TASMANIAN wines (links to Myles' recommendations will be in the show notes shortly) BSF: BOOK: Long Island by Colm Toibin SCREEN: D/Artagnan FOOD - Slow-roasted lamb 1,6-2.2 kg bone-in lamb shoulder' 1 brown onion, unpeeled, cut into 6 wedges 2 cups (500 ml) water MARINADE 2½ tsp finely chopped fresh rosemary leaves 1 tbsp dried oregano 2 garlic cloves* (big!), finely minced 1 tsp cooking salt* ½ tsp black pepper ¼ cup (60 ml) extra-virgin olive oil (Cobram Estate) LAMB JUS 1 tsp cornflour 14 cup (60 ml) water ¼ tsp cooking salt* Marinate lamb - Mix the marinade ingredients in a small bowl. Rub the mixture all over the lamb, getting it right into all the cracks and crevices! If time permits, marinate for 2 hours on the counter in a roasting tin, or up to 24 hours in the fridge. (I skip this more often than not!) Preheat the oven to 230°C (210°C fan-forced). Roast lamb over high heat - Place the onion in the roasting tin under the lamb. Pour the water into the tin. Roast, uncovered, for 45 minutes. Slow-roast lamb' - Turn the oven down to 100°C (conventional and fan-forced). Cover the lamb with baking paper, then a double layer of foil and seal very tightly to avoid water evaporation. Roast for 12 hours (I do this overnight). Test the side of the lamb with two forks to ensure the meat is fall-apart tender. If not, cover and return to the oven, checking every 15 minutes. Rest - Transfer the lamb to a large dish (reserve the liquid in the roasting tin). Cover loosely with foil and rest for at least 10 minutes before serving (it will stay warm for 2-3 hours). Lamb jus - Strain all the liquid in the roasting tin into a medium saucepan (there should be around 3-4 cups/750 ml-1 litre). Bring to the boil, then simmer rapidly on medium-high until it reduces down to 1 cup (250 ml). Mix the cornflour and water together, then pour this in slowly in a thin stream while stirring continuously. Cook for 2 minutes over medium heat, stirring every now and then, until it thickens to a syrupy consistency. Add salt to taste and transfer to a gravy jug. Serve - Use tongs for tearing the meat off the bone - no knife for carving needed! Serve with the jus, a side of Garlic Roast Potatoes (page 339) and steamed vegetables tossed with Mediterranean Dressing (page 333). For dessert, I see Apple Crumble (page 301) on your table! NOTES 1.      If your shoulder is much smaller, reduce the roasting time - start checking at the 10 hour mark. Don't fret about overcooking - shoulder is a well-marbled cut of meat and the low oven temperature is extremely forgiving. 2.      Substitute with 1¼ tsp finely chopped dried rosemary. 3.      I do the lamb shoulder overnight. With the low oven temperature and all the liquid in the pan (you end up with about 3-4 cups once finished!), I am not concerned about any burning while sleeping with the oven on. 4.      Make ahead: Cook the lamb as per the recipe. Cover loosely with foil and let it cool completely to room temperature, around 4 hours. Refrigerate until required. Remove from the fridge 2 hours prior, then reheat, covered with foil, in a 150°C oven (conventional and fan-forced) for 1 hour. Or microwave, if it's an emergency (it happens.). I'm being unnecessarily cynical because on the one hand this is an entirely original fantasy with a great concept and unique visual style, a stirring Randy Newman score and beautiful themes about the power of self-expression but on the other it's a movie that seeks to address segregation and racism in a town populated exclusively by white people. Tobey Maguire brings the cow-eyed geek energy of Peter Parker and Reece Witherspoon teaches her mother (Joan Allen) to masturbate so hard she causes a tree to spontaneously combust.We love to hear from our listeners! I mean, after the past two years, how are we supposed to feel as we enter 2022?  For those of us who are single and dating during a pandemic, newly separated or maybe divorced for years, approaching this new year can seem extra challenging and overwhelming.  For me, I feel clueless and at a loss but I'm entering this year cautiously optimistic. In this episode, I begin by discussing  a Reece Witherspoon/Ina Garten Instagram Post that has actually gone viral since I recorded. It's a great example of exactly how I'm feeling as we embark on 2022. On one hand, I like the idea of setting goals and creating new hablts (a la Reece Witherspoon).  On the other hand, I find comfort in savoring guilty pleasures and overindulging just a bit longer (a la Ina Garten).  I discuss the dichotomy of these two different approaches to New Years resolutions.  I don't think there is a "right" way to feel or plan for our year ahead. You do you. Grant yourself some grace. If you're already a goal setting high achiever don't pile on too much.  If you need a kick in the pants, set some goals! Do what serves you best! I provide some ideas such as:Choosing a Word or Theme for the YearUsing word/journal prompts from Pinterest/blogs to set  Personal &/or Dating Goals OR If you'd rather not, you can just use them as a type of Mad Libs game to play with your friends :)Small daily habits to reward ourselves and to help us to stay optimistic and perservere Whatever approach you're taking in planning ahead for the new year, I hope you'll take it easy on yourself and have some fun with it. Even though life is hard and unpredictable, I think it is such a  beautiful journey when we focus on the good and laugh together along the way. We often hear inspirational stories, but Suzy Batiz, the founder and CEO of Poo~Pourri and Supernatural, really takes the damn cake. Although she recently tied the Forbes list of America’s Richest Self-Made Women with Reece Witherspoon, Suzy’s journey to success was a god damn battle. Suzy grew up in poverty, surviving childhood sexual and domestic abuse, two bankruptcies, three divorces and severe depression. She sold exercise equipment, opened a clothing store, a tanning salon, a beauty salon, sold lingerie, bought homes, sold homes and at certain points, became homeless. She was so focused on money solving her problems that she lost herself. Her “AH HA” moment came after reading Byron Katie’s Loving What Is, at which point she dropped everything and attended her 10-day seminar. Five years later, after filing for bankruptcy for a second time at 38, Suzy sold her first bottle of Poo~Pourri. I have been buzzing since we had this conversation and I am so lucky to share this story with you. In a fairly linear style, we follow Cheryl as she sets off packing too much gear and massively out of her depth in the Mojave Desert, through flashbacks and hallucinations we learn of (and vicariously feel) her past trauma and life. Complimenting Witherspoon’s remarkable performance is the stunning landscape of The Pacific Crest Trail - 2,653 miles of dramatic mountain ranges. Despite Ellis himself saying he didn’t think the film was necessary it feels more necessary in today’s ever more unbelievable society and feels every bit as uncomfortable. If anything it deserves a revisit just for Christian Bale’s performance. Before he focused on physical transformations, Batman and winning Oscars he very nearly killed his career with this hilarious and disturbing performance (apparently inspired by Tom Cruise - the person not one of his characters), the studios wanted Leo di Caprio and what a different film that would have been. If you’re looking to travel than teaching English can be a great way to fund your lifestyle as Jack Askew  showed in an earlier interview. Jo Bruce headed to Korea from New Zealand 10 years ago armed only with a child care degree which was enough to give her a foot in the door of the English teaching game. Once there she was able to upskill sufficiently to relocate to Malaysia where the criteria for accepting English teachers was much stricter. Jo is embarking on a new adventure, walking the Te Araroa walk from Cape Reinga to Bluff, the full length of New Zealand which will take her around 5 months and cover 3000kms. She then plans to walk even further traversing the Pacific Crest trail from the Mexican border to Washington State made famous by Reece Witherspoon in the movie “Wild”. If you’re interested in embarking on a career teaching English overseas, or are an avid hiker looking for inspiration then you’ll enjoy listening to Jo.   What I learned from Jo’s interview: Korea can be a great entry point for teaching English. As long as you have a degree and fit the mold of European looks (sadly slim and attractive seems to be a helping factor) then you could find Korea is a great backdoor entry into this market as Dain and KJ Leathem also found Malaysia has a stricter criteria for teaching English however Jo’s time in Korea gave her the chance to upskill with a Celta course and turned her degree into a Masters while living there. She was then able to move to Malaysia with sufficient skills to start teaching other teachers in how to teach English Ipoh is a very affordable city situated just two hours from Kuala Lumpur and the same distance from Penang. Jo was able to live there in a 3 bedroom apartment with gated complex and swimming pool from as little as $US350 per month. All up living costs including food (she ate out a lot) massages, facials and other perks came to under $US1000 per month, not bad in anyone’ s language.
