Autumn brings one of my all-time favourite fruits: quince. Lumpy and bumpy, rock hard and astringent when raw, this fruit transforms upon cooking to something fragrant, soft and utterly divine. This recipe is a derivation of the Persian dish khoresh, referring to a stew, and the quince pair beautifully with lamb. Serves 2-4 Ingredients: 1 large onion, diced 500g lamb, cubed 1 tbsp turmeric 2-3 cm cinnamon stick ½ tsp cardamom powder (optional) 100g yellow split peas, pre-soak these for 1-2 hours 2-3 tbsp lemon juice 1-2 tbsps sugar 2 quince, peeled, quartered and cored 2 tbsp bloomed saffron (optional) Salt and pepper to taste Vegetable oil Water Method Heat some oil in a pan and sauté chopped onions until softened and beginning to brown. Add the lamb along with the spices and fry until browned on all sides. Add in split peas and just enough boiling water to cover. Lower the heat and simmer for one hour or until meat is fully cooked and split peas are tender. Whilst the meat cooks, sauté the quince quarters in a clean, lightly oiled pan over a medium heat until golden brown. Set aside until the meat is tender, about 45-50 minute mark, and add them then. Once the quince has been added, season with lemon juice, sugar, saffron (if using), salt and pepper to taste and cook without stirring for the final 10 minutes or so. Serve with rice. Go ahead and grab the ingredients below before starting the episode.RecipeServes 62 pounds to 2 1/2 pound boneless pork shoulder roast (up to 2 1/2 pounds), tied with twine if there are any loose pieces1 small onion, chopped1 garlic clove, mincedSalt and pepper2 tablespoons olive oil1 small pat butter1 28-ounce can whole tomatoes, with juice1 cup red wine5 sprigs fresh thyme5 sprigs fresh oregano1 Small handful of fennel seeds1 tablespoon hot sauce, for smokiness (Andy used Trader Joe's Hot Chili Sauce, but Sriracha and Tabasco both work great, too)1 pound Pappardelle1 handful Freshly grated ParmesanPreheat oven to 325° F. Liberally salt and pepper the pork roast. Add olive oil and butter to large Dutch oven and heat over medium-high until butter melts, but does not burn. Add pork roast to pan and brown on all sides, about 8 to 10 minutes in all.Add the onion and garlic and saute for 1 minute. Add tomatoes, wine, thyme, oregano, fennel, and hot sauce and bring to a boil. Cover, and put in oven.Braise for 3 to 4 hours, turning every hour or so. Add more liquid (water, wine, or tomato sauce) if needed. (The liquid should come to about 1/3 of the way up the pork.) Meat is done when it's practically falling apart. Put on a cutting board (remove the sprigs of herbs at the same time) and pull it apart with two forks, then add back to pot and stir.Cook 1 to 2 pounds pasta according to package directions. When it's is ready, put into individual bowls and top with ragu and lots of Parm. [30:39] Becoming a slow living expert and launching a lifestyle How did Stephanie end up on a path to becoming a New York Times bestselling author and slow living expert? Stephanie says she's mostly a mom. She has three children and needed to find a legitimate way to work from home while raising them. In 2008, she made a new year's resolution to use her Crock-Pot slow cooker every day for a year and write about it online. Stephanie wanted to learn how to run a website, she wanted to write and find a way to force herself to write every day. She was drawn to the idea of a New Year's resolution because it had an end date. However, the site took off and book publishers started calling. Stephanie ended up on TV and all of it sort of snowballed in this cool way AND she still got to stay home with her kids. While making more than enough money to support her family. What is Slow Living? Slow living is a feeling. Stephanie doesn't like the hustle, do more, be more, achieve more, go, go, go, life. She says a lot of times people are trying to cram so much in that they forget that life is long and you might as well enjoy it. There's no reason to over-schedule and over-burden yourself. Stephanie explains a lot of people underestimate what they can get done in a week so instead of scheduling it out in a nice, slow, methodical way, they over-schedule themselves, and then because of that, they don't get it all done. Then they are always trying to play catch up and it doesn't feel right. Stephanie tells moms they have to pay themselves first. For Stephanie, that means getting up at 4 am and giving herself an hour before the craziness of life and family start. Where she is alone in the kitchen with her coffee and nice-smelling candle and she's able to journal and think. If that seems ridiculous to you, then just start shifting forward, but give yourself at least a half-hour to an hour to remember who you are as a human before you start essentially firefighting all day long. The mindset needed to turn a passion into a business What is the mindset needed for the moms and people listening to take their passion, something they like doing and turn it into a successful business? Stephanie thinks one of the better things she did was giving it a whole year. She had an idea for a New Year's resolution and she stuck to it. Stephanie says sometimes people have great intentions, but they don't follow through. The execution gets muddied because they give up and it takes a long time to get the ball rolling and to feel comfortable with what you're doing. Eventually, success can be reached for almost any idea and anything, if you just stick with it and follow your gut and your intuition. So a follow-through mindset is highly recommended and if you don't know if you have that Stephanie can help! Ich staune immer wieder, wie viele Rezepte, Anleitungen und Expertentipps das Internet zu jedem Thema bereithält. Natürlich auch zum Slow Cooking. Nach „Pulled Pork“ in der vergangenen Woche gab es dieses Mal „Pulled Poulet“, und wieder war es lecker. Nun gehe ich bestens gestärkt in eine wichtige Woche: Am 3. Juni soll das Update meiner Website online gehen. Noch sind eine Menge Videos zu drehen und Texte zu schreiben. Das wird knapp, aber wir schaffen das, 90 Tage nach dem Launch der Relaunch. Künftig findet Ihr viel mehr Informationen im neu gestalteten Gewand. Einen Backstage-Bereich wird es geben und auch ein ganz neues Angebot, für das ich mir schon die passende Domain gesichert habe. Generell habe ich das Gefühl, dass ich mit meiner Präsenz im Internet und speziell auf vielen Social-Media-Kanälen auf einem guten Weg bin. Die Rückmeldungen zeigen mir, dass ich wahrgenommen werde. Gefreut hat mich eine aktuelle Studie, die ergeben hat, dass im Vergleich zu Facebook Twitter und Youtube an Gewicht gewinnen. Von mir aus gerne, ich bin ja schon dort.

At the end of 2017, I was visiting Dahab, a small town on the southeast coast of the Sinai Peninsula in Egypt. One day I was looking for a coffee, and a neat restaurant caught my attention, it wasn't clear what they were serving, so I asked the guy who was standing in the entrance. His name is Karim, and he told me about his new restaurant called Zanooba where they serve slow-cooked food, and he asked if I wanted to try it. I said why not! Later in the evening, I stopped by the restaurant, and while I was waiting for the food, Karim and I started to talk, and he told me briefly how he quietted his job and moved to Dahab, that night I ended up spending 4 hours in the restaurant.
