Flowing East and West: The Perfectly Imperfect Journey to a Fulfilled Life

It is not a recipe she would recommend, but Fanny Slater mixed one part alcohol, one part low self esteem, a dash of fame, and a sprinkle of insecurity, and ultimately found herself spiraling down a tunnel headed straight for rock bottom.  Luckily Fanny also had a heap of support and love from friends and family which helped her when she needed it most.  This is a story about reinvention from the winner of a cooking contest on the Rachel Ray show to an aspiring sobriety mentor. Hers is a story about finding herself, after almost losing everything.     Bio: Fanny Slater has food flowing through her genes. Her mom founded the nationally acclaimed bakery business Rachel's Brownies in 1975, and together—her parents created an enormously successful corporation that would live on for decades. Fanny grew up in Raleigh where, at age four, she began her home-taught kitchen apprenticeship when her dad pulled up a chair next to the stove and handed her a spatula. She worked in restaurants and prep kitchens to receive culinary exposure, but was equally drawn to performing arts. At twenty-five, Fanny moved to Hollywood, California to pursue acting and improv training with the Upright Citizens Brigade Theatre in Los Angeles. Several years later, she followed her stomach back to the east coast to open her own catering company. She moved to Wilmington, North Carolina in 2012. In 2014, she beat out nearly 1,000 other hopefuls from across the country who entered Rachael Ray's Great American Cookbook Competition. Fanny won the grand prize of a publishing contract under Rachael's imprint, and Simon & Schuster published her cookbook, Orange, Lavender & Figs: Deliciously Different Recipes from a Passionate Eater, in 2016. In the following years, Fanny co-hosted the Food Network series, Kitchen Sink and became a regular on Cooking Channel's longtime popular series, Best Thing I Ever Ate.  In 2020, Fanny was living in Illinois with her husband when her longtime issues with alcohol came to a head. Within one year, she would move back to North Carolina, get a divorce, come out of the closet, and attend a 40-day rehab program. Today, Fanny is 3+ years sober and living near the beach in Wilmington with her girlfriend, two dogs, and a cat. She works as a food and beverage writer specializing in recipe development, food photography, and content creation for social media. As of recent, Fanny has pivoted her focus towards being a sobriety enthusiast who encourages others to speak up about their struggles. She uses her Instagram platform @fannyslater to bluntly share her journey of going from a self-destructive addict to an advocate for mental health, recovery, and self-love.

As a young man, Sawyer found himself trapped in an engineering program, staring at an auto-cad program every day. His only escape was cooking at a local restaurant every night, under the watchful eye of a stubborn and surly German chef. One day, the chef, with his thick accent, surprised Sawyer with high praise, telling him, "You, you are good at cooking." We're kicking off a new 4-episode series called The Best Thing I Ever Taught. (If the name sounds like it's inspired by The Best Thing I Ever Ate from the Food Network, it's because it is!) Inside this series, we'll be sharing all kinds of things that bring us joy and that we, and our students, have seen a huge return on. This week we're focusing on gateway activities.   First, let's define exactly what a gateway activity is. It has everything to do with what we do here at Brave New Teaching - essential questions and an inquiry-based curriculum design. More specifically, a gateway activity is the activity at the very beginning of a unit of study that gets your student buy-in. It introduces students to the topics being covered, and gets the chatter going about the essential question for the unit.   We are both sharing the details of the best gateway activities that we've each taught, one with a Gatsby unit and the other with a Shakespeare unit. This conversation will let you in on the process of planning these gateway activities, and hopefully you can see that there's no set procedure for this. One winner will claim sweet success as they take home the $10,000 price and the title of Halloween Cookie Champion ABOUT CHEF JET TILA From the intersection of Hollywood Boulevard and Normandie Avenue in the heart of Los Angeles to the Las Vegas Strip; from backyard cooking classes to battling legends on "Iron Chef America"-Jet Tila has carved a singular niche as a culinary storyteller. Thanks to his diverse background and education, Tila is as comfortable as chef and consultant as he is teacher and student in the art of food. His numerous accomplishments in the culinary world continue to grow. In 2013 alone, Tila has partnered with the Compass Group, the world's largest food-service company, to launch Modern Asian Kitchen, a new fast-casual Pan-Asian concept with locations nationwide. He is also set to separately open Kuma Snow Cream, a shaved-ice concept launching in Las Vegas this spring, all while continuing to build on his extensive national TV and radio appearances as a guest judge on "Chopped," as well as hosting his own radio show on KLAA in Los Angeles. Tila grew up in his family's restaurant kitchens and markets in Los Angeles, home to the world's largest Thai population outside of Thailand. As a boy, he spent time learning the ancient traditions of Asian cuisine from his Cantonese grandmother and working in the famed Bangkok Market, which opened in 1972, and Royal Thai restaurant, which opened in 1978. "I call it birth luck," he says. "I was born into the 'first family' of Thai food in Los Angeles. My parents came here separately in 1966 and went on to open the first restaurants and grocery stores in this country and I was the kid doing homework in the back corner of the restaurant." Not initially sure if he would pursue a career in the kitchen, in his 20s, Tila says he "got it together" and decided to build a foundation for his passion and completed his culinary education at Le Cordon Bleu, establishing a framework of classical French technique to match his extensive knowledge of Asian cooking. He also completed an intensive study program at the California Sushi Academy. "My food is predominantly Thai and Chinese because it was the food I was exposed to growing up," he notes. "And my cooking overall represents the neighborhood I grew up in LA: between Thai Town, Chinatown, Koreatown, and Little Tokyo." Combining kitchen experience with the bold new world of food media was a natural move for Tila, whose backyard cooking classes attracted the attention of the Los Angeles Times. He has successfully transitioned from subject to producer by writing for the Times and contributing to many other publications and multimedia platforms, including National Public Radio, the Food Network, and his appearances on the "CBS Early Show," "No Reservations," "Best Thing I Ever Ate," and battling legendary Chef Masaharu Morimoto on "Iron Chef America," among many more. A highly sought-after consultant, Tila opened the cafe at Google headquarters in Silicon Valley and also currently maintains a wildly popular Asian food line through Schwan's Home Service. He keeps close to his roots by conducting "Melting Pot Food Tours" of Thai Town in Los Angeles, offering participants a curated tour of his favorite aspects of the neighborhood. In 2009, Tila debuted the acclaimed Wazuzu, a brilliant take on Pan-Asian dining, at Steve Wynn's Encore casino and resort on the Las Vegas Strip, which he was tapped to open in a record 98 days. More recently, he launched Bistronomics, an acclaimed series of pop-up restaurant experiences in Los Angeles. Tila has also set three world records: for creating the world's largest stir fry (4,010 lbs.); the world's largest seafood stew (6,656 lbs.); and the largest California roll (422 ft.). Tila's current and future projects promise to bring him and his culinary skills to more prominence. He is currently working with the Compass Group to open Modern Asian Kitchen, a fast-casual Pan-Asian concept with locations nationwide, and is branching out on his own to open Kuma Snowcream, a shaved-ice concept launching in Las Vegas in spring 2013-the product of which he says is "like fresh, powdered snow, but that is creamy and tastes like ice cream." "At this point, I am interested in creating concepts, not just one-offs," he says. "I am and always will be a chef, but I am also always interested in new ways to combine cooking, business, and communication, since I enjoy all of them as much as I enjoy teaching people about where I come from through my food." Tila currently lives in Los Angeles with wife, Allison, their two children, as well as two dogs.

Charlie dishes on inner discipline, maintaining work-life balance, and not burning out on ambition. Charlie has been cooking professionally for over 20 years. He began his love for cooking at the age of 6, always wanting to help his mother, grandmother, and Aunties in the kitchen. As he grew older, Charlie found his passion for learning about food maturing. Next he found work at a fast food fried chicken restaurant called Roy Rogers at the age of 15. He says that he almost felt as though he was cheating the system for getting paid to hang out with all of his best friends and cook food, but found his first true love… Fried Chicken… At 17 he began working in a small bakery in his hometown of Leesburg, VA. He would go in very early to bake the breads. He says, “I felt as though I had something to prove because the chef did not believe that I would be able to keep up with a 4 AM shift, go to school by 8Am, and make it back again the next day." Charlie did this for a few months before moving into The upscale American restaurant upstairs, Tuscarora mill. He worked under Chef Patrick Dinh for 7 years, and gained all of his initial technique, cooking style and work ethic. He moved to Raleigh NC to assist in the opening of several restaurants to continue his culinary experience. It was here that Charlie earned his first sous chef position. After successfully opening several restaurants, he then chose to move to Asheville NC, where he worked as a chef for a vegetarian restaurant called The Laughing Seed café. It was here that he found his true passion for Fresh produce and also the need to have a more diverse plate. He moved on after a few years to open Greenlife Grocery In Asheville NC. He quickly became the Food service director for the company and the company then Propelled itself to become the Largest independent organic and Natural Foods retailer on the east Coast. Owner Chuck Pruett then asked Charlie to move to Chattanooga, TN to open a larger location. Charlie remained the Food service Director for both stores acting as the recipe creator for all of the perishable departments. The company sold to Whole Foods Market, and Charlie moved back into his love for restaurants. He became the Executive Chef for 1885 Grill, which was known for their southern coastal cuisine, before opening The Feed Co. Table + Tavern southern comfort food, along with Dustin Choate and Miguel Morales. Both restaurants were voted some of the top restaurants in the city. Charlie has worked with multiple organizations to teach healthy eating in both cities. He assisted in forming “chef nights in Chattanooga, a successful program that would help children and parents in lower income areas to use fresh produce and instill healthier eating habits. He helped start multiple school garden programs, healthy school lunch programs, and healthy cookbooks. Charlie has worked with multiple publications including Food and Wine Magazine, Organic Gardening, Epicurious, Southern Living, Local Palette, Michelle Obama's The White House Garden Cookbook, and many others. He has enjoyed showcasing his talents on multiple Food Network and Cooking Channel shows including The Best Thing I Ever Ate, as well as winning the season one finale of Cooks vs Cons, and most notoriously, and most recently in January, he Beat Bobby Flay with one of his favorite dishes, Eggs Benedict. Charlie has recently relocated back to his hometown of Leesburg, VA after getting laid off due to Covid-19 and plans to focus on community outreach programs to help get restaurants back on track. Chris Cosentino is a celebrity chef, TV personality, owner of three restaurants, and avid cyclist. Most known for his 2012 victory of Top Chef Masters, Chris frequently features on some of the biggest foodie reality TV shows on channels such as The Food Network (Payson was on an episode of “The Best Thing I Ever Ate” with him in the fall of 2018). Chris is most known for specializing in offal, which is parts of an animal less traditionally eaten. Payson and Chris dive into topics including sustainability and the meat industry, why he considers ADD a superpower, a detailed tutorial on how to make the tastiest thing Payson has ever eaten, their mutual love for cycling, and much more.

Chef Jamie Adams with il Giallo Osteria and Bar on Food and Beverage Radio Chef Jamie Adams  il Giallo Osteria & Bar The youngest of five children born in Atlanta, Jamie Adams was intrigued by every aspect of Italian culture - from its cars to its language; from its people to its food. His passion for Italian cuisine was fueled by his mother, a native of New Orleans and fabulous cook in her own right. To this day, Jamie's fondest memories are of cooking in the kitchen with his mother, or at relatives' homes and kitchens in New Orleans, where his family visited regularly. While studying music, biology, and English literature at Georgia State University, Adams simultaneously worked for The Mad Italian Restaurant in Atlanta. It was here that he realized his profound appetite for the restaurant business: the desire to immerse himself into Italian cuisine and great hospitality began to smolder. Fanning these flames was the fact that his siblings, who had traveled to Italy, came home with stories of meals they had enjoyed in quaint Italian towns. These stories and his love for Italian cuisine led him to create his own Italian adventure. “In 1985, I found myself in the Mestre train station with a 200 Lire Gettone in my hand, hoping against hope that someone on the other end could speak English,” reflects Adams. “Thus began an almost five year stint that was supposed to only be one. I went on to find and work in many of the places that I had heard so many stories about and I made friendships and connections that forever changed the course of my life,” he recalls. Upon returning to Atlanta, Adams received several offers to cook in the city's top Italian kitchens, but immediately knew that working at Pricci (then Cappriccio), the Italian crown jewel of the Buckhead Life Restaurant Group, was the perfect setting for his talents. Adams impressed owner Pano Karatassos, by making several pasta dishes from scratch just like his time in Italy at several Michelin starred restaurants. He was given the title of Sous Chef and thus began a more than 20 year relationship with Pano and his prestigious restaurant group. In 1993, the company took over Veni Vidi Vici and Adams was named Executive Chef. The restaurant was formerly owned by one of the gran dames of Italian cuisine, Marcela Hazan, coincidentally, one of Adams' most profound culinary influencers. Adams left BLRG for a short while, when he opened the boutique restaurant, ENO in Midtown Atlanta. In addition to an economic downturn, during this time, Adams was as he refers to it, “the lucky recipient of Coronary Artery Bypass Grafts, fondly referred to as “Cabbage-CABG,” also known as a quadruple bypass. After taking some time off to recuperate, as a compliment to the long-time, mutually respectful business relationship between Pano and Adams, the Chef was asked to rejoin the Veni Vidi Vici team. While at Veni Vidi Vici, Adams realized that he and restaurant General Manager, Leonardo Moura, shared a mutual desire to create and run their own Italian restaurant. Adams and Moura shared their dream with Pano Karatassos, and it was decided that Veni Vidi Vici would close, enabling the pair to open their own restaurant. In creating il Giallo Osteria and Bar (meaning both yellow and mystery in Italian), the passion and experience Adams obtained in Italy will fuse together in this Coastal Italian restaurant in the upscale Sandy Springs neighborhood. Adams has been a featured chef at The James Beard House in New York, competed in The Food Network's “Chopped,” selected to participate in a TBS-TV “Super Chef Cook Off”, and was highlighted on “Great Chefs of the South, and “The Best Thing I Ever Ate.” In addition to building a loyal following and maintaining his great health as an avid cyclist, Chef Adams is exceptionally proud of his fundraising efforts for many organizations that are important to him, including Share Our Strength's No Kid Hungry and Moving in the Spirit,
