Young students in New Mexico made history when they convinced lawmakers that the smell of roasting chilis should be the state's official aroma. They researched, wrote letters, testified in hearings and celebrated when the Governor signed the bill at their school. It's the only state with a designated aroma, and it was the first time students were the force behind a new law, with the help of Senator William Soules, a former teacher and administrator in their Las Cruces school district.
How does environmental change and water scarcity affect heritage crops? In this episode, Holly Brause discusses her newly published ethnographic research on the chile industry in southern New Mexico. In conversation with Paula Johnson of the Gastronomica Editorial Collective, Holly connects the local effects of climate change and drought to the economic and cultural value of a heritage crop. New Mexico chile is part of the fabric of the state, a source of pride and joy. However, local chile farmers have been dealt a tough hand in recent years. Between the pandemic, labor shortages, drought, and shifting economics, some growers are changing the way they do business. Is the state's chile industry in jeopardy? KRQE News 13's Investigative Data Reporter Curtis Segarra visited some multigenerational chile farmers across the state to find answers. Good News Latinos and X at HealthCare UnTold would like to recognize the work of the State of New Mexico to support the goal of a living wage for farmworkers. Due to the farmworker labor shortage caused by Covid-19 in New Mexico, Governor Lujan announced a 5-million-dollar fund to form the Chile Labor Incentive Program (CLIP). The CLIP program is a wage supplement program for the chile industry to ensure the production of the state's signature crop. On November 17, 2021 Governor Lujan announced the extension of the CLIP program through the end of January 2022 to cover the New Mexico red chile pepper harvest. Squash Casserole with Green Chile. Ingredients 6 medium squash thinly sliced 1 large onion thinly sliced 1/4 cup butter 1/2 cup parmesan cheese grated 1 cup sharp cheddar cheese shredded 1/2 cup sour cream 3 whole roasted green chile peeled and chopped 1/4 tsp salt 1/4 tsp black pepper Fresh chopped parsley optional Topping 1/4 cup breadcrumbs 1/4 cup parmesan cheese 1 tbsp butter melted Instructions Preheat oven to 350 degrees F Melt butter in a large skillet or wok over medium heat Add squash and onions, saute' until onions are translucent Place cooked squash and onions in a large mixing bowl, add cheddar cheese, parmesan cheese, sour cream, green chiles, salt and pepper Gently mix until well combine Pour the ingredients into a lightly oiled 2-quart baking dish ( or it can be sprayed with a cooking spray) Mix the breadcrumbs, parmesan cheese, and 1 tbsp melted butter in a small dish and sprinkle the crumb mixture on top of the casserole Bake, uncovered for 20 minutes until golden Remove from oven, let cool 5-10 minutes prior to serving. Garnish with chopped fresh parsley

According to the 2020 Garrity Perception Survey (GPS), 77% of New Mexico residents favor the industry with 46% of that group giving it a “very favorable” rating on a five-point scale. Among the 17 industries surveyed, the Farm and Ranching Industry is the second most favorable slightly behind Small Business. We discuss Taco Bell's likely stringent IP policies. Amy doubles down on her contempt for vegetarianism by drinking her beverage after a fly had flavored it. Daniel worries about his burrito linguistic skills. Ben washes his vegetables, not to stave off pesticide poisoning, but to stave off insect poop. Burger Time has been visited in BQ's past. The quality, when vegetarianism is applied, was significantly diminished. The beans were super bland; the potato and egg equally so. We discuss BQ's utilization as a reference, and whether that could possibly be useful. Daniel shits on vegetarian food some. Not literally. Kenny get's a shout out, but only because he tends towards plainer foodstuffs. Pro's Ranch Market has a Burrito of the Month (January: Ancho BBQ Chicken), so Daniel went and ate it to mildly positive reviews. Ben's rating gets garbled to humorous effect. We start our Vegetarian Trek with a trip back to Si Señor for their Bean burrito. We got them to hold the cheese, and asked them to add green chile. They got one of those things right, the important lack of cheese thing. Green chile was not so much in attendance. It's filling but lacking in spiciness. Daniel's burrito develops a butthole, then poops beans out of it. Ben proclaims his minority status as a born-again-vegetarian. Nellie's, finally. Nellie's is a family-owned Mexican food place that is popular enough that over the years they have actually trimmed their hours so that they are only open until 2pm. In addition they regularly just shut down for two weeks at a shot for both Xmas and Summer Vacation. None of this impacts the crowds of people one will regularly see waiting outside in the hot sun every day around lunch. In fact, this is one of the restaurants that emboldened us to embark on Lunch Trek in the first place. They do make a pretty good burrito.
