The battle over raising the minimum wage for tipped workers and permitting tip pooling bounces to the Massachusetts ballot this November. Saru Jayaraman, President of One Fair Wage and Director of the Food Labor Research Center at UC Berkeley, argues that the current tipped wage structure perpetuates low pay and high turnover. Although the wage increase would occur over five years, opponents assert the mandate would be detrimental to some small and independent restaurants and could fail to increase employee job satisfaction and retention. About Scott Scott Eckstein has over 30 years of diverse research, analysis, development, operations, and education experience in the senior living space. He has been directly involved in senior living projects throughout the United States, South and Central America, Europe, Africa, and Asia and specializes in providing strategic analysis, acquisitions, development, education, and operations advisory solutions for an aging planet. He is currently the Managing Director for Active Living International, an internationally focused senior living advisory firm, as well as Strategic Advisor for CiminoCare, a California-based middle market senior living operator. Eckstein's senior living experience began in the nascent days of senior housing. He has helped promote the creation of purpose built environments for senior wellness, lifestyles and care as well as having specialized in the creation and operation of a unique range of residential alternatives for the aging population worldwide, from active adult housing through the spectrum to memory care. Eckstein has held management positions at numerous senior living operators: Brookdale, Emeritus (now Brookdale), Aegis Living, Sunrise Senior Living and ARV Assisted Living (now Atria). In addition, he was also the Director of Business Development at WellAWARE Systems (now part of Best Buy), a pioneer in the senior tech space. Key Takeaways A career in senior living and aging services is impactful because of the ability to make a difference in people's lives for a few years rather than a few days in a hotel or resort. There are incredible opportunities, but the industries don't market themselves well. Active adult (55+) communities serve a younger age bracket needing minimal care. The category overlaps with wellness real estate and intergenerational housing. Independent living adds care services and attracts people in their late 70s and 80s. One of the biggest problems in the active adult housing market is residents don't want to leave as they age and need higher levels of care. In the United States, you can't push people out legally. The biggest challenges in senior living are related to management, leadership, training, and culture. They are intricately related. The silent generation and baby boomers are focused on wellness and technology, so senior living communities are incorporating Centers for Healthy Living with massage rooms, fitness equipment and aging-related retail. Most communities offer telehealth post covid, and some offer a tech concierge. The most important questions to ask an assisted living community before signing on the dotted line include the turnover of team members and the training they receive, the flexible (or lack of) of the dining options. Dining is the major issue beyond care.

On this episode I chat with Chef Sandhya Kumar. There is nothing better than your passion being your profession. And that is exactly what Chef Sandhya Kumar has always believed in. Passion for cooking hit Sandhya at an incredibly young age owing to her grandmother's influence. Her Mom let her loose in the kitchen where she made lots of cake and a lot of mess Pursuing her passion, she acquired her bachelor's degree in Hotel Management and Hospitality Administration from The Institute of Hotel Management, Kovalam. Sandhya was trained by the head chefs at The Oberoi, Bangalore and Marriott Chennai, before starting her career at Four Seasons. She worked in the culinary department at Four Seasons Hotel, Mumbai where she gained valuable experience working under reputable international chefs across various cuisines ranging from Japanese, Chinese and Thai to Italian and French. Chef Sandhya recently did a major feature film project with Bollywood actor Saif Ali Khan in the remake of Jon Frauveau's Hollywood movie ‘CHEF', which released in October 2017 in India. She was the Stylist and Consultant for the movie. “Cooking in my family was a skill, handed down over generations, from my grandmother to my mom and now to me, something I'd like to call my legacy. She also organises regular Culinary Workshops, in either a corporate format or for individuals, to help them learn the basics of cooking and preparing easy, healthy meals at home. Food styling is what gives the first impression of your product to your target audience. Indulge In works with top photographers, cinematographers and branding companies in the field to better the portfolio of your brand, which can make your customers crave your product. Indulge In started off as a small home-catering business when I had left Four Seasons and was back in my hometown. Mostly catering to friends and family for their small, exquisite events where they had the liberty to indulge in food that they loved to eat but couldn't find in the city. Then it slowly grew into a restaurant consultancy where people want me to help their dreams of owning a restaurant become a reality. I kept the same name as Indulge In, as I wanted them to know they could be free to indulge in their dreams and the worrying, and getting things done part can be left to me. So, Indulge In by Sandhya came into realisation along with other people's dream projects. Kiersten describes herself as a recovering perfectionist who spent her 20s climbing the Corporate Ladder. Although she was outwardly successful, she was in debt with no financial plans for retirement. When her husband Julien told her about the financial independence movement, she was initially skeptical but came around and, a few years later, was able to quit her full-time job at 35. Julien Saunders has a degree in Culinary Arts, a BBA in business/Hospitality Administration, and an MBA in Marketing. His career has ranged from preparing fine dining meals, project management, distribution, and brand marketing, white he built a real estate portfolio on the side. Everett Harper is the CEO and co-founder of Truss. Truss builds software and infrastructure to help companies and public agencies scale and modernize digital services. Sandra King is a highly respected marketing and communications consultant. She has led teams in sales, marketing, communications and brand development. Sandra has worked with organizations such as Time Magazine, the Boston Red Sox, the UMass Boston and WGBH, one of America’s most storied PBS outlets. In addition to running her own marketing consulting firm STKing Associates, Sandra is a lecturer at Boston University for both the School of Business and the School of Hospitality Administration. Last week, part one of our report on Airbnb looked at the home-sharing giant's impact on hotel business performance. We reported on a study that shows for every 100 percent increase in Airbnb accommodations in a market, hotel RevPAR declines by an average 3 percent. We also reported a growth in the number of whole houses on online distribution channels as homes become “investor units.” Meantime, more everyday homeowners have warmed up to the idea of making some extra money by sharing their digs with short-term travelers. This week, in part two, we explore what's good and smart about Airbnb and how hotels can successfully vie for travelers' bookings and loyalty. We also take a look at new lodging trends spurred by the home-sharing movement. We talk to Leslie James, head of marketing at AirDNA, a data research platform for the home-sharing industry. We hear from Paul Breslin of Horwath HTL and Mark Woodworth of CBRE Hotels Americas Research about the new generation of travelers driving the home-sharing trend. We also talk more with Makarand Mody, a researcher and assistant professor at Boston University School of Hospitality Administration who has published several studies about Airbnb and the home-sharing phenomenon. More than 10 years ago, the short-term home rental industry began to shapeshift with the birth of Airbnb. The technology company has quickly grown from a small peer-to-peer home-sharing platform into a virtual behemoth with more rooms than any hotel company on the planet. Today, Airbnb has more than 4 million listings in nearly 100,000 cities, and two million people stay in an Airbnb-listed home every night. In this episode, we examine the impact of Airbnb's growth on U.S. hotel performance. It's big topic, so we broke it down into two parts. In this first installment, we talk to Makarand Mody, an assistant professor at Boston University's School of Hospitality Administration and co-author of the academic paper on Airbnb's disruptive impact in key hotel markets. We hear from Hans Detlefsen of Hotel Appraisers and Advisors, which studied Airbnb's market share of U.S. lodging demand, and from Thomas O'Shaughnessy, head of research at Clever Real Estate, an online agency. We also share information provided by Airbnb, which declined to provide someone to interview.

Chris Himmel got is start in the hospitality industry doing odd jobs for his families' restaurants. This early exposure ignited his passion for the restaurant industry and that passion carried him to study at Cornell School of Hospitality Administration in Ithaca, NY. After graduating he mastered his craft working under the tutelage of two industry greats; Danny Meyer of Union Square Hospitality Group and Thomas Keller of the French Laundry.
