It's fair to say I've developed something of an obsession with Theakston's Old Peculier. Ever since deputy ed. Katie Mather and I sat down and had a couple of pints in Manchester's The Salisbury a year or so ago, it's become a cornerstone of my drinking habits. Katie went on to write a very fine profile of this majestic beer, and following that the brewery reached out and invited me to the brewery for a tour. Politely, I asked if, while there, I'd be able to record an interview with its former managing director, now chair, Simon Theakston. His wing of the family acquired the brewery from previous owners Heineken in 2003, bringing it back under family control for the first time since 1987. Simon and his brothers share the same grandfather as would-be heir, Paul Theakston, who in 1993, seemingly in defiance at his family brewery's loss of independence, founded Black Sheep Brewery (which has now entered its own tumultuous phase.)To my delight, they agreed, but getting to the brewery itself was an issue. I don't drive, and the market town of Masham, North Yorkshire, where the brewery is located, is a fair way from the nearest train station. Thankfully the brewery found a solution. Current MD Richard Bradbury offered to pick me up from Sheffield station, as he commuted to work from his home in Derbyshire. This gave me a great opportunity to chat to Richard about his own background—how his career started at Bank's in his home of Wolverhampton, and how he worked on various Heineken brands before landing the role at Theakstons—during the drive over. Richard also kindly agreed to sit in on the podcast, and he shares some useful perspective within.What was most interesting about meeting and chatting to Simon himself, was explaining to him my aims and intent, and what Pellicle is all about. He seemed genuinely thrilled that our young magazine is so dedicated towards the coverage of cask beer, and afterwards kindly allowed me to ask questions at will—including, yes, about beer duty and the Small Brewers Duty Reform Coalition (SBDRC). Simon also gave me an in depth tour of the brewery, including a look at its vintage (and that's an understatement) grain mill, and the famous Steel's masher that helps contribute towards the unique character of Theakston's ales. My favourite part of the tour—other than when Simon poured me a pint of Old Peculier from the wood—was the fermentation room. Here in this corridor lined with open Yorkshire squares, the unmistakable aroma of Old Peculier was at its most potent. I also got to have a peek inside the cooperage, where in house journeyman cooper Euan Findlay builds the very casks that dispense this hallowed beer. During the interview we get into all the good stuff, including the history of the brewery, and its current objectives as an old brewery in a very different market. We also dig into a bit of beer politics. It's a very satisfying conversation, and one I hope you enjoy as much as I have done cutting it together. After hitting its peak in the late 2010s, Rhinegeist's merch business started to decline. Morrissey, who joined the company a year ago, has brought a fashion background and a new approach to the business, from assortment planning to limited-time offerings. Morrissey and Ireland share how they're working to engage Rhinegeist's diverse customer base, from out-of-town visitors to the brewery's Cincinnati taproom, to its home market “super fans.” “We're trying to get as many skull drop T-shirts on as many people as possible for every occasion,” Morrissey said. Morrissey and Ireland discuss efforts to re-engage fans with new products via event-driven and limited-time offerings and monthly product drops. “We're exploring doing a lot more illustration, a lot more nods back to Cincinnati heritage and just having a lot more fun with it, a lot more humor,” Morrissey said. “And then driving sales with scarcity, essentially, and keeping our assortment fresh. Blending the best of the origins of the West Coast IPA and what the West Coast IPA has become makes this beer nostalgic and new with every sip.
Craft beer grew in popularity over the past decade across Minnesota, but the brewing process has also created a ton of wastewater. Now, there's an experiment to make the process carbon neutral. University of Minnesota professor Paige Novak and Fulton Brewing are working on a new, sustainable way to treat wastewater from the brewing process.She spoke to MPR chief meteorologist Paul Huttner for Climate Cast.The transcript below has been lightly edited for clarity and length.Tell us about the craft brewing process and how it contributes to carbon emissions.When beer is brewed, a whole lot of extra wastewater is produced. For every pint of beer that's made, there's usually four to 10 pints of wastewater that's generated at the same time. This wastewater tends to go to a centralized treatment facility where it's treated, then cleaned up and discharged to a river. What happens during that wastewater cleanup process is that a lot of energy is used to pump air into the water, bacteria eat up all the waste, and all that pumping of the air creates a huge energy requirement, and also produces CO2. It can take up to 15 to 30 percent of a city's total energy bill to process wastewater, and that can add up to about 2 billion gallons annually. Is that right? It's a huge amount of energy that we use to clean our wastewater. If you look nationally, the amount of electricity that we use nationally just for wastewater is about 2 percent. So you think about everything that we do in terms of driving, heating our homes, lighting things, and 2 percent of that is used for our wastewater. It's a huge amount. Tell us about your project with Fulton Brewing. I work in biological wastewater treatment systems. I look at bacteria that can help clean up pollutants, including wastewater pollutants. What we've done is develop a system where we can put bacteria into little pellets. We can add these pellets to a tank. The bacteria are active, so we can put a lot of bacteria in there and keep them in the tank and they degrade all the wastewater. And if you do it at the site before the wastewater is diluted, you can treat the wastewater differently and actually generate methane gas, which can be used as an energy source onsite. In addition to using a lot of water, breweries use energy to heat the material to make the beer — also to heat the brewery in the winter. So you get added energy creation at the brewery, and then you save energy for treatment when you go to the wastewater treatment plant. Has Fulton Brewing been receptive to your research? They have been wonderful partners. They've been working with us on this process for years now. We did an initial pilot study at their brewery a few years ago, and that was really helpful to see what didn't work. And then we were able to get additional funding from the Department of Energy to continue to work on this process. We just finished up a second pilot study at Fulton where we were able to show that the system worked amazingly well.What else should people know about beer and carbon neutrality?I think we, just as consumers, need to keep in mind that there's all this additional work that needs to be done to keep these processes that supply us with the food and beverages going. National Black Brewers Association (NB2A) executive director Kevin Asato explains how obstacles have mounted for the trade group's members as diversity, equity and inclusion efforts have come under fire during the Trump administration. “The beautiful thing is, I was Black yesterday. I'm Black today. And god willing I wake up tomorrow, I'll be Black tomorrow,” he said. “The point being, just because there isn't a tagline like DEI available, doesn't mean our challenges and our need for diversity and our need to help our Black brewers in this space has gone away. Nothing has changed. Not a single thing has changed for our space here.” Asato shares with Brewbound managing editor Jess Infante how the NB2A is supporting its 86 Black-owned brewery members and its nearly 400 overall members during a special bonus edition of the Brewbound Podcast. He also explains why equipment donations have been key for up-and-coming Black breweries, teases ancient grain fonio's potential inclusion in Volume 3 of the Black is Beautiful collaboration efforts and talks about why some retailers are doubling-down on diverse brands. Following the conversation with Asato, Yonder Cider founder Caitlin Braam joins Brewbound senior reporter Zoe Licata to explain how experimenting with events at her brand's taproom has broadened her hard cider brand's consumer base. A shared taproom partnership with craft beer brand Bale Breaker has also helped Yonder breakthrough with new audiences, she explains. It's all about “not being exclusive” and “making spaces and places for various audiences, not just one.” “There isn't just one audience for your brand. There are many.
