Flaky pastry225g plain flour 150g butter Pinch salt Cold water to bind Wrap the butter cling and place in freezer for 45 minutes. Mix the salt and flour together and then grate the butter from frozen into the bowl. Mix together then rub to breadcrumb consistency. Add cold water to bind, mix to a smooth dough, roll into a sausage shape and chill for an hour. Roll into a rectangle about 50cm x 30cm on a floured surface. Take a third of the pastry and fold into the middle and fold over the top third. Turn by 180 degrees and roll into the same size rectangle and fold in the same way. Divide the pastry roughly in half but with one side a bit bigger than the other. Roll out the smaller side into a 30cm round and place on a parchment lined baking tray. Use a knife to cut round a plate and use the trimmings for the top. Roll the other piece into a 40 cm round. Place on parchment paper and chill until ready to assemble.Mushroom Duxelle 350g mushrooms, sliced 1 tablespoon oil 2 shallots, finely chopped 25g butter 1 tablespoon balsamic vinegar Salt and pepper to taste Heat the oil in a large pan until smoking hot. Add the mushrooms and cook for a minute. Dot the butter around and add the shallots. Cook until mushrooms and shallots are golden. Add the balsamic and season with salt and pepper and cook until the liquid has evaporated. Blend to a smooth puree. Cool2 large potatoesPeel the potatoes, cut into 1cm slices and cook gently in water until just cooked. Drain and pat dry on kitchen paper.250g greens – (I used cavalo nero but spinach, chard etc would be great) 2 onions, finely sliced 25g butter ½ teaspoon ground nutmeg 200ml double cream Salt and pepper If using cavalo nero, remove the stalk in the middle and coarsely chop the leaves. If using chard, remove the stalks, chop them finely and coarsely shred the leaves. Spinach is ok as it is Heat the butter in a pan and cook the onions until golden and soft. Add the greens and cook to wilt down for a couple of minutes – season well with salt and pepper. Add the nutmeg and cream and cook until the cream coats the greens and isn't watery. Allow to cool1 egg yolk 50g grated To assemble – Arrange the potatoes on the pastry in the baking tray leaving a 2cm gap around the edges. Sprinkle over half the parmesan. Arrange the greens on top with the remaining parmesan and finally the mushroom duxelle. Brush the edges with egg yolk and place the other piece of pastry on top, pressing down. Crimp the edges and place a wee hole in the top with a skewer. Brush with the remaining egg yolk and make lines from the top to the edges with a cocktail stick. Set oven to 190oc and bake the pie for about 30 minutes or until crisp and golden.Pickled walnut ketchup2 onions, peeled and finely chopped 2 tablespoons oil 1 clove garlic 4 pickled walnuts chopped 100ml red wine vinegar 75g dark muscovado sugar 50g stoned dates, finely chopped 1 teaspoon smoked seasalt 250ml water Cook the onions in the oil until soft and golden. Add the pickled walnuts, garlic, vinegar, sugar, dates, salt and water and simmer for half an hour. Blend to a smooth puree. Cool and serve with the pie.

On January 8th, 1966, at 0930h Indochina Time, salvos of American artillery, napalm, and explosive ordnance from B-52s rained down on an underground Viet Cong base believed to be a political headquarters. The location was the Ho Bo Woods of the Binh Duong Province in South Vietnam, 70 km north of Ho Chi Minh City. It was about to become host to a seven-day joint mission executed by the United States, Australia, and New Zealand. But, these allies soon discovered that the assumed headquarters held a much more surprising secret: a sophisticated, underground logistical tunnel system spanning over 200km. Nos 400 anos do nascimento de Molière, quisemos perceber porque é que o dramaturgo francês continua a inspirar os criadores contemporâneos. Fomos conversar com o encenador Nuno Carinhas que estreou, este ano, “O Misantropo” do contemporâneo Martin Crimp, inspirado no clássico de Molière. Nuno Carinhas preferiu a versão de Crimp e aí viu a “transposição para o nosso tempo” e a“dilaceração muito bem-disposta” no mundo das artes do espectáculo. Os 400 anos do nascimento de Molière continuam a levar-nos até às releituras em língua portuguesa do dramaturgo francês. Em Lisboa, fomos conversar com Nuno Carinhas, encenador, cenógrafo e figurinista, que foi também Director Artístico do Teatro Nacional São João entre 2009 e 2018. Este ano, Nuno Carinhas levou a palco “O Misantropo” de Martin Crimp, a partir de Molière, para a Companhia de Teatro de Almada. O espectáculo estreou no Teatro Municipal Joaquim Benite, em Almada, a 28 de Abril. “O Misantropo” é um dos textos mais duros de Molière. Apresentada em Junho de 1666, a peça é uma sátira de costumes à arrogância das classes dominantes do seu tempo, mas é também uma história de amor e de ciúme. Alceste odeia a humanidade e até defende a sua extinção, como única forma de acabar com a hipocrisia e o tráfico de influências. Porém, ele ama Celimene que orbita no centro dessa mesma sociedade que ele tanto abomina. Nuno Carinhas foi buscar a versão contemporânea de “O Misantropo” escrita pelo dramaturgo britânico Martin Crimp, em 1996, e que é uma réplica à sociedade de hoje, nomeadamente no mundo do espectáculo, marcada por uma generalizada decadência dos valores humanos e por um crescente individualismo. Anos depois de ter levado a palco “O Resto Já Devem Conhecer do Cinema”, o encenador português voltou ao universo das apropriações de Crimp porque quis continuar “a explorar esse lado reinterpretativo ou interpretativo-criativo do Martin Crimp”. “Eu aproximei-me de O Misantropo precisamente por ser o Martin Crimp. Eu nunca fiz Molière nem tinha pensado fazer, mas O Misantropo é, com o Dom João, provavelmente as peças que eu prefiro do Molière. Quando vi que existia este Misantropo - que já não é novo, já é dos anos 90 - decidi fazê-lo por ser uma transposição para o nosso tempo absolutamente extraordinária, uma dilaceração muito bem-disposta sobre a convivialidade das pessoas do espectáculo e das artes do espectáculo, do cinema, da comunicação social, à mistura com agentes profissionais, com professores de representação, etc. Havia ali toda uma escola do teatro na versão do Crimp que me interessava”, explica Nuno Carinhas. Muda-se o cenário e muda-se o tempo, “o tempo é hoje, o lugar Londres”. Muda-se também o nome das personagens, menos o de Alceste, mas a história continua a mostrar um homem que está mal com o mundo inteiro e ama uma mulher que adora ser adorada por esse mundo que ele detesta. “É simultaneamente uma crítica a esta micro-sociedade do espectáculo, mas é obviamente também uma maravilhosa história de amor que, como sempre, teria que acabar mal, sobretudo na versão de Martin Crimp porque ele para ser coerente não se poderia, de maneira nenhuma, aproximar de uma jovem que está no pico do seu sucesso juvenil, que tem 21 anos, é americana, está em Londres de passagem também pelo seu sucesso no cinema. Portanto, para ele se poder aproximar dessa jovem, tem que abrir mão da sua misantropia, tem que abrir portas à sociedade e isso ele não quer por coerência própria”, descreve o encenador. A crítica fundamental à sociedade é feita tanto por Alceste, o misantropo, quanto por Jennifer, a nova Celimene, que também reconhece a frivolidade geral da sociedade do espectáculo, mas usa-a de forma pragmática. “Alguém disse que o Martin Crimp tinha criado uma Alceste ao fazer a Jennifer. O misantropo tem razão quando diz que ambos são rápidos de espírito e têm uma visão crítica sobre os outros. Só que ela ainda não está farta, digamos assim, tão farta e tão batida na vida como o Alceste. Ela tem outros recursos para sobreviver e continuar a viver nessa relação hipócrita com os outros, mais ou menos festiva, sem grandes compromissos”, continua Nuno Carinhas. Para recriar a suite de um hotel de luxo, onde se aloja a diva em ascensão, ele fez “uma caixa preta, um lugar mais ou menos sinistro entre a caixa de bombons e um sarcófago chique”, com “uma grande parede ‘capitonée' no fundo, o chão de carpélio preto” e “chaises longues de veludo preto”. No final, havia um “baile de máscaras” com “trajes do século XVIII” e um lustre a fechar a composição. Nuno Carinhas usou a tradução de Daniel Jonas, de 2021, do texto de 1996 de Martin Crimp, o qual trabalhou o texto de Molière de 1666. Go ahead and grab the ingredients below (Erin starts listing them at 1:58) before starting the episode.Apple Pecan PieMakes one 9-inch pie1 recipe All Buttah Pie Dough, prepared and chilled4 tablespoons (56 grams) unsalted butter1 cup (212 grams) dark brown sugar, divided2 tablespoons (15 grams) all-purpose flour2 cups (240 grams) peeled and diced apples, such as Cosmic Crisp, Honeycrisp, or Fuji (about 2 large apples)3 (170 grams) large eggs, at room temperature1/4 cup (78 grams) maple syrup1 1/2 teaspoons (7 grams) vanilla extract3/4 teaspoon (3 grams) fine sea salt1/2 teaspoon (2 grams) ground cinnamon1 1/2 cups (200 grams) pecan halves, roughly choppedOn a lightly floured surface, roll out the dough to ¼-in/6 mm thick, rotating it as you work to prevent it from sticking to the work surface. Use the rolling pin to transfer the dough to the pan, gently rolling it up, wrapping it around the pin, then unfurling it into a 9-in/23 cm pie plate.Use scissors to trim away the excess pie dough, leaving about ½ in/1 cm of excess all the way around the outside edge of the pie plate. Tuck this excess dough under itself, pressing gently to make it flush with the outside edge of the pie plate. Crimp the edge as desired.Dock the base and sides of the dough with the tines of a fork, then refrigerate for 30 minutes to 1 hour. Towards the end of chill time, preheat the oven to 425°F/220°C.Cut a square of parchment paper slightly larger than the diameter of a pie plate, and press it into the base of the pie plate. Fill with pie weights to the top inner rim of the pan. Bake until the edges begin to lightly brown, 15 to 17 minutes.Remove the parchment paper and pie weights, and return to the oven until the lower portion of crust appears dry and set (it shouldn't brown), 2 to 3 minutes more. Cool completely before filling. Reduce the oven temperature to 375°F/190°C.In a medium pot, melt the butter over medium heat. Place ½ cup (106 g) brown sugar in a small bowl, and use your fingers to rub the flour into it until well combined. Add the apples to the pot, and sprinkle the sugar mixture over it and stir well to combine.Cook, stirring constantly, until the sugar dissolves and the apples start to become tender; continue to cook until the “sauce” that forms from the sugar and apple's juices thickens slightly, fully coating the apples, 4 to 5 minutes.Pour this mixture onto a baking sheet or shallow casserole dish and spread into an even layer. Cool for 10 to 15 minutes.In a medium bowl, whisk the eggs well. Add the remaining ½ cup (106 g) brown sugar, maple syrup, vanilla, salt, and cinnamon and whisk well to combine.Add the apple mixture and pecans to the bowl and stir well to combine. Gently pour the mixture into the cooled pie crust.Transfer the pie to the oven and bake until the custard appears just set in the center when the pan is slightly moved back and forth, 35 to 40 minutes. Kia ora,Welcome to Wednesday's Economy Watch where we follow the economic events and trends that affect New Zealand.I'm David Chaston and this is the International edition from Interest.co.nz.Today we lead with news energy issues are biting hard in both China and Europe now.But first, Wall Street is trading sharply lower with the S&P500 down more than -2% and Dow Jones falling almost -500 points as a spike in Treasury yields dragged shares, especially tech shares, lower. Uncertainty in China isn't helping either. The yield on the 10-year Treasury topped 1.5% and the 5-year rate rose above 1% for the first time since February 2020. Investors are figuring that the US Fed will soon start reducing QE stimulus. They are also starting to wonder if the future is stagflation.Also weighing on market sentiment are lackluster data. The Conference Board sentiment measures are falling, and by more than expected.The American trade balance came in virtually the same in August as in July, a -US88 bln deficit. Both exports and imports both rose about +3% in August from July.The next regional factory survey is from the Richmond Fed and its mid-Atlantic states, and this one has turned negative. That is because the new order flow is dipping now while costs are still rising but the ability to pass them on has stopped.And the widely-watched Case-Shiller house price index rose +20% in the year that ended in July, as buyers continued to compete amid a shortage of homes for sale. But there are signs the American housing market is starting to cool.In Congress, two separate forces are imperiling incumbent policies. Elizabeth Warren has come out against supporting a Powell reappointment at the Fed. And the Republicans are looking to veto the OECD BEPS ratification by the US, thus protecting multinational tax avoidance strategies.And staying in Congress, two senior officials are warning of the risks lawmakers are taking with the debt-limit standoff. Yellen issued more details of the risks she sees. And NY Fed boss Williams issued his own warnings about adverse market reactions that will be difficult to control.Canada reported some key labour market data, but only for July. However, weekly earnings are shown to be rising +1.8% pa, even though total employment is still -2.5% smaller than pre-pandemic levels. And Canadian inflation is running at +4.1%.And the Canadian housing authority is warning that their housing market is now at a high risk of a sharp correction.In China they have begun rolling blackouts in Beijing and Shanghai, home to 48 million people, as the country struggles with crippling power shortages that have hit key factories in a further threat to the economy. Some recent blackouts have been unannounced.One of the hottest commodities right now is coal. Coal prices surged to a fresh record high of US$210/ton, bringing the monthly gain to nearly +20% and the yearly to almost +160%. Several factors have been pushing coal prices up, including tight supply in China as the country works to achieve emissions standards and reach carbon neutrality by 2060; a lack of mine investment reflecting pressure from socially conscious investors; imports constraints due to coronavirus restrictions and a surge in natural gas prices amid prospects of a shortage in the coming winter, especially in both Europe and China.China's industrial profits were up +50% in August compared to a year ago. But that expansion was less that they reported in July. Both comparatives are to a pandemic-damaged period. But compared to August 2019, they are up +20%. Profits continue to grow for both state-owned industrial firms (+87%) and private-sector +34%).But the power crisis has forecasters figuring that the Chinese expansion could run out of steam fast, and soon.The UST 10yr yield opens today at just under 1.53% and up another +5 bps from this time yesterday, and a three month high. The price of gold will start today down -US$12 at US$1738/oz and back near its early August lows.And oil prices have softened slightly to now just under US$75/bbl in the US, while the international Brent price is even higher at just over US$78bbl. The Kiwi dollar opens today at just on 69.5 USc and a -½c drop since this time yesterday. Against the Australian dollar we are quite soft at just on 96.1 AUc. Against the euro we now just on 59.5 euro cents, lower by -50 bps. That means our TWI-5 starts today at 73.2 and down towards the middle of the 72-74 range of the past eleven months.The bitcoin price has slipped again today and down below NZ$60,000 for the first time in two months, down -4.0%, and is now at US$41,257. Today we (very carefully) taste molten meat inside flaky crusts and diagnose Meat Hand Syndrome while Molly gives us another signature Hot Take. CORNISH PASTIES Makes 5 large pasties FOR THE CRUST 25 ounces flour 1 tablespoon kosher salt 2.5 ounces cold lard, cut into chunks 1 stick (4 ounces) cold unsalted butter, cut into chunks 12.75 ounces cold water FOR THE FILLING 2 pounds chuck steak, cut into 1/2-inch cubes, plus some minced beef fat (trimmings are fine) 2 pounds russet potatoes 1 medium onion, diced flour salt and pepper 2 tablespoons minced fresh parsley FOR THE EGG WASH 2 eggs 2 tablespoons milk Preheat oven to 400 degrees. In a large bowl, combine flour, salt, lard, and butter, mixing with your hands until the fat is in pea-size chunks. Slowly drizzle in cold water, stirring, taking care not to make the dough too wet--check by pressing it into a ball, if it doesn't fall apart into dry chunks, it's ready. Add more water a teaspoon at a time if if needed. Divide the dough into five balls (about 9 oz each). (You can refrigerate the dough up to 24 hours at this point.) Roll the first piece out to a 9-inch circle. Pile the center of the dough with generous layers of potatoes, meat, onion, parsley, suet, and 1 tsp flour. Sprinkle each layer generously with salt and pepper. (I like to make a salt-pepper mixture in a bowl, like they do at Subway.) Using your fingers, moisten the edge of the dough with water and lift the two sides of the pastry to seal on top. Crimp edge with your fingers to hold it together. Place on a sturdy, parchment-lined cookie sheet. Repeat with remaining balls of dough. Beat the egg and milk together in a small bowl. Brush each pasty with the egg mixture and cut two slits in the top with a sharp knife. Bake 30 minutes, then reduce oven to 350 degrees and continue baking 30 more minutes. We kick off the new academic year going behind the scenes of our first drama production, four short plays by British playwright Martin Crimp in Crimp 1, 2, 3 & 4. We caught up with composer and sound designer Kerry Yong, lighting designer James McKeogh and assistant sound designer Lewis Hannaby to talk about the challenges of linking together four plays in our smallest theatre and the collaborative creative process.
