Hey friends, remember the episode when I finally had my husband Rob on and you all got to meet him? Not only was that a lot of fun, but in that episode Rob and I talked about our ongoing struggles with meal planning and how it's something we're working on. That led me to want to talk to an expert in meal planning and today I'm excited to introduce the expert I found to all of you! Meet Courtney Genereux, a registered nurse who recently completed her level one Precision Nutrition coaching certification. Courtney is passionate about meal planning and how it changed the way meals happen for her family. So join me in learning some motivating tips from Courtney so we can look at meal planning in a whole new light. Courtney came to meal planning after working a lot of shift work as a registered nurse. She suddenly realized that she simply wasn't taking the time to care for herself and the meal choices she made affected her kids and family too. She got serious about meal planning after that and has fit it into her busy lifestyle in a way that really works. When I explained to Courtney that one of the pain points with Rob and me in meal planning was that we really tried to get innovative and make new recipes every night, and how that really didn't work, Courtney revealed how she shares meal picking duties with her husband and kids and they find meals that are easy prep for everyone. Courtney's advice centres around putting the joy back into food and planning meals, finding ways to make additional meals for lunches while working on dinner, freezing extra, finding a fast breakfast that works and having it ready to go in the mornings, and so many other tips that just make sense. Today Blu interviews Drew Mulvey MS, CDN, CNS, CLT, PNL1, CISN. Drew graduated Summa Cum Laude from the University of Bridgeport with a Master of Science in Human Nutrition in 2018 and received a Bachelor of Arts in Biology in 2012.  She is currently certified by the state of Connecticut as a Certified Dietitian/Nutritionist as well as a Board-Certified Nutrition Specialist, Certified Leap Therapist, Precision Nutrition Level 1 Coach, NASM Certified Personal Trainer, Certified Integrative Sports Nutritionist, and has her own practice Redeeming Life Nutrition, LLC.   Drew has gained her nutrition experience working in several arenas including weight loss clinics, personal training, interning under a naturopathic doctor, through her personal practice, and a competitive residency program under a functional medicine nutritionist. She prides herself in helping active women transform their mindsets and beliefs around food, find their true selves, and empower them to ignite their true athletic potential. Her passion stems from my struggles with disordered eating and multiple health battles during my teens, such as Fibromyalgia, Chronic Fatigue Syndrome, Autoimmunity, and bulimia. In her twenties, from overactivity and disordered eating patterns known as orthorexia, she developed the Female Athlete Triad, a complex stemming from low energy intake and leading to a loss of menses and decreased bone density.  All these significantly impacted on her athletic career and could have all been avoided.    She decided to enroll in her Master of Nutrition program so that her eyes were open to other avenues such as Naturopathic Medicine, Acupuncture, Nutrition, Supplementation, Food Sensitivity Testing, Traditional Chinese Medicine, and Mindset Reformation. By incorporating these principles, entering a 12-step program known as Celebrate Recovery, and reshaping her relationship with food and herself; she was able to break the chains of disordered eating and regain her athletic ability back. Today, she has now found a deep passion for endurance sports and has an Ironman 70.3 set in her future endeavors.   Her goal is to get to the root cause of the problem spiritually, emotionally, and physically to create new foundations, leading these women to transformation and success in their athletic careers and their lives.  It is an incredibly individualized approach that captures their strengths and uses them to "break the cycle."

Almost 6% of Americans Are Vegans, i.e., 9.7 Million. (The Guardian) In 2014, the statistic was 1%. This 500% increase speaks to the fact that people in the US are doing more than just talking about veganism, says The World Animal Foundation.  For Scott Burgett he helps vegans lose up to 20 lbs in four months without crazy restrictive diets.  He's the  founder of Evolution Vegan Academy. An online coaching program that helps vegans lose up to 20 lbs in four months using his M3 Fit System. He is a CSCS and Precision Nutrition Level 1 certified coach and has trained both professional and collegiate athletes. Living in Austin with his wife, dog, and son, Scott's mission is to help create vegans leaders in his community so they can spread their impact throughout generations.  Rewind back to 2013. I'm fresh out of college, moved back to Arizona from Washington state, and starting in the world of working for myself. I graduated with a degree in Exercise Science and wanted to become a professional strength coach in the NFL. I played football my whole life, through college, and felt that was my calling. To help athletes perform at high levels. After working a couple of odd jobs right out of school, I landed a small role as a performance coach for the Seattle Mariners baseball team. And during that time, I was first exposed to plant-based eating after watching a documentary in 2014. At the time, I didn't think anything much other than, “that seems interesting, but it's not for me.” A year goes by and I realize that I felt unfulfilled in my personal life. Working in professional sports was fun but also exhausting, with very little pay. So I decided to switch gears and landed a job at a bank as a Wellness Administrator in San Antonio, TX. My girlfriend at the time and I picked up our life and hauled our things across half the country to Texas. During my time at this job, I really started taking a greater interest in health and documentaries started to become really popular on Netflix. In particular, docs about plant-based eating and veganism. I started to take more of a liking to them because I resonated with the message: take care of yourself, the planet and the animals. It was April of 2016, and I started to experiment more with plant-based eating. I'd pack a mason jar salad for my lunch at work but started to swap my chicken for chickpeas. I'd start small at just one meal for a couple of weeks, then two, and so on and so forth until all meals were plant-based. Then my dinners became more plant-based and so did my breakfast choices. I felt great and was having a lot of fun with this new way of eating. And during one night I'll never forget in January 2017, my wife and I were watching the critically acclaimed documentary Cowspiracy. I remember vividly I was washing the dishes in our two-bedroom apartment, my wife Cally was on the couch, and the scene came on the TV that showed the fate of baby male chickens. Cory Walts was hired as the Director of Strength & Conditioning at the University of Pennsylvania in April 2019. Walts came to Penn from nearby Haverford College, where he spent 12 years as the head strength and conditioning coach and fitness center director. During that time, he designed and implemented year-round sports performance programs for a majority of Haverford's 23 varsity sports and several club sports teams. He utilized a holistic approach to create robust individuals and teams, focusing on physiological qualities (movement skill, strength, power, speed, agility, and energy systems); psychological qualities (growth mindset, grit, and internal motivation through the use of education, autonomy and accountability); and lifestyle qualities (positive habit formation in sleep, nutrition, hydration, and mindfulness). During Walts' tenure, a number of Haverford teams reached unprecedented heights. The volleyball program won three consecutive Centennial Conference titles under Walts' guidance and reached the NCAA Regional semifinals in 2014, while men's soccer advanced to the 2015 NCAA Elite Eight. From the spring season, baseball won three conference titles, advanced to the NCAA Regionals and had two student-athletes drafted in the eighth round of the MLB Draft, while softball advanced to the NCAA Super Regionals for the first time in 2016. Haverford also had 12 student-athletes selected as National Strength and Conditioning Association (NSCA) and EAS Sports All-Americans during his last five years on campus. In addition to his work with Haverford student-athletes, Walts served as director of the Joe Schwartz '83 Memorial 3K Run/Walk, which raised more than $75,000 for ALS research and had more than 2,000 participants from the campus community. He taught multiple classes within Haverford's Physical Education program and co-created the Healthy Mind/Healthy Body and Employee Wellness Committees, multi-department initiatives aimed at enhancing student and employee wellness respectively. Walts is co-Head of the Philadelphia Area Strength & Conditioning Association, which fosters relationships and develops knowledge specific to the profession of Strength & Conditioning for those in and around the Philadelphia area. He also is a member of West Chester University's Exercise Science Advisory Board and oversees the Strength and Conditioning program for the Marian Anderson Recreation Center in South Philadelphia. In 2013, Walts was a finalist for the NSCA College Strength and Conditioning Coach of the Year Award. Walts graduated magna cum laude from Ithaca College in 2005 with a major in clinical exercise science and played four years for the football program. Following internships with the strength and conditioning departments at Cornell University and the Buffalo Bills, he earned his master's degree in kinesiology from the University of Maryland in 2007. Walts also worked with the Terps' strength and conditioning department during his two years in College Park, serving as the strength and conditioning coach for men's tennis and assisted with football, men's and women's basketball, and men's and women's swimming. Walts is a Certified (with Distinction) Strength and Conditioning Specialist through the National Strength and Conditioning Association (NSCA) and a Certified Level 1 Sports Performance Coach with USA Weightlifting. He also is Precision Nutrition Level 1 certified and certified in CPR/First Aid and AED by the American Red Cross.
