Ein knuspriges Brötchen am Morgen. Pasta mit Olivenöl am Abend. Und dazwischen die immer gleiche Warnung: Kohlenhydrate machen dick. Low Carb gilt als Lösung, High Protein als neuer Goldstandard. Kaum ein Nährstoff wird so leidenschaftlich diskutiert wie die Carbs. In dieser Folge meines Podcasts DA GEHT NOCH WAS geht es um genau diesen Mythos. Was sind Kohlenhydrate eigentlich? Warum ist Zucker chemisch gesehen ebenfalls ein Kohlenhydrat? Und weshalb macht es einen gewaltigen Unterschied, ob Weißbrot und Limonade auf dem Tisch stehen - oder Gemüse, Hülsenfrüchte und Vollkornprodukte? Kohlenhydrat ist nicht gleich Kohlenhydrat. Einfache, stark verarbeitete Varianten lassen den Blutzucker rasant ansteigen, fördern Heißhunger und bringen das Hormonsystem unter Druck. Komplexe, ballaststoffreiche Quellen wirken völlig anders: Sie stabilisieren den Blutzucker, nähren den Darm und versorgen den Körper gleichmäßig mit Energie. Low Carb entstand als Reaktion auf zu viel Zucker, zu viel Weißmehl, zu viele Fertigprodukte. Doch aus einer sinnvollen Kritik wurde oft ein radikales Konzept. Dabei zeigen Studien: Extreme sind selten die beste Lösung. Sowohl sehr hohe als auch sehr niedrige Kohlenhydratmengen können langfristig problematisch sein. Balance schlägt Dogma. Gerade für Frauen ab 40 bekommt das Thema eine neue Dimension. Sinkt der Östrogenspiegel, reagiert der Körper empfindlicher auf Blutzuckerschwankungen. Zu wenig Kohlenhydrate können zusätzlichen Stress erzeugen, die Darmvielfalt beeinträchtigen und das hormonelle Gleichgewicht stören. Gleichzeitig beeinflussen Carbs nicht nur Insulin, sondern auch Serotonin, Schilddrüsenhormone und sogar den Schlaf. Ballaststoffe sind dabei echte Gamechanger. Sie puffern Glukose, unterstützen die Darmflora und helfen beim Umgang mit überschüssigen Hormonen. Auch die Reihenfolge auf dem Teller kann sinnvoll sein: erst Gemüse, dann Protein und Fett, zum Schluss die Kohlenhydrate. Und in Kombination mit Bewegung werden sie von den Muskeln besonders gut aufgenommen. Welche Kohlenhydrate sind wirklich das Problem? Was sollten wir Frauen beachten? The main topic took up most of the recording today, involving a new narrative review that argues for a low-carb approach for endurance athletes.The real-world performance benefits of carbs are clear for anyone who has traveled this path, but at the end of the day, who cares? It's just performance. The low-carb believers can get left behind and that's ok by us.The reason we are talking about this relates to health. The carb conversation is nuanced--it's not about taking in as many carbs as you can all the time, and their arguments point out legitimate discussions about how to balance fueling in training and life. But their arguments also infiltrate the broader discussion of nutrition, and anyone who works in this field sees what can happen on the other side.There is a boneyard of ruined careers from serious endurance athletes who have undershot carb intake. The negative mental and physical health outcomes from carb restriction take this out of the academic realm and into much more serious places. We love carbs because we love performance.
