We know that being kind to our gut biome is crucial to our health, but what about the trillion happy helpers (or not) on our skin, in our lungs, our ears, our mouths… the things we slaughter daily with the ‘cleaning products' we splash around our homes. What if there was a better way to keep things clean that wasn't toxic to us and the tiny lives on whom our health depends? Joe Flanagan works at the cutting edge of change, helping us shape the world for a flourishing future. Human health and the health of our planet are intimately interwoven - we established this with Dr Jenny Goodman a few weeks ago, when she unpicked for us the many, many ways we are poisoning ourselves by what's in our food, our water, our air… One of the things she touched on was the environmental toxins we unwittingly spray, shake and flush all over our house and into the waterways - things we not only don't need, but which are doing us active harm. If I was smart, I'd say this was the impetus for today's podcast, but in fact, I heard Joe Flanagan months ago on Viki French's 'PupTalk' podcast and that was long before I read Jenny's book. Joe is one of those people who is podcasting gold - he has the most gorgeous Irish accent and he's completely on top of his topic: which is the biome - the trillions of microorganisms that are essential to our lives and to the greater living biosphere. We've talked quite a lot about the gut biome on the podcast, but this is the first time I've had the chance really to sit down and explore the world with someone who specialises in the surface biomes - of our skin, our mouth, our ears, our lungs. As you'll hear, Joe started off working on air quality - how to make the air we breathe safe for us when the external air is so full of things we truly don't want to be breathing in. But gradually, his work has shifted until now he is one of the founders of Ingenious Probiotics, which sells to pet owners the things they need to help keep gums, skin and ears health. He sells things to wash our hands and our floors with, washing up liquid, as well as topical sprays for the animals - all predicated on the understanding that killing bacteria is a really bad idea and what you want instead is to provide the right bacteria to out-compete the pathogenic ones. I really did think I knew this stuff, but there are large parts of this book that have blown all my fuses, not just for the health impacts - particularly on children and young people (did you know we're seeing Alzheimer's now in teenagers?) but for the cold-blooded way it's been allowed to happen. Every part of this book is essential reading - not just because it shows us how we're being poisoned by our food, our water, the air that we breath, the things around us that we can't even see - but more importantly because it details how we can get healthy again and help restore the integrity of our soils, our water, our air…the whole world we live in. As you'll hear, Dr Jenny Goodman is a medical doctor, lecturer and broadcaster. In this episode I discussed Dr.Goodmans upcoming book project with about the effects of environmental pollution on health. Dr. Goodman emphasized the need for a shift from traditional medicine to ecological medicine and called for changes in individual lifestyles and societal actions to reduce environmental toxins' impact on health. It's a journey, that takes us through different ages, stages and environments and the secret sauce to the enjoyment of the journey is awareness, understanding and an approach which is supple. And in that I am talking about an approach that allows us to move through environments which are less enjoyable, be able to anticipate without fear what is approaching us in life. There will be of course unexpected discoveries along the journey of health but having the requisite skills to navigate out of environments which do not cultivate our Selves and beings is essential. And it is the consequences of the environments we are living in and approach to modern living that our guest Dr Jenny Goodman wrote her book “Staying Alive in Toxic Times”which I believe is the book every household would benefit from having in their life. Today I have a really fantastic episode for you with Dr Jenny Goodman, author of the fantastic must-read book Staying Alive In Toxic Times. Jenny started her career as a medical doctor but became completely disillusioned with the methodology of purely treating symptoms and not offering any preventative medicine. She then found Ecological Medicine, which is very similar to Functional Medicine and Nutritional Therapy where we look at the body as one whole system and try to get to the root cause of problems. Her book is a manual for 21st century living divided up into the four seasons to cover off seasonal eating, they types of toxins that are most prevalent at certain times of the year (eg early autumn for mould), and also contains lots of really fascinating case studies form her own clinical experience. We cover sunscreen and its dangers, why grounding is actually just pure science, organic food and agriculture, mould and light among many other topics. Scarr's is essentially the classic NY pizza slice, but with excellent ingredients in a well-curated space. So this is a bit of a fangirl moment to welcome Scarr Pimentel to the show. The pandemic isn’t over. Cases are still piling up and precautionary measures are still at a peak. Restrictions remain tight on restaurants in most major cities, NYC included. As of today, all indoor dining remains on "pause". But the first seeds of the post-pandemic world are beginning to break ground - let’s say the ramps of the entrepreneurial world! It’s been exciting to see how some chefs have adapted, sprung out on their own, and used this challenge to turn their dreams into a reality. In this 6th season of OS, we are chatting with entrepreneurial spirits who are making it work in a modified food world, delighting their customers, and building something new. Around Thanksgiving, my Instagram feed started showing me images of orange stained tacos laden with melted cheese, and braised meat. Several even show the tacos dipped into a beef broth or a “pizza” (that same birria, sandwiched between two huge handmade tortillas.) Thanks in part to Gothamist and Grubstreet, but mostly to those epic pics, we found ourselves eagerly standing in a well-distanced line to get our take at Nene’s Taqueria, a deli in Bushwick, BK. When the universe handed Jenny Goodman lemons in the form of a failed food truck in Brooklyn, she didn’t sulk for very long. Instead, she realized she needed more business acumen and decided to get her MBA. Today, Jenny is the cofounder and COO of Tilit NYC, high-quality workwear for chefs and civilians alike. Jenny joins us to talk about her early days in the industry as a waitress at Commander’s Palace in New Orleans, her life as a new mom, and the hot new jumpsuit that Tilit finally brought to market. Jenny Goodman and Alex McCrery are the co-founders of Tilit. Alex is a chef turned designer, and Jenny worked in restaurant FOH and is now Tilit’s COO. They founded Tilit with two chef aprons designs, one pair of pants and a chef-shirt. The idea was that each garment would be made in the center of NYC's garment district by restaurant industry folks, and they still make over 90% of our garments there. On today's episode of THE FOOD SEEN, husband and wife team, Alex McCrery & Jenny Goodman, met in New Orleans, one working BOH, the other FOH at Commanders Palace. After a short-run restaurant in Brooklyn, Goodman decided to earn her MBA before the two started another business. That's how Tilit, a chefware company, was born. Coats, aprons, pants, and more, Tilit provides the right materials for a new era of chefs: wax cloth, military grade adjustable straps, pit vents and Sharpie pen slots, all in hopes to update the outmoded model of kitchen uniforms, giving personality to an industry that surely has one.

Tilit Chef Goods is the source for designer chefwear, waterproof and food proof utility aprons and artisanal kitchen tools made in the USA. New York City to be exact! Created by Alex McCrery, Tilit was launched in November of 2012. A chef for 17 years, Alex got tired of wearing and using subpar chef’s gear. And if you’ve ever seen those hideous Hammer pants that chefs wear, you know exactly why. So he decided to create a whole line of goods that are locally produced and completely chef approved that will stand up to the heat of a busy kitchen—while still looking cool as ice. For example, Titlit aprons are made with lightweight waxed cotton that is also spill-proof and waterproof. These goods are the chef or chef wannabes answer to looking good and getting the job done, all with a local slant. Because, let’s face it: It’s not really Hammer time.
