Kiwis are drinking increasingly less cow's milk. Around 1.2 million fewer glasses are consumed every year, fuelling health concerns. Blood sugar levels are higher than normal, but not yet high enough to be diagnosed as type 2 diabetes. With prediabetes, action is the best medicine.American Diabetes AssociationWhat is Diabetes?About 38 million Americans have diabetes (about 1 in 10), and approximately 90-95% have type 2 diabetes. Type 2 diabetes most often develops in people over age 45, but more and more children, teens, and young adults are also developing it.Preventing Type 2 DiabetesIf you have prediabetes, losing a small amount of weight if you're overweight and getting regular physical activity can lower your risk for developing type 2 diabetes.A small amount of weight loss means around 5% to 7% of your body weight, just 10 to 14 pounds for a 200-pound person.Regular physical activity means getting at least 150 minutes a week of brisk walking or a similar activity. That's just 30 minutes a day, five days a week.Tests for Diabetes and PrediabetesYour doctor will have you take one or more of the following blood tests to confirm the diagnosis:A1C TestThe A1C test measures your average blood sugar level over the past 3 months. An A1C below 5.7% is normal, between 5.7 and 6.4% indicates you have prediabetes, and greater than 6.5% indicates you have diabetes.Fasting Blood Sugar TestThis measures your blood sugar after an overnight fast (not eating). A fasting blood sugar level of 99 mg/dL or lower is normal, 100 to 125 mg/dL indicates you have prediabetes, and greater than 126 mg/dL indicates you have diabetes.GLP-1 Antagonists - Ozempic, Wegovy, Byetta, RybelsusThis class of drugs is commonly called glucagon-like peptide 1 (GLP-1) agonists.These drugs mimic the action of a hormone called glucagon-like peptide 1. When blood sugar levels start to rise after someone eats, these drugs stimulate the body to produce more insulin. The extra insulin helps lower blood sugar levels.Lower blood sugar levels are helpful for controlling type 2 diabetes. But it's not clear how the GLP-1 drugs lead to weight loss. Doctors do know that GLP-1s appear to help curb hunger. These drugs also slow the movement of food from the stomach into the small intestine.As a result, you may feel full faster and longer, so you eat less.Along with helping to control blood sugar and boost weight loss, GLP-1s and SGLT-2 inhibitors seem to have other major benefits. Research has found that some drugs in these groups may lower the risk of heart disease, such as heart failure, stroke and kidney disease. MCALLEN, Texas - The director of food and nutrition for South Texas Health System in McAllen has praised the work of Amigos Del Valle.Patrick Woodin said the nonprofit serves about 5,000 people with its meals-on-wheels service at any one time in Hidalgo, Cameron and Starr counties. However, he feels sure the demand for nutritious meals is much greater than that. “Amigos Del Valle is a great organization,” Woodin said. “It is an organization that provides meals on wheels. It is a federal program. So long as you are 60 years old they will take you three square meals a day, balanced meals that follow federal guidelines.”Woodin praised ADV during an interview at a recent STHS symposium on diabetes. He was asked about the Rio Grande Valley's so-called “food deserts,” areas in the region where people that do not have their own vehicle cannot access a grocery or supermarket because there is no public transportation.Woodin said food deserts can be overcome through groups like ADV.“If you do not have access to get the food, there is the ability of organizations to take the food to the individuals. So, take advantage of that program. I think they are only serving 5,000 meals locally. I am sure there is the potential to serve hundreds of thousands,” Woodin said.According to its website, ADV has operated for 46 years and has assisted approximately 110,422 seniors through the provision of 15,758,697 meals, with 12,800,965 of the meals delivered to the homes of Valley seniors.Woodin said communications problems are to blame for people not accessing groups like ADV.“People do not realize. All you have to be is 60. Let's say you are 60 and your spouse is 50, your spouse qualifies for that program through you. He called that philosophy “Whole Life Wellness”. Over time as the healthcare system made it harder for patients to receive this kind of personal care Dr. Papanicolaou decided a change was needed. He began training in Functional Medicine through the Institute of Functional Medicine. In 2015, he established Cornerstone Personal Health—a practice dedicated entirely to Functional Medicine. Arlethia Brown, School Nutrition Director, Camden School District discussed the program she oversees for the district, including preparing and serving meals through lunch and breakfast programs, in afterschool programs, at athletic events and school catered events.  She described her responsibilities during the pandemic, when students are not on campus, she and her staff have been preparing food boxes for delivery to families within the district.  Ms Brown told how she plans the offerings, knowing that kids can easily buy junk food at local shops, and how she incorporates nutrition education into her programs, for students and for families receiving her meals.  Beyond her dedicated staff, she spoke of all of the strategic  partnerships that help make the program possible, from local manufactures, to the American Dairy Association who provides refrigerators and drink machines, and we discussed how everyone loves cheese and ice-cream!  Finally, a reminder of the food insecurity many students and their families face, the importance of nutritional food for wellness and productivity, on the job and in the classroom, and the importance of increasing those resource. “What I'm concerned about is that when we see negative headlines over and over again, we start thinking that we need to avoid these healthy vegetables.” - Jackie London (10:08 - 10:27)Lori TaylorThe Produce Moms Jackie London is the Nutrition Director at the Good Housekeeping magazine, and she is a repeat guest on the podcast. She is also the author of the book Dressing on the Side (and Other Diet Myths Debunked), which is a book that debunks diet myths and removes mental blocks that keep you from reaching your health and weight-loss goals. Misleading information is leading to lower consumption of fresh produce. Eating a wide variety of fresh produce is a crucial element of living a life full of energy and good health. A diet rich in fresh fruits and vegetables contributes to heart health, lower blood pressure, better digestion, and many other health benefits. Unfortunately, many Americans are not getting enough fresh produce in their diet. It is estimated that less than 10 percent of Americans get their daily recommended amount of veggies, and less than 50 percent get enough fiber. One of the issues that leads to a less than ideal amount of vegetable consumption is that consumers are continually getting misleading and contradictory information from the media. Some myths and misconceptions become a part of the mainstream narrative, and they make the situation worse when it comes to people eating enough fruits and veggies. “The data tells us that Americans need more fruits and vegetables in their diet. Anything we do to discourage that consumption has a negative effect on our health as a nation.” - Lori Taylor (11:39 - 11:55) Let's debunk some of today's most common misconceptions surrounding fresh produce so that you can make more informed choices. “Kale is unsafe to eat because of pesticides.” In 2019, Kale was placed on a list of vegetables deemed as the “Dirty Dozen” by the Environmental Working Group (EWG) due to the use of pesticides during the growing process. This got a lot of attention in the media, and the headline was that kale is no longer safe to eat. But no credible, peer-reviewed research shows that pesticides that are used in the United States harm human health. There is, however, strong evidence that links kale with many health benefits like reduced risk of heart disease, lower cholesterol, weight loss, and more. Pesticides are a natural part of the growing process meant to protect crops from getting destroyed by pests. The real health issue that needs to be addressed is that Americans aren't getting enough vegetables in their diet. As long as consumers wash the vegetables thoroughly, they need to be eating more nutrient-dense greens like kale. “Kale juice will ‘detox' you.” While kale is a nutritional powerhouse, drinking kale juice will not help you detox and compensate for an otherwise unhealthy diet and lifestyle. It is true that kale, and other dark leafy greens, have specific compounds that aid in a small number of biochemical pathways involved in liver detoxification. But to suggest that kale alone will help you remove toxins from your system is a giant stretch that is frequently used to market detox products and programs. Your liver is what is really responsible for converting toxins to waste, metabolizing nutrients, and cleansing your blood. So, what you should focus on is eating a diet rich in fruits and vegetables that support liver health, instead of relying on specific detox products. Some of the best foods for the liver are grapefruit, blueberries, beetroot, and cruciferous vegetables like broccoli, mustard greens, and yes, kale. “Following a ketogenic diet is the best way to lose weight.” The ketogenic diet is a recent trend that has become popular among people trying to lose weight. People on the keto diet, as it is commonly called, get most of their calories from fats, a moderate amount from protein, and a meager amount from carbohydrates. The diet plan was initially developed as a last resort measure to treat children suffering from seizures, and not for regular people trying to maintain a healthy weight. While the keto diet can be beneficial for weight loss in the short term, mainly due to loss of water weight, it is an extremely restrictive diet that is difficult to sustain in the long run. More problematically, it cuts out many highly nutritious produce items. Almost all fruits are off-limits due to their natural sugar content, and even some vegetables like beetroot, carrots, and sweet potatoes are a no-go. Removing these foods from your diet can result in nutrient deficiencies in the long run. A better way to maintain a healthy weight is to eat plenty of fruits and vegetables, lean proteins, healthy fats, and exercise regularly. “I wish that there was a way to mimic the ketogenic diet for life without cutting out some of the most nutrient-dense foods.” - Jackie London (25:41 - 25:49) In the age of the internet, we're susceptible to misinformation more than ever before. We see certain things over and over again, and we assume them to be true. When it comes to the consumption of fresh fruits and vegetables, there is only one thing that is important to remember - better health means eating more fresh produce more often. Instead of worrying about every new report that comes out, focus on how to make fruits and veggies more palatable to you and your family. Consistently eating an adequate amount of fruits and veggies is the best way to ensure that you remain free of chronic diseases and that you enjoy a healthy life full of energy and happiness. Whether it be the role food plays in daily life or providing food to the needy, faith traditions recognize this necessity as something more. Panelists: Rev. Canon Leonard L. Hamlin, Sr. began his tenure at the Washington National Cathedral in April 2018. In his role as Canon Missioner, Dr. Hamlin oversees the Cathedral’s outreach and social justice initiatives. Prior to his arrival at the Cathedral, Dr. Hamlin served as the Pastor of Macedonia Baptist Church in Arlington, VA for 22 years. Dr. Hamlin received his Bachelor of Business Administration Degree (1983) from the Howard University School of Business, Master of Divinity Degree (1994), and a Doctor of Ministry Degree from the Howard University School of Divinity (1996). He has served and been appointed to numerous community, faith-based and governmental boards, commissions, agencies. Dr. Zulfiqar A. Kazmi is the founder and Executive Director of The Commongrounds USA. This organizational network is dedicated to the promotion of peace through educational programs, workshops, conferences, and research. Dr. Kazmi participated and lectured in more than 200 World Peace Conferences including UN cosponsored seminars, symposiums and convocations. He launched Scandinavian Peace initiatives and convened a series of seminars at The Washington Times. Dr. Kazmi made history offering special prayers and Salaat ul Maghrib during the last Christmas Dinner hosted by President Obama and First Lady at The White House. Many of you may already know the beautiful and intelligent, Julieanna Hever but in case you don't she is known as The Plant-Based Dietitian. Julieanna has a bachelors of arts degree in Theatre from UCLA in and a masters of science degree in Nutrition from Cal State Northridge, bridging her three biggest passions for food, performing, and helping people. As a Registered Dietitian, Julieanna has authored four books, including the brand new Plant-Based Nutrition (Idiots Guide) 2E, and two peer-reviewed journal articles on plant-based nutrition for healthcare professionals (in Journal of Geriatric Cardiology and Permanente Journal), and is the nutrition columnist for VegNews Magazine. Past projects have included being the host of What Would Julieanna Do?; giving a TEDx talk; co-starring on The Chef and The Dietitian; and teaching the eCornell Plant-Based Nutrition Certification Program.
