That includes pizzas, crusts, flatbreads, crackers and full on entrees. We discuss why Amy became an entrepreneur, how she created a cauliflower pizza recipe that wasn't brittle and didn't fall apart, even with incredible ecommerce sales, why she decided to partner with a retail-minded investor as opposed to an ecommerce minded one, their approach to packaging when they entered stores and much more. What was your attraction to entrepreneurship? What led to the founding of Cali'flour Foods and better for you alternatives for pizza? How did you first make cauliflower pizza since cauliflower is so brittle? What was the first step to starting your company? How did you go about developing your supply chain? I am SO excited to introduce you to a dear friend and a favorite past client of mine, Amy Lacey. We took a trip down memory lane together and caught up on Amy's inspiring journey of making a mid-life career pivot at age 46 and starting a business in an industry she had no prior experience in that has changed the food space forever.Amy is the author of Cali'flour Kitchen and founder of Cali'flour Foods, the brand that pioneered the cauliflower pizza crust craze. After being diagnosed with an autoimmune disease in 2010, she realized she needed to change her eating habits. With the determination to find recipes to make healthy versions of her favorite foods like pizza, she discovered how amazing cauliflower based products are (despite having hated cauliflower most of her life). These days you can find Cali'flour Foods' cauliflower pizza crusts, flatbreads, and other entrees in national chains like Safeway, WalMart, Whole Foods, and Kroger! After working dozens of trade + media shows with the Cali'flour Foods team and sampling more cauliflower pizza crusts than most normal humans in a lifetime, I can confidently say that Amy's products are as delicious as they are healthy.Stay tuned to hear Amy's story of going from selling at the local farmer's market to $6 million in online sales in one year, the number one marketing strategy that exploded her business, and why she's on a mission to turn her mess into her message.Connect with Amy:heyamylacey.comcaliflourfoods.comCali'Flour Foods@califlourfoods@heyamylaceyIf you enjoyed today's episode, please:Post a screenshot & key takeaway on your IG story and tag me @missellenyin & @cubicletoceo so I can repost you.Leave a positive review on Apple PodcastsSubscribe for new episodes every Monday ----- FREE RESOURCES:Service-based entrepreneurs, are you tired of being on the content hamster wheel + hustling for more followers without more income? Today we are excited to bring you a conversation with Amy Lacey, the bestselling author of Cali’flour Kitchen and the founder of Cali’flour Foods, a company that sells cauliflower-based foods and currently the fastest growing food company in e-commerce. When Amy began looking into resolving her autoimmune issues, she stumbled on a recipe for a cauliflower pizza base, which she perfected, started selling at farmers’ markets, and eventually built out into an 8-figure business. In this episode, she gets candid about the percentage of her business that is based on e-commerce versus retail, her thought process behind deciding to bring venture capitalists on board, and why it was more about choosing strategic partners than getting the financial backup. Since the earliest days, customer service and experience have been a top priority for her and the team, a value she believes sets them apart from many other food companies and opens doors to the most unexpected opportunities, including the chance to talk to people like Martina McBride and Whoopi Goldberg. And the secret to outstanding customer service, she says, lies in your ability to truly listen to the needs of people and then to deliver the perfect solutions. Amy also discusses how the COVID-19 crisis affected their sales, the importance of surrounding yourself with people who know the industry, the equity you should be prepared to give to key stakeholders, why you have to secure your trademark as early as possible, and more!     TIME-STAMPED SHOW NOTES: [00:41] Before we jump into today’s interview, please rate, review, and subscribe to the Leveling Up Podcast! Storytelling in sales isn't anything new. Any great salesperson will tell you that it's stories, rather than facts and features that have the most powerful impact on how people feel about a product or service and whether they have a desire to buy. The hard part is often knowing exactly which stories we need to tell and how to share them in a way that positions to client or customer as the hero. Califlour Foods founder Amy Lacey is a master of storytelling. In fact, much of the traction her business experienced in the beginning was down to her ability to share how her experience of being diagnosed with an autoimmune disease and looking for healthy gluten alternatives is the foundation of the brand's origin stories. Today, both Amy's and the stories of the brand's loyal followers, have become the fuel for their growth. A story Lacey posted about a woman who lost 169 pounds, thanks in large part to eating Cali'flour crust for seven months, went viral on the social media platform. The $50 Lacey spent on a Facebook ad to promote that post was well worth it. Her story sold $124,000 worth of pizza. It quickly catapulted the company from generating $7k months in 2016 to closing January 2018 doing $20million in sales. Mentoring, if career success had ten commandments, we're pretty sure this would be one of them. But do you feel that the 'mentoring system' isn't quite getting you what you need to succeed big time? Erin Hatzikostas and Nicole Licata Grant sit down for another 'How Was Your Week' episode to discuss this and so much more. They talk about the difficulties of funding a podcast, the fun, stress, and emotions that came from their recent branding, photoshoot, and everything involved in keeping afloat in this multi-media world. They both recap the mini celebration they had for their one-year-of-podcasting, where they bump into their first public "fan" of b Cause (that they don't know!) Erin gives Nicole some coaching advice on recent challenges at work while Nicole explains her frustrations. They talk about the power of curiosity and persistence over simply putting your head down and doing PowerPoint.  Erin coaches Nicole - from the way she emails over rewriting her bio for a website, to some advice with challenges at work. This leads to Nicole opening-up about her feelings of being taken advantage of at work.  Communication is key: Erin discusses how issues with management can trickle downstream if communication isn't upheld properly. From the office to the home, communication is important everywhere from understanding your partners' needs to knowing hen something isn't your responsibility to bare. Nicole talks about her frustrations with being made a mentee at work and not a mentor (it's funny, most of the mentors seem to be white men...) Erin provides her perspective and tips on finding your mentors, and finding your sponsors (and the lesser-talked-about anti-sponsor.) And it all closes with a note to Amy Lacey, you can listen to her fascinating interview in episode 37.  If you like jammin' with us on the podcast, b sure to join us for more fun and inspiration! Amy Lacey is the Owner and Founder of Cali’flour Foods. She's a resilient leader in her many roles as entrepreneur, best selling author and autoimmune advocate. Like many food and HVC entrepreneurs, Amy's venture into creating a product was actually an answer to solving a personal challenge. In 2010, Amy was diagnosed with Lupus, becoming one of 50 million-plus people suffering from an autoimmune disease in the United States.  No longer able to enjoy pizza night with her family, Amy set out to re-imagine her favorite foods and created a no-mess no-stress, cauliflower pizza crust to satisfy her cravings without sacrificing her health. Since then, Amy has been featured in major publications like Eat This Not That, Delish, Popsugar, and Entrepreneur Magazine. She's kicked off the new year by launching a national best selling cookbook called Cauliflower Kitchen: 125 Cauliflower Based Recipes for Carbs You Crave. Here's a glimpse of what you'll learn: [00:55] Introducing Amy Lacey [03:13] Amy talks about autoimmune disease, being diagnosed with lupus, and the challenges that came with her diagnosis [06:19] Amy shares how her decision to research about food as medicine led to the creation of Cali’flour Foods [09:29] Where Amy first sold her products and her transition to mass production and selling online [11:45] Amy talks about Donald Miller’s Storybrand and about a customer’s feedback that left a positive mark on their brand [14:57] How Amy’s products are shipped out to her customers [16:34] The importance of finding a good shipping partner and valuing customer experience [20:35] Amy talks about her decision to increase the retail footprint of her brand [25:39] Amy discusses the five-piece philosophy that she follows for her business [32:44] Amy talks reinventing the frozen food section of grocery stores and her expansion plans for Cali’flour Foods [35:10] Steve talks about the growing popularity of cauliflower [37:09] Amy talks about the organizations that she supports through Cauli’flour Foods [39:34] Amy discusses their target market and the health benefits of a low carb diet [41:08] Where to find more information about Cauli’flour Foods [45:41] Amy talks about what the next steps startups should make when they get a ‘no’ In this episode… If you’ve just been diagnosed with an autoimmune disease or have been recommended by a healthcare provider to go on a low carb diet, it can be devastating. Just thinking about all the food you’ve grown up eating and suddenly needing to avoid them can be heartbreaking. That’s exactly what happened to Amy Lacey when she was diagnosed with lupus back in 2010 and it inspired her to start researching about using food as medicine. This was the beginning of her company, Cauli’flour Foods. Designed to address the need for great-tasting food options for those looking to eat healthier or address diet restrictions, their products are created and shipped fresh to their customers with the utmost concern for quality retention and customer satisfaction. In this week’s episode, Amy joins G. Steven Cleere as they talk about her lupus diagnosis, her decision to choose food to help her body heal and her eventual business, Cauli’flour Foods. She shares her 5-piece philosophy in doing business, some things that food industry startups need to do when they do decide to expand, and what she has learned through the business that has grown so close to her heart. Let Food Be Thy Medicine with Founder and Chief Innovation Officer of Cali'flour Foods, Amy Lacey “Healthy food has to taste as good as it makes you feel.” Amy Lacey (25:04-25:07) Amy Lacey is the Founder and Chief Innovation Officer of Cali'flour foods. When her business exploded in 2017, Amy went from “CEO” of her household of five, to managing the expansion of a wildly successful, and much needed company.  While many new products hit the shelves of grocery stores as a result of the monetary dreams of an entrepreneur, Cali'flour was born out of Amy's personal health struggle, and the vegetable that changed her life.  Let food be thy medicine. When Amy Lacey suddenly fell ill, she received a Lupus diagnosis, and a plethora of new medications. The pain, depression, and horrendous side effects of all the medications made it difficult for Amy to make it through each day. This wife, and mom of three, decided that enough was enough, and began to research ways to use food to treat her condition.  When Amy began cutting grains and sugar from her diet, she saw a dramatic shift in her health. Eventually she was able to come off of ALL her medications, and lost 40 lbs in the process!  The return to “normalcy.” In an effort to return some normalcy to family life, after this 9 month struggle, Amy sought out a way to make their family game night favorite - pizza. In the midst of her search she found cauliflower.  It's so easy to swap unhealthy foods for more healthy options, but it is not as easy to make it taste good! Using a recipe found online, she attempted to create a cauliflower pizza crust. After a few failed pizza crusts, Amy Lacey was able to adapt a recipe that her whole family enjoyed - even the son who refuses to eat his vegetables!  From there, the rest is history. The crust became a family favorite, and a friend convinced Amy to sell the crust at a local Farmer's Market. Amy then utilized her background in ecommerce to set up shop on the web.  And Cali'flour was born.  “Cali'flour is making a food product, but it's so much more than that. They have created something that is capilizating on… the fact that food is culture. Cali'flour empowers people regardless of dietary restrictions -  to maintain the cultural component of food, which is the essence of life in so many ways.” - Lori Taylor. (22:05-22:29) Where healthy food meets culture.  There is something so universal about the way that food brings people together. Food ingrained into each culture. One of the beautiful aspects of Cali'flour is the way they are able to provide healthy alternatives to traditional comfort food products. Amy's goal is to create products that are reminiscent of the foods you love.    Why cauliflower?  Amy uses the word “bland” to describe cauliflower, which is so accurate. However, she shares that the mild flavor makes it absolutely perfect. It has the ability to take on the flavor of other foods, and it has a consistency that gives it versatility as a flour alternative.  Cauliflower is high in Vitamin C and antioxidants. It is a quiet vegetable with loud benefits!  “There's no better time to make those healthy swaps than the start of a new year.” - Lori Taylor. (17:43-17:48) What sets Cali'flour apart?  I'm sure you've noticed that Cali'flour is now one product of so many that have gotten creative with cauliflower. Look down the aisles of your local grocery and you'll find rice, pretzels, and several crust options, to name just a few products.  In the cauliflower product industry, Cali'flour reigns supreme. While many other brands use cauliflower that has been powdered or pureed - and imported from China - Cali'flour's produce is grown in California goes directly from their farm to their manufacturing plant.  They are avid about avoiding waste, and thus, utilize all parts of the cauliflower!  When shopping for cauliflower products, it is so important that you take time to read the ingredient list. Fillers result in a lower quality food, and likely indicate that an alternative form of cauliflower has potentially been used.  Where to Find Cali'flour Cali'flour products are in grocery stores nationwide. You can visit their website to find a store near you!  Amy and her team have developed a cookbook with 125 recipes that utilize cauliflower!  Cauliflower changed Amy's life, and now she is on a mission to change yours. 098 | Amy Lacey Shares How Overcoming Her Biggest Obstacle First Leads to Great Success When you’re solving a problem in your business, or creating a new product, do you tackle the biggest obstacle in your path, or do you go for the easiest problem to solve? Amy Lacey is the founder and CEO of Cali’flour Foods, the original gluten-free, grain-free, low-carb cauliflower crust. The company humbly began out of Amy Lacey’s kitchen, when she and her children were baking cauliflower crust pizzas for their Friday game nights, instead of the typical flour-based crust. Inspired by her Lupus diagnosis in 2010, Amy realized she needed to change her eating habits if she was going to have long-term health and success, and wanted foods that were nutritional without compromising on taste. From spending hours baking cauliflower crusts with her family to selling them at her local farmer's markets, Amy is on a mission to make delicious food accessible for all with Cali’flour Foods. Since creating the first no mess, no-stress cauliflower crust, Amy has grown Cali’flour Foods and started offering other cauliflower product including cauliflower and lentil pasta and new cauliflower thins. Just like the cauliflower crust, the pasta and cauliflower thins are healthy and better-for-you, without sacrificing on taste. Most entrepreneurs tend to address the easiest issue - pick that “low-hanging fruit” if you will. However, when you tackle your biggest problem first, you’re set up to be even more successful! See, learning the ins and outs of your biggest challenges teaches you lessons on how to be successful on all of the rest of your challenges! Plus, you get the benefit that you KNOW that you can handle anything else that comes at you! Everything is easy after you tackle the biggest challenge you continue to keep putting off. This week’s guest on the Success Unfiltered Podcast, Amy Lacey, tackled the most difficult obstacle first in her business, and I’m confident that it led to her explosive success! When she had to pivot in her business after hearing a devastating NO, she knew that she had already solved her customer’s biggest problem, and all she had to do was figure out how to get it into their hands. If you’re ready to get inspired by the power of tackling your hardest business problem first, then this episode of Success Unfiltered is a MUST LISTEN! Here are a few key secrets we talked about in this episode: Michelle introduces Amy Lacey. After a Lupus diagnosis, Amy switched to a whole food, clean eating diet, to help manage her symptoms As friends and family tasted her foods, they knew that she had hit on an amazing product, and had to create a company to share it with more people. When deciding on the first product to make in mass quanitity, Amy remembered the feedback she had gotten on her cauliflower pizza crust, and how people loved it. It was the hardest product to make at scale! But Amy tackled it and perfected her recipe. “I love serving people, and I love filling a need” ~ Amy Lacey Cali’flour Foods was born to meet a specific need, foods with no fillers that many people with dietary restrictions could eat. Amy started with it because it was the biggest need in her community, was the hardest to make, and perhaps the product that she believed in the most - even her picky children would eat it. When she pitched the idea at a trade show, Albertsons showed interest in carrying the product in all their stores: but had confused Cali’Flour Foods with another similar company - one that used fillers. Amy could have compromised and could have added fillers, which would have reduced the cost and would have sold her product more easily - but that would have been a compromise that she was unwilling to make. Amy turned down multiple offers to compromise her product! Amy operates off the 5 P’s of business: people, purpose, product, passion, and perseverance. When they tackled eCommerce, the company used testimonials to share the story of the product, and went from $7,000 in a month revenue to $124,000 in a month in revenue! “Facts tell, but testimonials sell.” ~ Amy Lacey Never make a decision on fear. Turn fear into action - you may not see results right away, but if you keep going you WILL see results. “I made a great message out of my mess, and am paying it forward. If I had let NO keep spiraling me downward, and not had the courage to break out of that fear, I would never be where I am now.” ~ Amy Lacey Everything changes in business, nothing stays the same. Stop us when this sounds familiar: two young entrepreneurs have an idea for a disruptive food concept, but lack experience and need help -- with everything. In the case of Amanda Klane and Drew Harrington, who together launched frozen Greek yogurt brand Yasso while fresh out of college, identifying and aligning with the right partners meant building around their vision of success. “When we started the business, we were 23,” Klane said in an interview included in this episode of Taste Radio. “We clearly knew we didn’t know everything. It was ‘how do we find people that are smarter than us and can provide assistance and support, but also allow us to do what it is we love to do and grow the brand the way we want to?’” The strategy has paid dividends. Since its launch in 2009, Yasso, which is positioned as a healthier and low-calorie alternative to traditional ice cream brands, has become a bona fide star in the freezer aisle, racking up over $82 million in sales last year. As part of our interview, Klane and Harrington discussed the inspiration behind the brand, how they identified an opportunity to disrupt a legacy category, the importance of value-added financial partners, and why trash cans became a key part of the brand’s marketing strategy. Pizza and ice cream is, of course, a popular pairing. So to go with Yasso’s healthier take on the latter, how about a serving of Cali’Flour? The fast-growing brand sells vegetable-based, gluten-free frozen pizza crusts that are made with just four ingredients. Founded in 2015 by Amy Lacey, Cali’Flour has attracted a loyal following and established a thriving direct-to-consumer business. In a recent interview, Lacey spoke about staying ahead of a hot trend, how the brand incorporates consumer feedback into its R&D strategy, and why the company doesn’t make hero products. Show notes: 2:35: Elevation, Enlightenment, Expo -- The hosts discuss the migration of Elevator Talk to YouTube and Instagram TV, the release of BevNET Magazine’s July/August 2018 issue and cover story on the “31 of the most powerful women in the industry,” the upcoming Natural Products Expo East show, and a bevy of new and interesting products that arrived at the office over the past week. 14:26: Interview: Drew Harrington and Amanda Klane, Co-Founders/Co-CEOs, Yasso -- Harrington and Klane are the founders of Yasso, a popular ice cream brand that uses Greek yogurt as the base of its tasty treats. The childhood friends and co-CEOs recently sat down with Project NOSH editor Carol Ortenberg and BevNET CMO Mike Schneider, where they spoke about the brand’s ascendance, its innovation and marketing strategy and the keys to its partnership with majority investor Castanea Partners. 35:39: Interview: Amy Lacey, Founder/Owner, Cali'flour Foods -- Lacey sat down with BevNET CMO Mike Schneider at the 2018 Summer Fancy Food Show, where they spoke about the launch and development of Cali’Flour, which is promoted as the “Original Cauliflower Pizza Crust.” Lacey, who participated in the Pitch Slam competition at NOSH Live Summer 2017, discussed the brand’s origins, how it has attempted to separate itself from competing brands and why listening to its customers has been critical to its growth. Our topic today is… pizza. Specifically, plant-based, vegan cauliflower pizza crust. Intrigued? So was I. Today’s guest, Amy Lacey started making cauliflower pizza crust in her kitchen in order to find healthier alternatives to her favorite foods after being diagnosed with lupus. With the help of her daughter, Caroline, she created a proprietary recipe that her friends and family loved so much, they encouraged her to go out and sell it. After selling the crusts at her local farmer’s market, Amy decided to start selling them online too. That decision was a resounding success.
