The Doctrine of the Mean (Chinese: 中庸, Pinyin: Zhōngyōng, Korean: 중용, Japanese: 中庸, Vietnamese: Trung Dung) is also one of the Four Books (四書) of Confucianism. It consists of 33 chapters attributed to Zisi (子思), the only grandson of Confucius, with interspersed notes by Zhu Xi. Zhu Xi's master, Cheng Yi, says, "Being without inclination to either side is called Zhong; admitting of no change is called Yong. By Zhong is denoted the correct course to be pursued by all under heaven; by Yong is denoted the fixed principle regulating all under heaven. This work contains the law of the mind, which was handed down from one to another, in the Confucian school, till Zisi, fearing lest in the course of time errors should arise about it, committed it to writing, and delivered it to Mencius. The book first speaks of one principle; it next spreads this out, and embraces all things; finally, it returns and gathers them all up under the one principle. Unroll it, and it fills the universe; roll it up, and it retires and lies hid in mysteriousness. The relish of it is inexhaustible. The whole of it is solid learning. When the skillful reader has explored it with delight till he has apprehended it, he may carry it into practice all his life, and will find that it cannot be exhausted." I salted and peppered the shrimp and in they went tossing them around to coat them all with the hot oil. They were ready in a couple minutes and the kitchen smelled terrific. I stacked the plates with spinach and started building the salads with the tomatoes, red onions, shrimp and as a topper sliced almonds."If this tastes like it looks, you're staying on as cook after this heals." Featured Recipe for this Episode Pie Crust- 1-1/2 cups all-purpose flour 3/4 t salt 1/4 cup shortening, cubed and frozen 1/4 cup butter, cubed and frozen 1/4 cup ice cold water (add ice cubes to your water to make this easier) Preheat your oven to 400°. Combine the flour and salt in a bowl and whisk together. Add butter and shortening to the dry ingredient mixture. Stir this only with a wooden or silicone spoon and try not to touch it with your hands, as it'll make the butter and shortening melty and the dough won't come together as easily (and you'll lose some of the beautiful flakyness!). Add half of your water and continue mixing until combined. Add the remainder of the water as needed until the pie dough comes together in a nice ball that is not sticky (you may need more water, just chuck some ice cubes into cold water to get it to temperature). Wrap the dough ball tightly in shrink wrap. Refrigerate for at least 30 minutes or until you are ready to use. Partially Blind Baking the crust- Lightly flour your counter or work surface- you can use wax paper here to help transfer it to the pie pan easier. Roll the dough to 1/8" thickness. With a sharp knife, cut the dough about 1-1/2" larger in diameter than your upside-down pie pan (you can just flip it over and put it in the center of the dough for easy reference). Gently roll your dough around your rolling pin or use your wax paper to transfer it into the pie pan. Unroll or place it into the pan and work it into place. Place the pie shell into the freezer to chill for 30 minutes. Remove the pie shell from the freezer and brush the edges of the crust with egg wash (if desired). Line the inside of the pie crust with parchment paper. Use pie weights to weigh down your shell to avoid it puffing up or prick holes into the bottom with a fork. Bake the shell for 10-12 minutes or until the edges of the crust are starting to brown. Remove the pie crust from the oven and remove your weights (if used). Set aside the crust and prepare your filling. Lemon Filling- 8 egg yolks 2 c water 2 cup granulated sugar 2/3 c cornstarch 1/2 t salt 1 c fresh lemon juice 2 T lemon zest (zest of 4 lemons) 6 T unsalted butter, cut into chunks Reduce your oven temperature to 350°. Whisk your egg yolks together in a bowl and set them aside. Add the water, sugar, cornstarch, salt, lemon juice, and zest in a saucepan. Whisk together and cook until thick over mid heat, 5-7 minutes. Reduce your heat to low. Stirring your egg yolk constantly, add in a few spoons of the lemon mixture one at a time (this is to temper the egg yolks and bring the temperature up slowly instead of dumping all of the yolk directly into the hot lemon mixture, because then the eggs will start cooking). Add a total of around 1/2 to 1 c of the mixture this way. Stir the egg yolk mixture into the lemon mixture until well-combined. Turn heat back to mid and cook the mixture until it is thick and bubbling. Remove from the heat and whisk in your butter. Add your filling to the crust and make your meringue. Meringue- 8 egg whites 1 t cream of tartar 1 c white sugar 1/4 t salt ~| Note: this will make WAY too much meringue for your pie. So you can either halve the recipe, or, I found this great recipe for Meringue Cookies you can make with the leftovers at https://platedcravings.com/meringue-cookies/! |~ Add your egg whites and cream of tartar to a large bowl or the bowl of your stand mixer. Add your sugar and salt to a separate bowl and set aside. Using an electric mixer or your stand mixer, beat the egg whites and cream of tartar on medium speed for 1-2 minutes, then increase to high speed until you form soft peaks (you can pull a peak but it immediately falls). Add your sugar and salt and keep mixing at high speed until glossy, stiff peaks form. Spread your meringue over the top of your filling. Bake your pie on the bottom oven rack for 25-30 minutes or until your meringue is browned to your liking on top. Remove your pie from the oven and let it cool for an hour or so. Haunted House – Take a big box and decorate the outside to look like a haunted house. Leave the bottom of the house open for your legs. Close and tape the top of the box and then cut a whole big enough for your head to come out. Cut arm holes. 2. House from the movie ‘Up' – This is similar to the haunted house but this time you will decorate your box to look like a cute friendly house. Cut and tape the box in the same way as the haunted house. Add lots of colorful helium balloons to float above your head. 3. Lego – Follow the taping and cutting instructions from the haunted house costume. Cut a Styrofoam pool noodle into two or three-inch wide discs. Adhere the discs to the front side of the box in a Lego pattern. For example, two columns of three or four discs each. Spray paint the entire box and discs one solid color. If you want, you can also wear a shirt and pants the same color. 4. Lemon/Lime – This is an idea that can be solo or with a friend. Find or purchase a bright yellow and a bright green long tee-shirt. Using white fabric paint, draw a half circle starting at one armpit and ending near the end of the shirt. The top of the half circle should be near the center of the shirt. Draw a line straight down connecting both ends of the semicircle. Now, draw three lines from the center of the straight line to different points of the circle. If you drew from the left armpit of one shirt, then draw from the right arm on the next shirt. It should look like half a lime or half a lemon. When wearing this with a friend, you will be lemon and lime. 5. Spool of Yarn – You will need a spool of yarn, butcher block paper or wrapping paper with a white plain back, two wood dowels, and two wood beads. Glue one end of each dowl into one wood bead. Unwind the spool of yarn. Now, wind it haphazardly all over your body but make sure you can move your arms and legs and do not put it around your neck. Unroll enough paper to put around your body and overlap a bit. Have an adult wrap the paper around your torso just below your armpits and secure with clear packing tape. Glue the dowls to the inside of the paper so they are sticking out near your shoulders. An adult can also write yarn or other fun things on your label.

5-to-9 thinkingOne warm summer evening after work, why don't you go on an adventure instead of flopping in front of the TV? When you leave work at 5pm, you have 16 hours of glorious freedom before you need to be back at your desk again. What adventures could you have in that time? My mind instantly turns to open space and the outdoors, but your choice might be very different. What would you go and do?The 9-to-5, convention dictates, imposes a lot of restrictions on us. It prevents us from living as adventurously as we might like. But what if you turn that thinking on its head? The 9-to-5 working day is only eight hours long. What about the other 16 hours? Nobody ever considers that as a solid, priceless entity. Instead of being limited by the 9-to-5, what if we chose to feel liberated by our 5-to-9?I know you have commitments and commutes to deal with and probably work much longer hours. But humour me, please, for this thought experiment. Imagine how different life would be if society regarded the 9-to-5 as a minor hassle, a mere 33% inconvenience on 5 days out of 7. Imagine if everyone's passion was instead focused on the 16 hours of (at least theoretical) daily freedom.It would be a very different society. If you were a bazillionaire what would you swap your 9-to-5 for? How then can you get some of that between 5pm and 9am without the luxury of being loaded?What if you left your office, jumped on the train and headed for the hills? Even from London, you can be in the countryside or by the sea within an hour. I have also made this rush hour escape from cities as sprawling as Barcelona, Hong Kong and Los Angeles. Head out of the office, jump on the train and relax. It takes a bit of guts and oomph to do this for the first time. The strong negativity bias in our personalities means we tend to focus on the bad things that might happen (rain! Sheep attack!), rather than the positive benefits (this might help begin to turn my life around).So if you make it this far, congratulate yourself. You have done the hardest part (unless you get attacked by a sheep. Or it rains.) You have begun.There is no map for ‘living adventurously'. You cannot unfold a map, flatten out the creases, point and say, ‘aha! Look, once I arrive there, I will have succeeded.' Not only does this not work, but it is also a damaging way to think. The times I've assumed the end of an expedition would be the end of my problems have always backfired. All you can do is follow your nose. It is the direction you walk which constitutes living adventurously, not whatever crock of gold you imagine lies at the rainbow's end. Anyway, pause your philosophical musings to get off the train. Look left and right. Then take a punt on the direction less travelled. Give your future self the best chance. Head towards beauty and wildness. Walk up the nearest hill to take in the view.You're out of breath from the hike. You still feel a bit silly. But you smile. You feel your nerves about this step into the unknown seeping away. What an opportunity. What an escape. A burst of freedom in the middle of the working week.To appreciate a painting properly, you often have to take a step back. The same holds true for life. The 5-to-9 is a chance to step back from the hectic rush of work, the clamour of your family and the distractions of the internet. You will look at life with a fresh perspective from the vantage point of a grassy hilltop. Unroll your sleeping bag under the stars and drift off to sleep. In the morning you'll wake at sunrise to the sound of birdsong and the first warm rays of sunshine. (Disclaimer: if it is raining this entire experience will be miserable and will require filing under ‘Character Building'.) If you are a veteran at this camping malarkey, you might have brought along a little camping stove for a cup of coffee with a view. If not, enjoy the novel simplicity of temporary abstinence and delayed gratification.Shove your sleeping bag into your rucksack. Run down the hill and jump into the nearest river. Then hop back on the train into town, ready for another day in the office. A little sleep-deprived, perhaps; twigs in your hair and bleary eyes. When you get to work, and your colleagues ask if you did anything interesting last night, for once you don't have to lie and make something up! They will laugh and think you crazy, of course. But a year from now you will still remember that night under the stars, long after evenings of TV and soft pillows have faded away. Squint a little differently at life. Bemoan the 9-to-5 or celebrate the 5-to-9. What memories will you treasure a year or five from now? That is the important stuff.Over to You: What are your 9-to-5 problems? And I've been writing a book because it didn't exist. You see, years ago I was teaching a high school course on Christian Worldview where we had sections on every main area of knowledge. So we had a Christian view of economics, science, ethics, mathematics and aesthetics, the study of beauty and design. And as I looked for material on Christian aesthetics I found that the books that were available were too broad, that is, books talking about the general importance of beauty in the Bible or theology. There wasn't anything that talked about what makes something beautiful, visually beautiful for a Christian. So life went on and my professional life moved into design and photography. So while my undergraduate and graduate training was in Biblical Studies, Philosophy, and Theology, my professional work was and is in an aesthetic discipline. And as I lived in the worlds of design and theology, some very obvious connections became clear to me. But in discussions with people and reading books on beauty, these simple insights were missing. It was for these reasons that I started to write a book on A Christian Guide to Beauty and Design. But as I was writing, I also started this YouTube channel and decided to just release videos on it as I write the book. That way I can get feedback and the book can be truer, better, and I hope more beautiful. So the goal of these videos and the book is simply this: to explain what makes something beautiful and why.And with that let me leave you with these words from the poet Francis Thompson:“The Church, which was once the mother of poets no less than of saints, during the last two centuries has relinquished to aliens the chief glories of poetry, she has retained the palm, but forgone the laurel. If you are signed up for a course and you lost your password, send a note. There is no shame in that. I would rather send a password reset link 17 times and have my student find success than for them to never log in and never attempt to learn what they wanted. Getting into the psychology of it all, there are so many reasons why people by courses. There is a thirst for knowledge. There is a drive to keep up with what other entrepreneurs are doing. There is a fear of missing out. There is a desire of wanting to become more and create more impact. A lot of courses might be teaching you how to grow your business. People are really developing their own college education in a way by purchasing these courses as long as they get through the course and complete them. "Most entrepreneurs have really big goals and courses are there to support them in developing themselves personally as well as professionally." -Jessica Wayman Keep your course goals in mind… If you are taking a course and your desired outcome is just having completed it your mindset will be completely different than if your desired outcome is to implement this piece of software the way your “guru” does. There are people out there who think they are going to get the same results that those gurus got JUST by purchasing their course. What you need to keep in mind is what they want their major outcome to be, who they are serving, and what they are looking to get out of the course. You are sitting knowledge and knowledge is power! You have to be able to do something with it! That brings us back to why this podcast exists. I created this podcast to help YOU take the next step. Whether we're talking about a piece of software, methodology, or organization, it's about making progress to leave/make a legacy. It's so important to treat your business LIKE A REAL BUSINESS. Here are Jessica's Top Tips: Keep your business organized. You need to categorize things before you can make a decision. This applies to email, contracts, files, etc. You need to be able to be the CEO of your business. It's important to setup SOPs for when you grow and bring someone new in to help you work your business. This takes away any gray areas of how things should be done. We can't be everything to everyone. We need to find ways to make our lives easier. We have to learn how to create boundaries for ourselves. Then you can develop a team and they know their roles. This will free up time for you to work on furthering your business. If you are looking for an incredible VA, hire someone from Priority VA. Know what you can delegate and what you can do yourself. Know what is a good use of your time. This is why we have service providers. When you outsource in your business, make sure you are going to the right person for your needs. When it comes to organizing your computer content -- there are both the online/cloud storage locations (as we discussed in episode 011) and there are the files on your computer. Cloud storage, like Google Drive, is especially helpful when you are working with active team members. This is a good place for your SOPs to live. As they change, they will directly change in that Google Drive. Your freebies in pdf form, photos for social media that don't need to be accessible to your team, these things may live in Dropbox, since that's more of a storage container than a living document holder. Living documents are more easily accessed through Google Drive. Google Drive= collaboration. As business owners, we opt-in to freebies and get downloads fairly regularly. With email opt-ins this can fill up pretty quickly. Organizing these into folders and assigning a freebie to the correct label will help you. If you get to the point you have 7000 emails just archive them and then start fresh. Create the folders so that it works for you, but DON'T keep all those freebies in your inbox. There are resources for handling your email if you can't. Inbox Done and all they do is email. If you find yourself so overwhelmed with email this may be a good option. A good rule of thumb to follow is: Stop opting in to everything. You're going to see a lot of repeats out there in the online space. Unsubscribe from lists that you aren't reading. It is flooding your email and actually doesn't help the business ave you on their list. A great tool for Gmail is Unroll me. Jessica mentioned this at the tail end of the conversation.
