Travel Gluten Free Podcast Season 09 Episode 15 Gluten Free Indian Cuisine Indian food is one of my favorite ethnic dishes, so I'm so glad that East Indian cuisine is mostly naturally gluten free! Besides naan bread, and some samosas - which are the East Indian version of a burrito - most other dishes do not have gluten. Today, I'll give you information on popular Indian dishes that typically do not contain gluten that I've eaten in the past. As always, check with the chef or cook at the restaurant you're eating at to make sure your food is safe! Be Aware of Gluten in Lentils Because the FDA allows up to 10% of another grain in lentils, I try to avoid lentils as much as possible. However, there are several dishes, including the crisp wafer Papadam, that are made from lentils. The one time I was sick from Indian food was cross-contamination of the lentils in the dish. Four Types of Indian Cuisine based on Region North Indian cuisine is known for its robust flavors and extensive use of dairy products, such as ghee (clarified butter), yogurt, and paneer (cottage cheese). Popular dishes include biryani, butter chicken, tandoori chicken, naan bread, and various lentil-based dishes like dal makhani. South Indian cuisine is primarily vegetarian and is characterized by its generous use of rice, lentils, coconut, and spices like mustard seeds, curry leaves, and red chilies. Popular dishes include dosa (fermented rice and lentil crepes), idli (steamed rice and lentil cakes), sambhar (spicy lentil soup), and rasam (tangy soup). East Indian cuisine is known for its seafood, sweets, and subtle flavors. Rice and fish are staple ingredients in this cuisine. Popular dishes include macher jhol (fish curry), sandesh (a sweet made from cottage cheese and sugar), and rasgulla (a syrupy dessert made from cheese curds). West Indian cuisine is known for its spicy and vibrant flavors. It heavily relies on ingredients like garlic, ginger, and chilies. Popular dishes include pav bhaji (a spicy mashed vegetable curry served with bread), vada pav (a spicy potato fritter sandwich), dhokla (steamed fermented chickpea flour snack), and various Gujarati thalis (platters) featuring a wide variety of vegetarian dishes. Travel Gluten Free Podcast Season 09 Episode 14 Traveling Gluten Free in Puerto Rico I recently took a vacation in Humacao, Puerto Rico after visiting this beautiful US territory for the first time last year. I stayed at Las Palmas Resort and I enjoyed my stay so much, I've already booked another week there for next year! I can't wait to go back. Listen in to today's gluten free travel episode where I talk about my experience in Puerto Rico, fun things to do while you're there, and, of course, amazing gluten free restaurants to eat at when you're in Puerto Rico. Traveling to Puerto Rico You can easily get a plane ticket in and out of the main airport in San Juan. And because Puerto Rico is a US territory, you don't need a passport, but you will need a Real ID. Also, you don't need to exchange currency as Puerto Rico is a territory and uses US dollars. It's an easy trip to get to a tropical island that you don't need a passport to travel to if you're a US resident! Beaches in Puerto Rico One of the best geologic features and most relaxing activity is to visit a local beach. Luquillo Beach is beautiful and there are restaurants and facilities (including showers) nearby. You can rent a beach chair for $25 for the day, and buy a coconut water or coco loco to sit and relax on the beach, read a book, swim, snorkel or people watch. Where to Stay in Puerto Rico I stayed at Park Royal Homestead, and I really enjoyed my stay at their resort! I had a two bedroom condo, with a full kitchen, right next to the pool. The resort offers free shuttles anywhere in the resort, including all restaurants and their own private beach Make sure that you're following the 3-1-1 TSA rule for liquids if you're packing liquids in your carry-on. I recently got stuck throwing out shampoo and conditioner because I had too many liquids with my medicine. Now, however, I carry a medical bag so my medicine that's considered a liquid doesn't count towards my 3-1-1 (see medical bag link below) . Travel Gluten Free Podcast Season 09 Episode 12 How to Eat Gluten Free at Your Vacation Rental Are you scared to eat out at restaurants? If you're new to having Celiac disease, this is a real fear! You don't want to be anxious on vacation, so what do you do? My friend, you can find an Air b'n'b or VRBO at the location you're taking your vacation and make your own food. Always call ahead and speak to restaurant managers directly at hotels, don't rely on the front desk staff to ask if the food is safe at the hotel restaurant. You'll also want to call ahead and find out what appliances and the size of the fridge and microwave so you understand what you have to cook with when you're on vacation. Make sure to follow these tips when you're eating out or making your own food when traveling gluten free. Find Out About the Kitchen Since there are no standards for what appliances come in a mini-kitchen, studio, or full kitchen apartment or vacation rental, you'll want to call ahead and find out what appliances are available to use. Which appliances are safe? You may not want to use the blender, and other appliances which food can get easily cross-contaminated such as the toaster. Make sure to clean your utensils well, use toaster sleeves, and wash any plates you may need during your stay. Look for crumbs in the cabinets and avoid using anything that has come in contact with leftover food. You can easily purchase paper plates to use while you are on vacation to give yourself an extra level of protection and create a less stressed travel vacation. These Food Rules for Gluten Free also Apply to Food Allergies Whether you have food allergies or you're gluten free for health reasons, you can apply these practices to keep your food safe! Never assume that any product doesn't have gluten or a food allergen unless you have thoroughly read the label. This can be time consuming, but it's the only way to ensure that the food you are eating is safe. Gluten can hide in many different places including: scrambled eggs at restaurants, tea, salad dressing and sauces, sausages and other meats, as well as alcohol. If you can't find a local place to buy safe food, you can always order food from Amazon and have it shipped to your vacation rental! Please be safe and read all ingredients and ask the right questions when you're traveling gluten free or with food allergies! Travel Gluten Free Podcast Season 09 Episode 11 Gluten Free Food Tours with Katrina McGhee Finding Gluten Free Friendly Food Tours While Traveling Are you scared to take a gluten free food tour? Even with my experience, I avoid food tours because I don't trust that someone else will ask the right questions for me. Today, I chat with Katrina McGhee, who is gluten intolerant - not Celiac - about how she approaches and asks about food tours. Caution: If you're Celiac you will want to use your own judgment with food tour safety. Look for a food tour with dedicated gluten free restaurants or a completely gluten free food tour. Questions to Ask Food Tour Operators If you find a food tour, look to see if they mention food allergies or accommodating food allergies. If they don't, you can reach out to the tour operator and ask them directly the following questions: Have you had someone with a food allergy on your tour? What gluten free offerings do these places have? Are all these locations familiar with gluten allergies? What is the protocol at these places? Do you offer exclusive gluten free food tours? Be Cautious When Booking a Food Tour Even when you ask all the right questions, you can still end up getting food you can't eat. Although my guest did a variety of food tours, I personally wouldn't book a food tour. Why? Because they are too risky to chance getting sick because I have to depend on the knowledge and experience of someone else to vet food establishments and I'm not personally willing to take that risk. Katrina is gluten intolerant, not Celiac, and if you're intolerant you have more food options. You don't have to worry about cross contamination and you don't get as sick. My advice is if you're intolerant, you could safely eat on a food tour. If you're Celiac, I wouldn't book a food tour unless it was a tour in Italy or another gluten-free friendly place, and the tour locations were exclusively gluten free. For me, it would be too stressful and not fun if I had to watch everyone else enjoying their food after I paid for a food tour ticket on my vacation. Travel Gluten Free Podcast Season 09 Episode 10 How to Travel with Disabilities featuring Jen Hardy What does it mean to travel with disabilities? What is a disability and what do you need to know if you're traveling with disabilities? My friend and fellow female podcaster Jen Hardy from the Fabulous Over Fifty podcast (formerly the Hardy Moms Podcast) also has multiple disabilities, including an auto-immune disease which leaves her without energy and the ability to walk or stand on her own. Traveling with a walker, Jen is here to give us tips on how to travel when you have to carry medical devices as a result of your disability. She also tells her story with her experience on United Airlines and how they left her in the terminal, alone, after forgetting to order her a wheelchair and not assisting her off the airplane with a walking aide. What Does it Mean to Travel with a Disability? A disability is when a person has a physical or mental impairment that substantially limits one or more major life activities, a person who has a history or record of such an impairment, or a person who is perceived by others as having such an impairment. These include auto-immune disease, cancer, anxiety, PTSD, depression, and other impairments. It's very common that if you have one disability, you have another. For me, I have 10 disabilities - some of them physical, some mental such as my PTSD I have from being raised in an abusive household. Although you can't see most disabilities in physical form, they are there. When others can't see our disabilities, it makes it hard for them to understand how we have to adjust in our daily life and especially when we travel. Always Take Your Medication on the Plane with You Depending on your disability, you may have to use a walker, diabetic medication, cane, brace or support, and most likely you are traveling with medication. Always, always, always take your medication with you on the plane. Take a medical bag because this can be your extra third bag that is excluded from your two you can take on the plane because of medical reasons. While you don't have to have a doctor's letter or note, I would highly recommend geting a medical bag for your medications. When flying gluten-free, you want to know about this not-well-known piece of information. Travel Gluten Free Podcast Season 09 Episode 09 What Does it Mean to Be Gluten Free? What does it mean to eat gluten-free? Find out when my friend Marvin from the Live Healthy Podcast interviews me on his show! On this episode of Travel Gluten-free Podcast, you'll find out about me, how I came up with my name Elikqitie, along with questions and answers which my friend Marvin asked me about how to be gluten free. What Does it Mean to Be Gluten Free? Being gluten free means that you aren't eating any foods that contain gluten. So what's gluten? Gluten is the protein found in several grains including wheat, barley, triticale, and other grains. When you don't eat gluten, you are eliminating any grain that contains gluten along with any processed foods that contain gluten including those with ingredients such as: modified food starch, hydrolyzed protein, and natural flavors or spices as these ingredients all have the possibility to contain gluten. Eating Gluten Free as a Preference If you've eaten out or you've talked to anyone breathing on the face of our planet, you know that some people eat gluten-free to try it out or as a preference. While that is fine, there is a significant distinction between eating gluten free as a preference and avoiding gluten because of medical reasons such as Celiac disease or a food allergy. Adjusting to Gluten Free Eating and the Gluten Free Lifestyle While some people find out about Celiac disease as a child and grow up eating gluten free, I didn't find out until the age of 42. Being of French and Italian descent, I believed that my gastronomic enjoyment was over because I didn't think I would ever be able to eat bread or pasta again. However, there are some amazing food brands out there and I can enjoy almost any food that I want in its gluten-free form. Learning how to make food again was challenging, but the real challenge was knowing how to eat when I'm not in the city that I live - the big challenge is learning how to travel gluten free! His best travel story is when he was working in Belgium and took a sleeper train with some friends and woke up in a different country than his intended travel destination. Travel Gluten Free Podcast Season 07 Episode 04 Brewing Gluten Free Beer with Bierly Brewing I've never liked beer until I tried the brew that JP from Bierly Brewing creates! I'm excited to chat with him about brewing gluten-free beer on the Travel Gluten Free Podcast. JP has been brewing gluten-free beer using gluten-free ingredients since 2016. He researched how to malt gluten-free grains to use in his beers, but he decided to move toward recipe development and brewing. Why JP Decided to Brew Gluten-free Beers JP has celiac disease. He discovered this at the age of 26 when he met his partner Amelia, who had already been diagnosed with celiac disease. So, the main reason JP decided to do the gluten-free beer was that many of his wife's family members were gluten-free. JP had been experimenting for some time with gluten-free beer, so it turned out his beer was great, and everybody liked it, starting with his family. The Brewing Process and Ingredients for Gluten-free Beer JP uses honey, candy sugar, and rice syrup solids as part of his ingredients. He combines these with hops and gluten-free yeast. JP found out they could make an excellent pale ale, which ticked all the boxes for beer. Besides, JP doesn't use any barley, wheat, or rye. He also doesn't use oats because there is a large swath of celiacs that still cannot have oats. Discover how JP comes up with new ingredients for gluten-free beer. JP has sixteen years of experience brewing beer but still reads a lot to develop new beers. When reading, he is particularly interested in the history of the beer, why it was brewed, its ingredients, and the challenges faced. Origin and Different Types of Beer JP shares with us the different types of beers. Basically, most beers are defined by national origin. The three top ones are Germany and Austria, Central European, England and Belgian. However, with gluten-free beer, there is more freedom. Always Pack Gluten Free Snacks Ellen once made the mistake of not packing gluten free snacks on one of her travels and could only find French fries as a gluten free option. It is important to pack snacks even if you think you will find gluten free food during your trip. We also talk more about the range of snacks to carry and how to pack them. Take Gluten Free Translation Cards with You Although you can use Google translate to make translation cards or explain to someone in another language what you need to eat, Google does not always do a great job on translation accuracy. Make sure to carry translation cards with you when you travel. You could contact the local chamber or embassy for assistance in finding someone to help you create a translation card in another language. We also share an app that you can use to pull up restaurant cards in this episode! Talk to the Chef to Find Out What's Gluten Free Introduce yourself to the chef or the restaurant manager, and let them know your need for gluten free food is for medical reasons rather than a personal preference; besides asking the chef what gluten free foods they have, find out how they prepare food in the kitchen. For instance, if they have separate fryers to avoid cross-contamination or if they change their gloves before they prep your food. Ask for a Microwave and Mini Fridge for Your Gluten-Free Food Getting a microwave or mini-fridge is one of the most helpful elements when traveling and staying in a hotel or air. However, if you have a refrigerator with hotel food, make sure not to remove that food from the fridge in the hotel you are staying in and put yours in the refrigerator because you will be charged for using their food. Call the front desk to request another refrigerator for your gluten free food. Notify Your Host of Your Gluten-Free Dietary Needs Our final tip is on why calling your hosts, be it the resorts, restaurants, cruises, or airplanes, ahead of time and letting them know your dietary needs will make your vacation a better experience for you, your host, and your family or friends that you are traveling with on your adventure! Travel Gluten Free Podcast Episode 164 Backpacking Around the World with Katie Barbaro of Casual Ecstasy Podcast Welcome to the Travel Gluten Free Podcast. Today, I have Katie Barbaro from the Casual Ecstacy Podcast. Katie is an occupational therapist, comedian, and up-and-coming author. She believes that life should be lived like an improv show, and hopes to help others awaken their potential. Solo Travelling the World Katie is an extensive traveler. In 2018, she spent the year visiting Thailand, Iceland, England, France, the Netherlands, and other parts of Europe and Asia. She decided to leave her normal life behind because of her life coach, who identified many of her personal values. Katie asked herself, “What would feel the most me?”, and decided that travelling the world with no plan and only her intuition to rely on was the answer. Katie did much of her traveling thanks to the Workaway platform, which allows volunteers to connect and live with host families in exchange for a few hours of work. Throughout her trip, Katie stayed with friends new and old, meeting many open-hearted people and volunteering at incredible places. Surrendering to the Present Moment When travelling Asia, Katie found a different kind of relaxation in her body upon landing. There was a peacefulness in Asia that wasn't present in Europe or the U.S.. In the West, we're taught that being busy equals happiness. For Katie, travelling brings her into the present moment. She's gone into many new and unique situations with the intention of learning and appreciating, as a lifelong student. Katie talks about the spontaneity of solo travelling with an anecdote of her motorbike rental in Indonesia. She was never someone who would ride anything with two wheels before, but by pushing herself out of her comfort zone, she got to evolve her own idea of who she is. Through traveling, Katie has cultivated her intuition and learned how to be at home with herself, no matter where she is. Publishing Her First Book Katie recently published her book, “Fed Up An Illustrative Guide to Food Freedom.” She hand-wrote and illustrated the book to document her recovery from disordered eating. The cartoon-based memoir focuses on her raw and honest experience with over-exercising, calorie-counting, and more. Today, I'm sharing some easy, portable gluten-free food ideas to bring with you on your next adventure. By the time this airs, I will have just gotten back from a cruise, and I'm excited to share my experience with you soon. But until then, have a few great, gluten-free tips for travelling. What Kind of Gluten-Free Snacks to Travel With Make sure to bring snacks that don't have any kind of coating or chocolate that will melt and make a mess out of everything. Always check the labels for glaze, chocolate, or anything of the sort. I love granola bars from Lara, and there are plenty of great brands that are free from top allergens such as Yes! or Ka-Pop!. Other snacks that aren't brand specific that I like are seaweed snacks, apple sauce packets (yes, just like the ones for toddlers) or fruit snacks and gummies that are all made up of pure, organic ingredients. Remember to always read the label before buying something new, and don't trust something that's advertised as GF unless it's certified gluten-free. What I Look for in a Hotel Room as a GF Traveller I always make sure to get a hotel room with either a small kitchen or kitchenette, and at the very least a microwave or fridge. It makes it so much easier to snack at night, rather than going out, and is much more convenient when packing your own safe food and drinks. Most places will generally have a fridge and microwave, but always make sure to check. One tip I've learned is that many hotels in Las Vegas don't provide a fridge you can use, instead filling it with snacks they want you to pay for. But, you can call the front desk and have them bring you a refrigerator for all of your gluten-free goodies. Where to Shop for Gluten Free Foods while Travelling An unexpected way to find food while traveling is in HomeGoods. They have a surprisingly decent selection of GF snacks that I like to try before travelling, so that I know what I like beforehand. WinCo also has a great variety of allergen-free foods as reasonable prices. Another tip is to go to Whole Foods and see what they offer there, and then check the product's website to see if you can find the same thing for cheaper. Travel Gluten Free Podcast Episode 161 Living Gluten Free in Toronto with Ashley from Celiac and the Six Welcome to the Travel Gluten Free Podcast. Today, I have Ashley from ‘Celiac and the Six.' Ashley loves to bake, travel, and explore a gluten-free world for her and her daughter. She also hosts a Facebook group for young moms also living gluten-free. Being Diagnosed with Celiac Disease Ashley found out she had celiac as a teenager. Working in a bakery, surrounded by flour, she felt something wasn't right in her body. Her doctor insisted it was IBS, but as her reaction to certain foods worsened, Ashley knew it was more than that. By being persistent, she was able to get tested and diagnosed. She saw a need for a community of GF women and mothers, and decided to make one. 'Celiac and the Six' was born out of Ashley's love for Drake. Today, I'm talking with Jenn Bigler from Living Freely Gluten Free. She runs a platform dedicated to gluten-free and dairy-free living, and is the author of two allergy-friendly cookbooks. With multiple food allergies to be aware of, Jenn is dedicated to creating delicious meals the entire family can share. Food Allergies in the Whole Family Jenn discovered she had a gluten allergy in her 20s, and later noticed symptoms of food allergy in her children. Jenn encourages parents to advocate for their kids when it comes to allergies. Food allergy symptoms in children can easily be misdiagnosed as ADHD or other behavioral disorders, so be insistent on testing for allergens. Now, Jenn has been gluten-free for 10 years. She started her blog as a collection of recipes from a creative young mom figuring out how to feed herself and her son. She turned that blog into a business, where she can reach more people with recipes that help them lead happier, healthier lives. Family-Friendly Gluten-Free Cooking Jenn is the author of two cookbooks: “Living Freely Gluten Free” and “101 Incredible Gluten Free Recipes.” Both are gluten free and dairy free. Travel Gluten Free Podcast Episode 159 The Advantages of Camping in State Parks Gluten Free We all love our national parks. But it's so easy to overlook the sunning state parks that many of us have right in our backyard! In this episode, I share some of the benefits I've learned in choosing a state park over a national park. You'll find that you can do a lot of the same activities inside a state park. Sometimes, there's even more options for fun than at a national park! I also have a list of my favorite state parks (on both coasts!) to get you excited for your next gluten free adventure. Avoid the Crowd of a National Park One of the biggest advantages of staying at a state park over a national park is the crowds. State parks are often less crowded than national parks, where the wait time just to get inside can be up to two hours. I sometimes only see two or three other people camping when I stay in state parks. With fewer people camping, hiking, or biking, you're more free to get outside and relax in the outdoors. Less Restrictions on Your Visit State parks don't typically have the same protective regulations that national parks do. This means there is less restriction on what activities you can do in a state park. Boating and other watersports, for example, are often prohibited in national parks--but there are plenty of options inside a state park! Best of all, state parks are dog-friendly! No need to leave your furry friend behind at the campsite like in national parks; in state parks, they're allowed on the hiking trail with you! Take Advantage of Your Backyard's Beauty Most of all, state parks are local. They're easy to drive to, and there's usually two dozen or more in any given state. It's easy to find a nearby state park: just Google ‘state parks' and your state's name. You don't have to go out of your way to find something amazing; oftentimes, state parks can only be a 15 minute drive away. So, if you're considering a national park, check to see if there's a state park nearby! Travel Gluten Free Podcast Episode 158 Rerun: Tips on Camping Gluten-Free Since many people have been camping for their COVID vacation, I wanted to share with you great gluten-free food prep tips for creating meals, camping snacks, and food storage when you're camping. I've learned these experiences the hard way by making mistakes while on the road and eating out of the back of my car or at the campfire. Take steps to eliminate the hassle and expending energy on clean up when you're camping with these camping COVID-19 tips! Gluten-Free Snacks for Hiking If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags. Marinating Gluten-Free Foods An easy and efficient way to prepare your marinated food is to take your favorite gluten-free salad dressing and place your meal to be marinated into a double Ziploc. If you are using tofu, make sure to use firm tofu and plan to eat the first or second night, as tofu can fall apart quickly. Also, make sure to cut in thick slabs to be more sturdy. For a quick and easy marinade, take your food to be marinated, add favorite salad dressing, place in double Ziploc, close bag, take all air out, then seal. Keep cold until ready to use. Gluten-Free COVID Camping Soups To create easy soups, prep and blend your spices ahead of time and put them in an air-tight container. Label your container. Use dried spices instead of fresh if you are not going to use them in the first two days. Then, bring along canned items that you are going to use to make your soup. Instead, I wanted to do something for them.” This gave James the motivation to speak up for them and utilize the opportunities available to raise as much awareness as possible for the rhinos and other species he was working with at the time. Booking Your Gluten-Free Cruise Whether you're booking online through the cruise line or your favorite website or travel agent, you'll want to make sure to call the cruise line with your itinerary cruise number and tell them you are gluten-free. In addition, you'll want to let them know of any other food allergies or sensitivities you have so they can list all of them on your account. This way, the Matre' D can pull up your list and make sure you receive safe food during your cruise vacation. Choosing Your Dining Room on Your Gluten-Free Cruise Choose one dining room you would like to eat at for the rest of the week and eat there consistently as the staff, and your maitre D will be more familiar with your diet when you frequent their restaurant. To ensure you receive safe food, try to find the Matre' D for your restaurant, and before the cruise starts, make sure to thoroughly explain your food sensitivity, allergy or Celiac and the importance of receiving safe food because of medical reasons and that your diet isn't a preference. Be clear with him or her that you will be dining in that room all week for dinner, and you're excited to see what dishes you can eat during your time on your cruise vacation. Dining on Your Gluten-Free Cruise Let your waiter know you have a pre-order because of a food allergy, as many people don't understand Celiac or auto-immune disease. Feel free to tell the Matre' D you put in your pre-order the night before and that you have a food allergy, and your food should come out with the rest of the food at your table. Eating Gluten-Free on the Cruise Ship Buffet Quite honestly, this is the only buffet that I feel safe eating because the chefs on cruise lines really know their food! Look around to see what choices you can see are gluten-free, such as fruit, salad without dressing, and steamed veggies. Go to the counter and ask for the head chef. He or she will give you a tour of the buffet and let you know what foods are safe for you to eat and which ones you'll want to avoid. What to Know When Visiting Rome If you are looking to experience Italy's culture, you may want to pass on going to Rome. Favorite Way to Travel in Rome Shireen and I are both fans of hop-on and hop-off bus tours around the globe. If you're wanting to get a great deal on your next hop-on and hop-off adventure, check out my travel deals page on my website. We both agree that getting a deal on a bus tour is the perfect way to quickly see many of the sites. In addition, this is an excellent method to transport yourself around a city, without having to worry about parking and driving in a town you aren't familiar with. With the bus tour, you can see many of the major attractions quickly. If you have a limited amount of time in a city, this is the perfect way to capture various highlights in just a day or two of your visit. In addition, you can get great pictures of the statues, buildings, and cultural places in the city you are vacationing when you sit in the open-air bus seating. You'll definitely want to check out the local churches as many of them sell opera tickets for different performances at the local places of worship. Shireen says, “My friend that was with me doesn't even like opera and she loved it!” You'll hear the arias - the opera's highlights - which give you a condensed version of an entire opera without missing the best pieces. When in Rome, Eat Gelato! Shireen has the BEST philosophy when it comes to eating gelato: “Once you finish eating gelato, you just get more gelato! It's a philosophy that's very easy to live by, and very easy to follow.” I am on board with that philosophy for sure! You can find gelato every 200 yards in Rome, so it's a great place to test many different flavors and brands of gelato! When to Visit Rome Although the summertime is a good time of the year to visit if you're looking for fewer crowds, it's also scorching in Rome during the summertime. Of course, you can visit in the cooler months for better weather, but you will find that it's more crowded in Rome. Visiting the Colosseum in Rome “There's so much history around the Colosseum in Rome.” As a lover of history, the Colosseum was the perfect spot for her to visit. You can learn many of the details about the mystery of the Colosseum that you didn't learn in school. “You also don't realize how big it is until you are standing right next to it. The Colosseum is massive!.” She says, “There's something very magical about knowing how many thousands of years old it is, and yet it's still standing. You're really standing in history.” The Pantheon Considered a religious structure, the Pantheon is a sundial that is restricted to the amount of visitors that can walk the steps in an effort to preserve this ancient Roman landmark. When you visit, you'll need to be covered to your shoulders and down to your knees, similar to when you could visit Notre Dame in Paris. The Infamous Trevi Fountain in Rome This ornate fountain contains many statues of Roman gods, in various poses, with water spouting from the carved stone. Every year, people climb into the fountain, although that is not allowed in Rome. However, Italian police are standing around the fountain, so be warned that you can get caught if you decide to take a dip in the Trevi Fountain! Visiting the Vatican Shireen suggests planning ahead and getting a tour of the Vatican. Not only do you receive a great tour, but you also get to skip the wait! Bypass the line and get into the Vatican with a tour. Once you are in, you can walk about anywhere tourists are allowed to visit inside this ancient building. Meet Jerry Bigam Jerry is a native Canadian whose wife was diagnosed with Celiac disease in the early 90s. Naturally high in Vitamin C, these bright red alpine berries are a vital food source that lasts the local bears through the winter. Native Americans prize them as well, using them in pemmican which is a nutritious mix of meat protein and fat that lasts for years, similar to beef jerky.. In Algonquin, Kinnikinnick also means ‘mixture', referring to its use with tobacco and believed to carry the smoker's prayers to the Great Spirit. Tea from the leaves is also used to treat urinary tract diseases and can help with obesity. History of Kinnikinnick In 1991, Ted Wolff and Gudrun Von Selzam moved to Canada from Germany. After stints working in health food stores, they came up with the idea of producing allergy-conscious foods for Edmonton's Farmer's Market. With Ted in charge of recipe development and Gudrun running the marketing department, Kinnikinnick was born! In 1992, Ted and Gudrun had enough of a following to open their first store, a tiny 250 sq ft space on Whyte Avenue. In this episode, I'll share with you what you want to do when you visit Stonehenge, visit this World Heritage Site during COVID, and events in Stonehenge and other places of interest, which are featured in the English Heritage organization. Before you visit Stonehenge, make sure to discover more about traveling internationally by picking up The Guide to Traveling Gluten Free before you travel! History of Stonehenge The earliest structures known in the immediate area are four or five pits, three of which appear to have held large pine ‘totem-pole like' posts erected in the Mesolithic period, between 8500 and 7000 BC; however; no one understands how these posts relate to the later monument of Stonehenge. When much of southern England was largely covered by woodland, the chalk downland in the area of Stonehenge may have been an unusually open landscape which is the most plausible reason why this ancient place became the site of an early Neolithic monument complex. This complex included the causewayed enclosure at Robin Hood's Ball, two cursus monuments or rectangular earthworks (the Greater, or Stonehenge, and Lesser Cursus), and several long barrows, all dating from the centuries around 3500 BC. The presence of these monuments probably influenced the later location of Stonehenge. Stonehenge is limiting visitor numbers to help keep everyone safe, and you won't be able to visit without your booking confirmation. If you're a Member or Local Residents Pass holder, your ticket will be free, but you still need to book in advance. Stonehenge VIP Experience A remarkable opportunity to spend time inside the tranquil circle of Stonehenge, the VIP experience at Stonehenge takes you up close to this world-famous monument. Walk among the inner circle of the Stonehenge ring and learn the secrets of the stones from your knowledgeable host and experience the power and mystery of these ancient sarsens and bluestones for yourself. In this episode, I'll share with you how to travel gluten-free when you're flying. Find out how to pack your food, learn how to successfully get through TSA without getting your bag searched and how to communicate to the airlines that you need a specialty gluten-free diet. Learn more about flying gluten-free by picking up a copy of my book, The Guide to Traveling Gluten Free. Finding Food in an Airport Finding safe options to eat in an airport can be super tricky! Many airport restaurants are slammed busy serving, so this puts a high level of cross-contamination in place and creates an unsafe food prep environment for anyone who is Celiac. Nowadays, some airports are posting their restaurants and offering gluten-free offerings, such as Atlanta Airport Restaurant Menu and Salt Lake City Airport Food Guide. You can look at the restaurants they have and choose accordingly. I will look for Freshens as they have certified gluten-free smoothie offerings, PF Changs for safe food, and Jersey Mike's subs, all of which offer safe Celiac food. Although Jimmy John's doesn't have a gluten-free protocol, I've never been sick of one as they are food aware and will change their gloves and give you separate condiment packages. Types of Snacks to Pack While You're Flying When you're flying gluten-free, certain types of food and snacks are better to take than others when you're traveling. For example, when traveling, you'll want to avoid large packaging, food that crumbles easily (such as rice crackers), liquids more than 2oz, chocolate, or any types of coatings which will readily melt. You'll also want to avoid snack items that can easily leak such as peanut butter and any food that has liquid in the pouch. You'll want to look for and bring a snack on the airplane as many airlines do not have safe gluten-free snacks. My favorite snacks to bring on a plane are nuts, meat sticks from EPIC, protein bars, pumpkin seeds, dried fruit, and crackers. How to Pack Your Gluten Free Snacks When Flying When packing your snacks, make sure to put them at the top of your suitcase so that they don't get squished in transit. If you're packing your snacks in a check-on bag, put smaller bags into a larger Ziploc bag so that they are easy to see if the agent opens up your checked bag after scanning. Using packing cubes is a great way to organize your vacation necessities, including your food and snacks. I recommend getting smaller sized packing cubes so that you can easily pack your items in a weekend bag or suitcase. You'll also want to make sure that you have travel-sized liquids and cosmetics in your bag before you check it or carry-on the airplane. Getting Through Airport Security with Gluten Free Food This part can be tricky if you don't know what to do! When I pack my snacks, I double Ziploc my snacks in bags. After double Ziploc, I'll take my snacks out of my bag and put them in a separate bin so that agents who are looking at the scanner can tell it's food and not a dangerous weapon LOL. Additionally, putting all your food in Ziploc bags protects your food packaging from being touched by the TSA agents, keeping your food clean and safe. Ordering Gluten-Free Food for Your Flight Make sure to specify that you need a gluten-free meal as soon as you book your ticket. Always call the airline you booked with directly to ensure they have your specialty diet needs taken care of so you aren't stuck without food on a long flight. In this episode, I'm chatting with Tim Pickett, who is the founder of the Utah Therapeutic Center. Tim sees patients with chronic illnesses such as chronic pain, auto-immune diseases and terminally ill patients, all of whom are seeking relief from their symptoms without using pharmaceutical drugs. What is Medical Cannabis? Medical cannabis is using the marijuana plant and extracting the healthy, inflammation-fighting components of the plant. You can receive medical cannabis in tinctures, edibles, whole flowers, vape cartridges, balms, and sprays. “The art of Medical Marijuana and plant-based medicine is to ascertain what ratio and strain might be right for the patient, how best to administer the plant as medicine, and how to utilize patient feedback to get the best outcome.” Medical Cannabis is different from using marijuana for recreational use. With medical cannabis, patients are using this plant for relief of symptoms, not to get high. If you're looking to find relief from your chronic condition and find that you want to balance the THC in your cannabis, you can try using CBD for a more balanced effect. How Can I Get a Medical Marijuana Card? In Utah, you have to qualify under one of the qualifying conditions to get a medical marijuana card. These conditions are Aids, Alzheimer's, chronic pain, terminal illness, ALS, Autism, Chron's, Ulcerative Colitis, seizures, MS, PTSD, muscle spasms, and cancer. To apply for a card, you must have a QMP - a qualified medical provider - who has taken and passed the certification to recommend medical cannabis. I've had only positive experiences at the Utah Therapeutic Clinic with their caring and professional staff. Once you have been approved for a medical marijuana card, you can meet with a pharmacist at the dispensary located near you to find out which types of cannabis are a good fit for your specific symptoms. Where Can I Find Medical Marijuana in Utah? There are almost ten dispensaries located and dispersed throughout Utah. My go to pharmacy is Deseret Wellness in Park City. You can find a list of Utah licensed dispensaries on the Utah Therapeutic Website. How Should I Dose My Medical Marijuana? Like other medicinals used, you always want to start with small doses and work your way up. Also, you'll want to try one or two strains at first, then change up to or add medical cannabis as needed. I've had great results using Limonene during the day for depression and their 1:10 tincture for joint pain. In this episode, I’ll share with you how to go spring hopping and how to enjoy countless hours soaking in hot springs, which springs I liked the best, and amazing gluten-free food you can find when you’re visiting Steamboat Springs. Colorado Road Trip Planning a vacation to Colorado is easier than you think! Because Colorado is such a health-conscience state, there are many options that a member of our gluten-free community can enjoy safely. With plenty of health-food stores and dining options you’re sure not to go hungry when traveling to Colorado by car. In addition to traveling by car, the Denver airport is a major hub, so you can also fly-in and out of Denver International easily. Since there are only a few gluten-free places inside the airport, plan to get a bite to eat after landing. Hot Spring in Steamboat Springs, Colorado Old Town Hot Springs From their website, "Old Town Hot Springs has eight different pools providing different functions to the facility. All of the water originates from the all natural Heart Spring and eventually flows into the additional pools. The pools vary in temperature from 103 degrees to our 80 degree lap pool." Definitely a local's favorite, Old Town Hot Springs is part of the Steamboat Rec Facility. You can purchase a day pass and soak all day long in the springs. Enjoy the waterslide, rock climbing wall, or regular chlorinated lap pool for some water fitness. I enjoyed the size of this facility and the family-friendly atmosphere of Old Town Hot Springs. Each pool is maintained at a different temperature to find the amount of heat you are most comfortable in. Besides the large main pool with a bridge, there are several other smaller pools you can soak in that are more adult-oriented. In addition to the main hot springs, Steamboat also boasts smaller springs that are not heated over 75 degrees. You can find a list and location here on this Hot Springs guide. Strawberry Park Hot Springs Definitely my favorite of all the hot springs I've been to in Steamboat; Strawberry Park Hot Springs offers multiple large pools with varying levels of heat. In addition to the pools, they also have chairs and provide a large restroom with a changing area. You can stay overnight in one of their cabins, the caboose train, or bring your own tent for tent camping along with enjoying the hot springs. If you're on the risque side, you're in luck! Strawberry offers clothing-optional bathing after dark to enjoy bathing in your birthday suit. Eating Gluten Free in Steamboat Springs Do you like Greek food? If so, head over to Skull Creek Greek to eat falafels in a dedicated fryer and gluten-free pita bread! Also, check out Seedz Breakfast and Lunch Cafe, where most of their menu is gluten-free, and all of their menus are healthy! Grab gluten-free bread to go after eating your gluten-free pancakes for breakfast or lunch. If you’re looking for a dedicated gluten-free facility, then head on over to Inclusions Bakery and Dessert Bar for a yummy and gluten-free cinnamon roll or if you’re looking for lunch, try the pot pie or quiche. Since the owner is Celiac, they understand the importance of being gluten-free and ensuring amazingly good food for all of us in the community. For more lunch choices, grab a bite to eat at Salt and Lime, where the staff can tell you what is safe to eat as their menu isn’t labeled. Looking to take your lunch out for a picnic? In this episode, I’ll give you the 411 on how to visit Devil’s Tower National Monument and why you want to visit the Crazy Horse Memorial. Devil’s Tower is the geologic formation that was made famous by the Steven Speilberg movie Close Encounters of the Third Kind and not much has changed in the area since the movie was filmed in 1977. South Dakota and Wyoming Travel Tips When you’re planning a vacation to South Dakota or Wyoming, you’ll want to be prepared to drive long distances across these vast, open, and rural states. While there are many outdoor and tourist activities to be had, the most essential aspect you’ll need to remember is to consistently map out where you will go in a location that you have decent wi-fi. Wyoming is a big state, with very few accommodations in between cities as there are many farms and thousands of acres of open space. This is definitely a place where you’ll need to do some planning ahead for your activities - mainly because the drive-in between them can be lengthy. In addition, Wyoming doesn’t have very many places that are gluten-free friendly, which adds to the amount of planning you’ll need to do in advance of your trip. Devil’s Tower National Monument If you are a fan of the Steven Spielberg movie Close Encounters of the Third Kind, you’ll definitely want to take a trip out and experience Devil’s Tower National Monument. What I love about this monument, besides the fact that I became completely enamored with this geologic feature when I first saw the movie at the age of five in 1977, is that you can easily see the entire park on the weekend! From the park entrance, check out the visitor center, which offers you views of the different sides of the monument. The Tower Trail and other hikes offer changing views of the Tower. When you drive in from the highway, you can see the one side of the Tower with the amazing and beautiful landscape surrounding this geologic feature. Definitely pull over and get a picture of the Tower a few miles out before you get into the park. Once inside the park, you’ll be able to hike around the entire Tower with the ability to see many perspectives of the geologic formation. To truly see the Tower, one must observe it from all perspectives. Before white settlers came into the area and gave this geological feature its American name, our Native American peoples celebrated and lived around the Tower for thousands of years; their modern descendants still maintain a connection with this place on a physical and a spiritual level. “Oral histories passed down by various American Indian tribes, as well as their present-day ceremonies, offer us important perspectives of the Tower.” Crazy Horse Memorial The Crazy Horse Memorial is the largest carved monument to date, and if you placed it on top of Mount Rushmore, it would easily consume the entirety of this monument. Over one million people visit this unique and beautiful work of art, which was started in 1939 when Chief Henry Standing Bear met Korczak Ziolkowski 1939 at the World’s Fair. Chief Henry hired Korczak to build and construct this massive undertaking. Along with his wife Ruth Ross and their ten children, Korczak worked daily on their new life project. You can easily see the mission of Crazy Horse Monument in practice today, “The mission of Crazy Horse Memorial Foundation is to protect and preserve the culture, tradition, and living heritage of all North American Indians. With their mission leading the way, the original sculpture has expanded into a visitor complex of over a dozen buildings, including an educational and cultural center for Native Americans, history and cultural museum, and several carving rooms. Crazy Horse Memorial is definitely a must-see if you are in South Dakota or Wyoming, so make sure to put this monument on your list. It’s definitely an all-day experience that you won’t want to miss! Other Fun Activities in Wyoming Since you’re already in Wyoming, you may want to stop at other locations besides Devil’s Tower and Crazy Horse. One of the other activities I took part in while on my vacation in Wyoming is the Badlands Helicopter Tour we took to see Mount Rushmore National Monument. This was a great choice to view the monument as you avoid all the traffic on the way up. However, you’ll have a hard time getting good pictures of the memorial from a helicopter, but the ride-up is definitely fantastic! I didn’t get to see a few places but looked like a great option: The Mammoth Site of Hot Springs, South Dakota, the Reptile Gardens, The 1880 Train, The Prairie Berry Winery, which is the region’s most awarded winery. I’d also recommend a hot air balloon ride, which always gives you a fantastic bird’ eye view of the landscape and geology. Fly the Black Hills offers the opportunity for you to soar in a hot air balloon. Also, check out Tatanka, the Story of the Bison, and find out how the bison almost went extinct. Slide Rock State Park in Arizona has a river running through the middle and towering rock cliffs on either side. Take advantage of the slippery rock and slide down the river on the natural rock to the pools below! It’s such a great time, especially if you love water activities. Red Rock State Park also has many outdoor trails and activities to do! Check this park out if you’re looking for gorgeous scenery to take pictures of on vacation. Trails you’re going to want to hike are Boyton Trail, Cathedral Rock, Devil’s Bridge Trail, Lower Chimney Rock Trail. If you like scenic drive, check out the Red Rock Scenic Byway in Sedona and drive state highway 179 through red rock country. Make sure to pullover to get shots of this beautiful landscape. Shopping in Downtown Sedona Tlaquepaque Arts and Shopping Village offers shops, food and scenery. You can also spend time at one of the many other shopping areas such as The Collective Sedona and Sinagua Plaza. Fun Things to Do in Santa Fe Museums are always on my list of things to do when I travel, which is why I was excited about the Georgia O’Keefe museum and the Gerald Peters Art Gallery and Folk Art Museum on the Hill. I didn’t know this, but Santa Fe is the fifth largest artistic center in the world! Apparently, Santa Fe is a significant crossroads for singers, songwriters, and artists because this city is a stopover for artists traveling to and from California. The Indian Market, where local native Americans sell their art, rugs, and other cultural items, and the Spanish Market of Santa Fe are two fun, local markets you can attend in the summer and early fall. During August and September, find lots of local goods and fare to buy and try. In addition to these two markets, visit Zozobra Art Park during harvest time for great local fun. Chaco Canyon Historical Park, located northwest of Albuquerque, is a tremendous local, national park to visit and learn the history and culture of the region. Two Grey Hills Trading Post sells a variety of native blankets and jackets. Support local Native Americans by stopping by and making a purchase! In this episode, I'm chatting with Gluten Free Dave who has been gluten free for over ten years. Gluten Free Dave's journey began with an autoimmune disease diagnosis of Hashimoto's thyroid disease. A long-term family doctor never tested Dave for thyroid disease because his doctor thought only women had thyroid problems. Changing doctors was a significant first step, but his doctor didn't understand gluten or nutrition. "I have always loved to cook, but since going gluten-free, I have become obsessed with baking too! I was a beer drinker before going gluten-free. I was basically on the Atkins diet after going GF as I didn't know what I was doing and only ate meat and vegetables!" After going GF, Dave didn't drink beer for over a year because he didn't know GF beers existed. There is a lot of misinformation about what a GF beer is, and he learned the hard way that gluten-removed is not gluten-free! In line with his passion for beer, Dave has created his vacation adventures around visiting gluten-free breweries. He's visited six of the 15 gluten-free breweries in the US and has a goal to see them all. "My wife and I have planned our recent vacations around the cities that host GF breweries. We research nearby safe restaurants and love to hike." So far, Dave's visited GF breweries in Seattle, WA, Portland OR, Golden CO, St Paul MN, Madison, WI, and Tulsa, OK, with plans to visit more gluten-free breweries in the upcoming Post-COVID travel months! Making Connections to Start a New Career At first, Lynn wanted to write editorials for a living and quickly found out that this was not an efficient process for creating consistent income. She started her new career in content creation by offering website content and LinkedIn profiles, building her business organically. "My two superpowers are coming up with ideas and networking." Using these two superpowers, Lynn hustled and started connecting with other business owners to build her network. Pivoting for a COVID Comeback "Half of my clients were travel-based before COVID hit and I lost all my travel clients the second week of March." Being a business owner, Lynn is aware that being consistent and dedicated to what she does is key to running a successful business. Lynn is pivoting her content creation business with the start of her new content membership, Content Concierge. Content Concierge is a membership platform that travel professionals can join for a monthly subscription to have access to unlimited travel content which can be personalized for their business. In addition to offering content, Content Concierge is also a networking platform as travel influencers, and travel podcasters will also be a part of her membership.
