Rick Roden is one of the dairy farmers that make up the board of directors for Dairy Farmers of Wisconsin. On his family operation in Washington County, communication is key. Roden's found out that the messages that Dairy Farmers of Wisconsin creates and uses to promote the state's dairy products are effective, and well received. Roden visits with Pam Jahnke about his fundamental motivation to be on the board - and that was to find out how his checkoff dollars were being invested. He says he's very impressed with all the programs and partnerships that DFW has forged, and the worldwide reputation Wisconsin has for its dairy products, especially cheese. Constant promotion and education is the foundation to why Dairy Farmers of Wisconsin works. Roden says the rule he remembers is the 90/90 rule. 90% of the milk produced in Wisconsin goes into cheese, and 90% of that cheese is sold outside of Wisconsin. He says regardless of policy, keeping those conversations going is critical for the success of Wisconsin dairy. Today, the state produces 3.5 billion pounds of cheese. Roden believes the brand building and partnerships that his checkoff dollars have been invested in, keep Wisconsin at the forefront of sales. Josh Ostermann joins Ana, Eric, and Jake in The Cabin to discuss Wisconsin's most famous foods, offer up some trivia and background about them, and often some good suggestions on where to enjoy them. Ana takes kringle - which of course means a trip to Racine - as well as frozen custard, a Wisconsin-y twist on ice cream. As the famous dairy state of the U.S., cheese is no doubt a staple in Wisconsin. As such it seems only fit that we have an official state cheese. Efforts by law makers in recent years have pushed to make Colby cheese the official state cheese.
This year, the Wisconsin State Fair is celebrating 10 years of The Sporkies. This is the food competition that's created hundreds of delicious and very unique dishes throughout the past decade. One of the finalists this year in The Sporkies competition is the Sweet & Savory Funnel Cake Fries. You can find these at the Bud Pavilion. Wisconsin has always been known for its long history of cheesemaking, but now it may also be known for its incredible artisan cheese festival. Demand is booming at the retail level for U.S. beef. Joe Schuele tells Aaron Zimmerman e-commerce and home delivery helped that trend during COVID, and are likely here to stay. He says the biggest obstacle facing U.S. beef is the backlog of vessels to export beef overseas. It's causing uneasiness from Asian buyers. Philippe Coquard of Wollersheim Winery in Prairie Du Sac says healthy grape vines do fine in the winter. He says if you have a weak vine, they will freeze when it gets 10 or 20 below in Wisconsin. That's when vineyards would see winter kill. Wollersheim's team will be preparing the vines to go into the cold season “in good health” by making sure the vines are clean, for example. In 2019, international fast food chain A&W sold over 7 million pounds of Wisconsin cheese curds. Lined up end-to-end, the curds would equal two round trips from Milwaukee to Green Bay, according to Rick Findlay of Dairy Farmers of Wisconsin. Before she was a cheese connoisseur, Patty Floersheimer made custom clothing for a living. Trudi Wagner led a busy life on on Wall Street before she ventured into food. But when the two met in 2007 and bonded over a shared love of food and wine, they knew they had something special. Together, they began planning wine tasting events and sit-down dinners for 40, and proceeded to learn the art of cheese at a family-owned shop in New Jersey. A few years later, they would take their talents to Charleston and opened their European-inspired cheese and wine shop in 2011. Due to high customer demand, they proceeded to open another location that included dine-in and by-the-glass service in 2016.
