Today we're doing a cacao analysis of one of our Hawaiian origins: Mililani. This chocolate has developed a reputation over the last three years for being consistently bright and fruity. When we receive beans from Mililani Estate, batches are categorized based on the date they were fermented. Each ferment produces different results, so we analyze the batches to decide whether beans are A or B-grade. A-grade goes into our single origin Mililani bar while B-grade goes towards our Hawaii milk chocolate. It's important to note that the sensory information Dylan uses to dictate the quality of this cacao can be applied to any cacao bean. While this process is relatively subjective it's worth trying out when analyzing your own beans. Remember; YOU CAN'T MAKE QUALITY CHOCOLATE WITHOUT QUALITY CACAO. Emmy Sobieski is an athlete, marathon runner, and entrepreneur who's held all 3 positions successfully at the same time.   Between the ages of 38 and 40, Emmy placed 9th in the US World Cup Trials Dressage 2005, 10th in 2006, competing at the Olympic and national level while holding a job at a world-class hedge fund working 80 to 100 hours a week. Since turning 46 she's completed more than 15 marathons and 5 ultramarathons, 15 and 5 more then I'll ever complete in any of the lives I'll be reincarnated into. At age 50 she ran her first 50K. It was twenty six years ago that he started as my nutritionist, then became my mentor and has become one of my oldest friends and colleagues. We sat in that same office where so many years ago I learned about the beginning stages of the cleansing life and plant based nutrition. I'm not even sure this podcast, Vitality NYC or my career as a colonic therapist would even exist if I hadn't met him. Although there's so many new things to learn about health sciences from him I tend to drop into more personal conversation about his history and spiritual life. We brush on his early days when he briefly rubbed shoulders with the mafia and talk about some deep spiritual experiences he had while fasting. Eventually we got down to talking shop though.
