Send us a textHello, passionate cruisers! This week on The Joy of Cruising Podcast, it is my pleasure to welcome back a special guest, Chef Rudi Sodamin, a culinary virtuoso of the seas. Chef Rudi is Princess Cruises' first Head of Culinary Arts effective January 2024. When I chatted with him back in December, Ep 71, we talked about his pending new role, along with his existing role as Master Chef for Holland America Line (HAL)—which I am particularly excited about as we cruise on HAL a couple times in 2025. Carnival Cruise Corporation—parent company of HAL, as well as Princess—was so impressed with Rubi's Sel de Mer, the French-inspired intimate brasserie that Chef Rudi led the launch of on select HAL ships, that they commissioned him to create Rudi's Seagrill for its new Excel-class ships—Mardi Gras, Celebration, and Jubilee. In 2023 Chef Rudi partnered with Princess Cruises, to create The Catch by Rudi on Enchanted Princess, Majestic Princess, Sky Princess, Discovery Princess, and recently-released Sun Princess—which I am particularly excited about as I will sail her new sister STAR Princess in 2025.  Since I last spoke with Chef Rudi, Princess Cruises announced it is joining with world renowned artist Romero Britto, known for his bold, colorful, and joyful style, and a global advocate for happiness, to create Love by Britto, the first artistically inspired dining experience celebrating the essence of "Love" aboard Sun Princess. According to Princess: Love and art converge with taste in an immersive culinary journey, showcasing a meticulously curated menu by culinary virtuoso Rudi Sodamin. With Sodamin's ingenious touch, Love by Britto transcends into a multisensory exploration, offering extraordinary dishes that embody profound passion, exquisite flavor, and boundless creativity. Love by Britto features a 7-course menu--a flute of Champagne upon arrival, lobster, caviar and truffles, and chocolate fondue.Says Chef Rudi, "Food is the international language of love; Love by Britto could not be more perfect for Princess, home Relying on ship wifi is slow, unsecure, sometimes not available & at foreign ports travelers don't want to pay their carriers' high fees. This was Michelle and her husband Tom, first cruise to the last frontier, the majestic state of Alaska. We had the exciting privilege of cruising again on the luxurious and stunning Discovery Princess, sailing us to breathtaking sceneries, ports of call, food, shopping and exciting experiences. There is so much to share, there will be a part two! Kim is back from her 7th Alaska cruise! This one was on Princess Cruise visiting the Inside Passage that cruises from Seattle and visits Victoria, Ketchikan, Juneau, and Skagaway and sails through Glacier Bay.  Note: Kim was hosted by Princess Cruises for her trip. This cruise visits Victoria very briefly at night so not a good choice if you really want to visit Victoria When evaluating cruises, you need to look closely at the time and length in port very carefully If you do want to pick a cruise that flies out of Vancouver, it may be cheaper to fly into Seattle and take either a train or bus to Vancouver The Discovery Princess ship carries up to 4300 guests so it is a large ship about the same size as the Norwegian Bliss (which we have talked about previously) It leaves from Pier 91 in Seattle, which is a bit north of the main Seattle waterfront and port area If you sail with Princess, do the onboard check in on the app at least a month or a few weeks in advance so that you can receive your Medallions in the mail The 16th floor on the Discovery Princess is the pool deck so you may need to walk outside to get the buffet and mid-ship elevators depending on where your room is. Kim's room also had an overhang covering the balcony The cabins on the Discovery Princess are a little small, with no additional seating beyond the bed (except on the balcony) The cabin had a very generous closet space but the bathroom was quite tight (look at the cabin layout in advance) Kim went in mid-June and had amazing weather but there are no guarantees The Princess Theater was quite large  The premier package level is $80 per person, per day includes WiFi for 4 devices per person, 2 specialty dining meals, and the highest level of drink package The 360 dining experience is something you need to book when you arrive and it is a seven-course meal with courses from around the world and it includes videos from makers around the world The food on board was good but fairly standard cruise fare outside of specialty dining Princess has a lot of lounges with something going on somewhere at all time You can buy a day pass to the Sanctuary pool and area Princess has a kids club and activities but there weren't a lot of families on board but it is great for multi-generational family trips In Juneau, Kim went whale watching and it was spectacular wildlife sighting In Skagway, Kim did the White Pass Scenic Railway and "Sip to Summit" excursion In Ketchikan, Kim did a fishing excursion and after you catch fish they cook it for you on a private island Not all cruise ships in Alaska goes to Glacier Bay National Park so be sure to look for this! There seem to be better views from the left side of the ship Bigger ships have to dock further away and some need to tender to port so this is something else to consider when taking an Alaskan cruise Smaller ship (like Holland) are better for walking on and off the ship   OTHER EPISODES YOU MAY ENJOY Holland America Caribbean cruise Barge and river cruising through France NYC to Bahamas cruise on Norwegian Norwegian Bliss cruise to Alaska Disney Cruise for First-timers

This week on The Joy of Cruising Podcast, it is my pleasure to welcome a special guest, Chef Rudi Sodamin, Princess Cruises' first Head of Culinary Arts, along with his role as Master Chef for Holland America Line (HAL). If you have cruised on HAL, Princess Cruises, or on Carnival Cruise Line's Excel-class ships you may have been fortunate to have experienced Chef Rudi's specialty restaurants. On HAL Chef Rudi led the highly successful launch of Rudi's Sel de Mer restaurant onboard Koningsdam, Nieuw Statendam, Rotterdam (which I look forward to try as I have Rotterdam booked. Furthermore, Sel de Mer is run as a "pop-up" one night per cruise in the Pinnacle Grill on most of the remaining HAL ships. Rudi's Sel de Mer is an intimate brasserie featuring classic French dishes reimagined with contemporary flair. A signature dish is whole Dover sole meunière with shaved pink Himalayan sea salt. Carnival Cruise Corporation was so impressed by Chef Rudi's concept, that they commissioned him to create Rudi's Seagrill for its new Excel-class—Mardi Gras, Celebration, and Jubilee. In 2023 Chef Rudi partnered with Princess Cruises, to create The Catch by Rudi on Enchanted Princess, Majestic Princess,Sky Princess, Discovery Princess, and the just-released Sun Princess—which I am particularly excited about because I am booked on her also. Scheduled to debut in April 2023, the Viking Saturn will spend her maiden season sailing itineraries in the Mediterranean and in Northern Europe. The traditional float out ceremony took place at Fincantieri's Ancona shipyard and is significant because it denotes a ship moving into its final stage of construction. The float out of the Viking Saturn began at approximately 11:00 a.m. local time when the Viking team cut a cord that signalled water to flow into the ship's building dock. Following a two-day process that will set the Viking Saturn afloat, she will then be moved to a nearby outfitting dock for final construction and interior build-out.Viking Saturn – Viking's ocean vessels have a gross tonnage of 47,800 tons, with 465 staterooms that can host 930 guests. The Viking Saturn will join the award-winning fleet of identical sister ships, which includes Viking Star, Viking Sea, Viking Sky, Viking Orion, Viking Jupiter, Viking Venus and Viking Mars. The Viking Neptune will be delivered in late 2022.Its Official – Authentic Gelato Experience at SeaItalian Chamber of Commerce Certifies Gelato Experience On Board Princess Ships as First to Offer the Authentic Confection Outside ItalyWith the start of summer, scooping up one of Italy's most famous desserts from Gelato onboard Discovery Princess, Enchanted Princess and Sky Princess just got a little sweeter. The Princess Cruises gelato shops have been designated as Ospitalità Italiana, and are the first and only locations to offer an authentic Italian gelato experience outside of Italy. The prestigious Ospitalità Italiana designation is issued by the Italian Chamber of Commerce committee, an organisation of the Italian government, and confirms that every step of the gelato-making process meets or exceeds a strict set of standards as approved by official Italian auditors and experts, who review the process on a yearly basis. Only gelato shops that attain outstanding quality status are awarded the official Ospitalità Italiana certification.Princess Cruises handcrafts its fresh gelato with Italian-certified ingredients and equipment each day in the pastry kitchens onboard the cruise line's three newest ships – Discovery Princess, Enchanted Princess and Sky Princess. Corporate pastry chef Eric Le Rouzic trained with the best Italian chefs at the Gelato Carpigiani University in Bologna and the Gelato Comprital Atheneum in Milano to master the art of making this heaven in a bowl. Princess uses top-of-line gelato machines by renowned manufacturer Carpigiani and the Gelato display cases were produced in Italy by expert craftsmen.Fun Fact – Gelato Isn't Ice CreamAccording to legend, the recipe for Gelato was popularised when architect Bernardo Buontalenti was asked to create a special confection for a member of the Medici noble family in the 16th century. Buontalenti mixed milk, eggs, sugar and extracts in a special machine surrounded by ice and salt, and egg cream-based gelato was born. While it's creamy, gelato has less butter fat and fewer calories. The authentic Italian ingredients are combined with Princess' freshly sourced fruit and is made each day with milk, not requiring the extra fat from cream that is needed in ice cream for a longer shelf life. As a result, a scoop of gelato is 80-100 calories and the sorbet or “fruit gelato” has no fat and is only 50-60 calories, with no dairy.Christening Ceremony in Barcelona for Costa ToscanaCosta Cruises celebrates in the port of Barcelona the christening ceremony of Costa Toscana, the newest Italian-flagged ship in the Costa Cruises fleet, that leads to the discovery of “the art of living the sea”.Godmother of Costa Toscana is Chanel, a young singer, actress and dancer who enjoyed great success in Spain and in all Europe after her exhibition during the 2022 Eurovison Song Contest. Now, the well-known fixture will continue its travels on Carnival Cruise Line's next new ship, Carnival Celebration. The vintage car, a 1934 Rolls Royce Saloon, was carefully offloaded from Carnival Ecstasy while the ship was docked in Mobile, Ala. last Thursday (click here to see video). It is being carefully shipped to the Meyer Turku shipyard in Finland where Carnival Celebration is under construction. The car thousands of Carnival guests have admired and taken pictures of over the years will soon find a new home adjacent to The Gateway, a two-deck zone aboard Carnival Celebration which celebrates travel and the excitement of exploring new destinations. The Gateway zone includes The Golden Jubilee, a bar venue highlighting Carnival's evolution of ships over the last 50 years. Fletcher Christian didn't want to leave it and mutinied (on the HMS Bounty) to stay there. Remote, tropical, romantic, and beautiful – it's one of the world's most aspirational places to visit: The Islands of Tahiti, otherwise known as French Polynesia.  The Islands of Tahiti are best accessed via small ship – allowing effortless travel amongst some of French Polynesia's most storied and iconic 121 islands and atolls. Small ship cruise line Windstar Cruises simply knows it best, having sailed the longest of any operator in the region and celebrating 35 years of Tahitian sailings in 2022. It's also the only destination where the U.S.-based cruise line sails year-round, giving guests ample opportunity to plan a once-in-a-lifetime visit in any season. This October, there's double the chance. The 148-guest Wind Spirit, complete with sails built for the breezes of the South Pacific, is sailing around the Islands of Tahiti now, but in October, Windstar will move the all-suite, 312-guest Star Breeze to the region, increasing capacity with two yacht options to choose from. All-suite Star Breeze features newly transformed guest suites,  two new restaurants, a new World Spa, an infinity pool, and more. Although without sails, Star Breeze is ideal for accessing the shallow lagoons that helped make the destination famous. Both Wind Spirit and Star Breeze feature Windstar's signature sports platform, opening up right off the back deck into crystal clear waters perfect for swimming, kayaking and paddle boarding .  In February 2024, Star Breeze will move to Tahiti year-round in place of Wind Spirit.A-ROSA SENA completes maiden voyageOn 18 June 2022, the A-ROSA SENA departed from Cologne for her maiden voyage with her first guests on board. Prior to this, the ship was blessed in Düsseldorf by Deacon Michael Inden, as well as christened by Clara Eichler, daughter of A-ROSA CEO Jörg Eichler, in the presence of the management, the investors and the crew. Due to supply challenges, the first cruise started slightly later than initially planned, which meant that this ceremony took place in a small circle only. Thanks to the hybrid propulsion system, the first departure was accomplished with the help of electrical energy from the battery storage.Guests and crew were excited about the sustainable new ship: “A-ROSA SENA's design is truly unique on the river. Together with the spacious interior layout, she offers a completely new travel experience”, comments hotel manager Dennis Brenner. Captain Ulrich Schwalbe adds: “Thanks to the hybrid propulsion system and the exhaust gas purification filter, you don't notice any emissions on board and can just enjoy the pure cruising experience.” The E-Motion Ship recently received the “German Award for Sustainability Projects 2022” for her environmentally friendly technologies.Throughout the summer, the A-ROSA SENA offers 7-night voyages from Cologne via Amsterdam, Rotterdam, Dordrecht and Antwerp. Guests can disembark individually or discover the destinations through exclusive shore excursions organized by A-ROSA. Whether a gracht tour in Amsterdam, a visit to the miniature world Madurodam in Rotterdam, a canoe trip through the nature reserve Biesbosch or a culinary city tour through Antwerp – there is something for all tastes. The last day of the trip is a cruising day during which guests can enjoy everything the ship has to offer at their leisure: The large SPA-ROSA with sauna, whirlpool and massage room, the fitness area, two pools on the sun deck, the Kids Club for little guests and various restaurants and bars.Queensland Couple Embarks on Two Years Back-to-Back Cruising as Coral Princess Begins Historic Inaugural Cruise SeasonIn an amazing illustration of their passion for cruising, Brisbane couple, Jessica and Marty Ansen, embarked on an incredible two years of back-to-back cruising as Princess Cruises' Coral Princess, the first cruise ship home ported at the Brisbane International Cruise Terminal, began its first cruise season following the restart of the Australian cruise industry.Jessica and Marty Ansen have previously sailed on 31 cruises with Princess with 1,173 days at sea. The Cruise Line has also incorporated several guest favourites including thermal experiences and hot-stone loungers.Industry's First Charcoal Sauna at SeaAs part of the ongoing only-found-on-NCL's Prima Class holiday experiences such as the world's first three-level racetrack at sea and dry drop slides, the Brand will unveil the industry's first charcoal sauna. Derived from Japanese and Korean wellness practices, the charcoal sauna uses a radiant heat system with an outer charcoal layer to reach temperatures between 86-122 degrees Fahrenheit (30-50oC). Guests can recline into relaxation as the sauna helps boost circulation and metabolism while also removing toxins from the body. The sauna also effectively treats muscle stiffness and tension, including relief from backache, headache, and arthritis, by promoting the deep release of connective tissue and muscles. Thermal ExperiencesThe charcoal sauna is just one of eight thermal spa offerings available at the elevated Mandara Spa. Guests can also indulge in a series of blissful experiences such as a salt and steam room, as well as a gambit of Brand-first spa experiences including an Ice Room, Experiential Showers, a Flotation Salt Pool and Infrared Sauna. The Ice Room: After unwinding in the sauna or steam bath, guests can cool off in the refreshing Ice Room. The cold air helps to increase blood circulation, invigorate the respiratory tract, and strengthen the immune system.  The Experiential Showers: Multiple water jets and lighting effects help invigorate the body, lower body temperature, and stimulate blood circulation.Floatation Salt Pool: This treatment allows guests to fully relax all of their muscles while floating in warm water. An experience similar to experiencing zero gravity due to the buoyancy of the saltwater, the Floatation Salt Pool is beneficial for easing mental anxiety and muscle tension.  Infrared Sauna: Unlike traditional saunas that use conventional heat to warm the air, infrared saunas utilise infrared lamps to directly warm the body — and at lower temperatures than traditional saunas. This promotes relaxation, better sleep, sore muscle and joint relief, improved blood circulation, and detoxification.Royal Caribbean Group and World Wildlife Fund (WWF) Recommit to PartnershipRoyal Caribbean Group, announced its new commitment to the next phase of its ongoing partnership with World Wildlife Fund (WWF) for guidance and counsel in establishing bold environmental goals and sustainable business practices.Royal Caribbean Group first partnered with WWF in 2016. Olsen has today unveiled a brand new world cruise for 2024 celebrating the magical music of The Beatles – including a specially-commissioned yellow submarine to offer tours to Australia's Great Barrier Reef.Fred. Olsen's Journey Planners have come together to hand-craft an itinerary that follows – as closely as possible – in the footsteps of The Beatles when they embarked on their 1964 World Tour, with a call into Copenhagen to mark 60 years since the opening night in the city.More than just day trippers, our guests will find ‘newspaper taxis' waiting ashore to take them on tours to many of the venues played by The Beatles during the famous tour. In addition, in Australia guests will be able to purchase a ticket to ride aboard Fred. Olsen's new submarine – of course, painted yellow and aptly named SS Penny Lane – to witness the Great Barrier Reef.On board, guests will find their very own Cavern Club where they can dance the night away to their favourite Beatles songs, and also a special ‘hill' out on deck – built from Norwegian wood from our homeland – where guests can sit and enjoy scenic sailings and sunsets. The cruise is a celebration of Fred. Olsen's long-standing links to Liverpool, with new ship Borealis homeporting from the city for another year in 2022. The ship will berth almost opposite the statue of the ‘Fab Four' at The Beatles Pier Head. And more... Based on detailed guest surveys and market research, the company has developed a new concept for its cruises to meet the changing needs of its guests.More than 200 improvements – large and small – will ensure that A-ROSA, currently a premium operator, becomes a ‘PremiumPLUS' operator from the 2023 season onwards. Taking into account the entire customer journey – before, during and after travel – the company will focus on making its cruises more customizable, as well as providing even better service, improving its culinary offering, becoming more family-friendly and developing its well-being portfolio. A-ROSA also plans to place greater importance on sustainability and on offering authentic experiences at its destinations.Authentic, personalised experiences in the cruise regionsAnother new area of focus for A-ROSA's city breaks by ship is helping guests experience the different destinations in an authentic way. They'll have the opportunity to get to know chefs, artists and local people from the various regions. A-ROSA will also introduce Destination Scouts. This innovative idea involves locals advising guests visiting their hometown on how to get the most out of their trip. “We'll be looking for people from the cities we call at who can give our guests insider tips about the best places to eat or shop and the best current exhibitions, concerts and events,” explained Eichler. “This will give our guests a really in-depth experience of the region and provide insight into local life beyond the tourist areas.”When it comes to excursions, there will also be a focus on personalised experiences. With 500 different excursions available, there will be something for everyone. Guests who book excursions in the new ‘exclusive tours' category will enjoy individual tours with a vehicle and driver plus their own tour guide. One particular highlight is the half-day excursion with dinner, which will be included in the cruise price from 2023 and guarantees guests an unforgettable evening.More entertainment and relaxationA-ROSA's onboard entertainment programme is set to provide even more value from 2023. Cruises with a duration of five nights or more will include an evening concert, while cruises lasting seven nights or more will feature two. Cruises of nine nights or longer will also have a subject-matter expert on board to give lectures about the destinations. The musical artists will either come from or be influenced by the cruise regions. Through their music – whether traditional songs or global hits – they'll convey the artistic flair of their homeland to the guests.A-ROSA is also responding to its guests' desire for more relaxation and well-being by widening the range of activities available. The SPA-ROSA will provide new treatments and massages, while yoga and fitness classes will be added to the onboard programme. As well as going on guided bike tours, guests will also be able to borrow e-bikes and explore destinations on their own. What's more, as the industry's only provider of family cruises, A-ROSA will also be extending its offering for children. “As well as running dedicated family cruises during the school holidays, we'll provide a Kids Club with organised activities on almost all our ships if there are more than ten children on board,” explained Eichler.Focusing on sustainability“When we were working on our realignment plan, it quickly became clear that sustainability would play a central role,” said Eichler. “A-ROSA has always been involved in environmental and social actions, but taking responsibility will be a special area of focus for us in the future.” With this in mind, A-ROSA opened its own sustainability department on 1 February 2022. Department head Sandra Wendland introduced herself at the press conference. “We've brought a high-level partner on board – the Fraunhofer Institute for Systems and Innovation Research – and we'll be working together to develop an integrated, long-term sustainability strategy for A-ROSA,” explained Wendland. The plan for the next twelve months is to determine A-ROSA's current sustainability footprint and, on the basis of field analyses and stakeholder surveys, create a clear roadmap to 2030, which will set out indicators, actions to take and targets. “We'll be presenting the entire development and implementation process in a transparent way, and the roadmap will be unveiled at the start of the 2023 season,” concluded Wendland.Viking Mississippi Floats Viking® celebrated the new 386-guest Viking Mississippi® was “floated out” in Louisiana, marking a major construction milestone and the first time the ship has touched water. They will be joint by exceptional Italian artists, who will perform every evening on the stage of one of the ship's theatres.Costa Toscana will be a constant and regular presence at the Sanremo Festival not only on television, on Rai Uno, but also on the radio. Indeed, the program “Tre per due” of Rai Radio Due, with the “Gemelli di Guidonia” singers, together with the band “Stefano Signoroni & the MC”, will be on board for the entire duration of the Festival.Costa Toscana is moored at anchor about one kilometre from the port of Sanremo, where she arrived on January 30 and will stay until February 6. On board, there will be no public presence, except for who will contribute to the events planned on board, in addition to the ship's crew members. For the occasion, a special health protocol has also been developed and shared with the relevant health authorities.Costa Toscana is the new Italian-flagged ship in the Costa Cruises fleet. Built at the Meyer shipyard in Turku (Finland), she will leave for her first Mediterranean cruise on March 5, 2022, from Savona.  Designed as a true traveling “smart city,” the ship is powered by liquefied natural gas, the most advanced technology currently available in the maritime sector to cut emissions, which Costa was the first to introduce on cruise ships. On board, 100% separate waste collection and recycling of materials such as plastic, paper, glass and aluminium is carried out. The entire daily water requirement is met by transforming sea water through the use of desalinators. Energy consumption is reduced to a minimum thanks to an intelligent energy efficiency system. The interiors of Costa Toscana are the result of an extraordinary creative project, curated by Adam D. Tihany, created to enhance and bring to life the best of this wonderful region in a single location. Furniture, lighting, fabrics and accessories are all “Made in Italy“, created by 15 partners highly representative of Italian excellence. Guests were able to enter the water in small numbers and with tightly managed protocols to share eye to eye encounters with these unique and curious creatures. On day five, the GBR Legacy team assisted Dr Birtles and the Minke Whale Project and experienced a 4-hour encounter with some great passes from a mother and calf, the longest known engagement of a cow and calf with a vessel. This allowed the team to get up close and high-resolution photos and videos to identify the animals as well as collect valuable skin samples for genetic analysis. Every passenger was on deck helping with the data collection over more than 1000 data points, and simply enjoying this spectacle as mum and calf interacted with the vessel and research team.Coral Expeditions and guests onboard contributed a sum of $30,000 in funding from the expedition to go towards the GBR Legacy Living Biobank Project and has developed plans to conduct Citizen Science voyages annually in different regions of the Great Barrier Reef and further afield around Australia including natural events such as the 2022 Coral Spawning on the Great Barrier Reef, a 2023 hybrid Solar Eclipse Voyage in Australia's North West and a turtle Conservation expedition along the length of the GBR in 2024.Stena RoRo has placed orders for the construction of new E-Flexer shipsStena RoRo has ordered two new ships from the Chinese shipyard CMI Jinling (Weihai).
