In their heyday of the 1970s and 1980s, there were more than 200 - possibly more than 400 - feminist restaurants and coffee shops in the USA and Canada. These places were aiming to change ways of working, and upend the hierarchies of restaurants; to provide food that was ethically sourced and affordable to customers, while providing staff with a decent wage; to signal to particular kinds of people that a space was specifically for them. They didn't always succeed, and often they didn't last for more than a couple of years. But they sure did try things. Dr Alex Ketchum, author of Ingredients for Revolution, a History of American Feminist Restaurants, Cafes, and Coffeehouses, explains the ups and downs of how these places used words.Visit theallusionist.org/breadroses for more information about today's topics, plus a transcript of the episode.Support the show at theallusionist.org/donate and as well as keeping this independent podcast going, you also get behind-the-scenes info about every episode; livestreams with me, Martin and my ever-growing collection of dictionaries, and the charming and nurturing Allusioverse Discord community, where we're watching the current season of Great British Bake Off, and donors are learning that apparently it is a surprisingly productive source of writing inspiration for me.This episode was produced by me, Helen Zaltzman, on the unceded ancestral and traditional territory of xʷməθkʷəy̓əm (Musqueam), Sḵwx̱wú7mesh (Squamish), and səlilwətaɬ (Tsleil-Waututh) Nations. With some of the best pho, dim sum, and tacos in the city, Federal Boulevard long ago earned its reputation as a top dining destination. But lately, Havana Street in Aurora has been getting attention for its own variety of global cuisine. So, is Havana the new Federal? We posed this question to Westword food writer Antony Bruno, who's been eating his way up Aurora's boulevard of strip malls, box stores, and used car lots, finding delicious surprises along the way. From a tucked away taqueria to a local Korean BBQ chain, Bruno shares what he's learned about Aurora and some of his favorites with host Bree Davies. Antony talked about Taqueria Corona, Snowl, Dae Gee Korean BBQ, Tofu Story, Yemen Grill, Coco Loco, and Katsu Ramen. Bree mentioned the Havana Night Market's final event of the year this Saturday from 6 to 10 p.m. at Leezakaya. Get more from City Cast Denver when you become a City Cast Denver Neighbor! Fardad Khayami, the chef-owner of Muse in Santa Monica, has a really great story. Raised in London, and a restaurant fan basically from birth, Fardad attended University of Southern California and started hosting his own pop-up dinners, first for friends and then for ticket holders. The waiting list reached over 6,000 names, and he eventually channeled that love for hospitality into his own restaurant—all before the age of 25. Muse is creative, a little cheffy, and a name to remember. We talk about Fardad's journey and one crazy first year of operating. At the top of the show, Eric Valdez completes the Resy Questionnaire. Eric is the chef at Naks, a high-energy Filipino restaurant in New York's East Village. We talk about food movies, dream dinner parties, and the best pizza in NYC. It's part of a new segment where Resy's editors, writers, and partner chefs will share compelling stories and discuss the latest in food and dining culture. The views expressed in this podcast are those of the speakers – not Resy - and do not constitute professional advice. Learn more about your ad choices. Visit megaphone.fm/adchoices
There is nothing I enjoy more on this podcast than catching up with former students of mine! Justin Chin graduated about 25 years ago, and we hadn't spoken since. It was an extra-pleasant surprise to hear that he is the general manager at San Francisco's hottest restaurant, The Happy Crane. I had to call him up to find out how a kid who skipped college to go to the Marines ended up in fine dining. I had a blast listening to Justin's stories, and I'm so happy he's doing great! You can, of course, find The Happy Crane at their website or make a reservation at OpenTable. Are restaurants missing a key opportunity on delivery? This week's episode of the Restaurant Business podcast A Deeper Dive features Cameron Watt, the CEO of secret shopper firm Intouch Insight.Intouch recently completed an exclusive study on delivery for Restaurant Business and we're chatting about some of the conclusions. We caught up with Cameron at the recently concluded FSTEC conference. The study featured some fascinating results. For one thing, first-party delivery on average isn't much better, performance-wise, than it is ordering from third-party delivery companies themselves. That may be a missed opportunity for restaurants. Cameron and I talk about that.We also talk about the growing influence of third-party delivery companies and the overall results from the study. And we talked about what restaurant companies can do to improve the delivery experience for customers. We're talking delivery on A Deeper Dive so please check it out.

Who doesn't like to go out to eat? Carin Stutz gives you a behind the scenes look into the restaurant business. She is a true icon in the industry spending 40+ years as a C-level Exec. She started as a manager trainee at Wendy's International and she worked her way up to Division Vice President. She shares stories of working with the celebrity Dave Thomas, the founder of Wendy's, as well as her brush with fame by meeting movie star George Clooney. The rest of her career was in the hot trend of "fast casual" dining, with C-Level positions at Applebee's, Chili's and another half dozen other successful chains. Carin shares what the restaurant business is really like, as in the long hard hours, the missed vacations and family events. Yet she truly loves the industry and the people. She is making up for lost time now with lots of international travel and attending concerts every week. She is also giving back to her industry. She helped start a wildly successful non-profit and serves on lots of very worthwhile boards. She has dedicated her (un)retirement to giving back! This week, in episode 263, we bring you another 21 Hats Brainstorm. Elan Daniel, who started a small-batch hummus business inspired by a memorable experience in Israel, is trying to figure out his best path to long-term viability. So far, he's been selling at farmers markets and direct to consumers, making all of the hummus and all of the deliveries himself. Since February, his sales have been growing between 5 and 10 percent a week, but his growth is constrained by his refusal to use preservatives, which adds flavor but limits the product's shelf life. So how should he proceed: Should he sell to speciality markets and restaurants? Should he try to sell to Whole Foods? Should he open his own hummus restaurant, or hummusiya? Should he try to introduce his hummus to the uninitiated or should he focus on connoisseurs? To help Elan think through his options, we convened a panel of 21 Hats Brainstormers and recorded this podcast episode. It's brought to you by New Bridge Studios, which helps companies, creators, and causes connect their story to the bottom line. And by the way, if you have a challenge you'd like to put before a panel of business owners in our next Brainstorm, shoot me an email: loren@21hats.com.
#107.Josh sits down with Jesse Stein, founder of Hermetic AI, to explore how artificial intelligence is transforming hospitality management and customer engagement in the restaurant industry. Stein shares his vision for making AI interactions feel genuinely human while helping restaurants streamline event management and build stronger customer relationships through personalized experiences and strategic follow-up.The conversation covers the evolving role of technology in hospitality, from the surprising power of handwritten notes in customer engagement to sophisticated AI models that enhance rather than replace human connection. Stein and Sharkie examine practical sales strategies including the psychology of reciprocity, the importance of understanding customer needs, and how restaurants can leverage platforms like LinkedIn for business networking. They also address the critical need for contingency planning in restaurant operations, learning from past mistakes, and why creating memorable experiences often drives more value than focusing solely on material offerings, all while exploring how Hermetic AI's solutions can help restaurants nurture customer relationships that translate into increased loyalty and sales.Links and resources

Step into Episode 179 of On the Delo as David DeLorenzo sits down with chef-restaurateur Doug Robson—Mexico City–born, Arizona-made—for a straight-shooting conversation about immigration, grit, and building neighborhood restaurants that people actually return to three and four times a week. From a 1983 move to San Antonio to Scottsdale Culinary Institute (1996), the Phoenician and Roaring Fork, through the LGO crucible and beyond, Doug lays out the mindset shifts that turned ego into collaboration and fine-dining polish into community comfort. You'll hear the real story: $7.35/hour kitchen days, 9/11's night-of impact on reservations, opening Gallo Blanco in 2009 on just $65K, closing “Gallo 1.0,” launching Otro Café in 2013, then expanding his canvas with Tesota—all while learning to delegate, welcome failure as tuition, and reset in Greer with long hikes that spark new recipes.Chapter Guide (Timestamps): (0:14 – 1:12) Cold Open & Episode 179 intro; Lake Powell guitars and banter. This is TEASER of a Vintage Selection from 2005The BanterThe Guys talk about their restaurant philosophy and how cultivating a team of people who share your vision is what will sustain you. However, Francis does not share Mark's vision of going to a Cub's game. The ConversationThe Restaurant Guys are thrilled to have Charlie Trotter on the show to talk about excellence, foie gras and a restaurant that he had planned to open in New York that never came to fruition. The Inside TrackThe Guys have been fans of Charlie's for a long time yet did not fully realize their similar attitudes on experiential dining.“ The vision we've had here has been to try to deliver an experience where the food part of it, the service part of it, the wine and beverage part of it, and the ambiance all add up to something greater than the sum of the parts. So with myself as the chef-operator obsessing about food, almost to the point where it's perverse, I still don't even think that food is the most important part of the dining experience,” Charlie Trotter on The Restaurant Guys Podcast 2025 BioCharlie Trotter opened Charlie Trotter's Restaurant in 1987. Karen Elliott House was awarded the Pulitzer Prize for international reporting for her coverage of the Middle East. Arguably, she knows more about the region, and Saudi Arabia in particular, than any other active journalist or author. For her latest book, Why Saudi Arabia's Crown Prince Mohammed bin Salman Matters to the World, Karen conducted more than half a dozen in-depth interviews with the 40-year-old Saudi Crown Prince, known universally as “MBS.” For global business owners and executives, the dramatic Saudi transformation over the past decade, spearheaded by MBS, presents both promise and peril: vast opportunities for investment and growth but also political and legal risks that demand careful navigation. The pace of change under MBS has astonished even veteran observers like Karen, who has traveled to the kingdom more than 45 times since the late 1970s. Today, Saudi women can drive, hold jobs across industries, and participate openly in public life. Entertainment venues — from concerts to theme parks — are thriving. Restaurants that once erected wooden partitions to shield women from the public now bustle with mixed crowds. Karen compares his confidence and determination to that of Jack Welch at General Electric or Lee Kuan Yew, a founding father of modern Singapore. Like them, MBS is willing to make unpopular decisions in pursuit of national transformation. Whether his reforms endure, she cautions, depends on two factors: keeping the economy growing and avoiding foreign policy missteps that could unite his enemies. With a half-century potentially ahead of him as the next Saudi King, Mohammed bin Salman will be an unavoidable force in global politics and business. As Karen puts it, Americans must move beyond old stereotypes and reckon with the kingdom as it is — complex, evolving, and essential.
