Welcome back to The Go-To Food Podcast, where we're joined by Alison Roman — chef, writer, and creator of some of the most talked-about recipes of the last decade. Alison takes us back to her first kitchen job at Sona in Los Angeles, working under David Myers for $7.25 an hour, crying daily but learning fast. It was a tiny, nine-person kitchen that ran like The Bear, long before The Bear existed. From there she went to Milk Bar in New York, then the Bon Appétit test kitchen — reverse-engineering photo-shoot dishes into recipes home cooks could actually make. The early days were brutal, pre-Instagram, and anonymous. No bylines, no fame, just biscuits, burnouts, and a deep sense that if you showed up more than anyone else, something would happen. In London, Alison's been eating with purpose — Café Deco's anchovy-studded little gem, a quiche that insists it's a frittata, and a beef stew she calls one of the best she's ever had. She weighs The Devonshire against The Pelican and The Hart. There's a fascination with pub culture, a debate over sharpened pencils at hotel reception, and a reminder that the best meals aren't always on “the list.” We get her take on TikTok chefs, the chaos of phones in kitchens, and an unnerving AI ad that generates recipe ideas without authors — proof, she says, that food without humanity just doesn't taste the same.We talk legacy too. From Dining In to Nothing Fancy to Sweet Enough, Alison's cookbooks built a blueprint for the way people cook now — easy, intuitive, quietly confident. She admits the dessert book nearly broke her, but Something for Nothing came easily because it mirrors how she actually cooks. There's a new tomato sauce line born from her husband's refusal to cook, a love letter to anchovies, and an argument for doing one thing well instead of a thousand badly. We end with her perfect menu: shrimp cocktail, Caesar salad, ribeye in brown butter and lemon, and a slice of key lime pie — the ultimate Alison Roman meal, simple, specific, and unapologetically human.------Sponsor: This episode is brought to you by Blinq—POS made simple: £69/month, unlimited devices, 24/7 UK support, no contracts or hidden fees. The challenge every successful debut author faces is the pressure to repeat themselves. When we recently sat down with acclaimed Irish author Chloe Michelle Howarth (Author of the Nero-shortlisted Sunburn), we learned why she made the bold choice to defy expectations and pivot her career completely. Her new book, Heap Earth Upon It, is a striking departure: a dark, 1960s-set Gothic novel miles away from the contemporary, coming-of-age tone of her debut. This article breaks down the three most valuable insights Chloe shared on creative fulfillment, editing mastery, and writing with purpose.1. Creative Fulfillment Demands a Genre Pivot.Chloe's first novel, Sunburn, was a critical and commercial success, leading to an obvious question: why not write Sunburn 2?Chloe's answer was pure creative drive. She admitted that she chose the complete opposite direction—a dark, gritty 1960s Gothic—simply because she felt she had to prove to herself that she could do something else. The setting of the new novel was key: a small, quiet, rural village in the depths of January. As Chloe explained, that atmospheric choice naturally lends itself to the Gothic, demanding new language, new emotions, and a different type of bite than her previous work. For writers struggling with a second project, her advice is clear: do what excites you, not what you think the audience (or publisher) expects.2. The Hardest, Most Necessary Editing Lesson.Whether you are writing a sweet romance or a haunting Gothic novel, this single piece of editorial advice, which Chloe received from her agent, is a game-changer: “Less can be more.”Chloe confessed that she loves “over-the-top, very dramatic, detailed prose,” often describing a statement in five different ways. She was challenged to find where it was necessary to be indulgent and where it was simply not serving the story. The takeaway here for any author is to learn how to refine the work. You must be willing to let go of the dramatic flair you love if a concise sentence serves the story better. Her willingness to be open to this professional critique was ultimately what changed her initial manuscript into the published novel.3. Writing a Legacy: Rural Queerness.Perhaps the most impactful takeaway from our conversation was Chloe's dedication to defining her own writing legacy. When asked what she hopes her work will be remembered for, she emphasized her focus on rural Irish queerness. As she notes, queer experiences are far more often depicted in urban spaces, making her depiction of a nuanced, isolated existence in a smaller community a vital counter-narrative.Her advice for writers aiming to be more inclusive? Write from a genuine place. Don't feel the need to crowbar diverse characters in to “tick a box.” Instead, write the character as a full person first, and then let their specific experience be a secondary, natural layer, rather than the defining element. You can dive into the full conversation with Chloe Michelle Howarth, including her thoughts on balancing multiple narrative viewpoints, her unorganised “pantser” process, and her essential book recommendation, by watching the full video below:WATCH THE FULL INTERVIEW OR LISTEN ON YOUR FAVOURITE PODCAST PLATFORM: Chloe Michelle Howarth on Writing Irish Gothic Fiction & Her Queer Rural Legacy (HEAP EARTH UPON IT & SUNBURN)Join our brand new community on our Stanstore! About The Book: A “riveting page-turner” (Jean Kwok, New York Times bestselling author of Searching for Sylvie Lee) about a young woman diagnosed with bipolar disorder who rejects the stability and approval found in a traditionally “normal” life for a career in stand-up comedy. Maddy Banks is just like any other stressed-out freshman at NYU. Between schoolwork, exams, navigating life in the city, and a recent breakup, it's normal to feel overwhelmed. It doesn't help that she's always felt like the odd one out in her picture-perfect Connecticut family. But Maddy's latest low is devastatingly low, convincing her to go on an antidepressant. She begins to feel good, dazzling good in fact, and she soon spirals high into a wild and terrifying mania that culminates in a diagnosis of bipolar disorder. As she struggles to find her way in this new reality, navigating the complex effects bipolar has on her identity, her relationships, and her life dream, Maddy will have to figure out how to manage being both too much and not enough. With her signature “deep empathy and insight” (Booklist), Harvard-trained neuroscientist and New York Times bestselling author Lisa Genova has crafted an “affecting, harrowing, beautiful, and enlightening” (Shelf Awareness) novel that makes complicated mental health issues accessible and human. More or Less Maddy is destined to become another classic like Still Alice. Please find out more about Lisa Genova and her books at lisagenova.com. John Grisham is back, but with a bit of a twist. His legal thrillers made him a bestselling author but his latest novel is a bit of a departure, a whodunnit murder mystery titled ‘The Widow'. Grisham writes his novels in a slightly unorthodox manner, starting with the end and looping back around. “I learned the hard way years ago,” he told Mike Hosking. “I wasn't sure how to end the book, and so you keep writing, and you can't get to the end, and you boxed yourself in a corner.” “I'm not gonna waste time like that, I'm gonna know the ending when I start, and if you know the ending, it's hard to get lost.” Despite starting with the ending, the conclusion to ‘The Window' is not the one he initially wrote, as his wife wasn't a fan. “It was risky,” Grisham explained. “This one just didn't work, and my wife said, hey buddy, this is not gonna work." “I sent it to my publisher and to my editor in New York, and they agreed and when all three of them lined up against me, I can't, I can't argue.” So he changed the ending, writing 25,000 more words in the month of January in order to get the novel finished on time. “I think it's important to listen to people you trust,” he said. “You've gotta have a reader you trust, somebody who loves you and wants to see you succeed, but will be brutally honest with you.” Grisham has written over 50 books in his career, all bestsellers, and he says the secret is writing what he likes. “I write for myself, because I know what has worked,” he explained. “I know the stories I want to tell, and so far, those are the stories people want to read.” LISTEN ABOVE See omnystudio.com/listener for privacy information.

I've been a fan of Ben's since his first book, Schott's Original Miscellany came out in 2002, a collection of quirky facts and insights into subcultures; his 13 (!) subsequent books expanded on the theme and have sold more than 2.5 million copies, in multiple languages, to date. Ben also wrote two of the best "homage" books in the style of PG Wodehouse, which, if you're a Wodehouse fan, I urge you to read. His newest book, Schott's Significa, delves into the worlds of hidden languages and subcultures: open-outcry stock trading hand signals, the unspoken languages of the servers of Eleven Madison Park, and the very-much-spoken insider slang of everyone from the diamond dealers of midtown Manhattan to world-famous cocktail bars like Tres Monos and Overstory. We had a very pleasant and - as you might expect - wide-ranging chat about everything, enjoy!Ben on IG: https://www.instagram.com/benschott/Ben on X / Twitter: https://x.com/benschott?s=21&t=kTsTPMPK0kgHLvK8ldrFXQBen's website: https://www.benschott.com/Buy Ben's books (and support independent bookshops): https://bookshop.org/beta-search?keywords=ben+schott Get in touch with Duff!Podcast business enquiries: consulting@liquidsolutions.org (PR friends: we're only interested in having your client on if they can talk for a couple of hours about OTHER things besides their prepared speaking points or their new thing, whatever that is. Kevin O'Leary, famously known as "Mr. Wonderful," is an entrepreneur, investor, and TV personality who has made his mark through no-nonsense business wisdom. From his early days on Dragon's Den to his current success with Shark Tank and ventures like WonderCare and O'Leary Fine Wines, Kevin has continuously challenged conventional thinking and emphasized the value of discipline, results, and accountability. His leadership philosophy is rooted in telling hard truths, setting measurable goals, and inspiring both seasoned and aspiring entrepreneurs to compete and thrive—making him a true blueprint for business success. Takeaways: Results Matter Most: Kevin believes that business is binary—you're either making money or losing it. Success is measured by tangible outcomes, not good intentions. Discipline Over Desire: Ambition is common, but only those who embrace discipline and the founder's mindset will survive the ups and downs of entrepreneurship. Embrace Risk, Avoid Consultants: Real business growth comes from decision-makers who bear risk, not consultants who offer advice without consequence. Kevin advocates partnering with those who are willing to be paid on results—not just opinions. Sound Bites: “All those people that told me I couldn't do it, fuck you. That's how I feel about it.” “You're not trying to win friends in business. You're trying to have people respect you. And the way they respect you is you deliver results.” “Consultants all go to hell.
