#216:  Tina Owens, senior advisor to the Nutrient Density Alliance, joins Dave to discuss how the future of nutrient density testing could be the key to transforming our food system. With years of experience representing major food companies like Kellogg's and Danone, and a family background in farming, Tina unpacks the science behind “nutritional dark matter,” the power of soil health, and why real organic and real regenerative practices matter more than ever—for farmers, eaters, and the planet. Tina Owens co-founded the Nutrient Density Alliance, where she continues to serve as a senior advisor. In addition to her work with big brands like Kellogg's/ Kashi and Danone, she has held board positions at Mad Agriculture and The Non-GMO Project.https://www.nutrientdensityalliance.org/aboutTo watch a video version of this podcast with access to the full transcript and links relevant to our conversation, please visit:https://realorganicproject.org/tina-owens-nutritional-dark-matter-216The Real Organic Podcast is hosted by Dave Chapman and Linley Dixon, engineered by Brandon StCyr, and edited and produced by Jenny Prince. The Real Organic Project is a farmer-led movement working towards certifying 1,000 farms across the United States this year. Our add-on food label distinguishes soil-grown fruits and vegetables from hydroponically-raised produce, and pasture-raised meat, milk, and eggs from products harvested from animals in horrific confinement (CAFOs - confined animal feeding operations). To find a Real Organic farm near you, please visit:https://www.realorganicproject.org/directoryWe believe that the organic standards, with their focus on soil health, biodiversity, and animal welfare were written as they should be, but that the current lack of enforcement of those standards is jeopardizing the ability for small farms who adhere to the law to stay in business. The lack of enforcement is also jeopardizing the overall health of the customers who support the organic movement; customers who are not getting what they pay for at market but still paying a premium price. And the lack of enforcement is jeopardizing the very cycles (water, air, nutrients) that Earth relies upon to provide us all with a place to live, by pushing extractive, chemical agriculture to the forefront. If you like what you hear and are feeling inspired, we would love for you to join our movement by becoming one of our 1,000  Real Friends:https://www.realorganicproject.org/real-organic-friends/To read our weekly newsletter (which might just be the most forwarded newsletter on the internet!) and get firsthand news about what's happening with organic food, farming and policy, please subscribe here:https://www.realorganicproject.org/email/Are you an organic farmer looking to communicate the premium quality of your milk, meat, fruits, veggies, or CSA shares to shoppers? A conversation with Kiira Heymann, Director of Strategic Partnerships at the Non-GMO Project and the Food Integrity Collective. After the success of the Non-GMO Project in the U.S., which is now featured on almost 63,000 products, the team is launching the Non-Ultra-Processed Food verification. In this conversation, we discuss why—why introduce another label? And why is it so important for the food sector to focus on increasing consumers' capacity to demand more from their food system, rather than just adding another label? This isn't just another label—it's a carefully considered intervention designed to reconnect people with their food in profound ways. When 70% of American store shelves hold ultra-processed products engineered with ingredients banned in other countries, the stakes couldn't be higher. What makes this effort particularly fascinating is how it challenges the very foundation of food certification itself. Rather than creating another "shortcut to trust", the team is exploring how to eliminate the need for certifications entirely by rebuilding true transparency in our food system. Their research shows 81% of North Americans are concerned about questionable ingredients in their food, yet only 17% feel knowledgeable about the topic—a gap this initiative aims to close.Beyond ingredients, this movement addresses the cognitive impact of ultra-processed foods. Studies show these products can significantly impair brain function in as little as 30 days, creating a troubling cycle where the very foods engineered to be addictive are simultaneously diminishing our capacity to make better choices. By helping consumers understand and avoid ultra-processed foods, the certification offers a pathway toward better physical and mental wellbeing.Currently in its pilot phase with 20 pioneering brands, the non-UPFs verification program aims to launch products by fall 2025. The certification represents more than just another shopping guide—it's an invitation to experience the profound difference real food makes in how we feel, think, and connect with our world.More about this episode on https://investinginregenerativeagriculture.com/kiira-heymann.==========================In Investing in Regenerative Agriculture and Food podcast show we talk to the pioneers in the regenerative food and agriculture space to learn more on how to put our money to work to regenerate soil, people, local communities and ecosystems while making an appropriate and fair return. Why are we seeing more “made with bioengineered ingredients” on food packages? HINT: Nothing has changed with the ingredients—the law has changed! #068: Policy expert and organic advocate Alan Lewis of Natural Grocers is back, this time  to discuss the ways that Big Dairy, including conventional co-ops and processors, is able to control the pricing and availability of organic dairy products in stores. Alan Lewis is the VP of Government Affairs, Stakeholder Relations, and Organic Compliance at Natural Grocers. His 2019 talk at the first annual Real Organic Symposium blew a lot of minds, as he described the massive consolidation in the natural foods industry, which has been boiled down to two distributors. In addition to his roles with IFOAM North America, the  Non-GMO Project, and the Organic + Natural Health Association,  Alan serves on the Real Organic Advisory Board. To watch a video version of this podcast with access to the full transcript and links relevant to our conversation, please visit:https://www.realorganicproject.org/alan-lewis-corruption-anticompetitive-big-dairy-episode-sixty-eightThe Real Organic Podcast is hosted by Dave Chapman and Linley Dixon, engineered by Brandon StCyr, and edited and produced by Jenny Prince. The Real Organic Project is a farmer-led movement working towards certifying 1,000 farms across the United States this year. Take a look at the labels on food packages near you or in your kitchen. What do you see? These food labels can confusing, leading to misinformation and often guilty feelings that we're not doing the right thing for ourselves and our family. How do we filter through the marketing to understand what labels have true meaning? How can and should the agriculture community join in to clear the air on these topics? Or did we help contribute to the confusion of food labels? This week on the podcast, Carrie Mess (a.k.a. Dairy Carrie) and I sit down for another Over A Beer episode to discuss.. You can find those episode show notes here. Thanks to our sponsors (Yes! We finally have sponsors) Chad Anglin from Kentucky and Markie Hageman from California for buying us a beer. If you'd like to buy us a beer or get me to Wisconsin for future episodes, hit me up on Venmo. When Carrie and I sat down for this episode of the podcast, there were two label terms that were top of mind for us. Antibiotics and Hormones. Both things that spark emotion in us with the concern of these contaminants being in our food supply. Is it safe to eat? Is there reason for those labels to be there at all when we know there are regulations and inspection procedures in place to ensure food safety? We've both written about these topics before as restaurant chains have capitalized on labeling trends. But we also recognize the fact that this is marketing. And in some ways, agriculture advocates may have contributed to the hysteria and concern surrounding food labels, including Non-GMO Project, or any number of free-from labeling trends. We really shouldn't blame consumers for asking questions and being confused. There are so many options in the market today. As Carrie describes, her local grocery store is putting in a new section of coolers to be stocked solely with dairy options. Be sure to stay tuned as we describe some terms we've used that we now realize could be misinterpreted (cows on drug withdrawls?!?) and offer a few key tactics advocates can use to better engage in these discussions with others. This includes word choice and  listening. Let us know what you think about food labels and confusion in the marketplace by dropping a comment below or chiming in on Twitter. Like what you see here?

Glyphosate was patented as a chelator. It chelates with all sorts of minerals making them unavailable, and these are the minerals we want to have available. . The reason it was patented, it was patented as a descaler to clean the mineral deposits inside industrial boilers and pipes. So it was a cleaning chemical. It kills the beneficial bacteria in the soil and also in our guts, but not the nasty pathogens. It blocks the shikimate pathway which is a seven-step metabolic route used by cells to function. The shikimate pathway is used by gut bacteria to produce the precursors to; serotonin, melatonin, dopamine. Causes a leaky gut. “When you take human cells in a Petri dish that are bound tightly together with tight junctions, and you add Roundup in that Petri dish, they separate. So it loses the tight junctions. If that happens inside our gut, that's leaky gut.” Linked to birth defects. Linked to increased cancer numbers.   An Activist’s Timeline IRT started talking about the health dangers early on, 1996. Jeffrey published Seeds of Deception in 2003. It became a world best seller. He traveled all over the world with that book. People started changing the way they're talking about GMOs. Starting around 2010, I found that people who had been reading my books and reading my articles which were not lightweight. They were detailed and long as to ensure understanding of all the issues we faced with GMOs and glyphosate. In 2010, IRT created the Tipping Point Network of groups. In 2010 the Non-GMO Project came up. Started to verify products. There was a flood of people trying to get their products, Non-GMO Project verified so that they would get a boost in sales. So there was an 18-month waiting list for getting their verification. In 2012, he released the movie Genetic Roulette, and also there was a ballot initiative in California for labeling. Between the two of them, the number of people that were concerned about the health dangers in GMOs went from 51% in 2012 to 61% in 2013. Whole Foods, in 2013, said at the Natural Foods Expo West, "We're going to require products to be either organic, certified, or Non-GMO Project verified by 2018, or they will be considered GMOs." They also mentioned that when a product becomes non-GMO verified, there's an increase in sales at 15 to 30%. That was the tipping point for the natural products industry. At the beginning of 2014, other products started to do the same, who are not in the natural products industry, first was Cheerios, and then Grape-Nuts. It started in 2014 in the mainstream, and now it's 46% of Americans say they're seeking non-GMO food. All the major food companies are putting more and more effort into replacing the GM ingredients due to consumer demand. Then comes along 2015, the International Agency for Research on Cancer, determines that glyphosate is a class two A carcinogen. In particularly for non-Hodgkin's lymphoma. Now, the lawyers are involved because of the non-Hodgkin's lymphoma, and they started to defend and take on cases of people that had non-Hodgkin's lymphoma that were using Roundup, or the survivors. GMOs It's traditionally been where you take a gene from one species and you force it into the DNA of another species. The 6 main crops are; soybeans, corn, cotton, canola, sugar beets, alfalfa. The main reason they genetically engineer is to allow that crop to be sprayed with herbicide. These are chemical companies making seeds that tolerate their chemicals. Roundup not JUST glyphosate in the formula -  the ENTIRE formula Roundup can be 125 times more toxic than glyphosate.    Human Health Impacts of GMOs - 10 Reasons to Avoid GMOs Source: https://responsibletechnology.org/10-reasons-to-avoid-gmos/ 1. GMOs are unhealthy. The American Academy of Environmental Medicine (AAEM) urges doctors to prescribe non-GMO diets for all patients. They cite animal studies showing organ damage, gastrointestinal and immune system disorders, accelerated aging, and infertility. Human studies show how genetically modified (GM) food can leave material behind inside us, possibly causing long-term problems. Genes inserted into GM soy, for example, can transfer into the DNA of bacteria living inside us, and that the toxic insecticide produced by GM corn was found in the blood of pregnant women and their unborn fetuses. Numerous health problems increased after GMOs were introduced in 1996. The percentage of Americans with three or more chronic illnesses jumped from 7% to 13% in just 9 years; food allergies skyrocketed, and disorders such as autism, reproductive disorders, digestive problems, and others are on the rise. Although there is not sufficient research to confirm that GMOs are a contributing factor, doctors groups such as the AAEM tell us not to wait before we start protecting ourselves, and especially our children who are most at risk. The American Public Health Association and American Nurses Association are among many medical groups that condemn the use of GM bovine growth hormone, because the milk from treated cows has more of the hormone IGF-1 (insulin-like growth factor 1)―which is linked to cancer. 2. GMOs contaminate―forever. GMOs cross pollinate and their seeds can travel. It is impossible to fully clean up our contaminated gene pool. Self-propagating GMO pollution will outlast the effects of global warming and nuclear waste. The potential impact is huge, threatening the health of future generations. GMO contamination has also caused economic losses for organic and non-GMO farmers who often struggle to keep their crops pure. 3. GMOs increase herbicide use. Most GM crops are engineered to be “herbicide tolerant”―they deadly weed killer. Monsanto, for example, sells Roundup Ready crops, designed to survive applications of their Roundup herbicide. Between 1996 and 2008, US farmers sprayed an extra 383 million pounds of herbicide on GMOs. Overuse of Roundup results in “superweeds,” resistant to the herbicide. This is causing farmers to use even more toxic herbicides every year. Not only does this create environmental harm, GM foods contain higher residues of toxic herbicides. Roundup, for example, is linked with sterility, hormone disruption, birth defects, and cancer. 4.Genetic engineering creates dangerous side effects. By mixing genes from totally unrelated species, genetic engineering unleashes a host of unpredictable side effects. Moreover, irrespective of the type of genes that are inserted, the very process of creating a GM plant can result in massive collateral damage that produces new toxins, allergens, carcinogens, and nutritional deficiencies. 5. Government oversight is dangerously lax. Most of the health and environmental risks of GMOs are ignored by governments’ superficial regulations and safety assessments. The reason for this tragedy is largely political. The US Food and Drug Administration (FDA), for example, doesn’t require a single safety study, does not mandate labeling of GMOs, and allows companies to put their GM foods onto the market without even notifying the agency. Their justification was the claim that they had no information showing that GM foods were substantially different. But this was a lie. Secret agency memos made public by a lawsuit show that the overwhelming consensus even among the FDA’s own scientists was that GMOs can create unpredictable, hard-to-detect side effects. They urged long-term safety studies. But the White House had instructed the FDA to promote biotechnology, and the agency official in charge of policy was Michael Taylor, Monsanto’s former attorney, later their vice president. He was the US Food Safety Czar under President Obama. 6. The biotech industry uses “tobacco science” to claim product safety. Biotech companies like Monsanto told us that Agent Orange, PCBs, and DDT were safe. They are now using the same type of superficial, rigged research to try and convince us that GMOs are safe. Independent scientists, however, have caught the spin-masters red-handed, demonstrating without doubt how industry-funded research is designed to avoid finding problems, and how adverse findings are distorted or denied. 7. Independent research and reporting is attacked and suppressed. Scientists who discover problems with GMOs have been attacked, gagged, fired, threatened, and denied funding. The journal Nature acknowledged that a “large block of scientists . . . denigrate research by other legitimate scientists in a knee-jerk, partisan, emotional way that is not helpful in advancing knowledge.” Attempts by media to expose problems are also often censored. 8. GMOs harm the environment. GM crops and their associated herbicides can harm birds, insects, amphibians, marine ecosystems, and soil organisms. They reduce bio-diversity, pollute water resources, and are unsustainable. For example, GM crops are eliminating habitat for monarch butterflies, whose populations are down 50% in the US. Roundup herbicide has been shown to cause birth defects in amphibians, embryonic deaths and endocrine disruptors, and organ damage in animals even at very low doses. GM canola has been found growing wild in North Dakota and California, threatening to pass on its herbicide tolerant genes on to weeds. 9. GMOs do not increase yields, and work against feeding a hungry world. Whereas sustainable non-GMO agricultural methods used in developing countries have conclusively resulted in yield increases of 79% and higher, GMOs do not, on average, increase yields at all. This was evident in the Union of Concerned Scientists’ 2009 report Failure to Yield―the definitive study to date on GM crops and yield. The International Assessment of Agricultural Knowledge, Science and Technology for Development (IAASTD) report, authored by more than 400 scientists and backed by 58 governments, stated that GM crop yields were “highly variable” and in some cases, “yields declined.” The report noted, “Assessment of the technology lags behind its development, information is anecdotal and contradictory, and uncertainty about possible benefits and damage is unavoidable.” They determined that the current GMOs have nothing to offer the goals of reducing hunger and poverty, improving nutrition, health and rural livelihoods, and facilitating social and environmental sustainability. On the contrary, GMOs divert money and resources that would otherwise be spent on more safe, reliable, and appropriate technologies. 10. By avoiding GMOs, you contribute to the coming tipping point of consumer rejection, forcing them out of our food supply. Because GMOs give no consumer benefits, if even a small percentage of us start rejecting brands that contain them, GM ingredients will become a marketing liability. Food companies will kick them out. In Europe, for example, the tipping point was achieved in 1999, just after a high profile GMO safety scandal hit the papers and alerted citizens to the potential dangers. In the US, a consumer rebellion against GM bovine growth hormone has also reached a tipping point, kicked the cow drug out of dairy products by Wal-Mart, Starbucks, Dannon, Yoplait, and most of America’s dairies.   Differences  in Labeling Terms Non-GMO Project Verified Requires testing to prove there are no GMOs. Organic This term is regulated by USDA. Doesn’t allow Roundup and other toxins. Not allowed to have GMOs, but they don’t have to test for GMOs. Natural Means NOTHING from a regulation perspective. Only used as a marketing term to lull consumers into false security.   Jeffrey’s Recommendation Try to purchase Organic and Non-GMO Verified products to ensure the cleanest possible food. “Now, it's not going to be necessarily 100% pure all the time. It's the nature of nature. Pollen travels, wind blows, glyphosate is found in the rain and in the air because it's the most used agricultural chemical in history. So even products that are isolated, grown carefully as organic may have a small amount. And that's something we all have to accept because that's the facts. So we minimize our exposure by going to organic. It's not 100% guarantee. What secret ingredients in our food supply are making us sick? Tune in to hear Jeffrey Smith, the founding executive director of the Institute for Responsible Technology and the leading consumer advocate promoting healthier non-GMO choices, educate TeriAn and Jonathan on the risks of GMOs and glyphosate in our food supply. Fascinating science and uncomfortable truths concerning GMOs and the pesticides. This affects everyone’s health! Please join us for an in-depth discussion. * * *   About Jeffrey Smith Jeffrey is the founding executive director of the Institute for Responsible Technology and the leading consumer advocate promoting healthier non-GMO choices. He was named the 2017 Person of the Year by Masters of Health Magazine for more than two decades or work in 45 countries exposing how biotech companies mislead policymakers and the public and put the health of society at risk.   In 2018, he and Amy Hart released Secret Ingredients, a documentary that highlights numerous individuals and families that healed from serious conditions after switching to an organic diet. His feature-length documentary, Genetic Roulette: The Gamble of Our Lives was awarded the 2012 Movie of the Year, and inspired millions worldwide to choose healthier non-GMO foods.   His books include Seeds of Deception, it is the world's bestseller on GMOs, and Genetic Roulette: The Documented Health Risks of Genetically Engineered Foods. He has counseled government leaders and healthcare practitioners from every continent and has been quoted by thousands of news outlets, including The New York Times, the Washington Post, and Time Magazine. He appears on influential radio and television programs, including the BBC, NPR, Fox News, Democracy Now, The Doctors, and the Dr. Oz Show.   Secret Ingredients “The most effective and efficient tool at convincing people that they absolutely have to eat organic immediately”, Jeffrey Smith In the film, all these people get better from different diseases and disorders just after switching to organic food. then they realize the role of the food and the secret ingredients in the food   What Are The Secret Ingredients To Be Aware Of? Tweet LIVE this Sunday, July 15th at 635pm Small Bites with Glenn Gross and Derek Timm of Bluejeanfood.com on Wildfire Radio is another stellar lineup. We welcome Melissa Coleman the author of “The Minimalist Kitchen: 100 Wholesome Recipes, Essential Tools, and Efficient Techniques” from Oxmoor House Books Time Inc. Books. Melissa Coleman is a home cook and baker, designer, wife, mother, and cozy minimalist. Her popular blog, The Fauxmartha, was named a HuffPost Top 10 Food Blog and was selected as a Better Homes & Gardens Top 10 Baking Blog nominee and a SAVEUR Magazine Blog Awards Style & Design finalist. After spending three decades bouncing around the states, she's happily planted under the snow banks of Minneapolis, Minnesota, with her husband, Kevin, and tiny sous chef, Hallie. Melissa cooks with the rhythm of the week—simple, modern, and mostly vegetarian on weekdays and slow and classic with a heavy dose of brunch on the weekend. She is in the process of decorating The Fauxhouse, their modern, city farmhouse. The Minimalist Kitchen is her first book. The Minimalist Kitchen: 100 Wholesome Recipes, Essential Tools, and Efficient Techniques is a cookbook, but more importantly, it's a framework for creating a minimalist kitchen, a kitchen pared down to the essentials so you can create more. This framework will touch everything in your kitchen from your ingredients, tools, pantry, to your cooking techniques, meal planning, and shopping habits. Once the framework is in place, you can make 100+ wholesome, mix and match recipes. You'll find Blueberry-Orange Breakfast Rolls, Banana-Coconut Baked Oatmeal, White Wine Spring Pasta, BBQ Black Bean and Quick Slaw Tacos, Crispy Pizza with Caramelized Onions, Chickpea Tikka Masala, Stovetop Mac and Cheese, and Two-Bowl Carrot Cupcakes. Then we are happy to have join us Chef Todd Richards the author of “SOUL: A Chef's Culinary Evolution in 150 Recipes” from Southern Living. Todd Richards is a self-taught chef who paid his dues in numerous restaurant kitchens before becoming an executive chef who garnered national attention. He has two James Beard Foundation nominations for Best Chef in the Southeast, was an Iron Chef America Cuisine competitor, and was named one of “Four New Chefs to Watch” by Esquire magazine. He is the owner/chef of Richards' Southern Fried at Krog Street Market in Atlanta, Georgia. Black American chefs and cooks are often typecast as the experts of only one cuisine—soul food, but Todd Richards' food is anything but stereotypical. Taste his Hot-Chicken-Style Country-Fried Lamb Steak or Blueberry-Sweet Tea-Brined Chicken Thighs as evidence. While his dishes are rooted in family and the American cuisine known as soul food, he doesn't let his heritage restrain him. The message of Soul is that cooks can honor tradition yet be liberated to explore. Todd Richards celebrates the restorative wonders of a classic pot of Collard Greens with Ham Hocks, yet doesn't shy away from building upon that foundational recipe with his Collard Green Ramen, a reinterpretation that incorporates far-flung flavors of cultural influences and exemplifies culinary evolution. Page after page, in more than 150 recipes and stunning photos, Todd shares his creativity and passion to highlight what soul food can be for a new generation of cooks. Whether you're new to Southern and soul food or call the South your home, Soul will encourage you to not only step outside of the box, but to boldly walk away from it. The chapters in Soul are organized by featured ingredients: Collards, Onions, Berries, Lamb, Seafood, Corn, Tomatoes, Melons, Stone Fruit, Eggs and Poultry, Pork and Beef, Beans and Rice, and Roots. Each one begins with a traditional recipe and progresses alongside Richards' exploration of flavor combinations and techniques. Then Philadelphia has a visitor coming soon Wildfire Radio's Small Bites Live with Tracey Medeiros. Tracey Medeiros is the author of “The Vermont Non-GMO Cookbook: 125 Organic and Farm-to-Fork Recipes from the Green Mountain State” from Skyhorse Publishing, Inc., Inc. and it is a 2018 Readable Feast Cookbook Awards Finalist. Tracey will be in town Saturday, July 21st teaching a cooking class at Audrey Claire Taichman's COOK. Also, she writes The Farmhouse Kitchen: A Guide to Eating Local column for Edible Green Mountains magazine and is also a freelance food writer, food stylist, and recipe developer and tester. She is often seen on various television cooking segments preparing one of her favorite recipes while sharing helpful culinary tips with the viewing audience. Tracey travels regionally as a guest speaker and cooking instructor, emphasizing her commitment to the sustainable food movement by using locally produced fresh ingredients to create dishes that are healthy and delicious. The Vermont Non-GMO Cookbook honors the state's mission to connect with its local organic farmlands and the farmers who nurture and care for them. It also serves as a guide for eating organically and Non-GMO Project in Vermont. The book celebrates the region's esteemed organic food producers, farmers, cheesemakers, dairy farmers, and the chefs who partner with them to create delicious, innovative, organic, and non-GMO recipes. We are thrilled to welcome our next guests Corey and Sara Meyer of Little Bird will be on the show as well. Little Bird Kitchen makes candied jalapeno chocolates, syrup and powder. Everything is hot and sweet, with the heat coming at the end. Each product is handcrafted and uses high-quality ingredients such as local, fresh jalapenos, premium Belgian Chocolates and non-GMO cane sugar. Sara Meyer, a former TV sound technician, needed to balance out taking care of the twins and a demanding job so she started a food blog and began testing recipes. After figuring out how to make husband and co-founder Corey Meyer's favorite- chocolate covered orange peels- she began candying everything in the kitchen, including leftover jalapeños, even after Corey said, “you're nuts.” After bringing them to work and having co-workers request to purchase them, Sara headed home and said, “I think we have a business.” Candied jalapeños are front and center in each recipe. Each product is handcrafted and uses high-quality ingredients such as local, fresh jalapeños, premium Belgian chocolate and non-GMO cane sugar. All Little Bird Kitchen products are kosher certified (dairy and pareve) and never use any preservatives. “We've noticed consumers are going out of their comfort zones and starting to explore new flavor profiles. One of the categories they turn to is spicy and Little Bird Kitchen is at the forefront of this trend. Whether it's munching on our Fire Bites or utilizing the Fire Syrup as a marinade, we give users the option to control how much heat they get in their snack or meal,” said Sara and Corey Meyer, co-founders of Little Bird Kitchen. “Although we stumbled upon candied jalapeños, we stuck with it because it allows other flavor profiles to come through before the heat comes at the end.” Little Bird Kitchen's candied jalapeños bring an elevation in flavor to whatever you are eating. Tweet LIVE this Sunday, January 14th at 635pm Small Bites with Glenn Gross and Derek Timm of Bluejeanfood.com on Wildfire Radio returns with more foodie fun. We welcome Michael Ungaro the Vice President of San Pedro Fish Market and Restaurant and one of the stars of Kings of FI$H that has had over 40 million viewers and just premiered Season 4 of the show. San Pedro Fish Market is California's Largest Restaurant; declared one of the Top 10 Most Instragramed restaurant in America a few years in a row, has been awarded 4 Guinness World Records, and with millions served making it literally California's busiest dining destination annually. "Kings of Fi$h" is based on three generations of the San Pedro Fish Market family who have been in the fish business since 1956, and the hilarious series highlights the entrepreneurial family spirit and frames the strong characters that make up this booming family run business. Featured on Foodbeast for the restaurant's world famous mouthwatering "Super Tray," the San Pedro Fish Market and the Ungaro family attract not only LA locals, but people from around the world, including celebrities such as Sofia Vergara lookalike Tati Polo spotlight on a show. The San Pedro Fish Market began their journey 60 years ago in the water front section of the Los Angeles Harbor. The founder Tommy was put in charge of the fish market when he was a teenager along with his cousin Henry. A live seafood section was developed where customers could pick their own Lobster and Crab and have it steamed fresh. Additionally, they developed their own smoked-fish recipe and garnered quite a following for Smoked Halibut, Salmon, Tuna, Cod, Swordfish, and many others. These were the first moves towards selling a cooked, ready-to-eat product and would eventually lead to their "World-Famous Shrimp Tray." We also welcome Erik Andersson the Brand Ambassador for Hendrick's Ginproduced by William Grant & Sons out of VisitScotland. Founded in 1999, in addition to the traditional juniper infusion, Hendrick's uses Bulgarian rose and cucumber to add flavour. Hendrick's gin is bottled in a dark brown apothecary-style bottle. The Wall Street Journal described Hendrick's as the "Best Gin in the World" and other spirit ratings organizations have been very complimentary as well with San Francisco World Spirits Competitionawarding Hendrick's Gin two double gold, two gold, and three silver medals and The Beverage Testing Institute giving the gin well-above-average scores of 93, 94 and 95. Sounds Ginrifick to us! Joining us in studio as well will be Vernon Rochester the owner of Rochester's Barbecue & Grill in Borough of Lawnside, New Jersey. They are a BYOB and Wine Bar featuring wines from Sharrott Winery expertly paired with each meal, Wednesday Nights - All You Can Eat BBQ, and also locals love their Saturday Night Jazz sessions from 5:00 pm – 10:00 pm featuring Michael J Corman, an amazing Keyboardist/Vocalist. They focus on soul food, barbecue, and southern cooking, but with locally sourced products as much as possible with a focus on dietary diversity. They do traditionally prepared items on the menu such as their amazing Ollie's Triple beans, made with ground beef, sausage and bacon and simmered with “secret spices” all the way to a variety of vegetarian and vegan dishes to choose from. You heard right, they also focus on vegetarian and vegan dishes. They were also recently highlighted in the Courier Post by Lisa Howard-Fusco. You can read the article here: http://www.courierpostonline.com/…/lawnside-roch…/813594001/ To top it all off and spice things up we also have coming on Christophe Hervieu the Founder and CEO of Simply Beyond. Simply Beyond products are inspired by and created for passionate cooks and real families. Because of their love of cooking with their children, and their appreciation for flavorful herbs, founders Christophe and Katia chose to share their passion with other families and food lovers. Born and raised on his family’s farm on Vancouver Island, Arran learned a valuable lesson from his dad: “Always leave the soil better than you found it.” Leaving the Earth better became Arran’s driving ethos – from opening a successful vegetarian restaurant in 1967 to providing wholesome food in what was then a real food desert by creating Lifestream, Canada’s first natural foods supermarket (1971-1981). Any discussion of genetically modified organisms (GMOs) is fraught with difficulty, not least of which is the definition. The Non GMO Project describes them as “organisms whose genetic material has been artificially manipulated in a laboratory through genetic engineering,” but there are others, see Leandra’s AHS 16 poster for more details.           Leandra Brettner is a PhD candidate at the University of Washington department of bioengineering, and in this interview we discuss artificial selection, DNA delivery methods, integration and mutation breeding together with their safety concerns. One might argue that GM is a technique, and that each application should be tested for safety. In this interview I argue to Nassim Nicholas Taleb’s point that GMOs fall into a special class of problem where the potential harm is systemic (rather than localised) and the consequences can involve total irreversible ruin, such as the extinction of human beings or all life on the planet. Here’s the outline of this interview with Leandra Brettner: 0:04:34    Legislation S. 764. 0:08:30    Sequence-specific nucleases. 0:08:49    I went looking for a Khan video on CRISPR Cas9, and found this terrifying TED talk. 0:09:22    Homologous recombination. 0:14:02    Mutation breeding. 0:16:36    Monsanto Buys Seminis (2005). 0:18:41    Leandra misspoke when she said Monsanto owned the BRCA1/2 gene, it was Myriad Genetics. 0:33:32    Bacteriophage. 0:35:54    Evolutionary computation. 0:38:44    The effect of glyphosate on potential pathogens and beneficial members of poultry microbiota in vitro. 0:40:37    An overview of the last 10 years of genetically engineered crop safety research. 0:43:53    The Precautionary Principle (with Application to the Genetic Modification of Organisms).

Why does so much money and effort go into the denial of GMO labeling?A genetically modified organism (GMO) is a plant or animal whose DNA has been rearranged or altered in some way that is in opposition to its natural, organic state.According to Megan Westgate, Executive Director of the Non-GMO Project, there are not sufficient reviews or studies to support the safety of GMOs. The FDA actually doesn't do any independent research before approving a GMO food, and there is no post-market monitoring. This makes it extremely difficult to know the impact of these foods. There is, however, peer-reviewed research showing toxic and allergenic effects on animals who are fed GMOs. This may carry over to humans, but there is currently no long-term human trials which can definitively prove the potential danger to the human population. The bottom line is that there is a lot unknown. One thing cannot be denied... in 64 countries around the world, GMOs are labeled. Many countries go as far as to ban GMOs. Almost half the world's GMOs are grown in the U.S.While the pro-marketing materials tend to spin GMO technology as a way to solve world hunger or provide other environmental benefits, more than 80 percent of GMOs grown worldwide are designed to do one thing: survive chemical pesticides/herbicides. These herbicides contain glyphosate, which is a carcinogen. If the continuation of GMO technology is inevitable, the goal then becomes to require labeling.Westgate says the challenge is that bio-tech companies really don't want you to know. An incredible amount of money has been invested to block mandatory labeling at the state level. Some states have worked to require labeling via legislative measures. Vermont's congressional initiative is scheduled to go into effect this July. However, now the bio-tech companies are working to take away state's rights to do this.Listen in as Westgate joins host Lisa Davis to explain more about GMOs, what the Non-GMO Project does, and how you can be savvy about choosing non-GMO products.
