Brasil está batiendo récords en sus exportaciones a China y ha abierto un nuevo mercado en Panamá. México registró un aumento récord en las importaciones desde Estados Unidos en julio. Entrevista com Flávia Brunelli, quarta geração de italianos no Brasil, fundou a empresa há cinco anos e criou uma linha diferenciada com novos usos para a carne suína, pioneira no Brasil em Cortes Especiais Suínos. Apaixonada pelo universo das carnes, a empresária Flávia Brunelli, juntou a tradição da criação familiar de quatro gerações Italianas de suínos com sua paixão pela gastronomia e fundou há cinco anos, a Del Veneto,empresa pioneira no Brasil em cortes personalizados de suínos. “Meu avô, Umberto Brunelli, que nasceu em 1930 em Velo Veronese, localizado na montanha de Verona, Itália, tinha criação de suínos e produzia defumados e embutidos. Com 20 anos, veio para o Brasil, buscando um lugar onde pudesse trabalhar e recomeçar a vida após uma Itália devastada pela 2ª Guerra Mundial. Chegou ao Brasil, formou família e fortaleceu por aqui, a tradição familiar na criação de suínos”, conta a neta Flávia. O resultado desta história que começou há 90 anos, segue viva até hoje, tanto na Itália com a Fazenda Malga Vazzo Brunelli e com a Del Veneto, no Brasil. Flávia estudou gastronomia, fez diversos cursos sobre carnes nos Estados Unidos, Europa e Argentina e quando retornou ao Brasil, aproveitou as raízes da família e para criar uma linha diferenciada e artesanal com novos usos para a carne suína. A Del Veneto investe na qualidade da carne e no aprimoramento genético da criação da raça Duroc, conhecida como o “Angus” suíno. Com um peso 35% maior do que os porcos produzidos nas fazendas do Brasil, a Duroc tem 2,5% de gordura intramuscular, contra 1,5% de outras raças o que garante ainda mais sabor a carne. Daniel Laurent is a sophomore at Caldwell County High School, but he might as well be an instructor already when it comes to the breeding and showing of pigs.  He is just in his second year of the FFA, officially, but all of his four older siblings were in the FFA and he has been talking and getting FFA experiences for the past 13 years since his eldest sister joined. Daniel has a passion for animal agriculture, which has been apparent his entire life.  When he was 8 years old he did his own research and told his father that he thought they should change their entire pig breeding operation from Yorkshires to Duroc's.  He has his argument well thought out and documented, and eventually, this happened. Today Daniel gets more excitement out of seeing a 10 year old kid win in the show ring with a Laurent pig than he does actually winning himself.  He loves the process of matching up the correct pigs phenotypically and genotypically and then seeing the success it brings.  All of this, and he still does not even have a driver's license!

My guest is epidemiologist and biosecurity expert, Raina MacIntyre. Dr MacIntyre is Head of the Biosecurity Program at the Kirby Institute, and Professor of Global Biosecurity at UNSW. Today we discuss her latest book DARK WINTER: An insider's guide to Pandemics and biosecurity. We discuss a series of unnatural outbreaks [lab leaks or deliberate misuse] that have occurred over the past 70 years: Sverdlovsk anthrax release, Rajneeshee bioterror attacks, Amerithrax attacks, and others... Raina breaks down the patterns and features they have in common.  We discuss the highly unusual features of the 2014 Ebola outbreak in West Africa and the 2019 COVID-19 outbreak that raise questions about a possible unnatural origin of these outbreaks. In every case, the outbreak was initially deemed a natural occurrence by scientists, but later [often many years later] were determined to have had an unnatural origin.  Common features in these cases are denial, a cover-up, silence, and often an “information war” led by scientists to control the narrative. The conclusions are inescapable and unsettling: When it comes to investigating an unusual outbreak, we cannot leave the scientists in charge of the investigation. And second, in an era of widely available synthetic biology, accelerated natural selection, and covert DUROC, we face an existential threat from bioweapons of mass destruction. The odds have already shifted dramatically in favor of any outbreak being due to a lab leak or deliberate misuse rather than due to a natural occurrence.

Steffen Schäfer ist Geschäftführer der Firma „Der Vogelsberger“ und Mitgründer des Deutschen Wagyuverbands. Der Vogelsberger umfasst eine Landwirtschaft, Metzgerei und Grillschule. Steffen ist somit gleichzeitig Landwirt, Metzger und Fleischsommelier. Er erzählt uns im Podcast über seinen Betrieb und seine Passion rund um das Wagyu-Rind. Seine Tiere werden in der Mutterkuhhaltung auf Weiden großgezogen, die im Schutzgebiet rund um den Vogelsberg grasen dürfen. Schweine hält Steffen Schäfer auch, das Vogelsberger Landschwein, eine Kreuzung aus dem Deutschen Edelschwein und dem Duroc, sowie das Berkshire Schwein. Es handelt sich dabei um fast ausgestorbene Schweinerassen, die eher fetthaltiger sind. Die Schweine werden bei ihnen auch älter, mindestens 12 Monate alt. Das Fleisch von diesen Schweinen ist saftiger und verliert beim Garen weniger Wasser. Die Wagyu-Rinder werden bei ihnen erst mit 32 bis 36 Monaten geschlachtet. Das Alter macht die Marmorierung erst richtig gut. Das Wagyu-Fett vom Vogelsberger ist durch die Grasfütterung richtig dunkelgelb, was man vom japanischen Wagyu-Fleisch nicht kennt. Das Wagyu-Fett ist nicht nur reich an Omega-3 durch die Grasfütterung, sondern auch an Omega-7. Diese fast noch unbekannte Fettsäure soll gut gegen Alters- und Entzündungsprozesse sein. Wagyu-Fett ist bei Zimmertemperatur flüssig. Dieser Schmelz ist auch die Besonderheit beim außergewöhnlichen Geschmack von Wagyu-Fleisch.Steffen erklärt die Besonderheiten bei der Wagyu-Zucht in Deutschland. En el mercado internacional los precios siguen escalando en China y EEUU. En este último, la disminución de la oferta se está notando y con precios en este nivel, los productores están con buenas ganancias, caso contrario en China pues el precio aun sigue por debajo del costo de producción y una demanda débil del consumo ocasionada por las cuarentenas sanitarias que impone el país. Esta semana la gran noticia fue el anuncio de una vacuna efectiva y segura para la Peste Porcina Africana, desarrollada por el gobierno de Vietnam en conjunto a un equipo de científicos del USDA. Los investigadores aseguran una protección inmunitaria de 6 meses en los cerdos, pero no explican cuándo estará disponible comercialmente y su capacidad de producción. Vamos a seguir con detalle esta noticia y te estaré informando las novedades. Adaptación e innovación. Son las típicas palabras que las escuelas de negocio nos enseñan a los líderes empresariales para enfrentar los desafíos de transformación que nos pide la sociedad. La ganadería atraviesa por uno de ellos, con una ola de mentiras y prensa que demoniza la actividad que por miles de años ha alimentado la humanidad. ¿Pero cómo aplicamos estos conceptos a nuestros negocios? Creo que más de alguno de ustedes está liderando un proceso de transformación en sus empresas o quiere hacerlo en breve. Para esto es clave investigar y estudiar cómo se incentiva la innovación dentro de una empresa. El primer paso es que el líder sea innovador o bien permita que en la estructura se cree el puesto para la gerencia de innovación. Después de eso es clave hacer una investigación del negocio y de los consumidores para adaptar acciones que cubran estas necesidades. Esta semana por ejemplo vi una excelente innovación por parte de una empresa peruana que creó una línea de cortes de cerdos con raza Duroc y una brillante propuesta comunicacional. Para terminar quisiera hacer un llamado a no quedarnos callados cuando veamos que otras empresas compiten de una forma desleal con nuestra actividad. A continuación les daré dos ejemplos de cómo empresas que están desprestigiando la ganadería con sus campañas de marketing están siendo demandados por las asociaciones de ganaderos. El primer caso le llamaré “NoTConfundas” ya que involucra a la empresa Not Company, empresa chilena que ha crecido mucho y que admiro por su innovación, sin embargo, su forma de comunicar le llevó a qué el gremio de lecheros del sur de Chile les demandara por competencia desleal. El CEO de la empresa, quien intentó evitar viajar desde EEUU, tuvo que ir al sur de Chile al juicio. Si bien el caso aun no termina, deja en tela de juicio a muchos de estos fundadores que creen que tienen el campo libre para crear modelos de negocios y denostar a millones de familias agricultoras y ganaderas El segundo caso es en EEUU, donde el CEO y director ejecutivo de Beyond Meat fue demandado por publicidad engañosa y competencia desleal Este tipo de acciones hacer ver al resto de empresas de productos alternativas a la carne y productores ganaderos, que no será tan fácil crear desde sus agencias creativas anuncios para engañar a las personas sin la rigurosidad científica y nutricional. Professor McGonagall was sitting on a backless stool behind the desk, looking puzzled - her eyes had widened, with perhaps a slight note of apprehension, as she saw Harry. "Mr. Potter?" said Professor McGonagall. "What is this about?" Harry's mind went blank. He'd been instructed by the game to come here, he had been expecting her to have something in mind... "Mr. Potter?" said Professor McGonagall, starting to look slightly annoyed. Thankfully, Harry's panicking brain remembered at this point that he did have something he'd been planning to discuss with Professor McGonagall. Something important and well worth her time. "Um..." Harry said. "If there are any spells you can cast to make sure no one's listening to us..." I think there's an extra spell on the Sorting Hat, something that the Sorting Hat itself doesn't know about, something that triggers when the Sorting Hat says Slytherin. I heard a message that I'm pretty sure Ravenclaws aren't supposed to hear. It came the moment the Sorting Hat was off my head and I felt the connection break. It sounded like a hiss and like English at the same time," there was a sharp intake of breath from McGonagall, "and it said: Salutations from Slytherin to Slytherin, if you would seek my secrets, speak to my snake." Professor McGonagall sat there with her mouth open, staring at Harry as if he'd grown another two heads. "So..." Professor McGonagall said slowly, as though she couldn't believe the words that were coming out of her own lips, "you decided to come to me right away and tell me about it." The duroc pigs are a key part of pork history in America. Looking around the industry now, many people might think of just white or pink pigs on farms but the red duroc is still holding strong in the US. That's why Clay Zwilling, CEO of the National Swine Registry (NSR), is working to put more duroc on the map again with the launch of a certified pork-branded program. We talk a lot on this show about how to get started farming right now, even if you don't have the farm that you ultimately see in your dreams.  Usually when we speak of this we are talking about marketing some fruits, vegetables, herbs, etc. from a back yard operation or possibly something like aquaculture or hydroponics.  But, what if you want to raise livestock?  Is there anything that you can do on a small piece of ground that would be profitable? Our guest today, Annie Johnson, is going to talk to us about doing exactly that with pigs.  Annie's has a very interesting story that has come full circle. Her grandfather used to raise pigs on their families farm about ten miles away from where she currently lives in Cambridge, Illinois.  However, nobody in the family raised a pig for about 20 years until she got started at the age of 14. The family farm is still there, and that is where Annie raises her pigs.  However, the crop ground on the farm is in the CRP program, so it is not being farmed.  That means that Annie only had a small piece of ground to be able to begin her livestock enterprise.  Pigs were the answer for her, and direct marketing was the business model.  Annie has been able to pre-arrange the sale of her pigs to multiple customers, and because of her unique story and the way she is raising them she can charge a premium for her pork. Through direct marketing, Annie has been able to increase what she receives for her pigs.  However, she is being just as innovative on the other end to keep expenses low.  Instead of feeding a boar all year long, she is using artificial insemination to breed her sows.  There is an old grain cart on the property that can safely hold a lot of pig feed.  So, Annie buys feed in bulk and has that cart filled to save money on feed costs, and it works!  Annie has also experimented with different breeds and is now raising Duroc's.  Her customers prefer the meat, and the Duroc's work be in her operation.  So, she is producing a very desirable product through the most efficient means she has at her disposal. Annie has just graduated high school and has just been awarded a state proficiency for her efforts in pork production.  She is going to take all of this experience and knowledge with her to college where she will be studying to be an Ag teacher.  When she finishes college, she will bring it all with her to the classroom, and she will be inspiring Ag students for years to come!

Corkscrew BBQ Interview Part 1 Will and Nichole Buckman had just started a family when they decided to transition from running a small barbecue catering business out of their home to a full fledged business. It was a big leap of faith with two young babies at home, but the risk paid off. Corkscrew BBQ began operating their food trailer in 2011 in Spring, Texas (just outside of Houston) and soon began receiving acclaim. Though both had worked in barbecue restaurants as teenagers, Will and Nichole did not do much market research before they began cooking and selling their barbecue, which helped give Corkscrew its unique flavors and style that set it apart from other restaurants. Alison Cook from the Houston Chronicle took notice of Corkscrew BBQ early on and wrote a positive review which brought them an immediate rush of new customers. Over the next several years the Buckmans continued to perfect their craft and in 2013 made the Texas Monthly's coveted Top 50 BBQ List. The accolades continued to roll in and Corkscrew developed a loyal and large fan base, leading to stout lines and daily sell-outs of their product. In the summer of 2015 a building became available in the Old Town Spring area and the Buckmans were ready. Within a few short months they renovated the building and opened Corkscrew BBQ as a brick and mortar in October 2015. Having transitioned to an Oyler pit during the trailer days, Corkscrew added another Oyler to increase capacity for the restaurant. Cooking on two Oyler pits gives Will Buckman the opportunity to put out a stellar, consistent product while still getting a little more sleep than an offset would allow. In the spring of 2017 Corkscrew BBQ once again made the Texas Monthly Top 50 list, this time being placed in the top tier of barbecue in the state as the no. 7 rated joint. Business continues to boom these days for these two hard working, family oriented business owners. Das Ziel dieser Dissertation war es zu untersuchen, ob es möglich ist, die Körperzusammensetzung von Zuchttieren bei 100 kg Körpergewicht zu einem früheren Termin bzw. bei einem niedrigeren Körpergewicht genau vorherzusagen. Dazu wurden die Tiere bei 80 kg und bei 100 kg mittels Magnetresonanztomographie (MRT) und Dualenergie-Röntgenabsorptiometrie (DXA) analysiert. Insgesamt gingen 117 Zuchttiere, darunter 22 intakte Eber und 95 Sauen in die Untersuchung ein. Jedes Tier wurde zweimal mittels MRT und DXA untersucht. Am ersten Untersuchungstermin wogen die Tiere durchschnittlich 84,5 kg, bei der zweiten Untersuchung im Durchschnitt 102 kg. In dieser Arbeit wurden verschiedene reinrassige Linien und deren Kreuzungen verwendet. Die Rassenverteilung war dabei wie folgt: Deutsche Landrasse (n = 19), Deutsches Edelschwein (n = 7), Large Black (n = 18), Schwäbisch Hällisches Landschwein (n = 3), Piétrain (n = 4), Duroc (n = 3) und ihre verschiedenen Kreuzungen (n = 63). Für die Untersuchungen wurden die Tiere mittels Azaperon (2mg/kg) und Ketamin (40mg/kg) sediert. Anschließend wurden die Tiere mittels MRT untersucht. Verwendet wurde ein Siemens Magnetom Open, mit einer Feldstärke von 0,2 Tesla. Die Lenden- sowie die Oberschenkel- und Glutealregion wurden bei jedem Schwein als Untersuchungsregionen herangezogen. Hierzu wurde eine T1-gewichtete Spinechosequenz verwendet. Die Schichtdicke betrug 15 mm und der Distanzfaktor 3,75 mm (=0,25). Für die Lendenregion wurde eine axiale Schnittrichtung verwendet, für die Oberschenkel- und Glutealregion eine coronare. Ausgewertet wurden die MR-Bilder mit Hilfe der Able 3D-Doctor 3.0 Software (Lexington, MA, USA). In der Lendenregion wurden fünf Schnittbilder in caudale Richtung, beginnend an der letzten Rippe, auf das Volumen des Musculus longissimus dorsi und dessen Speckauflage ausgewertet. Für die Oberschenkel- und Glutealregion wurde ein halbautomatisches Auswertungsverfahren gewählt, mit dem vier Schnittbilder in ventrale Richtung ausgewertet wurden, beginnend auf Höhe des Acetabulums. Für Referenzmessungen mittels Dualenergie-Röntgenabsorptiometrie (DXA) wurde ein GE Lunar DPX IQ-Scanner als quantitatives Analyseverfahren eingesetzt. Jedes Schwein wurde nach der MRT-Untersuchung mittels DXA (Modus “Ganzkörper Adult Normal”) untersucht. Die Daten wurden mittels „Proc Reg“ der Statistik-Software SAS 9.2 ausgewertet. Das Volumen des Musculus longissimus dorsi bei 80 kg zeigt eine hohe Beziehung zum Volumen des Musculus longissimus dorsi bei 100 kg (R2 = 0,86; RMSE = 82021 mm3). Bei der Gegenüberstellung der Volumina des Musculus longissimus dorsi bei 80 kg und bei 100 kg allein für die Eber ergibt sich das höchste Bestimmtheitsmaß mit R2 = 0,97 (RMSE = 35340 mm3). Ein ebenso hohes Bestimmtheitsmaß erreicht die Beziehung zwischen dem Volumen der Fettauflage (über dem Musculus longissimus dorsi) bei 80 kg und bei 100 kg allein für die Eber (R2 = 0,97, RMSE = 23757 mm3). Für die Speckauflage aller Tiere bei 80 kg und bei 100 kg resultiert ein Regressionskoeffizient von R2 = 0,91 (RMSE = 41781 mm3). Für die Oberschenkel- und Glutealregion ergeben sich geringere Beziehungen. So kann für die Muskelvolumina bei 80 kg und bei 100 kg ein Regressionskoeffizient von R2 = 0,79 (RMSE = 292079 mm3) erreicht werden. Für die entsprechenden Fettvolumina der Oberschenkel- und Glutealregion liegt das Bestimmtheitsmaß bei R2 = 0,44 (RMSE = 137143 mm3). Im Rahmen einer multiplen Regressionsanalyse kann ein Bestimmtheitsmaß von R2 = 0,82 (RMSE = 3,31 %) erreicht werden, indem das Volumen des Musculus longissimus dorsi und das Volumen der Speckauflage jeweils bei 80 kg als Variablen eingesetzt werden, um das DXA-Gesamtkörperfett (%) bei 100 kg als Referenzwert zu bestimmen. Zudem wurde eine statistische Auswertung verschiedener Einflussfaktoren anhand einer Mischmodell-Analyse mittels REML (restricted maximum likelihood) durchgeführt (p < 0,05). Die Ergebnisse zeigen, dass signifikante Rassen- bzw. Kreuzungsgruppenunterschiede bezogen auf die MRT-Muskel- und Fettvolumina in den untersuchten Regionen, sowie für die DXA-Ergebnisse vorliegen. Eher extensiv genutzte Rassen bzw. Kreuzungsgruppen weisen ein signifikant höheres MRT-Fettvolumen bei erwartungsgemäß signifikant geringem MRT-Muskelvolumen auf. Dabei weisen sie korrespondierend die geringsten DXA-Magerweichgewebewerte und die höchsten DXA-Gesamtkörperfettgehalte auf. Auffällig ist zudem, dass die weniger bemuskelten Rassen bzw. Kreuzungsgruppen über eine höhere Knochenmineraldichte verfügen. Diese Ergebnisse zeigen, dass - obwohl rassespezifische Unterschiede existieren - eine Vorhersage der Körperzusammensetzung (z.B.: DXA-Fettgehalt %) bei 100 kg durch die Untersuchung mittels MRT bei 80 kg möglich ist. Die MRT bietet die Möglichkeit Schlachtkörpermerkmale an potentiellen Zuchttieren in vivo zu erfassen, ohne auf Nachkommenschaftsergebnisse aus der Prüfschlachtung angewiesen zu sein. Somit kann die Schlachtleistung an jedem potentiellen Zuchttier selbst als Eigenleistungsprüfung erhoben werden, was die Kosten der Leistungsprüfanstalten und die für die Versuchsschlachtungen deutlich reduziert. Zudem kann aufgrund der anzunehmend hohen Heritabilitäten das Generationsintervall sowohl für den potentiellen Zuchteber als auch für die potentielle Zuchtsau deutlich reduziert werden, ohne an Genauigkeit zu verlieren.

Background: Leg weakness issues are a great concern for the pig breeding industry, especially with regard to animal welfare. Traits associated with leg weakness are partly influenced by the genetic background of the animals but the genetic basis of these traits is not yet fully understood. The aim of this study was to identify quantitative trait loci (QTL) affecting leg weakness in pigs. Methods: Three hundred and ten F(2) pigs from a Duroc x Pietrain resource population were genotyped using 82 genetic markers. Front and rear legs and feet scores were based on the standard scoring system. Osteochondrosis lesions were examined histologically at the head and the condylus medialis of the left femur and humerus. Bone mineral density, bone mineral content and bone mineral area were measured in the whole ulna and radius bones using dual energy X-ray absorptiometry. A line-cross model was applied to determine QTL regions associated with leg weakness using the QTL Express software. Results: Eleven QTL affecting leg weakness were identified on eight autosomes. All QTL reached the 5% chromosome-wide significance level. Three QTL were associated with osteochondrosis on the humerus end, two with the fore feet score and two with the rear leg score. QTL on SSC2 and SSC3 influencing bone mineral content and bone mineral density, respectively, reached the 5% genome-wide significance level. Conclusions: Our results confirm previous studies and provide information on new QTL associated with leg weakness in pigs. These results contribute towards a better understanding of the genetic background of leg weakness in pigs.

Pigs of different ryanodine receptor 1 (RyR1) genotypes serve as a model for the evaluation of various non-invasive in vivo methods to measure muscle energy metabolism and body composition. The main focus is set on one hand on 31P and 13C nuclear magnetic resonance spectroscopy and on the other hand on nuclear magnetic resonance imaging and dual energy X-ray absorptiometry. In addition to a reference dissection and chemical analysis, the above mentioned methods are being extensively compared to other methods in the methodology part. An invasive muscle shot biopsy serves as an additional method in order to determine the muscle fiber composition of the longissimus dorsi muscle. Totally, 111 animals have been considered in the data analysis. 13C- and 31P NMR spectroscopy are very appropriate methods to measure in vivo or post mortem, non-invasively and continuously changes in the concentration of glycogen and creatine or phosphocreatine (PCr), inorganic phosphate (Pi), adenosintriphosphate (ATP), and pH-value directly in relative or absolute amounts over an „unlimited“ time period. 31P NMR spectroscopy compared to 13C NMR spectroscopy has advantages in the sensitivity and timely resolution for measuring changes in the concentration within the components of muscle metabolism. While 31P NMR spectra in vivo yield sufficient results for measuring changes of PCr, ATP, Pi and pH value within a time interval < 1 minute, it takes > 5 minutes to acquire reasonable 13C NMR spectra in order to measure changes in the concentration of glycogen and creatine. Progress in the techniques of body composition analysis is mainly based on electronic and computer driven methods in order to provide non-invasive, fast and objective measurements. The selection of the appropriate method depends on the objective (research, performance testing, production, or diagnosis) and financial budget for each single study and clinical application. Technical details considering accuracy, precision, parameter selection and maximum/minimum size of an individual affect the decision as well as does a simple, robust, environment-safe, patient-comfortable and risk-free handling of the technique. The highest accuracy for whole body studies within the imaging methods provide magnetic resonance imaging (MRI) and computer tomography (CT) followed by dual energy x-ray absorptiometry (DXA). DXA, however, outperforms MRI and CT due to its simple handling and easy data analysis for whole body or regional body composition studies. In addition, DXA is beside the Quantitative CT the only non-invasive method which provides direct bone mineral density measurements. According to the literature survey, the neutron activation analysis as a noninvasive method should be preferred for the calibration of body composition measurement devices instead of chemical analysis or dissection. Chemical analysis and total dissection will remain standard reference methods as long as neutron activation facilities are available only on a very limited basis. However, the non-invasive (imaging) methods are less prone to error sources than are the diverse dissection or chemical analysis procedures. The main advantages of the non-invasive imaging and/or spectroscopic methods in vivo are: 1. the easy way to standardize the methods with a high repeatability (>75 %), 2. the opportunity of analyzing separately large volumes of interest of the whole body, body tissues and/or body parts, 3. the opportunity of performing continuous measurements over an “unlimited” period of time, and 4. the harm “free” animal/patient precautions with a high degree of hygienic safety. An advantage for magnetic resonance, ultrasound and digital imaging is provided by the function without radiation, while especially the “spiral computer tomography” is characterized by a very high speed of analysis. The muscle metabolism of the defect allele carriers at the RyR1 locus Nn and nn shows already in vivo stress associated deviations in comparison to the “normal” genotype NN. After generating muscle stress by halothane, defect genotypes react with a decline in the glycogen, phosphocreatine, ATP, and pH level. Parallel inorganic phosphate and body temperature increase significantly. In the average show the homozygous defect allele carriers a stronger metabolic distress than do the heterozygous carriers. Differences among genotypes are higher post mortem compared to the metabolism in vivo. The muscle metabolic distress is connected with a muscle fiber hypertrophy in both defect allele genotypes. During growth, the homozygous defect allele genotype deposits more muscle mass (volume) and less fat than does the heterozygous genotype followed by the homozygous normal genotype. Already at a live body weight of about 10 kg, magnetic resonance imaging provides evidence for a larger muscle volume in the homozygous defect genotype in comparison to the two other genotypes. Beside the studied RyR1 genotypes (and the RN—-allel especially present in Hampshire), a large number of genetic, morphologic and environmental factors influence muscle metabolism and body composition in Swine -- as described in the discussion part. The RN—-allel causes a reduced glycogen depletion in vivo (and post mortem). Corresponding, the Hampshire line (≥ 50 % Hampshire genes) is beside the US-Landrace and the synthetic line “Duroc x Hampshire x US-Landrace x Spotted x Yorkshire” less obese than are the lines Duroc, “Poland China x Landrace”, Spotted, and “Duroc x Minzhu”. Spotted and “Duroc x Minzhu” are the most obese lines. In addition comparing all lines, Spotted (all Nn) responses --unexpectedly -- most severely to (muscle) stress caused by halothane administration.
