Blötlägg den saltade torkade torsken i kallt vatten i 24–48 timmar och byt vatten ett par gånger.2. När den är ursaltad låt den rinna av ordentligt och riv den i små bitar med händerna.3. Strö lite havssalt över tomaterna och låt rinna av några minuter i sil.4. Blanda alla ingredienserna på ett fat eller låg skål och fördela jämt.5. Oliverna kan man garnera med och fördela efteråt eller skiva och strööver.6. Ringla över olivolja och vinäger. Genuss, Wirtschaftlichkeit, Nachhaltigkeit — das ist Sebastians eigene Formel. Es ist eine politische Aussage. Eine, die der Branche ins Gesicht sagt: Schönheit ohne Struktur ist Dekoration. Erfahrung ohne Verantwortung ist Selbstbedienung. Und wer Genuss predigt, während er seine Mitarbeiter ausbrennt, hat den Begriff nicht verdient. Diese Trias ist kein Leitbild für eine Website. Sie ist die Weltanschauung eines Mannes, der früh begriffen hat, dass der eleganteste Wein der Welt nichts legitimiert — keinen Sexismus hinter den Kulissen, keine Hierarchie, die Demütigung als Ausbildungsmethode versteht, keine Nostalgie, die sich als Qualitätsstandard verkleidet. Genuss verpflichtet. Sebastian Russold hat das verinnerlicht, während andere es noch buchstabieren. In dieser Episode tut Sebastian Russold etwas, das in seiner Branche ungefähr so üblich ist wie offene Fenster in einem Weinkeller: Er spricht. Er hätte erzählen können von den Möglichkeiten, den Reisen, allem, was dieser Titel ermöglicht hatte. Das hätte man erwarten können — Demut zeigen, Bescheidenheit, nicht kontrovers auffallen in einem konservativen System. Er verweigerte diese Erwartung. Komplett. Ohne Entschuldigungsformel. Was er stattdessen sagte — Sexismus, Rassismus und Mobbing sind in vielen Betrieben noch an der Tagesordnung — ist deshalb so bemerkenswert, weil er es nicht als Außenseiter sagte, nicht als Quereinsteiger, nicht als jemand, der das System nie wirklich bewohnt hat. Er sagte es als Bester Sommelier Deutschlands. Als jemand, dem das System gerade seinen höchsten Titel verliehen hatte. Als jemand, der — hätte er geschwiegen — ungestört von Preisverleihung zu Preisverleihung hätte gleiten können, lächelnd, geschätzt, ungefährlich. Dieser Verzicht auf Ungefährlichkeit ist das Mutigste, was ein Mensch in einem konservativen Beruf tun kann. Sebastian Russold ist kein Rebell um des Aufruhrs willen. Er ist kein Ideologe, der Wein als Vehikel für Weltanschauung missbraucht. Er ist etwas Präziseres und Schwierigeres: ein Mann, der seinen Beruf so tief liebt, dass er ihm die Wahrheit zumuten will.

Die ersten beiden Folgen aus dem Rückspul-Kiosk stellten jeweils diametrale Publikationen gegenüber – zum Beispiel Kindercomics versus Soft-Erotik – doch diesmal ist das Thema für Simon & Sebastian so wichtig und einend, daß die ganze Sendung den Fokus auf Computer-Spielezeitschriften der frühen 1990er setzt. Simons Liebling Power Play (es geht um Ausgaben 10/90 und 10/91), ab 1984 geboren aus der Happy Computer, war bahnbrechende Wegbereiterin des deutschen Gaming-Journalismus. Erfinderin des prozentualen Wertungssystems mit flotter Schreibe, vor allem aber katapultierte eine Extraportion Personality die Redakteure in den Rockstar-Olymp. Zumindest für nerdige Schulhof-Spielkids. Einer dieser wagemutigen Pioniere ist Heinrich Lenhardt, Mitbegründer von Power Play und später PC Player. Deswegen verirrt sich auch der Spieleveteran und Autor hervorragender Retro-Gaming-Bücher aus dem fernen Kanada zum ausführlichen Interview in den Kiosk. Schließlich wäre da noch die Video Games, die sich mit ihrer Debütausgabe 1/91 konsolig aus der Power Play auskoppelte und Sebastians erstes, kostbarstes und auswendiggelerntestes Print-Magazin war. … und immer dran denken: Das ist hier keine Lesestube!

Sebastian has 2 siblings, Lila who is 6 and Alaric who is also 3. That is right, Alaric and Sebastian are twins and today we will get to hear something that we don't really come across often which is a set of twins and only one of them carries the diagnosis.
