a withdrawal period from sugar and Kevin chats about why it’s wise to take some time to be curious about your possible dependence. Food Pyramid Both Kevin and myself aren’t big fans of the state-sponsored food pyramid and remain quite skeptical. We discuss the origins of the pyramid and why it could have been politically manipulated rather than actually being created for our actual benefit. Sounds like a gov program, no? For liberty-minded people, this is a MUST listen podcast. We’ve gotta take care of ourselves, we all know this, but Kevin breaks it down in very libertarian language. Intro (0:00) News and Views (0:40) Do you have summer adjustment issues? Sarah does! Sarah is trying to finish her books and give her kids attention. Meanwhile, Stacy is managing her time with adding working out back into her schedule. Stacy had a run in with a notorious troll. She was told she has to lose weight before she works out to minimize injury. That's complete nonsense! Sarah agrees! Stacy turned it into an opportunity to talk about communication. We call this kind of person a "self-help troll". Sarah had a similar experience when she went on antibiotics for pneumonia recently, despite us saying that there's definitely a time and a place for medicine! But people who are concern trolling are "D words" Sarah has been doing a series on healthy weight loss on her blog. Check it out! Sarah does a lot of research on this! She knows what she's talking about! But so many people tangentially related to paleo are selling you bad advice with extreme recommendations and bad science. This stuff can destroy hormones, endocrine systems, and metabolism! Remember: Movement is essentially for health at any size! So much of science agrees! Anyone with an internet connection can post something, so figure out why people are saying what they are saying! You can love and respect yourself AND desire to lose weight! Question from Jen: "Since I know you and Sarah have both lost weight, I wanted to ask for some suggestions. I lost weight going Paleo a few years ago, around 55 pounds. I have more than 100 to lose but those 55 were amazing. Problem was I also losing my hair. I added back potatoes, rice & more carbs and the hair loss stopped but the weight loss stopped too. (I've since read about low carb and thyroid issues - I have Hashis). But even adding carbs, I gained nothing back - just stayed the same. Went through a major life stressor a couple years ago and gained it all back plus some. I want to attempt to get it off again but I'm at a loss as to what to do. I've read Sarah lost most of her weight low carb but I'm so afraid to do that again. I'm not trying to get skinny, but I want to feel more functional again. It's super hard to follow most weight loss blogs since I already can't eat gluten or oats or much dairy or too many raw veggies or nightshades... lol! Any direction or advice you may have would be super appreciated." Low carb does not have a metabolic advantage: it just tricks you into eating less! Actually that's the same as paleo. On average, people are eating about 400 calories less per day While it's not as simple as calories in/calories out, calories do matter for weight loss! Weight loss can have negative effects while you're doing it. Often there is nutrient deficiencies (which can stop your fat burning!) Exercise burns calories and increases metabolic rate! Very good Sleep loss will cause you to overeat and messes with hormones Stress will also cause you to hold on to weight. Taken all these factors together and you are left with a paleo template! Healthy weight loss is slow! Hyper palatable foods are a problem: They override your satiety sensations and make you want more! Sarah recommends eating veggies to compensate! Denise Minger reminded us that eating fat and refined carbohydrates leads to weight gain. Stacy has mindsets that she has from low carb weight loss that she is trying to break. Like drinking bulletproof coffee in the morning. Sort through your food habits to see what you can fix for weight loss. Use an app to track your eating habits as a food journal to see where your extra calories are coming from! Try Chronometer or MyFitnessPal. Snacking tends to be the biggest issue, especially with lack of sleep. Are you getting enough fiber and proteins? Are you getting enough nutrients? What's going on? If you can, get a body composition measurement to see what's going on. Get your basal metabolic rate to see where your calorie requirements are. Also, don't sit down to a plate of only carbs. Pair them with other foods or right before bed. Starchy vegetables can probably be your only source of carbs plus some fruit See Sarah's posts on weight loss here. Being thin is not the same thing as being healthy. And losing weight is not the same as getting healthy. Losing excess weight is a side effect of getting healthy. Being overweight is only a symptom. She's here to answer a specific question we received about a talk she did at AHS '14! He book Death By Food Pyramid is one of Sarah's favorites! See the podcast we did with her about it here. Question from Valerie: "first of all I'd like to thank you for what you're doing. Your show always puts a smile on my face and I am afraid of the day I will have caught up with all past episodes and will actually have to wait a week for the next one to come out. So I was ordering my InstantPot the other day when Amazon recommend I shall buy the book "The Starch Solution" by John McDougall. I got curious about it and did some research and it seems the diet is a paleo person's worst nightmare: Based solely on starches, whole grains, legumes, no fats allowed whatsoever, zero animal products. It promises weight loss (not hard to imagine, being on a totally bland diet), but also permanent reversal (as in healing) of diabetes and all sorts of health benefits. I also found a talk by Denise Minger ('lessons from the vegans', I think you might actually have mentioned it sometime) who confirms these findings. What's puzzling me is all the reports of people doing that diet talking about improved digestion, no blood sugar spikes (!) and I also found quite a few reports from Crohn's patients apparently being cured by it, although this is totally counter intuitive for anyone that has ever been on SCD or paleo. Can you think of any explanation for these miraculous cures?" Denise posted a post about this topic here. A study by Walter Kempner found that a super high sugar, super low fat diet had benefits for people with diabetes, multiple sclerosis, heart disease and other conditions. He was trying to help people with kidney failure. 96% carbohydrate and mostly white sugar, about 2000 calories. What came out of this came to be known as the Rice Diet Look at the end of these notes for OFFICIAL Denise Minger meme images. These benefit lasted even after they returned to a normal diet. Roy Swank found that people in mountains of Norway were eating a lot of land animal fats and had a relatively high incidence of multiple sclerosis while people eating mostly fish on the coast had a low incidence of MS. He put people with MS on a very low saturated fat diet for decades and found a lot of success with the people who stuck the closest to his diet. This doesn't seem to jibe with what we know of MS, particularly compared with people like Terry Wahls who eat much more fat. Nathan Pritikin worked on a plant-based, super low fat diet to reverse heart disease. With all this very thorough research that seems contradictory to the paleo model, it seemed to Denise like she needed to revise what she believed was true. Denise initially thought it was the low processed foods component with mainly whole foods focus that was the cause. But obviously the Kempner mostly refined sugar diet that doesn't apply. But it seems like these extreme diets have evidence that they can help you repair when you're sick, but not necessarily to prevent the disease in the first place! Denise found that most low fat diets call for 30% of calories from fat, while these extreme diets are under 10%. The really problematic diets are the refined grain diets with that 30% or more calories from fat that have the most disease promoting properties. Denise believes that this is because of the gut and how chylomicrons and endotoxins (lipopolysaccharides) work on these diets. Endotoxins are linked to a lot of modern diseases and are present the most in high saturated fat diets. Chylomicrons are lipoproteins in the gut that transport fat out to the rest of the body, but they will also bring endotoxins along with them. To reduce endotoxins in the blood, you can either eat this super low fat diet, or you can promote a healthy gut that doesn't produce a lot of endotoxins to begin with. For diabetes, saturated fat increases the secretion of insulin. This is why a sugar diet could improve diabetes. There could be a fat/carbohydrate interaction in some people that may make them more susceptible to blood sugar issues. It seems that these plant based diets are so adamant about super low fat: if you even eat a moderate amount of fat, the therapeutic effect goes away! Denise concludes that healthy people without these conditions shouldn't be worried about her research because these diets are for therapeutic effect and don't have evidence that they benefit people trying to prevent disease. Endotoxin is created by the cell walls of gram-negative bacteria. Gram-negative bacteria are sensitive to the fiber intake of the diet.
