I am very particular. I'm a big believer that a Tidy House makes for a Tidy Mind. I like things to have their place. I like routine and I hate clutter. Both of my televisions are mounted on the walls with their cables hidden away. I use organisers to secret my stereo cords, and a cluttered benchtop makes me feel so unsettled that I insist on having nothing on it. Nothing. Our microwave is hidden away in a cupboard. Our toaster is hidden in a drawer. And when it comes to electric gadgets, that's as far as I'm prepared to go. An air fryer? You've gotta be kidding me. Despite my wife's protestations, I still refuse to buy an electric kettle. Therefore, for most all of adult life I've made coffee the same way. An Italian stovetop, a little Bialetti number. You put the water in the bottom, coffee in the funnel, put it on the element and wait for the espresso to brew. It spits out the top of the shaft after about 5 minutes and 12 seconds of steady heat. It makes you wait, just a little. But it's worth it: a rich, black espresso, creme on the top. I love the smell, I love the taste, and I love the ritual. I figure my Bialetti brew lands in that perfect middle-ground between freeze-dried instant coffee and the in-home espresso makers which have steadily become ubiquitous in our kitchens. It's coffee for someone who cares about coffee, but doesn't require a gleaming chrome spaceship taking up 4sq metres on the kitchen bench. But am I missing out? Truthfully, I'm starting to second guess myself. Last year, a family member very generously offered to shout us a fancy espresso maker as a wedding gift. I gently demurred at the time. It's not that I think they're totally gimmicky. They're not popcorn-makers or at-home candyfloss machines. But it's funny, my parents got a machine a couple of years ago with a grinder and steamer and pitcher for the milk and Dad thrashes it every morning. My sister has an even fancier new number and brews velvety rich flat whites in those fancy see-through mugs. She says she hasn't bought a coffee since. And I can see how the economics add up. If you replace two cafe-bought coffees a week with a $500 dollar machine, add in the milk and coffee costs, you'd have paid it off by the next Rugby World Cup. To the best of my knowledge, only one other person in my life has consistently made coffee the same way as me. But as my brother sheepishly admitted to me last night, he's just ditched his Italian stovetop for a big, fancy espresso maker he bought in a Briscoes sale. “It's great bro!” he said. “You just push a button.” You just push a button. You see, I think that's it. Sure, maybe it's the cables on the benchtop that puts me off. The sound. The cost of a big fancy coffee machine. Or maybe in a world that's always changing and where nothing is guaranteed, starting every day in exactly the same way with exactly the same ritual and exactly the same brew... maybe starting the day by waiting on a simple process and a humble pot... maybe that's what makes the coffee taste so damn good. Těším se, že si uvařím kávu. Hodlám si celý ten proces pěkně užít. Co na tom je, uvařit si kávu? To přece zvládne i malé dítě. O jaké kávě vůbec vedeme řeč? O jakém vaření? Vždyť dnes už stačí pouze zmáčknout příslušný knoflík automatu a stroj si sám nastaví kelímek a spustí do něj kávu podle vašeho výběru. Nemusíte nic chystat, na nic myslet, jen odeberete kelímek a káva je vaše. Takovou kávu pochopitelně nemyslím. Nemyslím ani tu z domácího kapslového automatu, kdy musíte sami zkontrolovat, jestli je v přístroji voda, vložit kapsli s kávou a přistavit šálek. Pak teprve můžete zmáčknout knoflík a káva vám nateče do šálku. Nemám ani na mysli kávu instantní. Ne, tentokrát se chystám uvařit si kávu v bialetce, starodávném aparátku na výrobu kávy, který kdysi sestrojil italský vynálezce a kávomil pan Bialetti. Jde tak trochu o alchymistickou operaci a to je na tom to dobrodružné a hezké. Do kovové spodní části nádoby napustím vodu. Na ni nasadím kovový trychtýř s filtrem, který naplním mletou kávou a pěkně upěchuju. Kdybych měla mlýnek na kávu, nejraději bych si ji čerstvě umlela, ale nemám, a tak bude muset stačit ta pomletá před časem. Někde do zásuvky ve své mysli, která je označená nápisem, co bych si mohla přát, si zapisuju mlýnek na kávu. Na filtr upevním horní část nádoby, do níž přes kávu ve filtru překypí vroucí voda a káva bude hotová. Ještě se ujistím, že jsem všechny závity pečlivě utáhla a postavím bialetku na sporák. Tak a teď si připravím šálek a pak už jen počkám, až to bude hotové. Nechci nikam odcházet, nechci se pouštět do jiné práce. Mám v úmyslu jen počkat, až se bude voda vařit, až překypí a až mi z konvičky zavoní káva. Nebudu ten čas efektivně využívat k ničemu jinému, jen budu čekat, až káva zabublá a zavoní. Vařím si totiž kávu. Tohle nové potěšení, totiž soustředěně vykonávat nějakou nesložitou a běžnou práci, si dopřávám teprve nedlouho. Zdá se mi vlastně obtížné dělat jen jednu věc. Jsem tak navyklá pracovat na pěti úkolech zároveň, že mi přijde jako plýtvání časem najednou soustředit všechnu svou pozornost jen na jednu věc. Není to bláznivé? Jaké plýtvání časem? Copak vaření kávy není to pravé užívání času, který mám k dispozici?

Renatos Kater Dr. Gru hält sich wacker am Leben, sodass MUMFORD & KAISER Woche für Woche über Katzen mit Krebs reden müssen - they are not fun at partys. The cats. And the humans. Zum Glück bleiben sie unter der Erde (Jane und Renato), also im Aufnahmebunker, unter sich und fragen sich: Warum zur Hölle nach Hünenberg fahren? Hünenberg sehen und sterben? Hüne kai Ahnig? Jane macht halbe Witze, Renato versucht Humortheorie am Beispiel der pfeifenden Bialetti, dabei müssten sie nur die letzte Folge anhören, um zu wissen, was wirklich lustig ist, nämlich: Fatima Moumouni! Kurzes Recap und Debriefing, danach geht's mit Renato in die mongolische Jurte - und um Erdnüsse mit Beinen, Huttu, 12 Stunden Selbstgeisselung auf dem Jakobsweg und darum, dass es doch auf die Grösse ankommt - zumindest beim Wanderschuh. Jane war in Leipzig im Fernsehen, hat die sehr lustige Ana Lucia kennengelernt und in Annecy einen Haufen Trickfilmzeichner*innen nach ihrer Pfeife tanzen lassen. Apropos Pfeifen und Tanzen: Männer an feministischen Streiktagen, heheh. Nein nein, alles gut. Ein Vater muss seinem zehnjährigen Sohn erklären, warum einige Frauen auf der Demo hässig auf Männer sind und dementsprechende Sprüche skandieren - das wird ausgiebig diskutiert und debattiert, aber: Es soll ja nicht immer alles um die Männer gehen. Nicht immer all men, hihi, sondern lieber „Jede_ Frau“. Das Buch von Agota Lavoyer, Jane erzählt von der ausverkauften, grandiosen Lesung im Kaufleuten und dann ist die Folge schon wieder vorbei! Schon das Wetter draußen ist – wie soll ich sagen – nicht so richtig geil, oder? Deshalb ist es aktuell eher nicht zu angenehm, auf dem Roller durch die Gegend zu fahren. Letzte Woche hatte ich Urlaub und eigentlich hatte ich vor, ein paar mehr Meter durch die Lande zu fahren. Das habe ich dann schlussendlich doch nicht gemacht. Weil ich 1. noch an meinem Tourenroller schrauben musste und 2. habe ich lieber die Zeit genutzt, um die Episode 21 zu schneiden!Denn was gibt es Schöneres, wenn der Winter immer näher vor die Garagentür rückt, als jetzt mit einer Tasse Tee – mit oder ohne Rum - auf dem Sofa zu sitzen und während die Heizung bollert oder der Kamin knistert den Geschichten von Thomas zu lauschen?In dieser Episode 21 habe ich mich mit Thomas Galle unterhalten. Thomas ist ein gebürtiger Rheinländer mit Berliner Wutzeln, der mittlerweile in der Schweiz zu Hause ist. Er ist Rollerfahrer, hatte eine Pause zwischendurch und ist seit Mitte der 2000 wieder zur Vespa gekommen. Allerdings nicht zurück zu seinem alten Roller, sondern zu einer neueren GTS. Thomas und ich haben uns kennengelernt, weil er 2020 bei uns an der VC-Hannover-Covid-Fotosafari teilgenommen hat, die wir im Rahmen der Pandemie von Marc Albrecht aus Hamburg adaptieren durften! Warum ich mich nun aber unbedingt mit Thomas unterhalten wollte, ist, dass er seit seiner Zeit in der Schweiz zu einem Art „Pässe-Sammler” geworden ist. Das heißt, er hat schon über 825 Pässe mit seiner GTS im wahrsten Worte erfahren und dieses auch umfangreich dokumentiert.Wir haben uns darüber unterhalten, wie er an seine Touren herangeht. Denn er hat in der Schweiz nicht so viele Urlaubstage - d. h., er muss alles sehr genau und konkret planen. Also - wie macht er das? Dans ce 3ème épisode partons à la rencontre d'Alessio Carbone. Ce danseur vénitien a grandi dans les coulisses de la Fenice, le célèbre Théâtre de la Sérénissime, où ses parents travaillaient. Il a ensuite intégré la prestigieuse école de danse d'un autre théâtre à la renommée internationale : la Scala de Milan... avant de rejoindre un Opéra un peu plus proche de nous, cette fois-ci, celui de Paris ! Il est le 2ème italien à intégrer l'institution, après le célèbre danseur étoile Serge Peretti, figure imposante de l'opéra de Paris depuis les années 20. En 22 ans de carrière, il s'est imposé en tant que premier danseur, a collaboré avec les plus grands chorégraphes contemporains et a même monté une compagnie « Les Italiens de l'Opéra », puisqu'il a très vite été rejoint par de nouvelles recrues à l'accent chantant ! Es gibt diese Espressomaschinen für auf den Herd, Bialetti genannt, die aussehen wie eine Aluminiumkanne, die man zusammenschraubt. Zur Kaffeezubereitung füllt man im unteren Teil Wasser ein, im oberen das Kaffeepulver und schraubt die beiden Teile dann zusammen und stellt die Kanne auf die heisse Herdplatte. Dann kocht das Wasser, wird durch diesen erhöhten Druck durch den Filter und das Kaffeepulver in den obersten Teil der Kanne gedrückt und so entsteht der Kaffee. Also viel Hitze und Druck sind nötig. In unserem Alltag gibt es zT auch solche Situationen: hitzige und Druck-reiche und manchmal für unser Empfinden dadurch sehr unangenehm. Aber wenn man dem Druck standhält, kann dadurch etwas Gutes – analog zum Kaffee – entstehen. Nimmt man nämlich die Kanne zu früh von der heissen Platte, hat sich nur das Wasser erhitzt, aber sonst geschah nichts. Traue also auch spannungsreichen und hitzigen Momenten in Deinem Alltag, dass sie zu etwas Gutem führen können. Aber Achtung: bleib auch nicht unnötig lange in so einem Zustand! Mais un récent rapport de la Commission européenne sur le sujet pourrait changer la donne pour leur avenir.En effet, pour les auteurs de ce rapport, ces techniques (dont la plus célèbre est CRISPR-Cas9, qui a valu à la Française Emmanuelle Charpentier le prix Nobel de chimie en 2020) ont certaines vertus. Selon l’article, un OGM a pour objectif “d’altérer le génome d'un être vivant en y insérant un ADN étranger” (ce que l’on nomme la transgenèse) alors qu’un NTG “cherche à favoriser l'apparition d'un caractère en modifiant un gène déjà présent dans le génome” (ce que l’on nomme mutagenèse). Mokka Pot, Herdkanne, Bialetti, Caffeteria, Espressokanne, die Namen für das kleine Kännchen, das kurzen starken Kaffee produziert, sind vielfältig. So ziemlich jeder kennt sie und hat sie auch schon mal benutzt. Der Mokka Pot ist wohl einer der am weitesten verbreiteten Zubereiter – mindestens in Europa.   Logisch, er ist ein kleines, robustes Gerät, mit dem man ganz leicht guten, starken Kaffee machen kann. Aber wie so oft liegt auch hier der Teufel im Detail. The initial patent dates from the 1830s in Berlin, but the first commercially available siphon pot was designed by Marie Fanny Amelne Massot, and it hit the market in the 1840s. By 1910, the pot made its way to America and was patented by two Massachusetts sisters, Bridges and Sutton. This Dutch oven is, in fact, made in the Netherlands. Combekk's 4-liter pot is crafted from recycled iron—railroad track, mostly—and has a thermometer built into its sidewall. Set the whole thing in the campfire coals; the 6-mm-thick bottom keeps heat distributed evenly.
