In this episode, Simon Yates, carbohydrates and the applicability of sports science research to the masses are in our Spotlight. In an interview earlier this week, pro cyclist Simon Yates described a paradigm shift that has changed nutrition and training in the sport. Instead of five hour rides on "two eggs" and "water in the bottles" leaving him feeling exhausted, he talks about 120g/h of carbohydrates in training and racing leading to less fatigue, greater enjoyment, and significantly better performances. That's not new, of course - more carbs has been the name of the game for the elites for some time, as we've discussed in previous shows. Now, Gareth and Ross explore the extent to which elite practice and behaviours should guide what the rest of us 'mortals' do, and whether the pendulum of advice has swung too far? To do so, we use a recent paper by Louise Burke and her team to explain that sports science research, often done on recreational or moderately trained athletes, often fails to add value to elite athletes. Conversely, we discover that what elites do is not necessarily directly applicable to the rest of us, and that while Yates and others demonstrate important principles of nutrition (yes, you need those carbs for harder training), we need to understand context and circumstances in order to understand exactly how to apply their behaviours to our own situations, and to get the specifics right. Ultimately, we may all be bound by the same (physiological) rules, but we're often playing a different game. Ya hemos hablado sobre nutrición en otros episodios. Uno fue el 78, donde dimos todos los detalles para configurar una dieta como deportista de endurance, tengas más o menos dedicación al deporte. Entonces, pudimos comprobar que el macronutriente estrella para deportes de resistencia es el carbohidrato (CH). Según el panel de expertos (liderado por la catedrática en nutrición deportiva, y asesora en múltiples comités, Louise Burke) no es que el CH sea la base de la pirámide de alimentación, en deporte endurance, es que es prácticamente la pirámide entera; exceptuando la punta, donde están ubicadas las proteínas y, en menor medida, las grasas. Esto es así en la dieta regular, y no digamos ya, en la dieta alrededor de entrenos y competición. Y es que, en efecto, la evidencia y la experiencia, a favor del uso de altas ingestas de CH, es condundente. El CH potencia el rendimiento, porque retrasa la fatiga. Y potencia la recuperación, porque, si lo metes pre- e intra-actividad, ya estás aportando los ladrillos, que servirán luego para reparar los tejidos. Pero, los CHs, y esas altas ingestas peri-entreno y peri-competición, tienen también su lado oscuro; que es de lo que vamos a hablar hoy. Advierto ya de que, ni soy extremista “keto” en contra de los CHs, ni soy extremista “real-fooder” en contra de todo procesamiento de los alimentos, por mínimo que sea. Sin embargo, sí tengo preocupación por ese lado oscuro del uso a cascoporro de CHs de rápida absorción… De hecho, tras la publicación del mencionado episodio 78, me quedé con el runrún… Una parte de mí pensaba: “¿habré cometido una temeridad, fomentando el consumo masivo de azúcares simples?” (Consumo, además, que yo no practico.) Otra parte replicaba: “bueno, yo sólo he divulgado la declaración de consenso de un panel de expertos de reconocido prestigio; ni soy yo el autor de las recomendaciones, ni hay duda de que quienes las hacen tienen amplísima experiencia investigando, en el lab, y trabajando, en el campo, con deportistas y su nutrición.” En el presente episodio, vamos a abordar el debate “dietas low-carb versus dietas high-carb”. Es decir, qué tienen de bueno y de malo las dietas bajas en CH y las dietas con alta presencia de CH; tanto en el rendimiento como en la salud. En cuanto al rendimiento, analizaremos tres estudios recientes. Uno de 2020, en deportistas élite de marcha atlética: “Impairment of exercise economy and performance in elite race walkers by ketogenic LCHF diet”. Uno de 2023, en runners amateur: “Low and high carbohydrate isocaloric diets on performance, fat oxidation, glucose and cardiometabolic health in middle age males”. Otro más, de 2024, en ciclistas profesionales: “A Five-Week Periodized Carbohydrate Diet Does Not Improve MLSS Exercise Capacity and Substrate Oxidation in Well-Trained Cyclists compared to a High-Carbohydrate Diet”. Cada día, busco y leo estudios científicos sobre fisiología, psicología, entrenamiento y rendimiento en deporte de resistencia. Cuando encuentro uno interesante, sobre todo cuando se trata de una revisión de estudios (que dan lugar a conclusiones más robustas), elaboro una mini-infografía y la publico en forma de Stories. Bien, ¿por qué te cuento esto? Porque es fascinante comprobar cómo las que tienen que ver con nutrición o suplementación deportiva son, de lejos, las que más interacción generan. O sea, puedo divulgar un estudio sobre entrenamiento de alta intensidad, sobre entrenamiento en calor, sobre cómo medir carga del entrenamiento, periodización, sobre estrategias de pacing… lo que quieras. Todas esas Stories pasan sin pena ni gloria por los ojos y cerebros de quienes me miran las Stories. Ahora bien, cuando se me ocurre publicar algo sobre creatina, nitratos, gramos de carbohidrato por kg de peso corporal en la recarga pre-carrera, ratios glucosa-fructosa o jugo de pepinillos, ay amigo… ahí sí que se lía! Me fascina que la nutrición y suplementación genere tanta fascinación (valga la redundancia). Mi impresión es que el material, las dichosas super-shoes, a las que ya dedicamos otro episodio, esas zapas con mediasuela reactiva, placa de carbono en su interior y geometría agresiva, también despiertan interés, casi al nivel de la susodicha nutrición y suplementación. Y mi hipótesis es que estas dos cosas, suplementación y material, interesan, porque se pueden manejar fácilmente: no hay más que comprarlo y usarlo. Al mismo tiempo, lo que importa de verdad, que es el trabajo diario de pico y pala, sostenido durante meses y años sin interrupción, eso no interesa tanto. No es nada atractivo, no es nada “sexy”, no sale en las portadas de las revistas de Fitness. Y es que esto otro, el trabajo duro y consistente, es algo muy sencillo, pero muy difícil de llevar a cabo. No se puede comprar y usar, hay que ganárselo con el sudor de la frente de horas, días, meses y años. Dicho lo anterior, que la nutrición y la suplementación deportiva despiertan pasiones, curiosamente, creo que seguimos sin tener mucha idea de cómo funciona el temita en cuestión, que en realidad no es tan tan complicado. (Quizás es que hay gente interesada en complicarlo artificialmente, no sé bien con qué objetivo -o puede que sí). En fin, que no me quiero meter en berenjenales. Como ya hicimos en el episodio sobre el trabajo de fuerza, hoy vamos a repasar los números concretos. Información accionable. Vamos a especificar (1) los gramos de carbohidrato y proteína que necesitas en tu día a día y pre-, intra- y post-carrera, (2) según tu peso, tu nivel de actividad diario y según la duración de la carrera y (3) los momentos o timing cuando hay que meterlos. Vamos a ver, también, (4) de dónde puedes sacar dichos carbos y dicha prote, pues no necesariamente son productos de nutrición y pueden ser alimentos. Y vamos a hacerlo basándonos en el criterio experto. Ni más ni menos que en estas fuentes: el “review update” de 2018 de la International Society of Sports Nutrition, el “consensus statement” de 2019 de la IAAF (Federación internacional de atletismo) y el trabajo de Louise Burke, catedrática en nutrición y asesora en varios comités, con 40 años de experiencia, y el de Asker Jeukendrup, que fue profesor de metabolismo del ejercicio en la universidad de Birmingham, para convertirse, hoy, en asesor de múltiples organizaciones, como son el Jumbo Visma Pro cycling, el equipo de atletas Red Bull o el PSV Eindhoven, además de haber fundado empresas de consultoría, como mysportscience o CORE Nutrition planning. In late 2023 the International Olympic Committee (IOC) released an update to ther REDs Consensus Statement, the first in 5 years. It's based on the growing body of research and experience working with athletes in this area and provides more nuance, new insights and new health and peformance consequences added to the model. It may be coincidence but we know this much for sure: days after they were at Bedminster in July, 2021, after a lot of publicity in newspapers and with Tucker Carlson for their new venture, the co-publishers of Mark Meadows' book all but disappeared from public view.  The recording does not exist in a vacuum. Why is everybody looking at it that way It's a tape of FIVE PEOPLE TALKING IN A ROOM. Any of whom can be called to testify ABOUT THE TAPE. And we don't really know, because nobody's really focused them, who the OTHER four people are. And we don't know what THEY think of the tape. And we don't know whether any of them are already on that list of possible witnesses Smith may call in the documents trial. The New York Post had a throwaway reference last night: “Two of the people Trump speaks to in the audio are believed to be Kate Hartson and Louise Burke, who had started All Seasons Press, a conservative publishing company…” You do not have to have a hyperactive imagination to wonder: if the Post is right and it was both of them that as Ms. Burke and Ms. Hartson left Bedminster that day two years ago next month one of them realized that they had just been shown top secrets and had it within their power to get Trump indicted for not keeping top secrets SECRET and it put the fear of God into them. Hell, Kid Rock says Trump did it with HIM and even HE was smart enough to get frightened. Did they go to the FBI? Meanwhile Trump really DID change HIS story three times yesterday. When he got burned by Bret Baier on Fox last week, Trump insisted about the document referred to in the transcript of the recording, quote “there was no document.” Yesterday he posted only that he was covered by the Presidential Records Act. Then in New Hampshire he insisted he had kind of told Baier there WAS a document. Then to reporters on his plane he said no, he never had a document, just building plans. And golf course plans. And a newspaper story about Iran. And he was showing off. All in one day. Plus Walt Nauta didn't testify because his lawyer decided he needed lots more money to take THIS case. But Rudy Giuliani reportedly pre-testified in an interview with the Special Counsel's staff. B-Block (24:32) POSTSCRIPTS TO THE NEWS: SCOTUS votes 6-3 in favor of keeping democracy after all (though it's really more like 5-4). The Senator whose state's top industry is tourism tells tourists not to go there. A Bob and Ray sketch comes to life. They once imagined Chocolate-Flavored Ketchup. The National Culinary institute is introducing COLA-Flavored Ketchup - for use on HOT DOGS. (35:01) THE WORST PERSONS IN THE WORLD: Elon Musk deliberately or inattentively starts punishing accounts which block RW ads on Twitter. Last week The National Hockey League betrayed Pride Night. THIS week it puts its player draft in the city whose incoming owner is a noted anti-same-sex marriage and adoption ex-Governor. And yes RFK Jr shared an online stage with an anti-vaxxer who says the Covid vaccine causes you to become magnetic. But I'm the winner because I accidentally called RFK Jr "JFK Jr" and that is utterly unfair...to JFK Jr. C-Block (36:30) THINGS I PROMISED NOT TO TELL: Fox just changed its lineup to put its 10 PM host on at 7 because its audience is now too old to stay up to 10. This flashed me back to the day, nearly 15 years ago, when I first realized that the future of cable news was... there wasn't any. Dr. Louise Burke is a sports dietitian with 40 years of experience in the education and counseling of elite athletes. She worked at the Australian Institute of Sport for thirty years, first as Head of Sports Nutrition and then as Chief of Nutrition Strategy. In this episode, Vikas and Dr. Burke discuss carb loading and all about carbohydrate intake. Dr. Burke was the team dietitian for the Australian Olympic Teams for the 1996-2012 Summer Olympic Games. Her publications include over 350 papers in peer-reviewed journals and book chapters and the authorship or editorship of several textbooks on sports nutrition. She is an editor of the International Journal of Sports Nutrition and Exercise Metabolism. Louise was a founding member of the Executive of Sports Dietitians Australia and is a Director of the IOC Diploma in Sports Nutrition.She was awarded a Medal of the Order of Australia in 2009 for her contribution to sports nutrition. Louise is an extremely experienced academic dietician and practitioner with probably the best current track record in the area. In a wide ranging discussion we discussed many things including how she got into the field ("by accident"), the importance of high CHO intake compared with high fat/ketogenic diets for endurance performance, how forcing the body to burn more fat during exercise (by high fat diets) can make one less economical/efficient (which is the opposite to "super shoes" which improve running economy), competing with social media influencers to get quality information out there, changing the CHO intake based on the phase of the training program, sports nutrition not black and white: it is nuanced based on the individual, the event, the goals, the stage of the season etc, glycogen resynthesis, importance of the type of CHO (nutrient rich except during exercise and in moderation for enjoyment), lower dose caffeine and exercise (masking fatigue), John Hawley and coke slushies, Olympic marathon winner Frank Shorter using coke for performance and training with low CHO (in 1968!), CHO ingestion: can train your gut to absorb more, the type of CHO ingested matters, David Costill the legend, Tour de France cyclists dietary practises (during the stage and over the full day), protein requirements and timing of protein intake, chocolate milk the darling of sports nutrition, electrolyes in sports drinks. Welcome to the Peak Endurance podcast! Episode 119 is an interview with Louise Burke. Louise is a sports dietitian with 40 years of experience in the education and counselling of elite athletes. She worked at the Australian Institute of Sport for thirty years, first as Head of Sports Nutrition and then as Chief of Nutrition Strategy. She was the team dietitian for the Australian Olympic Teams for the 1996-2012 Summer Olympic Games. Her publications include over 350 papers in peer-reviewed journals and book chapters, and the authorship or editorship of several textbooks on sports nutrition. She is an editor of the International Journal of Sport Nutrition and Exercise Metabolism. Louise was a founding member of the Executive of Sports Dietitians Australia and is a Director of the IOC Diploma in Sports Nutrition. She was awarded a Medal of the Order of Australia in 2009 for her contribution to sports nutrition. Louise was appointed as Chair in Sports Nutrition in the Mary MacKillop Institute of Health Research at Australian Catholic University in Melbourne in 2014 and took up this position in a full-time capacity in 2020. I have been a fan of Louise's ever since I was a cyclist and read her book ‘The Complete Guide to Food for Sports Performance'. That is where I started to develop my love of all things nutrition. Today I have PETER DEFTY back on the show to talk about Optimal Fat Metabolism, VESPA …and we may start with  the immune system (hot topic) as has A LOT to do with Metabolic Health!  Who is Peter Defty? My name is Peter Defty and I am one of the pioneers in fat-adapted performance. This work, first on myself beginning in 2001, and subsequently with athletes I coached, eventually led to some stunning athletic performances all based upon optimizing fat metabolism.  Because of the overwhelming bias toward carbohydrates as the necessary energy source for athletes & athletic performance these performances were dismissed as 'anecdotal' and ridiculed by the mainstream sports experts. This did not deter me because what I was personally experiencing coupled with what athletes I was working with were achieving told me fat adaptation was real. Humans are meant to metabolize fat as their primary aerobic energy source.  In 2010 a friend suggested I contact Dr. Stephen Phinney after reading an article on him. This led to a meeting where I shared these results with Dr. Phinney who immediately stated not only were these results real but he was genuinely interested in learning more. It turned out Dr. Phinney had a keen interest in fat adapted performance and, like me, knew it offered much more than the dismissive attitude it was given by experts like Louise Burke and Chris Carmichael. “However, those at the coal-face of sports nutrition can delete fat loading and high-fat diets from their list of genuine ergogenic aids for conventional endurance and ultra-endurance sports.” - Louise Burke, PhD "To think carbs make you fat is wrong. You're fat because you're not exercising... Low-carb diets are exactly what you should not do if you're active...Carbs are the fuel that drives your life; suddenly everyone's forgotten this. In this episode I talk to Professor Louise Burke, Chief of Nutrition Strategy at The Australian Institute of Sport, where she has led the nutrition support work for Australia since 1990.
