Furigana and English scripts are on my website: https://www.nihongoforyou.com/episodes/167healthy-eating-habits-through-seiro[Japanese script]みなさんは普段、どんなものを食べていますか?健康にいいものを食べたほうがいいのはわかっているけれど、時間がなくてついついコンビニやファストフードで食事を済ませてしまう…ということに心当たりはありませんか?私も、会社に勤めていたときはほとんど毎日コンビニや外食をしていて、なかなか体にいいごはんを食べることができていませんでした。でも、今日はそんな人の救世主になるかもしれない道具を紹介します。それが、せいろです!せいろというのは、竹や木を編んで作られた、鍋底にすのこが敷かれている、寸胴の形の蒸し器のことです。最近ではより手軽に使えるように、ステンレスのせいろも売っています。使い方は、沸騰したお湯が入った鍋の上にせいろを置くだけ。鍋からの蒸気がせいろの中にまんべんなく行き渡り、食材に火が通る、という仕組みです。使い終わったせいろの手入れは、さっと水洗いして干せばOKです。食材に火を通すには、鍋で茹でたり、電子レンジでチンしたりする方法もありますね。そういう調理方法と蒸し料理との違いはなんでしょう?蒸し料理は、食感や栄養素を損なわずに調理できるんです。例えば、電子レンジを使うと短時間で調理できますが、調理中に水分が逃げてしまい、パサパサした食感になってしまいます。また、ゆで料理は、水分を閉じ込めて加熱できるものの、食材の栄養素がお湯の中に流れ出やすくなるのが欠点です。さて、蒸し料理の魅力がわかったところで、せいろで蒸すのにおすすめの食材を紹介します。まずは野菜。ブロッコリーやとうもろこしなど、季節の野菜を蒸すと、その野菜本来の味が引き出されます。特に、かぼちゃやさつまいもなどは、甘味がぐっと増して、レンジで温めるよりもずっと美味しく食べられますよ。それから、肉まんやベーグルなども、せいろで蒸すと水分が逃げずにもっちりふかふかになります。蒸すだけでとても美味しく仕上がるので、忙しい日の昼食や夕食にぴったりですね。欧米では馴染みのない調理器具だと思いますが、ぜひ一度使ってみてください。=======================================
