Send us a textChef Oscar Padilla has been working in and running restaurants for over twenty-five years. Born in Los Angeles, he grew up in Mexico City with his grandmother, observing and admiring her culinary techniques, particularly her preparation of traditional Mexican dishes.Inspired to pursue a culinary career, he studied and worked in Mexico City, establishing his reputation when he joined the culinary team of The Club de Banqueros. After his time there, he moved to the United States to continue his career path.Padilla's reputation caught the attention of Chef Richard Sandoval, who brought Padilla onto his team. They worked together in New York and Denver, and under Sandoval's mentorship, Padilla opened restaurants and trained culinary teams in locations such as Costa Rica, Dubai, Doha, and Chicago. Padilla has continued building his reputation, even winning as a contestant on the cooking show Chopped (in season 54, episode 7, titled "Pig Candy," to be precise).Through working with Sandoval at his hospitality in Denver, Padilla met Mauro Gomez, the Director of Operations at the time, who has also had a culinary career spanning over two decades. Working in global hospitality management at Starwood Hotels and Resorts for eleven years, he also led food and beverage operations for Ritz-Carlton Hotels & Resorts in Doha and Dubai after his time working with Sandoval.In 2021, after years of growing their friendship and partnership, Padilla and Gomez decided to start their own partnership. Together, they founded Balam Culinary Collective, which manages three restaurants in the Freedom Street Social food court in Candelas – Gaucho Parilla, Chulo Taco, and Santa Fe Seaviche and Chippery. Padilla's wife, Norma, is the collective's Head of Finance. Together we have a deep and vulnerable discussion around spiritual seeking, healing, and a new movement in art.  Stephanie shares about her background, growing up in Mexico and how her art practiced transformed when she learned to let go of her anger and find stillness within.  We talked about the power and importance of mediation and how those experience can inform art making.  Stephanie shares a lot about her own evolution and her amazing perspective on being an artist during these challenging and confusing times.   ------------------------------------ Born in Monterrey, Mexico, in 1988, Stephanie Gonzalez's art journey is a fusion of Mexican and American influences. Inspired by her grandfather's admiration for Bob Ross, she began creating at 14. Stephanie's work evolved from landscapes to powerful abstractions, where she embraced intuition over technique.  Stephanie draws from her experiences as a lesbian Mexican woman, channeling her emotions into mixed media works using vintage magazines and discarded materials. After earning a Bachelor's in Interior Design from the Art Institute of Houston, she pursued a Master's in Fine Art, broadening her scope to sculpture and conceptual art. Stephanie's art now graces international collections, including prestigious venues like Starwood Hotels and the CICA Museum in South Korea. Stephanie's work has been shown in museums such as The Masur Museum of Art in Louisiana and the Holocaust Museum in Houston, and she shows her work in various galleries around the U.S. She has received awards from the Glassell School of Art, Brownsville Museum of Fine Art, and Rising Eyes of Texas.  Her recent work explores geometric landscapes, delving into the spiritual and the interconnected. Todd shares an example of a farm in Kentucky called Martin Acres, owned by an ex-slave's descendants and is part of the Kentucky bourbon trail. The farm is now in its fourth generation and is exploring ways to incorporate outdoor hospitality to host family reunions and generate income. Enhancing Well-being Being outside in nature is an important aspect of enhancing our well-being. Todd discusses why the sector's evolution allows people to escape the city and connect with nature, their partners, or their families. Instagram-worthy shots are also a great way to increase the destination's visibility on social media. However, there are some speed bumps to consider, such as labor and workforce issues and environmental concerns on the road to developing as an outdoor destination.
