Get2droot of living a healthy lifestyle by eating more plants, moving your body, stressing less, and loving more.” Link to the recipe: http://get2droothealthandwellness.com/2022/10/26/creamy-cauliflower-cheese-ball-vegan-nut-oil-free/ Creamy Cauliflower Cheese Ball Cauliflower Cheese 1 cup Raw Sunflower Seeds 2 cups Frozen Cauliflower 4 Tbsp Lemon Juice 3 Tbsp Apple Cider Vinegar (with the Mother) (use 2 Tbsp if you prefer less tangy) 1/2 tsp Onion Powder, unsalted 2 Tbsp Miso Paste (can be purchased from any local Asian market) 3 Tbsp Tapioca Starch 2 ½ tsp Hickory Smoked Torula Yeast (or Nutritional Yeast) ½ tsp Lactic Acid ½ cup Hot Water Agar Agar Thickner 3/4 cup Water 1 1/2 Tbsp Agar Agar Powder Garnish Smoked Paprika Dried Parsley Dash "Everything But Salt" INSTRUCTIONS Place a steamer basket in a pan with water. Add the Sunflower Seeds and Cauliflower to the steamer basket. Cover the pan. Bring the water to a boil. Steam for 8 minutes. While the veggies and sunflower seeds are steaming, add the remaining cheese spices into a blender. Then add the steamed veggies and seeds along with 1/2 cup of hot water from the pan to the blender. Blend until smooth. In a saucepan, add 3/4 cup of water and Agar Agar. Stir until well combined. Bring contents to a boil. Cook for 4-6 minutes, continually stirring with a spatula. The Agar will thicken. Continue to stir until it starts to form into a thick jelly-like consistency. Immediately add to the blender with the cheese mixture and blend until completely smooth. Transfer the cheese contents into two containers lined with "cling wrap". Place the containers in the fridge, uncovered for at least 1 -2 hours. The longer the cheese chill the firmer it gets. Invert the firm cheese ball onto a plate. Garnish with spices and herbs. I prefer to sprinkle and press the spices and herbs into the cheese ball with my hand. Another option would be to sprinkle the herbs and spices onto a plate and then roll the cheese ball gently until coated as desired. Place onto a plate and serve. Enjoy! Note: The cheese ball can be stored covered in the fridge for up to 7-10 days.

Linguine al Limone with Cashew Crema 4-6 Servings Ingredients- 2 Lemons- Zest and Juice 1 lb Organic Linguine (or other GF Pasta) Kosher Salt 1 cup cashews, soaked for 1 hour 1-2 Tbs. Truffle Oil (optional) 3 Tbs. Olive Oil 1 cup frozen petite peas- run under warm water to defrost. 2 Tbs. Nutritional Yeast ¼ cup fresh chopped parsley, plus 1 Tbs. 2 cups pasta water Salt and Pepper Preparation 1- Using a vegetable peeler, remove three 2"-long strips of lemon zest. Thinly slice each strip lengthwise into thin strands; set aside for serving. Grate the rest of the zest and put into small bowl. Cut lemons in half and juice. You need 1/3 cup of lemon juice (you can add more lemon juice at the end of recipe if desired). Put in small bowl and set aside. 2- Cook pasta in large pot of boiling water with plenty of salt. (Add enough salt to water to taste like the sea.) Cook until al dente, don't over cook because pasta will finish cooking in the sauce. 3- Meanwhile, drain the cashews. Put into mini food processor or blender, add 1 cup of water, and puree until very smooth and creamy. 4- Using a large pot, sauté the lemon zest in 3 Tbs. of olive oil for 1 minute. Add the cashew crema and 1 cup of pasta water to the pot, and mix well. Cook over medium heat, whisking often, for about 2 minutes. Lower heat and add another cup of pasta water. 5- Using tongs, transfer linguine to the pot with sauce . Toss well. Add the nutritional yeast, the peas, the chopped parsley, and the reserved lemon juice. Toss again, being careful not to squish the peas. If sauce is too thick, add more pasta water, 1 Tbs at a time, until desired consistency is reached. (Cream sauces thicken as they cool, so save some of the pasta water to add if needed) 6- Season with salt and pepper. 7- Transfer pasta to large pasta bowl. Drizzle with truffle oil. Add reserved lemon zest strips and garnish with chopped parsley.

In this podcast, we're going to talk about why exercise keeps your brain from shrinking as you age. A randomized controlled trial on 120 older adults found that there's an increase in the volume of the front part of the hippocampus when doing aerobic exercise. This is the part of the brain that controls spatial memory—your ability to remember locations and understand where you are in relation to other locations. The hippocampus is one of the only parts of the brain that can regenerate. Exercise also increases blood flow to the hippocampus. Exercise also caused an increase in BDNF (brain-derived neurotrophic factor) in the hippocampus. This helps regrow the brain. What causes the brain to shrink? • Aging • Stress • High blood sugar What helps you avoid brain shrinkage? • Exercise • Intermittent fasting • Vitamin B1 In summary, exercise, intermittent fasting, and maintaining healthy nutrient levels are some of the best things you can do to help avoid brain shrinkage as you age. In this podcast, Dr. Berg talks about the 7 benefits of nutritional yeast. It is not recommended to consume nutritional yeast that is enriched or fortified. 1. B-Vitamins – There is a lot of benefits by taking the B vitamins especially in their natural form. B1 – Stress and Energy B2 and B3 – Good for the skin, digestion, hair, nails B6 – Essential for mitochondria to make energy. 2. Minerals – Potassium, Magnesium, Calcium 3. Trace Minerals – Chromium, Selenium, Zinc. One of its purposes is to help as a cofactor in enzymes. It is also good for hair, nails, skin, muscle, and anything with protein 4. Amino Acids 5. Is there any way of fixing this, I guess just mobility and strengthening work? Brewers yeast is the by-product of making beer. It's a bit bitter. Nutritional yeast does not have a bitter taste. Nutritional yeast is actually made with molasses, which is a by-product of sugar cane. Molasses is rich in nutrients. Nutritional yeast makes 18 amino acids. It's a complete protein. Nutritional yeast also contains 15 minerals and trace minerals, such as: • Selenium • Chromium • Manganese • Copper • Vanadium • Molybdenum Nutritional yeast is rich in glutathione, which is one of the most powerful antioxidants for your liver. It has beta 1-3 glucans, which can help decrease free radicals and stimulate certain white blood cells. Nutritional yeast also has glucose tolerance factors that help stabilize your blood sugar. Make sure when you buy nutritional yeast supplements, it is non-fortified nutritional yeast. You don't want it to be enriched with synthetic vitamins. For this podcast episode, here is a repeat of our July, 2018 visit with Brian Hunt, founder of Moonlight Brewing Co. Brian Hunt, Moonlight Brewing founder and brewmaster and Shannon Thomas, tasting room and social media manager, are in today with Herlinda Heras and Steve Jaxon. Mark Carpenter is away this week. Brian Hunt started Moonlight Brewing in 1992. He jokes that he needed to support his beer habit and he actually stared home brewing in his bedroom when he was in high school. He had some German friends who helped him too. He graduated from UC Davis brew school in 1980, where Michael Lewis was his brewing instructor. There were 43 brewing companies in the United States then. There are more than that number now in just Sonoma County. He worked for a while at Schlitz in Milwaukee. The guy who had bought Schlitz said, “It don’t matter what I put in the can as long as it has Schlitz on the label.” He was only interested in money and he was fired. Then they hired a brew master and they decided to make good beer again. But the brand was in decline and when they closed Milwaukee Stroh’s bought them. Then Pabst bought them. Moonlight Brewing will celebrate their 26th anniversary at an event in September 2018. They are the closest brewery to Coffey Park in Santa Rosa, which burned in the October 2017 fires. They have a new taproom that holds almost 50 people. They built a bar out of reclaimed redwood, furniture from Bergamot Alley and old school chairs, making a very comfortable place. Moonlight Brewing is known for a beer they produce called Death and Taxes. They are snacking on some popcorn called Hippie Dust, which has Nutritional Yeast on it, which is tasty and very nutritious. Herlinda Heras tells about how spent grain from brewing is being used by bakers, such as one in Forestville, and that bread is available on Saturdays. They have a taproom open Thursday and Friday at 4 and Saturday and Sunday at 1. It’s the third location that they have had. They also make Bloody Mary popcorn and Maple Syrup popcorn. Their beer called Death and Taxes is one of the first beers he made at Moonlight. It’s a San Francisco style black lager. He has found that in Europe, people are used to there being local versions of beer named for cities or regions, while here, people act surprised at the idea. Shannon says everyone remembers where they were when they first taste Death and Taxes. Brian says that because it’s clean and crisp, it’s great for California. Brian describes the Lagunitas Beer Circus in London from his point of view. He gets to serve beer to people who like beer, but there are trapeze artists, burlesque, bikes, and a crazy goofy atmosphere. “See things you can’t unsee” is their slogan. As for his hop philosophy, he also likes to make beer without hops. He says hops are just a spice, but that you can put other things in beer to flavor it. He just really loves a drinkable beer.

This week Suzie was kind enough to share with you her family’s journey to health after a life-threatening heart condition in her newborn daughter, battling Postpartum PTSD, an endocrine disorder diagnosis for her young son, a celiac diagnosis for her young daughter with Down Syndrome, and a life-threatening blood pressure scare for her husband. All in a very short time span. Wow. You want to hear how this fearless and determined mother turned it all around holistically for herself, and her entire family, without breaking the bank or budget. Truly inspiring! * * * About Suzie Suzie is a vegan health coach and blogger as well as a volunteer Crisis Counselor with Crisis Text Line. She owns a gluten free/vegan bakery just outside of Lansing, Michigan – Carly Cakes – and they operate under a mission to employ adults with developmental disabilities and pay them a living wage. * * * What Inspired My Journey? It was inspired by my youngest, who has Celiac. So, she also has Down's Syndrome, and it was kind of wanting to find a way that she could be included in birthday treats and celebrations. Family Health Issues Youngest daughter born with Down Syndrome and a life-threatening heart condition that required open heart surgery at 4 months old. After youngest was born Suzie experienced Postpartum PTSD and a Rheumatoid Arthritis flare. Son diagnosed with endocrine disorder. Daughter diagnosed with Celiac Disease. Husband hospitalized for extremely high blood pressure. What Changes Did Suzie Make for Her Family? Before husband even got home from the hospital, I cleared out all the alcohol and high-salt foods from our house. But the doctors gave very little other direction for us to follow. But I knew I needed to started cooking more. And I didn’t totally understand what the best options for us were then, nutritionally, but looking back, I see that I still established that routine of daily cooking and meal prep, and we were able to cut-out fast food and restaurant meals. I started doing daily yoga, first at home using Yoga by Adrienne free videos on YouTube, and then once I was comfortable enough, I found a studio and a gym. I also began heavily relying on Buddhist philosophy to unscramble the PTSD, which led me to a new understanding about the nature of suffering. So, the rest of the journey grew from my desire to reduce the pervasive suffering that I was putting out into the world and to free my mind from it. The day I woke up and began a different life for our family, I didn’t wake up with any less depression or anxiety than I had the day before. I didn’t wake up with less swollen, or achy joints than I had the day before. I didn’t wake up with more money, or less on my plate. We were all extremely sick. There was nothing good that changed to lead us in that direction. Nothing about our situation really changed, but the way that I looked at it did. It's A Process It really did come down to just baby steps. Like you know how everybody is into Marie Kondo and “The Life Changing Magic of Tidying Up?” Well, I started “Marie Kondo-ing” my brain. All our routines, everything that we ate, I would examine everything we did objectively. So, my focus was progress not perfection, and those little daily choices led us to the point where we could start making big changes overall. What Are Some Of The Changes Suzie Made In the Family Diet? Getting rid of soda was a huge one for me. I was a massive diet Coke drinker. There was a day that I drank 24 cans of Diet Coke. I knew that that was one of the ones that had to go right away. And then we started making the shift to sustainable living, and it was that environmental avenue that lead me to Veganism. I watched a few vegan documentaries on Netflix, and from the reduce the suffering angle, I knew 100 percent that it was the next big step we needed to make. There are unhealthy vegans, and I didn't want to end up in just a new way to be unhealthy. So, I really started researching the vegan diet for evidence-based improvements. Before husband even got home from the hospital, I cleared out all the alcohol and high-salt foods from our house. But the doctors gave very little other direction for us to follow. But I knew I needed to started cooking more. And I didn’t totally understand what the best options for us were then, nutritionally, but looking back, I see that I still established that routine of daily cooking and meal prep, and we were able to cut-out fast food and restaurant meals. I started doing daily yoga, first at home using Yoga by Adrienne free videos on YouTube, and then once I was comfortable enough, I found a studio and a gym. I also began heavily relying on Buddhist philosophy to unscramble the PTSD, which led me to a new understanding about the nature of suffering. So, the rest of the journey grew from my desire to reduce the pervasive suffering that I was putting out into the world and to free my mind from it. The day I woke up and began a different life for our family, I didn’t wake up with any less depression or anxiety than I had the day before. I didn’t wake up with less swollen, or achy joints than I had the day before. I didn’t wake up with more money, or less on my plate. We were all extremely sick. There was nothing good that changed to lead us in that direction. Nothing about our situation really changed, but the way that I looked at it did. It's A Process It really did come down to just baby steps. Like you know how everybody is into Marie Kondo and “The Life Changing Magic of Tidying Up?” Well, I started “Marie Kondo-ing” my brain. All our routines, everything that we ate, I would examine everything we did objectively. So, my focus was progress not perfection, and those little daily choices led us to the point where we could start making big changes overall. What Are Some Of The Changes Suzie Made In the Family Diet? Getting rid of soda was a huge one for me. I was a massive diet Coke drinker. There was a day that I drank 24 cans of Diet Coke. I knew that that was one of the ones that had to go right away. And then we started making the shift to sustainable living, and it was that environmental avenue that lead me to Veganism. I watched a few vegan documentaries on Netflix, and from the reduce the suffering angle, I knew 100 percent that it was the next big step we needed to make. There are unhealthy vegans, and I didn't want to end up in just a new way to be unhealthy. So, I really started researching the vegan diet for evidence-based improvements. It was inspired by my youngest, who has Celiac. So, she also has Down's Syndrome, and it was kind of wanting to find a way that she could be included in birthday treats and celebrations. Family Health Issues Youngest daughter born with Down Syndrome and a life-threatening heart condition that required open heart surgery at 4 months old. After youngest was born Suzie experienced Postpartum PTSD and a Rheumatoid Arthritis flare. Son diagnosed with endocrine disorder. Daughter diagnosed with Celiac Disease. Husband hospitalized for extremely high blood pressure. What Changes Did Suzie Make for Her Family? Before husband even got home from the hospital, I cleared out all the alcohol and high-salt foods from our house. But the doctors gave very little other direction for us to follow. But I knew I needed to started cooking more. And I didn’t totally understand what the best options for us were then, nutritionally, but looking back, I see that I still established that routine of daily cooking and meal prep, and we were able to cut-out fast food and restaurant meals. I started doing daily yoga, first at home using Yoga by Adrienne free videos on YouTube, and then once I was comfortable enough, I found a studio and a gym. I also began heavily relying on Buddhist philosophy to unscramble the PTSD, which led me to a new understanding about the nature of suffering. So, the rest of the journey grew from my desire to reduce the pervasive suffering that I was putting out into the world and to free my mind from it. The day I woke up and began a different life for our family, I didn’t wake up with any less depression or anxiety than I had the day before. I didn’t wake up with less swollen, or achy joints than I had the day before. I didn’t wake up with more money, or less on my plate. We were all extremely sick. There was nothing good that changed to lead us in that direction. Nothing about our situation really changed, but the way that I looked at it did. It's A Process It really did come down to just baby steps. Like you know how everybody is into Marie Kondo and “The Life Changing Magic of Tidying Up?” Well, I started “Marie Kondo-ing” my brain. All our routines, everything that we ate, I would examine everything we did objectively. So, my focus was progress not perfection, and those little daily choices led us to the point where we could start making big changes overall. What Are Some Of The Changes Suzie Made In the Family Diet? Getting rid of soda was a huge one for me. I was a massive diet Coke drinker. There was a day that I drank 24 cans of Diet Coke. I knew that that was one of the ones that had to go right away. And then we started making the shift to sustainable living, and it was that environmental avenue that lead me to Veganism. I watched a few vegan documentaries on Netflix, and from the reduce the suffering angle, I knew 100 percent that it was the next big step we needed to make. There are unhealthy vegans, and I didn't want to end up in just a new way to be unhealthy. So, I really started researching the vegan diet for evidence-based improvements. And through that, I found the Whole Foods Plant Based lifestyle. Eating Whole Foods Plant Based has been linked to a number of health benefits, including reducing and even reversing heart disease, certain cancers, obesity, diabetes and cognitive decline. We do supplement our B-vitamins, but we also use a lot of a Nutritional Yeast so we get some in through our food. I also make sure the kids get plenty of fats for their developing brains, but they get it from things like avocado, or flax milk, so that they don’t have that saturated fat and hormones that dairy milk has. Flax Milk actually is a better source of calcium, protein and omega-3 than dairy. Cutting out processed foods also made it easier for our whole household to keep gluten at bay for my Celiac daughter, drastically cutting her risk of cross-contamination, improved her health dramatically. Her skin got better, her stomach bloat went away, and leading me to find that gluten was also making my Rheumatoid Arthritis worse, it was contributing to inflammation. I started a daily routine of celery juice, amla, turmeric and ginger, that I toss everything in all together and drink it every morning, and I have never felt better. What Was The Biggest Obstacle I Faced On My Journey? Everybody always asks me if it's about us getting protein. Broccoli has a higher protein per calorie ratio than steak. Obviously, you have to eat a lot of broccoli to get that, but it still has a higher protein per calorie ratio than steak. And when you're eating nothing but a lot of different types of veggies and a lot of different types of nuts and grains, it's really easy to make it up. It was actually a lot easier getting the kids to adopt the changes than I expected it to be. My son was an incredibly picky eater. But they adapted quite quickly because we created a whole routine around it, and they could help. Even the youngest one could still find something to do, whether it was just helping prepare the salads. If there's no junk to really choose from in the cupboards, they aren't going to pick it. It's just not there. If they have a choice between, "Okay, I have an apple or a banana," they still feel like they're making a decision. Their palates then changed over time, and now they prefer healthier foods, saying other foods, processed foods, when we go to a birthday or party or something, I do let them have whatever cupcakes are served, but they'll usually opt not to, saying that it's too sweet. What About The Cost? Everyone thinks that it is so much more expensive to eat this way, but really, it's only buying the Organic/Gluten Free processed foods that carry that real heavy price tag. I feed our family of 6 a gluten free, vegan diet full of color and vitamins, 3 meals a day for about 100.00 a week. And we were probably spending that on Starbucks, soda, beer and wine alone before the change. The only real challenge is that it does require a lot of prep, whether meal planning, or prepping ahead of time My Three Biggest Tips You don’t have to make a sudden shift. You don’t need to throw out everything processed in one go. Just maybe the next time you go to pick up burger meat, don’t, and grill a portobello cap instead and see how you like it. Instead of milk, try a plant-based alternative and then go from there. I would also say turmeric and ginger. Add them to everything. And drink a ton of water. I drink over a gallon of water a day. I even have one sitting right next to me right now. And then, the very last one would be to Marie Kondo your brain. Don’t mindlessly snack, pause and reflect before you eat, consider what that food is bringing into your life. If you don’t need what it has to offer, if you don't want that contributing to your overall wellbeing, then just thank it, and let it go. Suzie’s Advice To Others I'd want them to know that there is no finish line on the path to wellness, the continued journey is the goal. So, you can't fail at this. Obviously, someone could say, if you aren’t their perceived picture of healthy, then you failed, but you have to be able to give yourself some grace. No one starts their journey to wellness in the same place. We all have different experiences that have led us to where we are and have led us to different decisions. We were exposed to different food, and to different people. So, if you take a look at me, and you look at Simone Biles, I'm not going to come close to *that* image of health ever in my life. But for where I started just a few short years ago, and for where I am now, the amount of change I have adapted to, I am doing quite well, substantially better than where I was when I started. Every day that you wake up and commit yourselves to being on a journey, you are changing. You are becoming. And if things are in a continual state of change, motion, and becoming, then there is never really an end. Every day presents a new opportunity to get better, to learn something new, to show compassion to ourselves, others, animals and our planet. He also talks about what's generally happening during certain parts of the cycle and if the cravings at a certain point what you would need. Day 14 is where estrogen is spiked. At this time, you would want to support more cruciferous vegetables or iodine (sea kelp). Most women crave just before their period called PMS (pre-menstrual syndrome) and other emotional issues like moodiness, etc. In this phase, they need more B-vitamins (nutritional yeast), vitamin D and vitamin C. B1 is the most important. But make sure you get a food-based vitamin C. During the cycle itself, if the cramps are very strong - get calcium orotate. Just after your cycle, you need more iron, which red meat will provide. Kale and spinach will help. If you have gone through menopause, then you need more vitamin E because the pituitary gland uses this vitamin for the production of sex hormones. raw sunflower seeds, almonds, leafy greens all provide a good amount of vitamin E. If you are low in estrogen, use boron (trace mineral) to increase estrogen. Brian Hunt, Moonlight Brewing founder and brewmaster and Shannon Thomas, tasting room and social media manager, are in today with Herlinda Heras and Steve Jaxon. Mark Carpenter is away this week. Brian Hunt started Moonlight Brewing in 1992. He jokes that he needed to support his beer habit and he actually stared home brewing in his bedroom when he was in high school. He had some German friends who helped him too. He graduated from UC Davis brew school in 1980, where Michael Lewis was his brewing instructor. There were 43 brewing companies in the United States then. There are more than that number now in just Sonoma County. He worked for a while at Schlitz in Milwaukee. The guy who had bought Schlitz said, “It don’t matter what I put in the can as long as it has Schlitz on the label.” He was only interested in money and he was fired. Then they hired a brew master and they decided to make good beer again. But the brand was in decline and when they closed Milwaukee Stroh’s bought them. Then Pabst bought them. Moonlight Brewing will celebrate their 26th anniversary at an event in September. They are the closest brewery to Coffey Park in Santa Rosa, which burned in the October 2017 fires. They have a new taproom that holds almost 50 people. They built a bar out of reclaimed redwood, furniture from Bergamot Alley and old school chairs, making a very comfortable place. Moonlight Brewing is known for a beer they produce called Death and Taxes. They are snacking on some popcorn called Hippie Dust, which has Nutritional Yeast on it, which is tasty and very nutritious. Herlinda Heras tells about how spent grain from brewing is being used by bakers, such as one in Forestville, and that bread is available on Saturdays. They have a taproom open Thursday and Friday at 4 and Saturday and Sunday at 1. It’s the third location that they have had. They also make Bloody Mary popcorn and Maple Syrup popcorn. Their beer called Death and Taxes is one of the first beers he made at Moonlight. It’s a San Francisco style black lager. He has found that in Europe, people are used to there being local versions of beer named for cities or regions, while here, people act surprised at the idea. Shannon says everyone remembers where they were when they first taste Death and Taxes. Brian says that because it’s clean and crisp, it’s great for California. Brian describes the Lagunitas Beer Circus in London from his point of view. He gets to serve beer to people who like beer, but there are trapeze artists, burlesque, bikes, and a crazy goofy atmosphere. “See things you can’t unsee” is their slogan. As for his hop philosophy, he also likes to make beer without hops. He says it’s just a spice, but that you can put other things in it to flavor it. He just really loves a drinkable beer.

Att förföra någon med mat kan vara lika svårt som att fånga en blåmes med händerna, men som tur är har Los Vegos både dejtmatstrategier och flirtknep i rockärmen. Recept: Therese Svensson Gruyèregratinerad fänkålsgratäng Vegetariskt, laktosfritt En fin tradition på ens födelsedag är att man får bestämma precis vad man vill till middag. När jag var liten brukade det vara köttfondue och mammas supergoda potatisgratäng. När jag började gymnasiet blev önskerätten grönsakstempura, när jag var 20+ blev det kaviar och champagne, och nuförtiden vill jag mest ha pizza och hångel. Men kärleken i en klassisk potatisgratäng är svår att motstå. Här gör jag den med fänkål och palsternacka istället för potatis, det blir både godare och ger en lättare mättnad. Kom ihåg att vi inte ska få paltkoma av den här middagen vi ska bli skönt mätta med bra energi över till senare aktiviteter (höhö). Vegan: Använd näringsjästflingor (även kallat Bjäst eller Nutritional Yeast) istället för ost för en supergod växtbaserad ostsmak. Hittas på hälsokostbutiker, bra mataffärer eller sök efter det online för enkel beställning med hemfrakt. Glutenfritt: Använd glutenfritt ströbröd eller skippa det helt. Tips: Näringsjäst! En 70-tals grej jag nästan hade glömt bort men som är poppis hos framförallt amerikanska veganer eftersom näringsjästflingorna smakar nötig umami på ett naturligt sätt. Det ger en fin smakskjuts på samma sätt som till exempel sojasås eller fisksås men näringsjästen är alltså helt växtbaserat och glutenfritt. Näringsjäst är torkad inaktiv jäst (man kan alltså inte baka på den) som är superrik på B-vitaminer. Du hittar fler recept med näringsjäst om du söker på det på min matblogg Svenssons mat. Ingredienser: 1 liten ugnsform eller två portionsformar En bit Gruyère eller annan god ost till exempel Grevéost, Pecorino eller Vesterhavsost 1 fänkål 1 gul lök eller 3 schalottenlök Ca 2 palsternackor Ca 2 burkar havrefraiche alternativt matlagningsgrädde Färsk eller torkad rosmarin Salt, nymald peppar Olivolja, mjölkfritt smör Ströbröd eller panko Gör så här: Skiva fänkål, lök och palsternacka tunt och hutta ner i en bunke. Tillsätt havrefraiche, 1 dl riven ost, salt och ca 1 tsk hackad rosmarin. Blanda runt så allt täcks av vit gooey sås tillsätt eventuellt mer fraiche om det inte täcker ordentligt. Häll ned i smörade portionsformar eller en vanlig ugnsform. Strö eventuellt över ett lager ströbröd så du får en krispig yta. Skjutsa in i mitten av ugnen på 225 grader ca 20 minuter för småformar och längre tid för en stor. Stick en kniv i formen och känn om det blivit mjukt, ta då ut formarna, strö över ett lager riven ost, skjutsa in i ugnen igen och grädda på övervärme ca 10 minuter tills osten smält och är knäckigt gyllenbrun. Servera med några färska blad rosmarin på toppen och ringla eventuellt över lite olivolja för extra fett och glans. Fransk-ish rödvinsgryta med morot, smålök, champinjon och timjan Vegan, glutenfritt, laktosfritt, mjölkfritt Finns det någon man förknippar med just fransk mat och rödvinsgrytor så är det ju kanske Julia Child, världens bästa dam som populariserade det franska köket i framförallt USA. Julias Boeuf Bourgignon (som jag knappt kan uttala) puttrar på i timmar med högrev och förbrynta rotfrukter. Vad jag kommer göra dock är att bryna grönsakerna i grytan, sen hutta över vätska och låta allt puttra ihop tillsammans med lite örter. Jag må bryta tusen grytregler här nu, men i och med att vi INTE har något högrev i sikte i den här grytan räcker det att puttra grytan på låg värme i cirka 20-30 minuter, och jag behåller hela tiden grönsakerna i grytan för jag vill ha ut så mycket smak som möjligt. Så länge vi har pundat in all den goda rödvinssmaken i grönsakerna utan att göra dem FÖR mushy är vi nöjda. Är du mer nyfiken på Julia Child finns det roliga klipp från hennes matlagningsprogram på Youtube, och i bokhandeln kan du hitta hennes kokboksbibel Det goda franska köket med förord av bästa Lotta Lundgren. Tips: Vegokött? Jag brukar inte ha med så mycket vegokött i recept för det brukar man ju kunna klura ut på egen hand hur man använder vegoschnitzel istället för köttschnitzel, vegokorv istället för köttkorv, vegobullar istället för köttbullar ... ja, ni hajar, det är inte raketforskning. MEN om ni vill åt en extra köttig känsla här i rödvinsgrytan så släng gärna i ert favoritvegokött. Min favorit är sojakött som även brukar vara naturligt glutenfritt. Och om du inte äter gluten se till att läsa innehållsförteckningen då mycket vegokött görs på just gluten och vete. Finns i frysdisken i din matbutik från olika märken. Ingredienser: 1 gryta ca 4 portioner En näve smålök ca 7-8 st Två stora nävar små champinjoner 2 morötter 1 msk tomatpuré 1 msk maizena Ca 1 flaska rödvin eller 2 flaskor rött matlagningsvin (det finns numera även rött alkoholfritt vin i de flesta matbutiker) Tillsatsfri grönsaksbuljong eller grönsaksfond Färsk timjan Salt, nymald peppar Raps- eller olivolja, mjölkfritt smör Gör så här: Fräs hel och skalad smålök, hel svamp och kvartade morötter i en klick olja och smör i en gryta tills de blivit brynta och fått fin gyllene yta. Släng i en matsked tomatpuré och pudra över 1 msk maizena. Rör om. Detta gör så att såsen blir tjockare. Häll på rödvin och buljong så det precis täcker och hutta ned färska timjankvistar. Låt puttra på låg värme utan lock i ca 20 minuter eller tills morötterna är mjuka men inte sladdriga. Rör om då och då och fyll på med mer vin om det dunstar bort för mycket vätska. Smaka av med salt och nymald peppar. Servering: Ät med fänkålsgratängen eller med kokt delikatesspotatis. Rotfruktschips med kronärtskockssdipp Vegetariskt, glutenfritt, laktosfritt En grej som alltid dyker upp vid viktiga snackshelger i USA är The Artichoke Dip. Det vill säga en röra gjord på mixade kronärtskockor blandat med lite annat gott som exempelvis spenat och ost. En sån dip gör vi nu och äter med chips! Det är godast med vanliga lantchips eller rotfruktschips eller så gör du egna rotfruktschips! Det är lite tidskrävande och fan inte värt besväret MEN roligt om du gillar att pilla i köket och har massa rotfrukter eller rotfruktsskal över. kolla in recept i tipsrutan! Vill du hellre fritera dina egna chips snarare än att ugnsbaka dem, rekommenderar jag varmt boken My Fryday: 56 friterade favoriter huvudrätter, smårätter, snacks och desserter av Ylva Porsklev. Ingredienser: 2 portioner 1 burk kronärtskockor ½ - 1 röd eller gul chili Ca 1 tsk rivet citronskal 1 burk havrefraiche (växtbaserad creme fraiche) Ca 1 dl riven Parmesan, Pecorino, Västerbotten eller din lagrade favoritost En nypa salt Till servering: Lantchips eller rotfruktschips Gör så här: Häll av vätskan från kronärtskockorna och torka dem hyfsat torra (så att du inte får en vattnig dipp). Mixa kronärtskocksbottnar till en smet med en stavmixer. Tillsätt skivad chili, rivet citronskal, havrefraiche och riven parmesan och smaka av med salt men inte FÖR mycket salt eftersom chipsen är salta också. Ät med chips. Klart. Tips: Egna rotfruktschips i ugn. 1. Hyvla, skär eller mandolina rotfrukter som exempelvis morot, palsternacka och rödbeta tunt. 2. Blanda runt med salt och lite rapsolja i en bunke. 3. Lägg ut i ett lager på en bakplåtspappersklädd plåt och skjutsa in i mitten av ugnen ca 150 grader i två jättelångsamma timmar. 4. Kolla chipsen då och då under tiden och vänd dem eventuellt. Ta ut och låt svalna på galler. ÄT! Tips: Ostchips. Du kan också gör ostchips! Ett måste för alla ostheads! Gör så här: 1. Lägg då den rivna osten i en större hög när du ska grädda det i ugnen, och HÄR KOMMER TRICKET, när du tar ut plåten från ugnen, lägger du försiktigt den smälta osten över en uppochnedvänd skål. Sen låter du bara kalaset svalna, tar av osten och häpp så har du en ostskål! Sen är det bara att fylla ostskålen med allehanda gott som tacofyllning eller sallad och så kan du instagramma din cheese bowl och se munnar vattnas.
