They were given that great commission. The great commission didn't start in Matthew 28. It started with Abraham in Genesis 12 —the first three verses there —Abraham, chosen by God to raise up a nation who would then be God's priests to the world so that they would be a blessing to all of the nations. They had a unique role in the great monotheistic religion. The Jews were supposed to reflect morality to the world. Israel was to witness to the name of God. When they talked about the name of God and witnessing to God's name, that does not mean that they were to let everybody know what they called God, "Yahweh." Their goal wasn't to cover the countryside with evangelists who just let everybody know what the right word for God was. Aujourd'hui, le jeune Grégoire Seguin nous prépare des poireaux sauce hollandaise, recette tirée de sa toute première carte qu'il signe jusqu'à début décembre pour Dame Jane Résidence, un restaurant à Belleville où les chef.fe.s changent régulièrement. Grégoire a commencé la cuisine à 15 ans et travaillé dans de nombreux palaces, avant d'exercer son métier dans des établissements plus petits et plus décontractés, comme Tontine ou Ibrik. Itinérant depuis peu, il commence à imaginer les contours de sa propre cuisine, des plats réconfortants, un peu rétro et surtout très très gourmands. Les poireaux à la hollandaise Pour 4 personnes- 760 g de poireaux crayon - 35 g de vinaigre Xérès- 15 g d'eau- Quelques tours de moulin à poivre- 3 jaunes d'œufs- 200 g de beurre- 200 g d'huile de friture- 4 g de sel fin- 12 g de noisettes- 4 g de fleur de sel Epluchez les poireaux et gardez les parties vertes de côté. Faites bouillir dans une grande casserole d'eau salée pendant environ 7-8 min. Glacez les poireaux dans de l'eau froide. Taillez des tronçons de 5 cm. Faites réduire de moitié l'eau, le vinaigre et le poivre dans une casserole à feu moyen.Hors du feu, ajoutez les jaunes d'œuf et battez avec un fouet. Placez sur feu doux pendant 1 min. Taillez le beurre en petits cubes. Une fois que la sauce est bien mousseuse, ajoutez le beurre en plusieurs fois. Mélangez à nouveau au fouet.Taillez les verts de poireaux préalablement réservés en fins bâtonnets. Faites chauffer l'huile à 120°C et faites frire quelques minutes. Sortez de l'huile, salez immédiatement au sel fin. Faites torréfier les noisettes au four à 180°C environ 10-15 min et concassez grossièrement.Servir les poireaux tièdes avec dessus, dans l'ordre : la hollandaise, les noisettes et les poireaux frits. Celine Pham puise, depuis toujours, dans les souvenirs de goûts en famille pour écrire sa cuisine, elle a d’ailleurs nommé sa boîte « Phamily », et il faut dire que chez les Pham, manger, c’est sérieux ! « Je ne ressors pas de chez ma mère sans une dizaine de doggy bags… » s’amuse-t-elle. Mais puisqu’on n’est pas là pour parler de bouffe, Céline s’est livrée sur d’autres sujets, et il faut dire qu’elle en a, cette grande passionnée qui lutte au quotidien contre sa timidité, des choses à dire. Sur sa timidité, d’ailleurs : « certains pensent que je suis très à l’aise avec mon image mais je suis une vraie introvertie, la gêne peut me paralyser », mais aussi sur l’amour de soi, le sport à l’extrême, la mode et sa lubie 100% gluten. Elle nous parle aussi du machisme, du racisme, des agressions sexuelles dont elle a été victime, et du féminisme. Elle nous révèle sa passion secrète (enfin presque secrète) pour le Scrabble (dont elle a l’application sur son téléphone – NDLR), et pour le Backgammon, et se livre sur ses croyances, non pas religieuses, mais rituelles : « au Vietnam, on a une belle tradition de famille à laquelle je tiens beaucoup, tous les ans on appelle les ancêtres, on leur dresse une belle table avec leur plat ou leur bière préférée, et on dîne avec eux. Je crois beaucoup à ça, à l’idée que la vie ne s’arrête pas après la mort ». Bref, Céline Pham, mais sans sa tenue de cheffe, c’est à écouter tout de suite, sur Business of Bouffe.

Cuando me reuní con ellas no estábamos en cuarentena y los encuentros los podían hacer tranquilamente. Pero ahora, más que nunca, este grupo de ayuda mutua que han creado es la base para que, entre todas, puedan salir adelante. Vous entendrez quelles sont ses activités de conseil et de direction artistique autour de la food qui l’amènent à collaborer avec les plus grands chefs tels que Simone Tondo, aussi entendu au micro de Patate, avec des enseignes de dingue comme les Galeries Lafayette ou encore à orchestrer des dîners pour Neymar et Kobe Bryant. Il nous raconte la manière dont il a « créé son métier ». Julien est un électron libre de la scène culinaire qui sans cesse se réinvente du haut de ses 36 ans. Le magazine Fricote c’était lui. Tontine, le restaurant éphémère sensation de 2019 monté avec sa soeur Céline Pham, c’était lui aussi. Mais n’allez pas lui parler de tout cela car Julien est avant tout un homme de l’ombre, un homme qui a la grâce de s’effacer derrière les projets qu’il porte. C’est donc un véritable privilège de l’entendre aujourd’hui se dévoiler sur ses moteurs, ses inclinations et les mouvements de son coeur. Amour, différence, identité. Voilà les sujets abordés par Julien au détour de notre conversation sur sa vie avec l’alimentation. Ce n’est pas évident de capter l’essence d’une personne, enfin ne serait-ce qu’une partie de cette dernière, au cours d’une interview, mais j’ai l’impression que c’est bel et bien le cas ici. Je ne dis pas cela car je partage beaucoup avec Julien, ce fils d’immigrés vietnamiens biberonné au Maggi, qui a découvert la gastronomie française assez tardivement. Son message est aux antipodes de l’anecdote, de l’entre-soi ou même d’une forme d’élitisme dont on voudrait parfois l’affubler. Son histoire est universelle. Elle parlera à tous ceux qui savent que les plats d’une mère ont une saveur indétrônable, que la démocratisation du bien manger est l’un des défis majeurs de notre génération et à tous ceux qui sont persuadés, qu’au fond, la cuisine n’est autre chose que des mots d’amour. Comme toujours, si l’épisode vous plaît, j’encourage ceux qui ne l’ont pas encore fait à me donner un avis 5 étoiles, et pourquoi pas écrire un commentaire, sur Apple Podcasts. C’est une immense aide pour moi et pour Patate. Sinon, parlez-en autour de vous, ça me fait très plaisir. Et je ne pouvais pas vous laisser sans cette citation d’Albert Camus que je me suis murmurée lorsque j’ai descendu les escaliers en sortant de chez Julien : « Être différent n’est ni une bonne chose, ni une mauvaise chose. Cela signifie simplement que vous êtes suffisamment courageux pour être vous-même ». Ça lui va bien.
