On this episode, we have Jason & Kristina Walker who are the Founders and Owners of Starwalker Organic Farms. Starwalker Organic Farms produces various beef, pork, and chicken products on a 3,000-acre Regenerative Organic Certified® farm in Northern California. They're one of the biggest producers of organic pork in the United States, and they sell their regenerative organic products wholesale, direct-to-consumer, and through their branded CPG SKUs. The family also owns and operates a certified organic processing facility with slaughter, cut, and value-added operations serving their farm and many others in the community. It is an amazing story that started in the great American dust bowl, then created a mantra of leaving the land and environment better than they found it.Our Guests: In 1937, Brita's great-grandparents left Nebraska in the wake of the Dust Bowl after seeing how farming techniques stripped the land of its topsoil. When they moved to California, they decided to do things differently by tending to soil, air, water, and wildlife as carefully as their crops so they can deliver on their founding promise to leave the land better than they found it. The Lundberg family began farming organically in the late 1960s and, in 2023, became the first U.S. grown rice brand to launch Regenerative Organic Certified® rice. Brita is a fourth-generation farmer, who has “boots-on-the-ground” experience in the fields. She also spent several years honing her storytelling skills in the New York publishing world. However, sometimes it takes leaving home to realize what you left behind. Today, Brita's favorite story to tell is her family's. Max Goldberg is one of the most influential voices in the organic food movement today. His Organic Insider newsletter is considered required reading for those in the industry. Max also runs the Organic Food Industry group on LinkedIn.We discuss the meaning of organic and its regulations by the US Government; whereas "Natural" is not regulated. You can safely consume food that is NOT certified organic. But supporting the certified organic movement is a good thing to do. Sometimes even certified organic foods contain glyphosate due to cross contamination into the organic food supply. Glyphosate is not allowed to be sprayed on organic foods.Glyphosate residue free certification - they test the products on a quarterly basis and certify that they do not contain glyphosate. The Non-GMO certification is more meaningful when in conjunction with the organic seal, because even Non-GMO's can be sprayed with chemicals. And now, USDA is allowing hydroponicly grown organic crops so other labels such as "The Real Organic Project" and "Regenerative Organic Certified" have value. He has dedicated the majority of his life to wine and the wine industry. Craig Camp is currently the general manager at Troon Vineyard, but he grew up in Illinois, where wine was, as he says "unknown." It wasn't until a trip to Europe in college that everything changed for Craig, he says his "passion for food and wine overwhelmed my sense of reality." Craig worked for Direct Import Wine Company for years before it sold and then off to Italy he went to learn all about wine production. He came back to the state after 4 years, took over as president at Anne Amie Vineyards in Oregon where he revolutionized winemaking and marketing. He then worked at Cornerstone Cellars in Napa, where he did the same thing, but Oregon was calling him back, specifically, Southern Oregon. He got the job at Troon Vineyards, where they are Biodynamic and Regenerative Organic Certified - both in the vineyard and in the cellar. He talks about why these practices are not only important in making wine, but also key in changing culture. Craig and Trish cap off this interview discussing a love they both have - risotto. Garett is passionate about his work with Troon Vineyard. This year, Troon celebrated their 50th anniversary. As of next spring, all 50 acres of vines will have been replanted with grapes borne in the Rhone Valley (France) and Cotes-du-Rhone, where the climate is very similar to that of the Kubli Bench. The Applegate Valley is the PERFECT context to grow wine grapes. A few months ago, Troon was honored as a "Top American Winery of the Year" by Wine Enthusiast Magazine, and the Rogue Valley was nominated as "Emerging Wine Region of the Year". This has brought a lot of buzz to our community of winegrowers and makers that are not as well-known as the Willamette, but doing really interesting things. Michael D. Ham, co-founder and president of the company, describes in detail the cultivation and multiple washings during the processing of these award-winning teas. He said the result is a clean, authentic taste as nature intended. Regenerative Tea – Jeju Island lies 130 kilometers off the southern coast of South Korea in the Korea Strait. Dormant for the past 5,000 years, Hallasan Mountain is a 1,950-meter volcanic wonderland of craters, cinder cones, and giant lava tubes that dominates the densely foliated island. Popular with tourists for its national park and scenic beaches, the island is also known for its tea. Wild Orchard sources all its tea from a 1000-acre garden planted in 1999. The nutrient-dense soil, gentle mists, and abundant wildlife led growers to plant tea seeds on hillsides that were not terraced or cleared of native plants. Irrigation is solely by rainfall. There are no fertilizers, pesticides, or herbicides applied and the soil is never tilled. The farm was certified organic in 2007, and the Wild Orchard brand was established in 2019. In May of this year, the brand became the world's first Regenerative Organic Certified tea. It was selected by Noma, the World's Best Restaurant, to be served on their NYC menu and will soon be available for sale at the Rare Tea Counter at Fortnum & Mason tea shop in London.

In Edible-Alpha® podcast #109, Andy interviews Mark Doudlah, a fifth-generation farmer and owner of Doudlah Farms Organics in southcentral Wisconsin. The 1,625-acre certified-organic, regenerative farm grows 15 different crops for human consumption. Doudlah Farms Organics also has a value-added component, milling, packaging, and selling branded dry beans, seeds, and flours direct-to-consumer and at retail. Mark actually started out as a conventional farmer, just like his father, Earl. But then in 2008, Earl was diagnosed with lymphoma, likely caused by lifelong exposure to chemical ag inputs. Realizing the environmental and human health hazards of conventional farming, Mark grew determined to do things differently—safely for the planet and people. So, to honor his dad, he transitioned 40 acres to organic. This new way of farming had a steep learning curve, but Mark, along with wife Lucy and son Jason, was committed to figuring it out. They learned a lot over the next three years, working out best practices for planting, weed control, combining, cleaning, and storing. Then when Earl passed away in 2011, the Doudlahs began transitioning the rest of their acreage to organic and regenerative. Along the way, they've continually sought support and guidance from FFI, Rodale Institute, UW-Madison, MOSES, and other resources to help hone and grow their operations. Today, along with carrying USDA Organic certification, Doudlah Farms Organics is certified by the Real Organic Project and is in the process of becoming Regenerative Organic Certified. The farm is also Yahara Pride Certified, which verifies its efforts to enhance soil and water quality. Mark explains why these measures are so important to truly regenerate the soil, protect surrounding ecosystems, and ensure safe food. As for Doudlah Farms Organics' consumer products business, Mark wishes he'd taken FFI training courses before writing his first value-added producer grant (VAPG). Our programs gave him a better understanding of various marketing channels, cash flow management, forecasting, and what it really takes to move a product from field to consumer. Now with more value-added experience under his belt, the business is growing steadily and expanding its retail footprint. To wrap up, Andy and Mark discuss financing. Most banks, even ag specialists, don't understand the nuances of organic and regenerative, let alone value-added, so it's important to find one that does. Then before signing off, Mark shares his vision for Doudlah Farms Organics and his hope for combatting climate change.
