Kevin Jeung (Noma / Noma Projects) calls in from LA to talk about Noma's upcoming Los Angeles pop-up and what it changes when you suddenly have citrus, avocados, and California seasonality on the table. Kevin walks through how the team is doing early-stage R&D—ingredient exploration, fermentation setup, and testing techniques for hard problems like cactus slime and variable produce.Dave detours into Denmark: Christmas market roast pork sandwiches, crackling technique, and what cut the Danes actually use (loin vs belly vs skin-on neck). They also get into Noma Projects curiosities like peach tree sap (rehydrated for a tendon-like chew), plus a few practical bar/kitchen notes: a clarified spec for the Brandy Savage cranberry cordial build, and a quick take on stabilizing acidic whipped cream (gel/fluid-gel approach vs citric acid straight into dairy). Closing beat: Kevin's Turkey method for the Noma team—compound butter under the skin, and mayo outside for browning/crisping. Hosted on Acast. See acast.com/privacy for more information.

    Merriam-Webster's Word of the Day

Merriam-Webster's Word of the Day for December 27, 2025 is: apropos • ap-ruh-POH • preposition Apropos is used as a preposition to mean "with regard to." It is frequently used in the phrase "apropos of." // Sean interrupted our conversation about politics and, apropos of nothing, asked who we thought would win the basketball game. As an adjective, apropos describes something that is suitable or appropriate, as in "an apropos nickname." See the entry > Examples: "Once, at the height of COVID, I dropped off a book at the home of Werner Herzog. I was an editor at the time and was trying to assign him a review, so I drove up to his gate in Laurel Canyon, and we had the briefest of masked conversations. Within 30 seconds, it turned strange. 'Do you have a dog? A little dog?' he asked me, staring out at the hills of Los Angeles, apropos of nothing. He didn't wait for an answer. 'Then be careful of the coyotes,' Herzog said." — Gal Beckerman, The Atlantic, 8 Jan. 2025 Did you know? Apropos wears its ancestry like a badge—or perhaps more fittingly a beret. From the French phrase à propos, meaning "to the purpose," the word's emphasis lands on its last syllable, which ends in a silent "s": ap-ruh-POH. Apropos typically functions as an adjective describing what is suitable or appropriate ("an apropos comment"), or as a preposition (with or without of) meaning "with regard to," as in "apropos (of) the decision, implementation will take some time." The phrase "apropos of nothing" is used to signal that what follows does not relate to any previous topic.

This week, we hear amazing Jangles (entertainment news a Jew can use) from Hoffman, including the contentious NY launch of "Marty Supreme" and the inside scoop into actor Jack Black's superwoman of a mother. We hear a full-throated recommendation from Borschel-Dan for a multi-media performance she caught that is touring Israel. Based on journalist and author Matti Friedman's "Who By Fire: Leonard Cohen in the Sinai," the Beit Avichai production will announce its schedule of future shows in April. The pair hunker down to review the Schmoovie of the week, "The Sure Thing," a 1985 film of teen love -- and lust. Rob Reiner's second directorial outing gets mixed reviews from our hosts. We're joined by Stefanie Powers for a layered conversation that spans Hollywood's golden-era traditions, cultural change, and a life shaped by both stardom and purpose. For those in the Los Angeles area, Stefanie, with co-star Patrick Wayne, will be performing 'Love Letters' at the El Portal Theatre in North Hollywood as a benefit for the William Holden Wildlife Foundation on January 11, 2026!Stefanie reflects on growing up alongside future screen legends at Hollywood High School, and how her lifelong love of animals began at home, thanks to a stepfather who raised thoroughbreds and kept exotic animals. Her first professional job came at age 15 when she was cast in the film West Side Story, where the young cast prepared by listening to recordings of real New York street kids to capture authentic rhythms and speech patterns. However, Stefanie's tender age required too many work time restrictions as the production's intensity ramped up and her part was re-cast. She describes old school studio system rigors, where actors “sold their lives” for a seven-year contract. Restrictive, yes, but also an entertainment education that taught singing, dancing, acting, and stage presence, alongside publicity essentials.Still under contract with Columbia, she was loaned out to United Artists to make McLintock! and Stefanie shares memories of working with John, Michael and Patrick Wayne. The legendary show biz tales are boundless. Did you know that Natalie Wood, Jill St. John and Stephanie were all in the same childhood dance class? All would, one way or another, be married to Robert Wagner. And, true story: During a painful divorce, Stefanie was offered solace at Roddy McDowell's house by fellow travelers, Elizabeth Taylor and Ava Gardner. She also recounts the party at Dean Martin's home where she danced the night away with Bobby Kennedy Sr. as he encouraged her to use her Spanish language skills to become more civically involved with Latino communities here at home. She also speaks candidly about her complex romantic relationship with William Holden, whose influence on her life is ongoing. In his name, she has created The William Holden Wildlife Foundation in Kenya where local youth learn biodiversity, species conservation and alternatives to habitat destruction for humans and wildlife. And of course, we talk Hart To Hart where Stefanie starred with Robert Wagner. She was actually on her way to Broadway when a newspaper strike halted her production of Cyrano, and freed her to take a pilot that would change her life!In current media --Fritz: (joined by his daughter Carly!) It’s a sleepy Saturday following a torrential rainstorm all the way through Christmas week. And here in SoCal the rain has passed — for now. Do you have a leak? Today’s first caller lives in a house built in 1935; it’s a Monterey colonial with a California basement, which means just enough space to service the gravity furnace. It doesn't have a sump pump installed, and when it rains, he gets about 2 inches of rain down there. He’s wondering if he should be concerned about the lack of a sump pump following the recent rains. Our next caller phoned all the way from Tampa, Florida, and wants Dean’s opinion on the proper maintenance of his new 8x10 Tuff Shed from Home Depot. Another caller has a double-wide mobile home from the 1970s with a metal roof that’s leaking over his car port, and he’s wondering how best to seal up that roof leak. Listener Cindy wants Dean’s recommendations on the right mixture for alleviating mold in the tile grout. Dean says mold is kind of a wimp! And our final caller was wondering how best to choose a legitimate duct-cleaning service. See omnystudio.com/listener for privacy information.

This holiday week, we're bringing you two joyful stories from 2025.  Reena Esmail's childhood in Los Angeles had two soundtracks: the Western classical music her parents loved, and the old, scratchy Bollywood tapes her paternal grandparents would play over and over. Those multicultural influences shaped what would become the driving question of her work: how do you invite people from different cultures onto the same stage to build a relationship and create music together? Composing is how Esmail has made her mark — by putting Western classical musicians in conversation with Indian artists, building bridges between violinists and sitar players, tabla drummers and western singers. She has also composed with unhoused singers from Skid Row, and her music has been performed by major orchestras and choirs all over the world. In May, as part of our series on California composers, host Sasha Khokha brought us this profile of Esmail. Artists are often the people in our communities who bring people together in ways that are creative, spontaneous, and surprising. That's true in the East Bay neighborhood of Point Richmond, where a local artist has created dozens of miniature fairy houses brimming with the personality of their imaginary inhabitants. In this story from April, Pauline Bartolone set out to explore these hidden treasures, and meet the person who created them. Learn more about your ad choices. Visit megaphone.fm/adchoices

Kambon was a member of the Sacramento chapter of the Black Panther Party where he worked on the layout and illustration of the party's famous paper and became lieutenant for culture, illustrating among other things the party's ten point plan and works for young people. His one-man show opened in Beverly Hills at Marc Selwyn Fine Art in April 2025. An exhibition of his work will open at the New York Sculpture Center in May 2026. In this unique conversation, Flanders asks Kambon about his own survival stories, including his polio diagnosis, getting drafted into the Vietnam War, and his year on death row. Kambon was arrested in connection with the killing of a police officer and was later acquitted from that high-profile Oak Park Four case. Join Flanders and Kambon as they discuss how art keeps spirits alive, and catch Flanders' commentary on today's fight to control our nation's stories.“Art educates the masses of people. Not Black or white or Asian, this educates the masses of young people to our struggle, to how long they're struggling and how it's connected.” - Akinsanya Kambon“I thought of myself as an artist even when I was a child, because art was therapy for me . . . So not surprisingly, many screenwriters and actors are very skeptical of AI, and concerns about AI were central to the Hollywood labor strikes in 2023. But animators may actually be the most at risk of losing their jobs to AI. In this episode, we’ll talk about why the first AI generated movies you will see will likely be animated, and what it means for the people who make them, and for everyone else in Hollywood.

Tread Perilously's final 2025 episode is, oddly enough, a Tread Merrily. But that also means Special Review Unit Captain Charlie Wright is joining Erik and Justin for an episode of the 1980s Beauty and the Beast called "God Bless The Child." When Catherine volunteers at a crisis hotline, she encounters a young woman who is both pregnant and on her last rope. Catherine suggests to Father and Vincent that the woman might be a good addition to the World Below. After passing Father's test, though, she becomes fixated on Vincent and makes the Yuletide both stranger and sleepier than it should be. Erik learns Charlie has seen the show before. Justin tries to piece together its premise, forgetting that Vincent and Catherine have a bond "beyond friendship or love." Erik finally gets to use his Roy Dotrice impression and attempts one of Vincent to wavering success. Linda Hamilton and Ron Perlman prove to be MVPs. The trio discovers the New York district of Los Angeles. The World Below is a provocative  enough concept to encourage another reboot of the program. Will "escaped circus people" be involved? Charlie proves immune to Vincent's many charms. George R. R. Martin's presence can be felt throughout. The episode's major guest character becomes a Tully as a consequence and the CBS pacing issue claims another series.
